COURSE DESCRIPTION:
This course covers the principles of design and layout as applied to foodservice operations. It critically evaluates the over-all atmosphere and utilization of space, facilities and equipment in food establishments. It acquaints the students with institutional foodservice equipment, its specifications, uses and their practical placements in varied kitchen layouts. This integrative course requires students to come up with a feasibility study for a foodservice facility. Planning is stressed with emphasis in efficient flow of production, service and marketability. The effective management must consider both the concept and the business aspect of the foodservice operations such as menu, service, marketing, financial and human resources management.
