Open Face Hanger Steak with

Rosemary and Grilled Garlic Bread

INGREDIENTS:

12 slices La Brea Bakery French Baguette crosswise into “1/2 pieces4 tablespoons dijon mustard3 cloves garlic (smashed and fi nely chopped) and 1 garlic clove halvedPinch of crushed red pepper2 sprigs rosemary (picked and fi nely chopped)Juice and zest of 1 lemon2 - 1 ½ pound each hanger steaks (trimmed, membrane removed and cut in half lengthwise)Kosher saltExtra-virgin olive oil

DIRECTIONS:

In a small bowl, combine the Dijon, smashed garlic, rosemary, lemon juice and zest, and crushed red pepper. Coat the steaks with the mixture let marinate in the fridge overnight or up to 2 hours in the fridge. Preheat the grill. Season the steaks with salt. When the grill is hot, brush it with oil. When the fl ames have dissipated place the steaks on a hot spot on the grill. Brush with the excess marinade and move the steaks out of the fl ame if there is a fl are up. Grill the steak for 4 to 5 minutes on each side for medium rare. Remove the steaks from the grill and let them rest for 5 to 10 minutes before slicing. While resting, brush olive oil on each side of baguette slices and grill until lightly brown. Remove and rub ½ garlic clove on 1 side of each piece. Slice steak and serve immediately.

DIRECTIONS:

Thaw one roll of Phyllo, following thawing instructions on package. Preheat oven to 400°F. In a medium mix-ing bowl, combine the cream cheese, bacon, cheese and ranch dressing. Mix thoroughly. Open the Phyllo and cover the sheets with a damp towel or plastic wrap to prevent drying out. Place one sheet of Phyllo on cutting surface and lightly coat with cooking spray. Repeat with nine more sheets of Phyllo, but do not spray the top layer of Phyllo. Spread cream cheese mixture evenly over the layered Phyllo. Starting with the long side of the Phyllo, begin rolling the pinwheel tightly. Spray the last quarter inch border of Phyllo to seal the seam. Cut the pinwheels into ¼ – ½ inch segments and arrange on a baking tray. Coat the outside of the pinwheels with cooking spray. Reroll unused sheets and follow storing instructions on package. Bake for 10 – 12 minutes. Serve.

On slow speed, mix the American Almond® Almond Paste with the sugar and gradually add the eggs to create a smooth paste. Scale into 2 oz pieces or the size of your choice. Gently roll each piece intoAmerican Almond® Sliced Natural Almonds, shaping it into 4” lengths with tapered ends. Form each piece into a crescent shape. Place onto parchment-lined sheet-pans and bake 12-15 minutes at 400°F or until lightly browned. Brush with hot apricot glaze as you take them from the oven. DIRECTIONS:

Prepare penne according to directions. Toss penne with vegetable oil. Combine onion and vinegar in a small bowl and set aside to soak for 20 min. Drain and reserve vinegar. Combine penne, reserved vinegar and EVOO. Cover and refrigerate until cool. Once cooled, add remaining ingredients and stir until combined.

Cloverdale Bacon Waffle Skewers With Korean Fried Chicken

INGREDIENTS:

For the sauce:8 cloves garlic2” piece peeled ginger5 tbsp. soy sauce5 tbsp. Korean chile paste2½ tbsp. rice vinegar1½ tbsp. Asian sesame oil1½ tbsp. honeyFor the chicken:1 cup fl our1 ½ tbsp. cornstarch1 cup waterCanola oil, for frying2 boneless, skinless chicken breast halves - cut in chunks

DIRECTIONS:

Whisk fl our, cornstarch, and water in a medium bowl. Add chicken; toss. Set in refrigerator. Add all ingredients for the sauce in a food processor. Heat sauce over medium heat in a heavy sauce pan and stir. Cook until it turns a little darker in color. Add ¼- 1/2 cup water if sauce is too thick. Set aside. Heat 2” of oil into a large pot. Heat over medium-high heat until a thermometer reads 350. Heat a waffl e iron. Whisk all ingredients for the waffl es together and aside while you cook the chicken. Working in batches, fry chicken until golden, 5-6 minutes. Drain on paper towels. Bring heat back up to 350 after each batch. Toss cooked chicken in sauce. Brush vegetable oil over hot waffl e iron on both sides and immediately pour waffl e batter into iron. Cook until golden brown. Lift waffl e out of iron and repeat. Preheat oven to 425F, place a sheet of parchment paper on baking sheet, lay Cloverdale bacon on parchment paper. Place in oven for about 15-20 minutes or until golden brown or desired crispiness. Put one piece of chicken, then a waffl e piece, followed by Many slices of Cloverdale Bacon and another piece of chicken on the skewer. Serve with melted butter and syrup to dip waffl e. Enjoy!

Mini Coconut Shortbread Cups

INGREDIENTS:

1/3 cup butter or margarine, softened2 tablespoons granulated sugar2 tablespoons raw sugar2/3 cup all-purpose fl our1/2 cup shredded coconut, coarsely choppedfrozen DOLE® Pineapple or Mango Chunks

DIRECTIONS:

Preheat oven to 350ºF. Spray 18 mini-muffi n cups with non-stick cooking spray. Stir together butter and sugars in medium bowl. Add fl our and coconut, mixing well to form soft dough. DIRECTIONS:

Stir together fl our, Ghirardelli Unsweetened Cocoa, and salt in a bowl. Beat butter on medium speed until fl uff y, about 5 minutes. Add sugar, and beat until light in color, occasionally scraping down the sides of the bowl with a spatula, about 2 minutes. Add peppermint extract. Reduce speed to low, and add fl our mixture, scraping with spatula if necessary, until fl our is just incorporated and dough sticks together when pinched with fi ngers. Wrap in plastic wrap, fl attening into a disk. Refrigerate until fi rm, at least 30 minutes. Preheat oven to 325°F. Line 2 baking sheets with parchment. Form dough into 1/2-inch balls, and place on baking sheets. Bake until fi rm, 10 to 12 minutes, rotating halfway through. Let cool completely on wire racks. INGREDIENTS:

½ apple pear, cored, peeled, thinly sliced and dipped in 2 tbsp orange juice1 frozen Dofour puff pastry sheet (or similar), thawedFlour for dusting1 tbsp unsalted butter, melted6-7 oz Gruyère (or a similar cheese), softened2 tbsp honey1 packed cup baby arugula6 slices prosciutto di parma

DIRECTIONS:

Preheat the oven to 400 degrees F. Heat a cast iron grill or griddle on high. Pat pear slices (previously dipped in orange juice) dry and place on the grill on high or medium-high heat. Grill on each side about 2-3 minutes until lightly charred. Remove the pears from heat and set aside. Place the thawed puff pastry sheet on a lightly fl oured working surface. Dust the top of the pastry with a little more fl our then brush with the melted butter. With a knife, divide the puff pastry into 6 squares equal in size. With the remaining melted butter, crease a baking sheet. Carefully transfer the puff pastry squares to the baking sheet. Portion the Gruyère equally on top of the puff pastry squares and add 2 slices of the grilled pears.Place the baking sheet into the 400 F degree heated-oven for 20 minutes. Once the pastry squares begin to puff up and turn a nice golden brown, remove from the oven. Top each pastry square with a drizzle of honey, arugula and a slice of prosciutto di parma. Enjoy warm or at room temperature.

Serves 6-8

DIRECTIONS:Heat a large saucepan over medium heat. Add the butter and linguica and allow it to cook for about 5 minutes before adding carrot, onion, and celery. Allow to cook for another 5 minutes or until onion is wilted. Add the garlic and cook a minute longer before adding the rosemary and French bread. Mix well then pour stock slowly over the bread as you mix. Once all of the stock is incorporated, cover the pot and allow to cook for about 5 minutes, or until it is heated all of the way through. Season to taste with salt and pepper. Serve while hot.

Arrange potatoes on prepared baking sheet. Lightly press potatoes using the fl at bottom of a glass until they are about 1/2 inch thick. Brush with remaining 2 tablespoons of the oil. Bake at 425°F until golden brown and crisp, about 25 to 30 minutes. Sprinkle with crispy garlic and rosemary. Season with salt and pepper and serve immediately.
