HI to all our readers …

Wishing a little sunshine your way in the summer days and weeks ahead and hoping you’ll have time out to relax and read some magazines and books. Definitely always part of my summer escape mission and high on the list of things that give me great pleasure. My latest was ‘Honeysuckle to Handcuffs’ by the vibrant and dynamic Cork lady Delia O’Callaghan (see our write-up this month). A great read that took me right into Delia’s American life which to me was a cocktail of ‘Sex and the City’ with her own trials along the way and absolutely open for a sequel!

I encourage you all to take pleasure and notice of the little happy elements of summer as we swiftly travel through it: the scent of freshly cut grass, sun tan lotion, blossom and citrus fragrances, charcoal BBQ’s. The sound of children playing, the ocean, birds singing in the early brighter dawn, the ice-cream van, and the wonderful sight of plane tracks in the blue sky, holiday makers visiting our country and increased numbers

of walkers and runners on our roads from dawn til dusk. Our own ‘Cream Dream Team’ are amongst the run/walkers and thanks to our leader Mary Dennehy we have already ran both the ‘Darkness into Light’ and ‘Glanmire Macra Fun Run’ and continue to meet at Cream every Wednesday at 7.30pm (all welcome). Not always easy but being part of a group really does encourage us to push a little harder.

We’re highlighting some of our outstanding ‘Elle’ members this month and if any other ladies are interested in joining just email me direct on [email protected].

In the meantime, read on, enjoy and Happy Summer to all.

Delia O’Callaghan

Picture this – a group of illegal immigrants,

handcuffed and chained together are being led into

jail in Tijuana on the Mexican border. They are

dressed in simple clothing and carrying torn plastic

bags with few possessions, nervously blessing themselves as they

kiss their rosary beads. Then, there is glamorous Cork woman

Delia O’ Callaghan standing out like a sore thumb at the end of

the chain gang, tripping over her long flowing dress in her high

heels and dragging her Louis Vuitton luggage behind her.

When Boston-based Irishwoman Delia O’Callaghan meets Frank,

she can’t believe her luck. He’s everything any girl could wish

for: rich, charming, handsome and fun. Whisked up into a world

of ritzy restaurants and jet set living, it looks like all of Delia’s

dreams are set to come true – that is, until US customs catch

wind of Delia’s lack of a Green Card when she tries to return to

the States after a trip home to Ireland for her sister’s wedding.

Frank returns to Boston without Delia, leaving her stranded in

Ireland with a big red ‘DENIED ENTRY’ stamp in her passport.

Determined to get back to the love of her life, Delia devises a

hare-brained scheme: if she can’t get into America a legitimate

way, then she’ll do what hundreds of thousands of people do

each year: she’ll sneak-in through the Mexican border. What’s the

worst that could happen... right? She asks herself, half-heartedly.

But the plan goes wrong. So wrong, in fact, that Delia finds

herself locked up in the San Diego Correctional Facility with a

foul-mouthed, religious, drug-trafficking, yet protective, lesbian

cellmate, Teresa. Not to mention Officer Lopez: the six-foot-two

prison guard, identifiable as a woman only through her lack of an

Adam’s apple. How is Delia going to cope? And will there be a

happy ever after?

Honeysuckle to Handcuffs is the hilarious, fish-out-of-water true

story of one woman’s journey who discovers over the course

of nearly a month in jail and a series of disastrous but comical

events that there might be more to life than Rolexes, fancy

cocktails and fine dining..

We meet up with Delia and she tells us as

long as she can remember she wrote in

her diary daily, transcribing her thoughts

and whatever happened to be going on

in her life at the time. Like many, she had

a romantic notion of someday writing

a novel. That day came – while living

illegally in Boston for 15 years she joined

a creative writer’s workshop at the Boston

Centre for Adult Education. Taking on

board the expert’s advice to write about

what she knew, Delia had an epiphany

- she was going to write a novel about

an Irish girl living and working illegally

in Boston. While dabbling away on her

untitled book she returned to Ireland for

her sister’s wedding, but then her world

fell apart - the Mexico debacle occurred.

Ironically, although her worst nightmare

came to fruition and she was already a

third way through her book, she decided

to rewrite and start again. She now had

new material (a story she couldn’t make

up) and ‘Honeysuckle to Handcuffs’ was

born - even if she did only have prison

medical forms to write on.

Believe it or not Delia’s novel is a

romantic-comedy and has received great

reviews, collecting many 5 stars on

Amazon. Ultimately ‘Honeysuckle to

Handcuffs’ is a cautionary tale sprinkled

with Irish wit – a real page turner that flips

between comedy and peril effortlessly. A

wild ride written with great jocularity and

originality. Following the great tradition

of Irish storytelling Delia brings you into

her life story and takes you along with her

on her incredible journey. A must read

for anyone who has ever ventured beyond

their native shores. Throughout the agony

and heartbreak, Delia’s undeniable laugh

out loud humour and wit shines through

out the 400 plus pages of this book.

‘Honeysuckle to Handcuffs’ interchanges

between all of the various stages of

Delia’s life, from her arrival to Boston

at the age of 25, to her jet-set lifestyle

working for a high-profile philanthropic

couple to prison life with a foul-mouthed

drug-trafficking cell mate. And believe me

- lots in stories in between.

A great book for a journey or anyone who

has lived in the USA or Ireland. Delia’s

vivid characters and hysterical storytelling

narrative pulled me in and I couldn’t put

it down– it’s like a female version of the

movie The Hangover. A true romantic

comedy that convinces you that such

things can only happen in romance

novels, until you realise it’s based on the

author’s true life experiences. A must read

for anyone with an appreciation for the

comedic twists and turns of today’s single

girls.

Delia, who works as a Production

Associate at EMC, says while she is unsure

as to what twists and turns lie ahead she

is certain of a second novel (she was a

winner in the inaugural Irish Writers’

Centre Novel Fair Competition) and warns

there will be more anecdotes as she has a

serious bout of the travelling bug. Delia’s

dream, besides returning to the States one

day, is to see her novel transported to the

big screen and jokes that Kate Hudson

could play her character. Jokes aside, I can

definitely see her movie on the big screen,

what a winner that would be… any takers?

GERALD KEAN & LISA MURPHY HOST CONCERT AT DRAYTON MANOR

The magnificent home in Wicklow of Gerald Kean and Lisa Murphy was the setting for a fantastic concert in aid of Cork Down Syndrome and Barretstown. DraytonManor saw 700 people attend the concert headed by Hot House Flowers and Mundi. It was an amazing event with Aslan’s hero Christy Dignam present and many of the well known names from showbiz, politics, business present. The Mayor of the County of Cork Cllr Alan Coleman and his partner Yvonne represented Cork and many others from the city and county also attended the event.

171 NEW DOCTORS IN UCC CONFERRINGS

171 students’ from across the four corners of the globe completed their undergraduate education in University College Cork as they were awarded Honours Degrees in Medicine, Surgery and Obstetrics. For the medical class of 2015, it marks the culmination of years of study, research and placement within the hospital system, and places them on the path of a fulfilling career in the years ahead. The ceremony featured a truly international base of Graduates from Austria, Canada, China, Cyprus, Hong Kong, Russia, Singapore, Shanghai, Malaysia and the USA in addition to students from the four provinces of Ireland.

Where would you find Mundy and Hothouse Flowers performing together on a Thursday Night? Drayton Manor in Co. Wicklow, the home of Celebrity Solicitor Gerald Kean, that’s where.

Security, Cars, Barbeques, lights and action a veritable hub of who’s who, all there to support Barrettstown and Cork Down Syndrome and Gerald Kean had no hesitation in hosting the event for these two worthy causes.

The Private Ballroom overlooked by a magnificent Giant Chandelier delighted guests as they danced and reveled to the inimitable sounds of Mundy and Hothouse Flowers bestowing them with cheers and enthusiastic applause with every number performed.

As I milled around with the guests I was delighted to see Christy Dignam of Aslan look so well and in fantastic form. I enjoyed a super conversation with Niall Farrell, entrepreneur and Dragons Den Investor about his love of opera and met a kindred spirit in terms of an appreciation of music, and a good work ethic. Bill Cullen and Jackie Lavin made their way to the upper balcony of the ballroom to enjoy the concert and it was evident that the talent on stage enthralled all.

Guests were treated to the generosity of their host as he held an open tab in his private Irish Style Bar. Without doubt a super evening with wonderful support shown for two very deserving causes.

Commemoration of Lusitania 100

Being on stage with President Michael D. Higgins as he gave a very moving speech in commemoration of Lusitania 100 was a very humbling experience as thousands of people lined the streets of Cobh to remember loved ones and relatives of the past who died in such a tragic way. The Lusitania was en route to Liverpool from New York and 1,201 people lost their lives in the tragedy.

I had an unusual encounter with a family from Glandore whose relative had been one of the rescue volunteers on the day of the heartbreaking tragedy. Along with

survivors, debris also had to be cleared from the water and he managed to salvage one of the Deckchairs from the Lusitania. The Family has managed to preserve the chair for what is now a hundred years. I was offered exclusive assess to this piece of history and one cannot fail to realize the privilege it was to have sat in this Deck-Chair that carries with it such a past and the poignancy of it representing so many lost souls was a real honour to experience.

7th of June sees the 60th Anniversary of Corpus Christi and I hope to see you all in the City Centre as I take to the Stage on Daunt Square to Celebrate this…See you then… Amanda x

Up until recently I had Great Lengths hair extensions and I wanted a change. Once I got them out I knew that I would need to change all of my haircare products and started using the Kenneth Murphy haircare range. Although my hair was not dam-aged from the extensions, it was dry so it needed a little TLC. This range has been my saviour! I use the Angel Wash and Angel Rinse every time I wash my hair and then once a week I use the Maxi Wash Shampoo instead of the Angel Wash to breakdown any build up that might have built up. My hair is in great condition from this and the quality of it has come on leaps and bounds and it is now once again silky smooth.

This has always been my favourite perfume. I recently bought a bottle of it and once again fell in love with it. It is a sweet floral fragrance which is perfect for summer. It is a fragrance that when I wear it gets lots of compliments so not only have I been wearing it this month but I will be all summer.

My go to nail colour is a natural pink gloss and this is exactly what Arm Candy is. It is a natural pink with a high gloss and like all Sally Hansen products, is of amazing quality. I wear this the whole time unless I get my nails done and it lasts at least a week without chipping. There is nothing worse than having to change your nail colour to go with an outfit but with this one it goes with everything – fool proof option!

During exams my skin always suffers from the stress. I came across this La Roche Posay cream which is anti-bacterial and I’ve been using it on any breakout since – this cream is magic. I have been putting it on at night or if I’m not wearing makeup on a given day I will put it on that morning then also. Canada, stretching from the United States in the south to the Arctic Circle in the north, is filled with vibrant cities - buzzing

multicultural Toronto, home to so many Irish, chic French speaking Quebec and Montreal and Vancouver - home for the last two years to my son! So with him in mind two Irish Mammies on a mission set off to visit their beloved handsome Irish young men who are living the dream in the land of the Maple Leaf.

Both graduates from UCC, they and quite a number of their friends now call the magnificent city of Vancouver their home. Living in that cool beach suburb of Kitsilano known locally as ‘Kits’ located in Vancouver’s West Side along the south shore of English Bay, working in the vibrancy that is ‘Downtown Vancouver’. It is the business, commercial, cultural, financial, government and entertainment centre of the city. Wall to wall skyscrapers will have your neck strained from turning skywards, such is the splendour of the buildings there.Chinatown, Coal Harbour, Gastown, Yaletown and West End - hire a bicycle and see them all. We stayed in the Fairmont Waterfront - the most magnificent hotel I have ever stayed in. Someone said when you arrive in the Fairmont it is like going home - well to no home I have ever known - it is 5star luxury and service at its very best! An amazing location on the dynamic waterfront with unparallel sweeping West Coast views, where sea planes taking off and landing will keep you enthralled against the back drop of the coastal mountains beyond. We

were blown away!

Bicycles were complimentary to guests as was the outdoor pool on the third floor roof top complete with hot tub and gym. Plush white robes and slippers, sleeping on

cloud like mattresses and you know you were in seventh heaven. The easy to follow map given to us by the helpful handsome, who never lost his patience with the two blonds Concierge will have you cycling around Stanley Park with its giant trees, totem poles in Brockton Point and stopping at one of the many trendy cafes bars that abound. Our favourite ‘watching the world go by’ place was an Irish Bar called Mahony’s Irish Bar, on the waterfront on Burrard Landing where the

food, hospitality and cute kilt clad beautiful serving staff went the extra mile all the time! Owned and run by the Mahony family originally from Tipperary it is well worth a visit.

The tourist office is located on the same block as Mahonys Irish Bar and the Fairmont Waterfront - go in and be

greeted with helpful staff who will give you all the information you will need to make your stay unforgettable. Take a harbour cruise in a paddle steam boat and be fascinated at the local history of Vancouver, go over the Lions Gate Bridge build by the Guinness Family, do not miss Granville Island with its colourful markets, hip people, organic food and laid back vibe! Whistler - what can I say - ski, treck, bike, eat, wine, dine repeat in jaw dropping scenery with staff everywhere who value your custom and will make you feel like you are visiting royalty! We loved catching up with our loved ones in the spectacular city that is Vancouver, that was blossoming in Spring and early Summer splendour, Art Culture, Sport, Entertainment, Land and Sea, Mountains and Beach - it has it all - miss it at your peril!

If you have someone there - go visit - you will feel like the exclamation mark at the end of the happiest of sentences!!!!!

Originally from rural Kerry does this influence your designs ?

The beauty of County Kerry has been a major influence in my work.The sun sparkling across Ballyheigue bay is almost certainly where my love of sequins and sparking embroideries came from.

Many of your dresses have been worn to events such as KFW and the Hi Magazine awards do you design with the average woman in mind ?

I always design with the average woman in mind , but never for a minute do I think of her as average. Each dress is designed to give her confidence and allow her inner Goddess to shine. I bear in mind the shape of womens bodies, and work hard to create enough different styles within each collection so that women of all shapes and sizes can find a THEIA dress that flatters their body shape.

What has been the highlight of your career thus far ?

I have been blessed with many highlights... Having My dresses worn by Nicole Kidman on the cover of Marie Claire and Natalie Portman on the cover of Instyle,of course dressing and meeting Oprah Winfrey and every time I see a woman looking gorgeous in one of my dresses.. thats always a highlight !!

What advice would you give to young fashion designers ?

Hello dear readers of Hi Magazine! I’m back again to tell you more about my trip in Ireland. This month, I enjoyed the sun by doing some sunbathes in the garden and I must said that I was a bit lazy but don’t worry, I did some visits too and discovered some new things about Ireland and I’m here to tell you all about it.

Where did I go? FOTA Wildlife Park. Since I arrived 4 month ago, I want to go in there. I’m fond of animals and nature, so when I heard about a Zoo whitout cages where animals can move like they want to, I knew I will go! It was fabulous! The park is beautiful and the general idea of the park is great. A zoo without cages seems to be impossible but obviously, it is. Of course dangerous animals like tigers or cheetahs are in closed area and the monkeys or giraffes etc have limited areas and they can’t cross the road. But still, when you walk in the park you can cross lot of animals like ducks, gooses, pelicans or even lemurs. You can also feed the different birds or assist to the feeding time for some oher animals like seals or pinguins.

What else? The Catalyst Cobh AGM 2015. It was a great social and networking evening where we all had great fun. To begin, in the Titanic experience we had a quick presentation of the Catalyst Cobh association which is a volunteer-led networking group for women in business in the east Cork. After that, we had a cocktail making lesson providing by Raise the Bar (to know more about this company: www.raisethebar.ie). The two cocktails were fabulous, so tasty and not to difficult to do at home. And to end the evening, we went in Cobh Past Time to take some old fashion’s pictures in a saloon background and the less we can say is that wearing those old clothes is really funny! (to know more about this company: www.cobhpasttime.ie). We had so much fun and it was really great to meet those great women so I want to say thanks a million to Catalyst Cobh and also to Susie Brown who invite me to come with her. Thanks!

I also had a great moment when my host family took me to Bunratty.Was it good? I liked the little old village. The atmosphere is really like in the old time. The village and the castle seems to be fixed in the middle age. Actually it make me think about the Sleeping Beauty castle, the all area seems to be under a sleeping curse and when you visit the inside of the castle you really could think that at the top of it you’ll find a princess sleeping in her bed waiting for her first true love kiss - Yes I live in a fairy tale.

What about the raining days? This month there was also a lot of raining days, and when everything is wet and depressing outside, the best thing to do is to go out and find something to do, not to become as depressed as the weather! So I went to Michelstown to do an all weather visit: Michelstown Caves.

Did I like it?It was a little bit creepy to go underground in those tinny and wet corridor... But fun! The visit was great and even if it can be creepy, it’s such a peacefull and healty place where there is no pollution, no noise, no light... you can just hear your hearts beatting. I also learned that sometime they organise some concerts and festivals in the cave and I think it should be fantastic to see that! Maybe I’ll have enough time to do that before leaving. I also visit a lovely Swiss Cottage with a great garden, it was really lovely and peacefull and there is a lot of enjoyable walks to do from the cottage to Michelstown Castle. Under the sun, it could have been great!

I realise that I don’t have so much time last in Ireland and I have still so much to see! I hope I will discovered some new places till the end of my trip. I say you goodbye dear readers of HI Magazine and I look forward to tell you more about my discoveries. This is me, this is my visit to Ireland and I’m loving it!

Heel Appeal!On Friday 22nd May a stampede of leggy brave men took to Patrick St in stilettos, pumps, kitten heels, wedges and leather boots all in aid of Corks 96FM Giving For Living Radiothon. Over 30 men including Johnny Sheehy and Pat Fitz from the Voice, Conor Healy from The Cork Chamber, Hi Magazines Michael Mulcahy, deputy Lord Mayor Kenneth O’ Flynn all joined The Opinion Lines PJ Coogan in aid of cancer. Deirdre blew the foghorn at 2pm outside Merchants Quay and what was to come next no one could have expected. I have never seen a bunch of more competitive men in my life. They men sprinted down the street faster than Usain Bolt! And the funniest thing is, no one ever said it was a race! Imagine what next year will be like...I’m thinking relay teams already. We were overwhelmed by the huge success of it. The shoes are locked away in a secret location as we felt the men were getting too used to them and enjoyed wearing them a little too much! Until next year guys...and we are going to make it as difficult as possible.

Ireland Vote Yes!

They say good things come in twos. Laurel and hardy, Posh and Becks, Cannon and Ball, so now there’s Julie & Brenda. Julie is my older sister. Why I mention her is that she said she would love to be mentioned in Hi Magazine for her birthday and I got to thinking how lucky I actually am to have a sister. Sometimes we fight, she gets annoyed when I borrow something without asking. Still, the good things about having a sister outweigh the bad, and here are some reasons I could never imagine your life without her:We share a bond no else around you understands. I act silly with her in public and couldn’t care less what people think. She’s the one person I can always count on for unfiltered advice and honesty, even if she’s way too blunt about it sometimes. Whether she tells me my makeup looks a hot mess or that my new love interest is bad news, she means well. We can get into the biggest argument ever but it won’t change anything. Even when she tells me she never wants to talk to me again an hour ago (because i keep leaving my shoes on her side of the room), she will will never turn her back on me over anything. The best thing about having a sister is that I always have a friend. I love you Julz.

Today, We are more truly a nation of equals.Last month the people of Ireland exercised their Constitutional right and by direct vote they said an emphatic ‘Yes’ to Equality. This referendum was all about belonging – Irish lesbian and gay citizens had to ask the Irish people if they too can belong to Ireland and belong in Ireland. In their deep generosity the Irish people said ‘Yes’– Yes, we belong. The result means that having been ‘branded and isolated’ for decades, each lesbian and gay person knows now that they too belong in Ireland, as full, equal citizens.

On the night of the referendum as we awaited Saturday’s result I was out in Cork city with five of my gay friends having dinner. The atmosphere around town was electric. Being surrounded by these five gay men and friends made me feel special. I was a lucky girl to be in their company on the night which history was made. I could see what this meant to them and I shed a tear for them as I was so glad to voted ‘Yes’. I knew I had done something that would make me forever proud. I will never forget that moment, that was a moment when I was my best self, when i chose to make my mark for an Ireland that could be a better and fairer place. Now I can’t wait for all these weddings, the only bad thing is I’ve so many gay friends I’m going to be broke!

Music Review with Brendan Fuller

GIG REVIEWAs music venues go, Slane Castle is Ireland’s official seal of approval. It says “We like your music so much, we’re prepared to be cold and muddy for an entire day.”

Unsurprisingly, just a handful of artists have been able to earn this prestigious honour since 1981.Starting with Thin Lizzy, U2, The Red Hot Chili Peppers and Bruce Springsteen all managed to attract hordes of Irish music fans to the iconic fields of Slane.And now, after 20 years and 8 albums, Foo Fighters have added their name to the list.

Up to 80,000 braved the typically Irish elements as The Strypes, Ash, The Kaiser Chiefs and Hozier kept them warm with a wide array of tunes. But I think it’s safe to say that they were meagre stepping stones to the main man, Dave Grohl. The most iconic figure of modern rock warmed the crowd to temperatures only a Dimplex heater could rival.

Dave opens with the guarantee; “I will keep you warm” and they swiftly launch into Everlong. After years of listening to this track on CDs, iPods, and Radio Shows it’s hard to imagine how they could enhance it any further. But just as the crowd is ready to crash into the final chorus, they pause. The crowd somewhat disrupted from their usual listening experience waits for the next lyric and when it kicks in, it’s incredible.

The rest of the set continued with a punchy, powerhouse approach which kept the crowd enthused but it was their tribute to Thin Lizzy that really got the Slane collective going. Jailbreak was their cover of choice which served as the perfect setup for All My Life.

This wasn’t the only time we felt Dave’s love for all tings Ireland. Later on in the gig, he divulges his own personal connections to Ireland.“I woke up in the morning, I walked around town and I thought ‘Oh My God every woman looks like my mother” So I called my mom and I said “Mom, you’re kind of Irish, I think” then a year later, just before Nirvana was headlin-ing the Reading Festival I said to my Mom “Hey, how about the week before the Reading festival, how about you, me and my sister rent a car for a week and drive around Ireland.”So now whenever people ask me “where the most beautiful country in the world is, I know. Because, I’ve driven on the Ring of Kerry and the middle of nowhere, you have a very beautiful country here.”Full brownie points for being such a great tourist Mr. Grohl!

Positives: The entire gig was a joy to behold. Foo Fighters were on top form and were very well pre-ceded by their supporting acts.Negatives: The weather. You’re always taking a chance with an outdoor venue and this time it didn’t pay off.Overall: 9/10. Only for the weather this would have been perfect. If you frequent the “Air-Guitar” then Foo Fighters are a must see.

After 5 years in the wilderness, the return of Brandon Flowers was eagerly antici-pated by Irish music fans. So much so, his European Tour opened in Dublin last month which was shortly followed by “The Desired Effect” debuting at number 2 in the Irish Album Charts.

His second solo effort opens with “Dreams Come True”. According to stereotype, this track should open with chimes followed by the repeated chant-ing of “Dreams Come True, yes they do. Dreams Come True, yes they do”… Oh wait, that’s exactly what it features!

I can honestly say I found myself cring-ing to this album after 20 seconds which made me worry about what lies ahead but with the intriguing intro of “Can’t Deny My Love” I was convinced into listening further.

As the album goes on you realise there’s been a lot of experimentation with each song. Although you may not like some of the efforts, you’re sure to like others.

Positives:Fans of The Killers will love it.Variety – Each song sounds different while maintaining Flowers distinctive brand.Progression – Flowers sounds more and more distant from his Killers days. Synth melodies have completely replaced the guitar riffs giving it an 80’s feel.

Negatives:Inconsistent – This album gets credit for having a range of different styles but it’s let down by a lack of consistent quality. Singles – I could be wrong but I don’t predict any of these songs to perform as well as “Crossfire” did 5 years ago.Disjointed – Again, lack of consistency is to blame for an album which at times can feel a little disjointed. I mean, it sounds similar as a package but there are certainly a few chinks in the chain.

Overall:Brandon Flowers - The Desired Effect6/10

RASPBERRY BRÛLÉE TARTAND BASIL SYRUP

SERVES 2

Raspberry Purée200g Raspberry Brûlée200ml Milk15 Egg Yolks150g Caster Sugar600ml CreamA few Whole Raspberries2 Pre-cooked Pastry Tart Cases

Basil Syrup60g Basil300g Olive Oil

Place the milk in a pan and slowly bring to the boil. Mix together the egg yolks and sugar to a creamy consistency. Gradually pour the milk over the egg mixture. Add the raspberry purée and mix. Add the cold cream and mix well. Pass the mixture through a sieve and put aside to rest for 15 minutes. Skim the top of the mixture to remove any froth with a spoon. Pour the mixture into pre-cooked pastry bases. Add fresh raspberries, but not too many as the mixture won’t set. Cook at 100°C for 1 hour 7 minutes.

Basil SyrupHeat some olive oil, add the basil and leave to in-fuse for 30 minutes.Blitz both ingredients together using a hand blend-er. Pour the mixture into a coffee filter and leave to drain for 4 hours.
