Directions:

Tomakethestuffing,placetheapricotsandsultanasinabowlandcoverwithboilingwatertosoakfor15minutes.Heatafryingpanoveramediumheatandmeltthebutter.Addintheonionsandfrygentlyfor6minutesuntilcompletelysoftened.Placetherestofthestuffingingredientsinamixingbowlandaddthecookedonions.Seasonwithseasaltandgroundblackpepperandmixuntilcompletelycombined.Setaside.

Preheattheovento200˚C/400˚F/Gasmark6.Butterflytheturkeybreastoraskyourbutchertodoitforyou.Layitflatonachoppingboardandpileonthestuffingdownthecenter.Carefully,tightlyrollitupandthenusingkitchenstringtieitin2-inchintervals.Placethestuffedandtiedbreastinalargeovalheavybasedpotwithalid.Ruballoverwithsoftbutterandseasonwithraselhanout,seasaltandgroundblackpepper.

Coverwithalidandroasttheturkeybreastinthemiddleshelfoftheovenfor1hourand20minutes(or40minutesperkg).Checkthatit’scookedbyinsertingametalskewertothecentertoseethattheskewerisveryhotandthejuicesrunclearwhenremoved.Basteregularlythroughoutthecookingtime.

15minutesbeforetheendofthecookingtime,removethelidandaddthefigsaroundtheturkeybreastanddrizzleallovertheturkeyandthefigswithhoney.

Removefromtheoven,transferthebreastandfigstoachoppingboardandallowtorestundertinfoilwhileyoupreparethegravy.Placethepotoveramediumheatandwhiskinthewhitewinetodeglazethebottom.Addinthechickenstockandreducebyhalf.Ifyouwantathickersauce,addthreetablespoonsofthegravyliquidtoasmallbowlandwhisk

Whenyouhaveasmoothmixturewhiskthisbackintothegravyandbubbleawayuntilitreducesthedesiredthickness.Seasonwithseasaltandgroundblackpepper.Carefullyremovethestringfromthecookedturkeyandthencarveingenerousslices.Servewiththewarmgravy,sprinkleofpomegranate,corianderandtheChristmassidesofyourchoice.
