Welcome summer! We are fortunate to live in the Sunshine State where we can step outside and enjoy bright sunny days and the daylight lasting longer into the evening hours. If you have kids I’m sure they are ready for their vacation away from school. It’s time to enjoy trips to the lakes or mountains, visit the coastal beaches to see beautiful historic lighthouses or attend outdoor concerts in your community.

As you plan your activities this summer there is so much to do in our local areas. The Heartland area has great golf courses, gorgeous lakes for boating or maybe some paddle boarding. Shop in our unique shops and boutiques then end your day dining at one of our finest restaurants for a lovely lunch or dinner.

Maybe this year’s vacation you might want to indulge yourself in a travel destination. Why not plan an exciting adventure with your family that you haven’t experienced. The National Park Services is celebrating their 100 Year Anniversary in August and we are proud to present one of our popular National Parks in this issue, the Petrified Forest National Park in Arizona. If you haven’t planned your summer vacation this is a great park for adults and children.

In this summer issue we present our special section “Weddings of the Heart”. We have heard from so many of you saying you look forward to this issue whether you are planning your wedding or just enjoy reading the story and seeing the gorgeous photos. Photographer Caroline Fox has captured the perfect romantic wedding photo shoot starting at the Boca Grande Lighthouse United Methodist Church, then to Banyan Street and ending our reception on Boca Grande beach. This photo shoot would not have been the success it was without so many amazing people and businesses that took their time and talent to make it possible. Thank you to all of you and our new friendship that I will cherish. Please see credits on page 65 and if you are planning you’re perfect day please visit their businesses. They will welcome you with open arms.

Agriculture is especially important to the economy of Florida’s Heartland, and for the Carlton family of Wauchula, growing and shipping watermelon has been a way of life for 40 years. “People have the idea that food comes from the store...anything that is on your table comes from a farm,” says James Carlton. Rafael Pacheco I am a Pisces and was born on the island of Puerto Rico, but ironically I can’t swim. My dog thinks I am crazy for locking the door so many times in 10 seconds and my cats think I am made of catnip. Everything I wear is black, gray or blue. If I put on something colorful I must have been in a hurry. Keep me away from triple layer chocolate cakes, flan or Oreos. They are my kryptonites. The 70’s were peaceful, the 80’s were rocking, the 90’s were military and the new millennium is inspiring. Photography is how I have let my artistic visions come to life since the early 90’s. Patience, kindness, sharing, sacrifice, love and not to judge I saw my mother practice these and they stayed within me. We are collective energy and all from the same Source. I don’t see the world through my eyes. I see it through my soul.

Jessica Pleger is a wife, mother, editor, writer and caterer. She attended the University of Central Florida where she received a Bachelor's Degree in Finance and worked as a paralegal for the past 15 years. She also is the owner and operator of Pink Pineapple Catering that allows her to fulfill her passions for cooking and entertaining. Jessica enjoys taking photographs and participating in community events throughout the Heartland. A lifelong resident of Florida, Jessica was raised in Hardee County and now resides in Avon Park with her husband, Jonathan and daughter, Finley Grace. In her spare time, she enjoys being outdoors, traveling and spending time with family.

Pamela Glinski is a freelance writer and photographer from Sebring, Florida. A former website administrator for CI Interactive Website Design and Internet Marketing in Naples, Florida, Pam attended Miami Dade Community College. This Michigan native is an avid outdoor enthusiast who can often be found photographing wildlife at Highlands Hammock State Park or in her own yard on Lake Sebring. Friends and family describe Pam as a great home chef who knows how to throw a dinner party. Because of her passion for travel, adventure, and great last-minute deals, Pam has been on numerous cruises and has traveled throughout the United States, Europe, the Caribbean, Mexico and Central America.

Katy Fassler has been telling stories since she was able to scribble her name in crayon on the wall. Hailing from Akron, Ohio, she moved to Sebring in 2006 to attend the Great Commission Bible Institute. Katy, an avid reader and book collector lives by Dr. Seuss’ advice, “Fill your house with stacks of books, in all the crannies and all the nooks.” Katy and her husband, Sean, live in Sebring with their two daughters, Adia and Emery.

Behind the Scenes

Layne Prescott Layne was born into a military family, has lived overseas but did most of her growing up in Arcadia. After meeting and marrying Mike Prescott, she moved to Wauchula in 1979, where they raised three children and now are reaping the benefits of their labor with six sweet grandchildren. As a child, Layne loved watching her mother and grandmother in the kitchen. Her cooking style is eclectic and best described as “Southern comfort cuisine”. Of course her husband Mike says that he made her “Chef” that she is today. Her greatest joy comes from three things: her faith, loving on her family, and getting in the kitchen and “whipping” up something good.

Adam Glinski has been a fitness enthusiast for numerous years and an industry professional in the Sebring area since 2013. As the founder of RUC Fitness, LLC, Adam serves his community with customized personal training, meal plans, and fitness apparel. Adam enjoys traveling, running, the outdoors, and is a member of the Florida Army National Guard.

Bridgette K. Waldau has been a graphic and fine artist for over 30 years. She moved from Illinois to South Florida in 1972. She received her A.A. from the Ft. Lauderdale Institute of Art and a Bachelor of Fine Art degree from Stetson University. She moved to Okeechobee in 1994 where she opened her studio, Bridgette Waldau Studio of Art. Bridgette has been creative director for several publications, working with Heartland Publications & Marketing as creative director since 2011 and winning four Florida Magazine Charlie Awards in 2015. Bridgette is also very active in the community. She is arts and culture director of Okeechobee Main Street (11 years) and member of the Chamber of Commerce of Okeechobee County. Bridgette is married to James, a retired firefighter from the City of Hialeah.

Caroline Maxcy Fox runs a fine art lifestyle photography business based in the heart of Florida. After achieving her Bachelors in Studio Art from Florida State University where she focused on Design and Photography, she practiced in the field of design for six years before pursuing her Masters in Graphic Design at North Carolina State University in 2010. It was through this journey that she honed her artistic craft and developed a “way of seeing” that fuels her photography today. Caroline’s images have been featured on wedding and lifestyle blogs worldwide. But the true heart of her work lies in her pursuits to glorify God and “give back” through educational and charitable endeavors. Caroline has donated her time and talents to capture images and tell stories from rural communities in Peru to orphanages in Mexico to her own backyard.”

Katara Simmons I am an adventure seeker and a proud mom. My passions are capturing life moments on camera and raising my 10-year-old son Kaden. Professionally, I have 15 years of experience as a staff photographer for local newspapers and with my own business a Sebring-based photography studio, Kaptured by Katara. My special talents are shooting people, editorial content, and marketing images. I'm a Highlands county native and enjoy meeting people and exploring places around the world. When I'm not taking pictures, I am helping grow my family's business, Sebring Wholesale Meats.

Sharon Cannon is a professional photographer as well as a licensed aesthetician and makeup artist. Her passion has always been photography. She is an award winning photographer having transitioned from amateur to professional in 2010 when she was contacted by local publications to photograph events in the local area. She is a member of Okeechobee Main Street, on the arts and cultural committee. Sharon has lived in Okeechobee for many years, and has one son, Karl. “I love the history of our little town. I want to preserve all of our ‘todays’ through the lens of my camera, for our future ‘tomorrows’.”

Summer is here, and that means holiday outings, family barbeques, and the sweet, refreshing taste of watermelon. Quite often, those watermelons come fresh from Florida farms.

Temperate weather, level ground and multiple growing seasons have all helped make watermelon production a vital source of economic activity in Florida. In 2010, Florida lead the nation in the production of this traditional summer treat, accounting for about 18 percent of all the watermelons grown in the United States.

Farms is the family's sales company, Carlton Farms is the grow operation and Produce Central handles packing. Their companies have growing, packing and sales operations in Florida, Georgia, North Carolina and Virginia. Carlton added, “We also sell and ship out of Missouri, Indiana and Michigan.”

the variety and take between 80 to 100 days to mature. With its year-round growing season, Florida is the only state able to raise and supply this nutritious fruit during winter months. �

For the Carlton family's Central Florida operation, the planting of commercial seeded and seedless varieties of watermelons begins in February, with harvesting from May to July. Watermelons in Georgia are planted in March or April and harvested around the 4th of July, while crops in northern states can be harvested up until Labor Day. “Climate controls everything we do in farming,” Carlton emphasized.

Botanists have determined that watermelons probably originated about 5000 years ago in the Kalahari Desert of Africa. The earliest records of cultivation were located to the north in Egypt where hieroglyphics were found depicting the harvest. The popularity of the fruit later migrated to Rome, across Europe and into China. In 1576, Spanish settlers planted their first watermelons in Florida, where the fruit, because of its ease of growth, soon became a dietary staple for the settlers and the area's Indian population.

ow, there are over 1200 varieties of watermelons grown in 96 countries. The types that do well in Florida are the small, icebox-sized Sugar Baby or Mickeylee watermelons as well as the

larger Crimson Sweet, Jubilee, and Charleston Grey 133. Seedless watermelons are a sterile hybrid developed in the 1940s. They were created by cross-breeding a normal watermelon with one treated with the chemical colchicine, a plant-derived alkaloid used to increase chromosomes. What appears to be small white seeds sometimes found in seedless varieties are actually just underdeveloped, empty seed coats. �

or the Carltons, growing quality watermelons is a passion. “With our business, it is all about family and having the kids share our passion. It is a passion that runs deep,” said Penny Carlton who has worked as the

comptroller of the business since the couple married 35 years ago. “We have been blessed.”

“All of our children have been in the business at one time, as well as a couple of their wives. They all know it like the back of their hand,” Penny said of the five children and their families. While their older sons, Jason and Jake, have their own citrus business, JLC Farms, Inc. and Matt has ventured into the cattle industry, their daughter, Jame and son, Scott are both very active in the daily operation. Jame oversees transportation and food safety and Scott handles the farming operations, along with all the science that entails.

operations which produce 1500 -1800 loads of watermelons sold by Sun Fresh Farms, annually. The soil is prepared for drainage and tested for pH as well as levels of nutrients and minerals. “One of the best practices to grow a watermelon is to grow it as evenly as possible,” said James Carlton of the precisely timed irrigation, nutrient and spray programs that are necessary to bring the sweetest and best looking crop to market.

“The farming business is up and down, like life itself,” reflected Carlton, who has come through his own battles with cancer and leukemia. Heavy rains at the wrong time, plant disease, fungus and insects can take a toll on the watermelons. “The plant can't cure itself like we do.”

Carlton sits on the Board of Directors of the Florida Watermelon Association, an organization that not only promotes Florida sales and food safety, they also keep growers informed on new regulations, raise money for disease research, elect an annual queen who educates the public and they support the national association in their efforts to improve the safe way the industry “gets watermelons from the seed to the store.”

“That is a major part of this business anymore, food safety,” Carlton explained. In 2000, a first draft of industry guidelines was published for the Global Food Safety Initiative. GFSI brought about strict regulations that included the use of global identification numbers on all fruit and third-party food safety audits. Regularly scheduled audits include inspections of irrigation procedures, well water quality, fertilizer use, packing house cleanliness, as well as crew cleanliness and fruit handling methods.

atermelons have a shelf life of over two weeks when kept

at room temperature but can last over three weeks when refrigerated. When asked how to know when a watermelon is ripe, Carlton joked that the only way to truly know is to cut it open, but he suggested looking for a “dark yellow buttery colored belly” as a good indicator, especially on seedless varieties.

Healthy parts of any diet, watermelons are a good source of vitamins A, C, B1 and B6. They are rich in minerals, potassium and magnesium and contain more of the antioxidant Lycopene than any other fresh fruit or vegetable.

At 92 percent water by weight, watermelon slices are an excellent source of hydration. This versatile fruit can be used to make drink ice cubes by freezing cubed watermelon, a little water and some mint. The pulp can also be blended in smoothies or used on fruit kebabs. Even the rind is edible and has been used for pickling, stewing or as part of a stir-fry. And, a hollowed out watermelon filled with fruit salad can make an attractive centerpiece for any summer event.

In mid-May, news of an alligator stealing watermelons from a Hendry County field went viral and several national news networks picked up the story. In a response, on his Facebook page, Florida Agricultural Commissioner Adam Putnam stated, “Fresh from Florida watermelons are truly irresistible.” I agree.

Imagine a vast humid, sub-tropical landscape just north of the equator, with a large basin branching out with many rivers and streams winding through lowlands. The lush landscape supports coniferous trees up to ten feet in diameter, towering skyward two-hundred plus feet. Cloisters of trees, ferns, and giant horestails (horsetails) grow in abundance by the water. In dryer areas there are cycads, bennettitaleans, ginkgoes, and more coniferous trees. Welcome to Petrified National Forest 215+ million years ago during the Late Triassic Epoch. You would be standing somewhere in the southwestern edge of the super-continent Pangaea, the earth’s largest land mass of the time (today, you would be some place near Costa Rica). This lush forest supported diversified life forms such as vertebrates, fish, amphibians, reptiles, birds, and early dinosaurs. Many were big, some small.

From this early beginning, the landscape over time changed as Pangaea broke apart eventually forming today’s modern continents. In more recent times, approximately 13,500 years ago at the end of the last Ice Age, humans took up residence in �

the area. Folsom and Clovis camps have been found within the park, including fluted projectile points made of petrified wood. PEFO has been home to the Archaic culture, Basketmaker II and III, and Ancestral Pueblo People. Petroglyphs are found throughout the park, and in general range between 600 to 1100 years old. Some are older, with the oldest one to date being 2000 years old. Over 1,000 archeological sites have been identified in Petrified Forest, with barely half the park being surveyed. The Hopi, Zuni and Navajo cultures today share centuries of connections with this region.

Petrified Forest is part of a natural corridor. Not only was it used by prehistoric peoples, but was an area that the Spanish explored from the 16th through the 18th centuries in an attempt to find routes between Spanish colonies along the Rio Grande and the Pacific Coast. They too left their mark with some inscriptions that have been found dating to �

the late 1800s. It has been explored by US Army Lt. Amiel Whipple, surveying for a route along the 35th Parallel. Another interesting explorer was E.F. Beale, a US Government civilian contractor hired to build a wagon road along the 35th Parallel.

For a time he was involved in an experiment in desert transportation that involved camels and their drivers! Eventually, the government declared that a failure. The wagon road is still visible in parts of the Southwest. In modern times, the park is still home to a small section of the famous Route 66, the Painted Desert Inn, which is now a museum and resting place where visitors can sit and even enjoy a picnic, and the Burlington Northern and Santa Fe Railway (originally the Atlantic and Pacific Railroad in the early 1880s) running more than sixty trains a day through the park visible at the bridge by Puerco Pueblo.�

In June 1906 President Theodore Roosevelt signed the Antiquities Act. Later that year Petrified Forest became one of the first locations set aside as a national monument. Between 1934 and 1942, the Civilian Conservation Corps helped improve the park by building facilities, roads, and trails. In 1962 Petrified Forest became a designated national park.

1964 heralded the National Wilderness Preservation System and six years later, one of the first wilderness areas in the National Park System was designated within PEFO. In 2004 President Bush authorized expanded boundaries for the park, allowing for an increase of 125,000 acres bringing the park to approximately 218,533 acres. The latest expansion property is a back-county area called The Devil’s Playground, a landscape of unimaginable hoodoos and a treasure trough bone yard.�

Today, PEFO is staffed with and continues to attract paleontologists, archaeologists, geologists and botanists from all over the world. They work and come to study the secrets held captive within the Chinle Formation (formed as a result of large river systems that flowed northwest through this region which today runs from Nevada through Arizona, depositing well over 900 feet of silt, sand and gravel, burying the channels and floodplains). It is a photographer’s dream, a hiker’s thrill and a back-country camper’s nirvana.

Situated on the 18th hole of one of Sun ‘N Lake’s beautiful golf courses, Island View Lakefront Restaurant & Pub has a beautiful view to enjoy a fantastic lunch or dinner. The island theme sets the mood for their delicious Caribbean inspired menu. This restaurant is open daily for lunch and dinner and Head Chef Kevin Heim has upgraded the menu to include seasonal fresh produce and local ingredients. Chef Heim was assisted by associate chefs Jamal Alsendy and Ray Andino. Chef Heim has been a chef for over 30 years including eleven years with the Ritz Carlton of Atlanta and St. Louis before joining the Island View three years ago.

Chef Heim prepared a selection of their favorites for us to enjoy and experience the new additions to the Summer Dining. A new appetizer that we sampled was the Smoked Salmon Spread Platter that is served with herb grilled flatbread, capers, hard boiled eggs, cucumbers and tomatoes. It was delicious and fresh, the toppings paired perfectly with the slightly smoky salmon. We then tried the new salads, the first being the popular Strawberry Spinach Salad. Baby spinach tossed in an orange blossom honey vinaigrette topped with fresh strawberries, toasted almonds, and gorgonzola cheese. The second new salad was the Caribbean Grilled Jerk Chicken Salad that has Jamaican jerk seasoned

chicken breast on baby mixed lettuce tossed in a honey lime poppy seed dressing with ripe mango, marinated bell peppers, and toasted almonds, topped with fried dumpling strips. This is a unique and tasty salad, perfect if you like a little spice.

We shared the customer favorite Fried Green Tomato BLT served on Jalapeno Cornbread with Applewood smoked bacon and roasted red pepper horseradish aioli. It’s the perfect BLT in my opinion. A new addition to the summer menu for a main course is the Broiled Salmon Filet topped with a mango orange blossom honey glazed broiled and then topped with a Florida lemon zest gratin served with Caribbean yellow rice. It was a very light and satisfying dish. For the pasta lovers they offer the Italian Sausage and Peppers Papardelle with broad Italian egg noodles topped with tomato basil marinara sauce, grilled Italian sausage, roasted bell peppers, and shredded aged parmesan cheese. The pasta was cooked to perfection. Finally we had one of my favorites, the Filet Mignon cooked to a perfect medium rare and topped with cracked peppercorn garlic butter and crispy onion straws served with Yukon gold mashed potatoes.

The Island View’s Sunset Dining menu includes a glass a wine or a beer and is perfect for a weeknight dining option offered from 3:00 p.m. to 7:00 p.m., Tuesday through Saturday, with the full menu available all day. Island View’s staff will make sure you feel right at home and all your needs are met. You will definitely leave with a pleased palate and a full stomach. Enjoy the new summer menu items until the end of August, then they will change the menu and offer something new and innovative in the fall. Island View also offers banquet room and catering options to meet your every need when it comes to a perfect dining experience.

THEATREIn Okeechobee on April 7 -9, the Osceola Middle School gymnasium transformed into a magical theatre. A talented cast, made up of middle school students, performed Disney’s Beauty and the Beast. The musical was well received by all who attended and it was a great experience for the young actors.

I think that arts in school are extremely important and beneficial for young people. The opportunity that was given to the students at Osceola Middle School are not always available in schools. However, there are many reasons why children should have access to theatre.

It’s a creative outlet and a challenging one. The youth need a way to be able to express themselves and their thoughts. What better way than through theatre? It challenges them to open their minds, explore different worlds through scripts and characters. They get first hand experience on telling a story.

Students are also learning a huge host of skills. Very few kids who participate in youth theatre (community, school or otherwise) go on to become professional actors, as it is a very hard industry to break into. But there are so many important skills that can be learned and used in their everyday lives.

Reading and reciting from scripts increases verbal and literacy skills, while working with a director or choreographer increases their listening skills.

Many theatre companies offer volunteer opportunities, such as being a stage manager, technical operator, prop designer or usher, which gives actual job skills training that can be used towards careers behind the scenes or in the business side of theatre.

learning how to take steps into achieving a goal. When performing in front of their peers or an audience, they’re learning self-confidence and bravery.

Students, who get cast in a major role part learn how to accept their achievements with grace. When they don’t get the part they want, they’re learning to deal with disappointment.

As they practice their lines and rehearse their choreography at home, they’re learning about the importance of giving your best effort and not letting down your teammates. Students are practicing hand/eye coordination when learning dance and stage movements.

When something goes wrong on stage (which has been known to happen), students learn how to deal with the unexpected, how to stay cool in an emergency, how to roll with the punches and keep the show going on.

If cast in a show with kids they don’t know or don’t like, the student is learning how to deal with others Being in a cast together creates incredibly strong bonds over a very short period of time. When you’re working together with a group of like-minded people to create a cohesive piece of work, it’s kind of inevitable.

Supporting children's theatre in your area is helping kids grow into confident, capable young men and women.

Many individuals and organizations donated money and time to turn the Osceola Middle School gym into a big stage where talented students were able to shine in the spotlight and empower their creativity. The experience will live within their lives for many years to come.

Check with local schools in your area, to see if they offer children drama or theatre programs. Also, many community theatres offer after-school or summer children's theatre. You can show your support by helping with your donations, time, talent and most of all attending the play or musical. If you are a supporter of the arts, don't forget the youth.

Even though Florida is a top vacation destination, those of us that live here still need to take a vacation ourselves. Vacations are a great time to kick back, relax, and let loose. You deserve it. You work hard and some rest and relaxation are in order. Do not however, let your vacation derail all the hard work you have put into your body. Whether you are going on a cruise, having a stay-cation here in our beautiful state or heading off somewhere else, here are my top vacation exercise tips.

START YOUR DAY RIGHT. Home life typically involves waking up and following a rigorous schedule. While on vacation, your schedule is your own. Mornings are the best time for vacation workouts. If you try to wait until later in the day you may find yourself wrapped up in other fun activities and not get around to your workout. Morning workouts are also a great way to boost your metabolism and start your day feeling great.

BODYWEIGHT EXERCISES. No gym at your hotel? Camping? Packed cruise ship gym? Don’t forego your workout. Bodyweight exercises such as push-ups, squats, crunches, and lunges are great for you and can be done anywhere. Combine these into challenging circuits to get pumped and get your heart rate going at the same time. Example: 10 push-ups, 20 squats, 25 crunches, and 10 lunges each leg followed by a 30 second rest, repeated five times through.

WALK WHEN YOU CAN. As you travel you may have opportunities to sight see. Walk wherever you can. If where you’re going is just blocks away and the route is safe, don’t hail a cab or hop a bus, use your feet. Offset those extra vacation calories with extra steps while taking in your surroundings. Have a plan. You put in time exercising at home and do not want to throw off your progress in a week. Create a simple vacation exercise plan. It is proven that those who plan have better success adhering to exercise routines.

GET A MASSAGE. What says relaxation more than a massage? Massages are perfect for stiff overworked muscles and an amazing way to melt away your work stress. Starting your vacation with a massage is a great way to ensure you are primed to fully enjoy your time off.

We take vacations to relax and rejuvenate ourselves so we can continue to be great at whatever we do. Maintaining an exercise regimen while on vacation is vital to that progress. Morning workouts get your day started on the right foot and body weight exercises are amazing, especially if equipment or space is limited. Plan what you are going to do to ensure your success and add in extra steps whenever you can. Starting your vacation with a massage is a great way to prompt relaxation but don’t forget to stretch everyday as well. I hope you enjoy your vacation and your workout.

Easy Shortcut Oriental Slaw

2-4 pkgs any type of slaw1 bottle (Kraft) Toasted Sesame Oriental Dressing2 Tbsp. sesame oil2 Tbsp. rice wine vinegar2 Tbsp. sugar (or sweetener)1 tsp. garlic powder1 Tbsp. soy sauce1 jar black sesame seeds (toasted)1 bag sliced or slivered almonds (toasted)1 bag crispy wonton strips (found where croutons located)Ramen noodles-Chicken or Oriental flavor (reserve seasoning mix for dressing)

Place slaw in bowl or pan. Do not add any other ingredients until ready to stir and serve.

Place dressing, oil, vinegar, sugar, garlic powder and soy sauce and Ramen Seasoning packet in jar or container with lid. Shake to mix. Reserve until ready to eat.

Right before you are ready to serve and eat, add sesame seeds and almonds to slaw mix. Pour dressing over and lightly toss. Sprinkle top with crispy wonton strips and broken up Ramen noodles.

Short Cut Coconut Cake to Feed a CrowdCake-large disposable pan2 boxes yellow cake mix2 (divided) small boxes instant vanilla pudding1 can Cream of CoconutFrosting1 large container Cool Whip½ cup milk½ box instant vanilla pudding1-8oz package cream cheese softened1 cup Marshmallow Fluff1 bag coconut

Preheat oven 350 degrees. In large mixing bowl mix cake mix, 1 and ½ box pudding. Follow cake instructions on box (Note: may substitute coconut water for plain water.) Prepare pan with non-stick baking spray and pour cake batter into pan.

Bake according to directions. Once removed from oven, poke holes with wooden shish kabob stick or large fork. Open cream of coconut and stir completely before pouring over cake. Allow to sit overnight while cooling and absorbing CoC.

Frosting: Mix Cool Whip, ½ box pudding and remaining ingredients except coconut. Spread over cooled cake. Top with coconut.

Hot Bacon Potato Salad

5 pound russet potatoes2 large sweet onions (large dice)1 lb. bacon, diced and cooked (save bacon drippings)6 hard boiled eggs1 Tbsp. white wine vinegarsalt & pepper to taste2 cups mayonnaise1 cup sour cream

Peel and cube (large cube) potatoes. Rinse and cover with water in large pot. Bring to boil watching carefully and cook until tender. Drain in colander and use same pot to cook bacon. When bacon is nicely browned, add onion. Cook until just tender.

Put potatoes back into pot with bacon and onion. Add vinegar, seasonings, mayonnaise and sour cream. Stir until creamy and potatoes are coated. Add 4 chopped boiled eggs to potato salad and reserve two whole eggs for garnish. Taste potato salad and add whatever is needed (more salt and pepper or more mayonnaise).

This potato salad is great served warm or cold. Variation: Green olives or black olives for garnish.

On April 12, 150 guests turned out for South Florida State College Foundation’s 32nd Annual Spring Gala which featured a masquerade theme at the Hotel Jacaranda. Before the guests started their meal of filet mignon, lobster, and cannelloni prepared by the college’s culinary arts students, SFSC president Dr. Thomas C. Leitzel thanked everyone for the support they offer the college’s students. The auction, donations, and ticket sales raised $33,000 for SFSC’s Partnership Project, a major capital campaign to bolster the endowment. The gala was sponsored by Century Link, Florida Hospital Heartland, State Senator Denise Grimsley, State Rep. Cary Pigman, Cowpoke’s Watering Hole, Don and Ruth Geldart, and Terry and Filomena Atchley.

The 42nd Annual SUN ‘n FUN International Fly-In & Expo presented by VISIT FLORIDA and the Florida Restaurant and Lodging Association took place Tuesday, April 5 – Sunday, April 10, 2016 in Lakeland, Florida. There were daily workshops and forums for all ages and spectacular airshows. Attendees will enjoy over 500 exhibitors, a Kids Zone play area, tours, displays, a wide variety of food vendors, car shows, evening entertainment, and much more. Approximately 200,000 guests attended from over 60 countries. This year’s theme was Honoring Our Armed Forces and each day was dedicated to a specific branch of the military.

The Pregnancy Center of Okeechobee welcomed guests for An Evening with Tim Tebow on April 8 at Quail Creek Plantation. Tim Tebow is a two-time national champion, first round NFL draft pick, and Heisman trophy winner. He is currently a college football analyst for the SEC Network and founder of the Tim Tebow Foundation .

Several items were auctioned off to help raise money for Spring Fundraiser. These item consisted of autographed Tim Tebow memorabilia, a stay at Quail Creek Plantation, a commissioned oil painting by Brad Phares and a seat next to the former Florida Gator quarterback at the event. The mission of the Pregnancy Center of Okeechobee is to serve as a sanctuary where, through the offering of life-affirming alternatives, the unconditional love and acceptance of Jesus Christ may flow to women and families facing pregnancy or abortion.

For more than six decades, Florida Hospital has earned our patients’ trust by promoting health, treating illness, giving compassionate care

and providing state-of-the-art technology. Originally known as Walker Memorial Sanitarium and Hospital, today’s Florida Hospital traces its

roots to an abandoned facility, which at various times housed a resort, health center, hotel, casino and military training center.

In 1925 a large hotel was built on the shores of Lake Lillian, which attracted many vacationers seeking Florida’s warm winter weather. Business

was so good that the owners added a casino and an 18-hole golf course. After the stock market crash of 1929, the place went bankrupt.

Claiming to be a doctor, Helen Randle purchased it in 1936 and convinced residents to invest in what she promised would be an innovative

health-and-fitness center. After raising money for the project she left town presumably to recruit a staff, but authorities in Massachusetts arrested

her for fraud.

During World War II, the U.S. Air Force used the facility as a training center for aviation cadets. The property was abandoned and turned over to

the War Assets Administration following the war, which meant a not-for-profit organization could buy it for a highly discounted price.

Around 1947, an Adventist minister from Wauchula visited Avon Park attorney Pardee to solicit a contribution to the church’s annual Ingathering

and discuss the need for a local hospital. Working together, they reached out to A. C. Larson, administrator of the Florida Sanitarium in Orlando.

Larson sent Marvyn and Marie Baldwin to Avon Park to start the project.

The Adventists “purchased” the property – hotel, casino and aircraft hangers – from the government at a 100 percent discount. It would take

$400,000 to convert the facility into a hospital. Local businessman Charlie Walker led a campaign to raise $150,000, with the Adventist church

promising the balance.

Larson put Baldwin in charge of getting the hospital ready. Government officials offered a warehouse full of World War II hospital ship equipment

– beds, operating tables, sterilizers, chairs and more. “It’s all yours, but you’ve got two days to get it out of here,” the government official said to

Baldwin. They quickly emptied the warehouse and opened the 63-bed hospital a few weeks later.

Walker died of a heart attack before the fundraising goal was completed. To honor him, it was named the Walker Memorial Sanitarium and

Hospital. The “Sanitarium” part of the name was later dropped, but the name “Walker” remained for almost 50 years.

Walker Memorial Hospital grew over the years, adding other facilities in nearby communities. A Lake Placid campus opened in 1982 and Wauchula

hospital joined in 1992. By 1997, the aging Avon Park facility was replaced with a new 101-bed facility called Florida Hospital Heartland Medical

Center in nearby Sebring. Today, the 147-bed hospital treats more than 61,000 hospital patients and hosts more than 8,000 surgeries. Florida

Hospital continues to set the pace for health and wellness in the Heartland.

community.

This report summarizes each of our destination programs, including interventional cardiology, electrophysiology, endovascular

therapy and vascular surgery. It demonstrates not only our growth trends, but compares our clinical outcomes to nationally recognized

standards of performance.

Stemi Program

One of the foundational components of the Heart & Vascular Center

is the STEMI Program. The clinical outcome and ultimate survival of

a patient presenting with a heart attack (ST Elevation Myocardial

Infarction) is dependent on the speed and ability to re-establish

blood flow to a blocked heart artery. Prompt response times and

appropriate therapy “saves heart muscle and lives”. The success of this

program requires patients’ awareness of the signs and symptoms of

a heart attack, rapid response, transport to a dedicated STEMI center

and initiation of protocol-based therapies by a dedicated team of

interventional cardiologists and support staff.

The national standard (Door-to-Balloon Time) for patients arriving

in an Emergency Room with an MI (Door time) to time to open a

completely closed heart attack artery (Balloon time) should be less

than 90 minutes.

A key focus of the FHHMC Heart & Vascular Center is our Code STEMI

Program. Utilization of standard protocols, rapid triage and timely treatment

delivery ensures excellent patient outcomes.
