Farm Fresh to You

Ask any of my close family andfriends and they’ll tell you that I'ma full-fledged traveler and foodie

at heart — I live to eat and travel. My mostrecent venture took me to New York Citylast month, the concrete jungle wheredreams are made. You could definitely sayit was a vacation to remember, as I winedand dined with friends and family, shopped to Sex and the City standards, met the Today Show's Ann Curry, caught afew Broadway shows and even saw myfavorite singer Lea Salonga perform live at

The Carlyle on the UpperEast Side. Who could askfor more, right? Well, better yet, upon myreturn home I noticedthat despite all the eat-ing that took place, Isomehow managed todrop a few pounds(thanks to all the walk-ing I did)! However, this week,

with a gigantic porkchop craving before me, I hit up some ofthe most incredible restaurants ourisland has to offer, that in fact creditthemselves on serving up some of thebest pork chops in town.I couldn’t resist. It’s now safe to say

that all those pounds I thought I had leftfor good in NYC have miraculously reap-peared, all thanks to these “Ono, YouKnow” pork chops — but no complaintshere! Eat up!

Kit n KitchenThe best of both worlds collided

when Kit and May Yiu opened the Euro-Asian eatery Kit n Kitchen back in 2001on University Avenue. And since then, Ican proudly say that I am a big fan of

its zesty, to-die-for cuisine. Being aEurasian girl myself, I really can't gowrong — there’s not one item on themenu I don't like. Believe me, you’ll beoverwhelmed with all the menuoptions that you’ll want to samplethem all!No matter what you order here, a pletho-

ra of exotic and tasty flavors will consumeyour palate with the very first bite.“Our most popular pork chop dish is

the Pork Chop Chimichurri ($13.95),”Kit says. This tasty dish showcases tender

pieces of bone-in pork chop that arecharcoal-grilled to perfection and thensmothered with Kit’s personalchimichurri sauce.“Chimichurri sauce is originally from

South America and features a blend ofparsley, garlic, onion and olive oil — it’svery healthy and tasty,” he exclaims.“The sauce does have a touch of spice,

but customers seem to speak very highlyof our sauce here.”Available for lunch and dinner, the

enticing entree comes complete withmixed vegetables and your choice of riceor spaghetti. Also, make it a point to devour Kit’s

Mushroom Pork Chop ($11.95) and PM

Pork Chop ($11.95).

The RoyalTreatment

The Royal Hawaiian, a LuxuryCollection Resort exudes ataste of pure splendor as it

presents a new farmers market-inspired Sunday brunch “Royal 220”from 10 a.m. to 2 p.m. today (Sunday)and Aug. 21 beneath the banyan treesin the resort’s Coconut Grove. In aneffort to support the local farm indus-try in the islands, Royal Hawaiianexecutive chef Hans Stierli has creat-ed a captivating fine dining experi-ence utilizing only the best and fresh-est local produce provided by farm-ers within the 220-mile radius of theHawaiian Islands.

“Using local products is beneficial to theenvironment, being that you don’t have toworry about shipment of the products,” saysStierli, who has served as executive chef ofthe resort for the past three years.

“You also support the food source and thefarmers who are producing quality products. It’s important that people are aware of whatthey’re getting and what they’re putting intotheir bodies — it’s safer when you knowwhere the product is coming from,” he adds.

The brunch is priced at $48 per adult and$32 per child (ages 3-12) and features hot sta-tion selections offering up exquisite culinarymasterpieces, such as Soy and Sake braisedKuahiwi Ranch Beef Sirloin Tips on creamedKahuku Corn served with fried Maui Onion;Fire Rock pale ale and Maui Onion braisedKuahiwi Ranch Sirloin with grilled Surfing

Goat Cheese Polenta; Charcoal grilled KuahiwiRanch Sirloin Steak; and Pier 38 Catch sauteed withspicy Wow Farm tomato sauce, steamed jasminerice infused with coconut grove kefir and lemongrass, to name a few.

And for the breakfast fanatic, marvel in thetempting spread of Hawaii ranchers Red Veal LocoMoco with poached island egg and fresh Hamakuamushrooms, not to mention Stierli’s famous KaluaPork Hash with Poached Egg, topped with a mus-tard hollandaise sauce and a flavorful Kona Coffeebarbecue sauce. Or why not indulge in the TaroPancakes with Ho Farms apple bananas andcoconut syrup?

“It all comes down to the quality of the product,”Stierli says. “It's not the chef who makes the ulti-mate difference, it's the quality of the product.

“The idea is to get the farm-ers to deliver the products onthe peak of its ripeness, sodeliveries come in three timesa week. As for the Royal 220brunch, we’re so happy to beworking with local farmers,”he exclaims.

A symphony of fresh fruitsand vegetables also will invig-orate your senses as Stierlidelicately puts the finishingtouches on items includingthe alluring Ahi Sashimi on BigIsland Mashed Avocadospaired with Nalo Farm micro-greens and drizzled with ayuzu-wasabi dressing. The HoFarm Greek Salad andHirabara Farm Greens withspiced Macadamia Nuts

served with a coconut grove herb vinaigrette areexpected to be a hit with guests as well. Then sat-isfy your thirst with refreshing juices and smooth-ies, such as fresh orange and guava juice the HoFarm Apple Banana and Kula Country FarmStrawberry Smoothies. One of the perks of being inparadise also means sampling a medley of island-grown fruits, consisting of Haliimaile Pineapplewith li hing mui powder, Aloun Farm cantaloupeand watermelon, Kahuku Farm papaya, Kula straw-berries and more.

“I love to support local farmers and producers, and I think they deserve to be known,” Stierli says.

“Usually the chefs are the ones in the spotlight, but I think it’s important that the public knowswhat these farmers are providing us with.”

Indeed, Hawaii is a mecca when it comes to hav-

ing a variety of premier ingredients at your finger-tips — a culinary playground of sorts.

Finally, end your dining experience on a sweetnote, by sinking your teeth into delightful dessertssuch as the Waialua Chocolate Fondue, Coconutand Strawberry Tartes, and, of course, pies galore!

“We have a lot to offer,” Stierli states, adding,“dish selections do depend on the availability ofthe product. For example, I may have to substitutea vegetable or fruit for another because it's notquite ripe — so there may be a bit of variation tothe menu.

“What I really want to get across is that I believea good relationship between the farmers and chefsis extremely important when it comes down to cre-ating an excellent finished product — and that’swhat I think we’re offering here.”

Jade has long been associatedwith riches and nobility, withnumerous cultures all over the

world reserving the rare stone foruse in only the finest objects, jewel-ry and art.

So when Jade Dynasty SeafoodRestaurant, part of the Hong Kong-based Paramount Banquet Halls, opened last December on the fourth-floor Hookipa Terrace of Ala MoanaCenter, no expense was spared increating an all-around dining experi-ence fit for royalty.

Two bronze horse statues wel-come guests through the glass dou-

ble-doors, which lead to an awe-inspiring dining space decorated inlush fabrics, glass chandeliers andan illuminated bar that stands in thecenter of the main room.

But diners shouldn’t be intimidat-ed by all this grandeur.

“We look expensive, but we areaffordable,” says restaurant directorAve Kwok, who designed JadeDynasty around the theme of “afford-able elegance.”

“Our concept is to welcome every-one to sit in a super nice environ-ment and enjoy what they reallylike,” he explains.

And it seems customers reallylike the dim sum.

“We have many local peoplevisiting us for the dim sum forone simple reason: The dim sumis great!” Kwok says, adding, “Wehave more than 75 different typesof dim sum, starting at $2.95.”

Dim sum service starts at

10:30 a.m. and goes to 5 p.m. everyday, with new items introduced tothe menu weekly. The newest addi-tion is the Snow Mountain Char SiuBuns, what Kwok describes as “hot, melting and ono!”

Other popular dim sum disheswith restaurant regulars are thesteamed Chive Dumpling ($3.50),Pan Seared Bean Curd Roll with freshshrimp ($3.50), Red Bean Jim Dui(fried mocha balls with red beaninside, $2.95), Beef Look Fun(minced beef hand-wrapped withrice noodles, $4.50) and Egg Custard($2.95).

But for those dining at JadeDynasty for the first time, the sheerquantity of delicious dim sum mayseem overwhelming. To help new-bies get a taste for the menu, Kwoksuggests starting with four tried-and-true favorites: Zhongshan PorkDumpling ($3.50), soft, mouth-water-ing pork and gravy wrapped in a

crisp-white dumpling skin; TaroBuns ($3.50), fresh taro wrappedwith fresh pork and deep-fried;Mochi Rice ($3.50), dried shrimp, lap chong sausage and mocha ricewrapped in fresh lotus leaves andsteamed hot to serve; and OrangeJuice Balls ($3.50), a refreshing cit-rus-custard dessert.

“These are very famous dim sumdishes,” Kwok says. “They are whatHong Kong people always die for, they taste so good.”

The dim sum may be killer, but themain entrees are quite noteworthyas well. Starting from $12, the dinnerspecials run all day, with a selectionalmost as vast as the dim sum.

A few popular entrees includeTea-Smoked Shrimp ($23.95), liveDungeness Crab ($18.95), DynastyChicken ($19.95/half) made usingfree-range chicken, and Peking Duckwith fresh bun ($48), prepared in

the authentic old Chinese-style in aroast oven to retain the bird’s juicesand flavor.

“Our famous beef simmered in aspicy broth ($17.95) is also good,”Kwok says. “It is hot and spicy, in agood way.”

A cooling treat, the Hong Kong

Style Milk Tea ($3.95) is a specialtypeople once had to travel thou-sands of miles just to enjoy.

“All Hong Kong people love milk tea,and you do not need to travel to HongKong now!” Kwok says with a laugh.

With seven private VIP diningrooms, a 32-wide stage and top-notchaudio/visual equipment to rent, the8,250-square-foot restaurant is theperfect destination for family gather-ings, events or special occasion.

“Our parities at lunch and dinner

just went gang-busters!” Kwok says, noting that last month alone theythrew more than 60 graduation par-ties. Party menu prices start at $230for a party of 10, and can be cus-tomized to meet customers’ person-al food preferences.

“When you visit Jade Dynasty, wewant you to feel like a king and aqueen and eat whatever you like,”Kwok says. “When you shop andwant good food with a lot of choic-es, think Jade.”

No matter what kind of diet youkeep, if your food isn’t digestedproperly, you won’t get all the

nutrients your body needs — and yourstomach won't be happy either.

If you often suffer from indigestion, there is a school of thought in thehealth and nutrition field that the cul-prit could be food combining ortrophology. I’m not a nutritionist orhealth professional, but the theory isthat you shouldn’t eat carbohydrate-rich foods and protein-rich foods in thesame meal. So starch with vegetables orprotein with vegetables, but not all atthe same time. There are other foodcombination no-no’s, but vegetablesand leafy salads are believed to com-

bine well with all types of foods. The science is that protein needs an

acidic stomach to digest, and starchneeds an alkaline environment, so theydigest differently and impair each other. And without complete digestion, nutri-ents can’t be assimilated fully by the body.

As an added incentive, it’s alsobelieved that you can lose weight by fol-lowing this diet.

If you’re ready to give it a try, it’snot hard to do. Think pasta toppedwith mushrooms (hold the cheese, please) with a green salad, or even asandwich or tortilla stuffed with freshor sauteed veggies.

If you’re in the mood for Chinesefood, New Liu’s Chop Suey, a popularand affordable eatery in Kalihi, offersTofu with Mixed Vegetables, whichowner Henry Liu assures contains nomeat or meat products. It’s an appetiz-ing dish with tofu, carrots, choi sum,bok choy, broccoli, mushrooms andmore vegetables in a savory garlicsauce ($7.95).

Hold the rice and you’ve got a well-combined meal — and hopefully a hap-pier opu.

introduce the Kurobuta Kakuni to themenu.“I've always wanted to do it, but we

didn't have the right set-up or it wasn'tthe right time. Now that we have theright set-up, we're able to provide it forour guests,” says Takara.Kochi and its partner, neighboring

delicatessen Gulick, have always beenknown for quality of food, which cele-brates both heart and heritage.Kochi’s Kurobuta Kakuni is a cele-bration of pork, and is known for itsexquisite taste, texture and flavor. Breeding of this exceptional pig

began nearly 300 years ago at theHouse of Windsor in Great Britain.Berkshires eventually were intro-duced to Asia, shared and bred foremperors and their families.Consisting of the belly portion of the

“We render all the loose fat leavingjust a little, which is really just theconnective tissue, which is really fla-vorful,” says Takara.Once cut and braised to perfec-

For businesspeople looking for a quickbreakfast or a healthy lunch, 1132 Café& Catering provides a plethora of delicious

selections. “Our main business is catering for offices —

for office functions, meetings, training sessionsand seminars,” owner Stefan Kruger says. “Ourmain audience is businesspeople.”

Kruger and his wife, Edna, opened the restau-rant’s first location five years ago at 1132Bishop Street. They named it “1132 Café,” inhopes that it would help customers to recognizeits location.

“(The first location is) a 25-story building, but it doesn’t have a name,” Kruger says. “It’svery difficult to describe, but everybody knowshow it looks … the best reference is to say it’sthe former First Hawaiian Bank building.”

The Krugers decided to open 1132 Café’ssecond location three months ago, a few blocksdown on 999 Bishop Street, inside the FirstHawaiian Center. Although the two locations

are not even a mile apart, Krugeracknowledges the differencesbetween them.

“The first location was not sowell-known because you cannotsee it from the street; the secondlocation is open to the street, somore people see it,” he says.“At the first location, we can dobaking but we cannot do cooking(because of the kitchen), sothere is no hot food over there. We have sandwiches, saladsand breakfast, but we wantedto have hot catering; now, (atour second location), we havea kitchen for hot catering, hotbreakfast and hot lunch, and italso has a good pizza oven.”

When it comes to the restaurant’s “one-of-a-kind” factor, Kruger says its combination ofdifferent menu elements makes it unique.

“We’re trying to offer more variety,” he explains.“A lot of places in downtown sell standard food. For years, they don’t change the menu. Nowadays, you have everything that’s specialized. Here, youhave a combination of hot food, pizza, sandwiches, salads and pastries, also, all freshly made on loca-tion.”

Many items on the café’s menu have becomecustomer favorites. The 1132 Salad ($4.97 small,$6.92 large)—lettuce topped with strawberries, mangoes, cranberries and glazed walnuts—reignsas the eatery’s signature dish. The Chicken PestoPizza ($3.77 per slice, $14.99 for whole 15-inchpizza), consisting of basil pesto sauce, bakedchicken breast, mushrooms, mozzarella and tomatosauce, is another popular choice. The Lasagna($4.97 small, $6.92 regular) and the Chili withBeans and Portuguese Sausage ($6.92) are widelyrequested hot entrees.

While the restaurant features several permanenthot lunch plates, it offers à la carte options thatchange weekly, including the famous 1132 BakedChicken with Spicy Coconut Sauce, GrilledMushroom Steak and Teriyaki Chicken. The eateryalso provides weekly specials, such as the FurikakeEggplant & Tofu with Rice ($5.97).

“For the hot food, we have six permanent dishes

that we have all the time,” Kruger says. “Then wehave the à la carte, which is three or four (dishes)that we have for one week. We just started theFurikake Eggplant & Tofu with Rice last week; itwas so popular that we kept it for another week.”

1132 Café is not only popular for its breakfastand lunch menu, but also for its catering services.

“One of the popular catering options is the ‘AllDay Meeting’ service ($19.50 per person),” Krugersays. “That includes breakfast and lunch, so youcan have pastries or hot breakfast and coffee, thenfor lunch, you can have a sandwich and wrapplatter. Another popular catering choice is the‘1132 Lunch Treat’ ($11.99 per person), whereyou have a combination of sandwiches and wrapsplus two side salads or pastas.”

While the restaurant’s menus currently changewith the addition of new dishes, the biggestupcoming change is the start of take-home meals.

“The take-home meals would be available after2 p.m.,” Kruger says. “That is a restaurant-qualitymeal you can take home and heat up in themicrowave. We have actually started the take-home pizza already and within the next twoweeks, we will start the take-home meals.”

The introduction of take-home meals could leadto further changes, depending on its success.

“We might expand the closing time in theafternoon to 5:30 p.m., if it becomes popular,”Kruger says.

Anytime CaféLet me just say that I’m addicted to Anytime Cafe,

which serves up anything and everything I crave at allhours of the day and night. Good eats is what it's allabout here — be it pasta, won ton, pizza and more — thisMarket City Shopping Center establishment has it all! It's all about pork chops this week, and trust me,

Anytime Cafe owners Ken and Cindy Wong sure knowthe secrets to serving up the pork chop of all porkchops that is succulently delicious — the Baked PorkChop with Fried Rice ($12.95).A Hong Kong favorite, this dish features three tender

pieces of pork chops topped with a melted mozzarellacheese and paired with a zesty tomato sauce, whichaccording to Cindy, is made from a secret recipe.“Our tomato sauce has a hint of sweetness to it,really adding to the dish,” Cindy explains, noting thatthe Baked Pork Chop with Fried Rice is a highlyrequested item on the menu. The tender morsels of pork chops are then gar-

nished with savory sauteed onions and served on abed of mouthwatering fried rice.Better yet, your meal also comes with two pieces of

piping hot garlic bread and your choice of soup or salad.

New Liu’s Chop SueyWhen it comes to Chinese cuisine, my list of favorite

dishes runs the gamut, but, honestly, a Chinese mealisn’t complete without an inviting order of Salt andPepper Pork Chops to intrigue your appetite.Owner Henry Liu opened the doors to New Liu’s

Chop Suey in Kamehameha Shopping Center in 2002,and says diners have flocked to this Kalihi eatery tosatisfy their meaty cravings.New Liu’s Chop Suey’s famous Salt and Pepper Pork

Chop on rice runs for a reasonable price of $4.75 (halforder) and $7.95 (full order). According to Liu, he wastaught this recipe by his mentors, and over the yearshas made it his own by adding his signature twist.“Just the smell alone is inviting,” says Liu of the

pork chops. “We marinate the pork chops with a vari-ety of spices, including Chinese five spice, pepper, saltand of course a lot of garlic,” he adds. “Then we fry the pork chops to a crispy golden

brown and lastly garnish it with more slivers of garlic, red chili pepper and some white wine.”If you have yet to experience the wonders of this

incredible dish, wait no longer and head down to NewLiu’s Chop Suey — you'll be more than glad you did.

At Richo Korean Cuisine, the main objective is toprovide customers with unique dishes theyhave never tasted before but won’t soon forget.

To meet this goal, the restaurant is offering four ofits most popular menu items at discounted prices.“These four items are highly recommended by the

chef,” says assistant manager Ayako Hanzawa. The first is Richo’s Special Buffalo Wings ($5), done

S ince opening in 2008, RichoKorean Cuisine has becomeknown for its creative Korean cui-

sine done with a distinct Japanese twist. Now, the Kaimukieatery is looking to make a name for itself as an after-hourshot-spot where busy nine-to-fivers can drop in for a quick noshafter work hours.Last month Richo started offering a Happy Hour menu in

the hope of attracting a new crowd of customers.“A lot of people like Happy Hour in Hawaii, so my boss

(owner Takeshi Urushido) thought it would be something goodto start,” says assistant manager Ayako Hanzawa. “Also, peo-ple can come and have a good time!”Among the offerings are three varieties of Kimchee and

Namul ($4.95); half-size portions of Tofu Salad ($3), BeefChapchae ($6) and Seafood Chijimi ($6); and Kushiyaki($4.95), a choice of yakisoba-style white-meat chicken, chick-en thighs or chicken wings that come prepared on skewerswith a plain, spicy or teriyaki sauce.“This is a customer favorite,” Hanzawa says of the

Kushiyaki. “Most of the people, what they do is order all threestyles of chicken and share.”In fact, sampling as many items from the menu is the whole

point, according to Hanzawa.“The food comes in smaller portions,” she says, “so people can

get a taste for it and then order the larger portions the next timethey come.”Happy Hour goes from 5 to 7 p.m. and again from 9 p.m. till

For a slightly more fill-ing dish, there is the CharcoalBar Mixed 5 Skewers ($9.95)and the Spicy Sundubu Chige($8), a hot-and-spicy soupmade with tofu, prawns, scal-lops and clams.“The customers really like this

seafood allergies can order thesoup without the seafood, justbe sure to let the server knowyour preference when ordering.Another customer favorite
