"Growing up in Hawai'i, I thought I knew a thing or twtl

about kirn chee." says Dave Choo, who wrote "Deep Kint

Chee" in this issue. "l ate it all the time and I loved it. But

then I attended tlre Korean Festival in Kapi'olani Park

several years ago, and I saw this guy sitting on the stcps ofthe barrdstand, wolfing down a kul bi and kirn chee plate

lunch. No rice. no rnac salad, just equal portions of tleat ancl

lava-red won bok. If tlat was kit-n chec, it nlade trlc wotlder

what I'd been eating." Whilc rescarching and writing this

story, Choo, a fburth-genel'ittiotr Kot'ean Anlcrican. learned

about the fbod's unusrtal evcllution in the Islands. "ln just a

generation," hc says. "the carly Koreatl cotrll-uttnity ancl

its kim chee becaue uniquely Hawaiian."

"l have phoktgraphed'lolani Palacc sevcral times' and what

most inspires mc whcn I first step insidc is thc quality oflight," says Dana Edmunds, whose photos docurnent the

palace's rcnovatiot-t in "The Restol'atiol-r" for this isstle.

"Every window in roorus with such high ceilings yields

beautifirl directional light. The irony is that'lolani Palace

was the first building in Hawai'i to have electricity. bttt in

photographing the palace, I don't need electricity fbr artificial

light at all." Dana is an acclaimccl photographer who lives in
