• 1 red onion, roughly chopped

• 225 g cherry tomatoes, halved

• 225 g cucumber. • 150 g feta cheese, thinly

sliced • 1 handfuls good quality

black olives • 1 tablespoon chopped

flat-leaf parsley• 3-4 tablespoon extra

virgin olive oil

Method

• 1. Soak the onions in a bowl of salted water for 5-10 minutes to remove their sharpness.

• 2 .Drain well on kitchen paper.

• 3. In a serving bowl, combine the onions, cherry tomatoes and cucumber and mix gently to combine. Scatter over the feta and olives.

• 4. Sprinkle over the parsley.

• 5.Season to taste with olive oil. Serve at once
