I have never been one to really actively embrace change. I know, I know, change is good for me, it encourages growth, perspective and all the rest but it’s also uncomfortable and ultimately rips me from the grasp of my warm and cosy

comfort zone. I have had to put this aside this month as there have been quite a few changes back of house at GCM recently. We have made the choice to move the publication to a bi-monthly print run – a decision our team contemplated for months. After listening to the Gold Coast market we decided it was the best thing to do, not only for our loyal clientele but for our avid readers as well. This month also sees a new address for GCM and you will be happy to know we have well and truly settled into our stunning new home overlooking the Broadwater at the prestigious Marina Mirage. Driving to work every morning over the Sundale Bridge with the Surfers skyline glowing on the horizon is a very pleasant reminder that thankfully some things never change.I hope you enjoy this issue of GCM.

Free Spirit is the latest offering from our favourite local designer Lisa

Brown. We caught up with Lisa just before the collection hit the stores

to find out the story behind the threads.

What inspired Free Spirit? I think the name captures what the label has been about and I wanted to capture an alluring, natural beauty and a woman with a relaxed sense of style that doesn’t like to feel restricted just beautiful and confident. I guess that is where Free Spirit came from because it has a sense of freedom with floating dresses.That theme flows through a lot of your designs... Yes it does, this is the first time we have called a range Free Spirit and it just came to us while we were doing it. We didn’t start out with the name but when we did the shoot at the location it just had a real spirited feeling about it.Why did you choose the location... It’s such a natural beauty, it’s just so gorgeous. I actually didn’t know it existed until just before the photo shoot and I was just blown away with the beautiful pebble beach and cliff top, it was just amazing.There is such an amazing natural energy in the images... Yes, our model was stunning, I found her searching on the internet and I saw a few shoots that she had done. She is an Australian girl, from Perth originally and she now resides in Sydney.Your designs always look so comfortable... I don’t like anything to feel too restricted as I am a mum and I like to have a bit of movement and feminity there as well. Just the feeling of gorgeous natural fabrics too, so we mainly use silks, a silk mesh which is like a really fine hessian and cotton.Where do you source your fabrics from... Some come from China and from local wholesalers. I have eight that bring in fabrics to show me. I also do my own prints which are usually based on vintage prints that I find or old scarfs.I love the floral print you have included in the Free Spirit collection... Yes it’s a European print from Germany.What is involved in making your own prints... I will find a vintage print from an op shop or something that I have had for years. It could be a scarf – I recently did a print of an Indian scarf I had and I just changed the colours, another print came from a Persian rug. They come from everywhere! gcm

I grew up on the Gold Coast. My fondest childhood memories were fishing with my dog Bear and camping on South Stradbroke Island. I attended Merrimac High School. My first job was working as a sales assistant at K-Mart at Pacific Fair on weekends. I also had a part-time job during university holidays as a maître-d at Jupiters.

I don’t come from a musical family but my mother has a very lovely singing voice and says I get my talent from her Welsh side of the family. My parents used to take me to Twin Towns Services Club from an early age to see all the greats such as Sammy Davis Jnr, Shirley MacLaine and Peter Allen who was probably the most energetic person I’ve ever seen on the stage. That experience certainly ignited a spark that blossomed into a passion when I saw my first opera, La bohème at the Lyric Theatre.

I studied drama at the University of Southern Queensland in Toowoomba. Every year, they would cull 10 people and unfortunately I was among one of those in the first year of my studies but like many things in life, when that door closed, another wonderful, unexpected door opened. I was invited by Peter Rourke, the Head of Music at the University of Southern Queensland, to join the music program. This opened my eyes to the wonderful world of opera. I then went on to study at the Queensland Conservatorium Griffith University and I haven’t looked back.

My first performing job was at Opera Queensland in a touring production called Starburst. It was a small ensemble show directed by Stuart Maunder in which we sang various solos from musicals. I also did a short stint as a stand-up comic at Dracula’s. My big career break came when I debuted in the role of Rodolfo in La bohème for

English National Opera. I was terrified and exhilarated at the same time. After the first act was over and I’d performed my main aria, Your Tiny Hand is Frozen, I made the mistake of relaxing in the second act and being a couple of feet off my mark, which nearly caused a stilt-walker to trip over me and topple into the orchestra pit. The soprano pulled me out of the way just in time. London was an exciting place to work and opened up a lot of opportunities.

My biggest life-changing moments were meeting my wife and having children. Becoming a parent creates a seismic shift in the way you manage your time, career-wise. You really learn how to balance a lot of things at once and prioritise. I think I have a good work/life balance since I moved back to the Gold Coast from London two years ago. I get to spend lots of time with my girls, Jessica, who is seven - and a bit of a performer like her dad - and little Meg, who is four and as a bright as a button like her mum. My wife Natalie is a physiotherapist at the Mermaid Beach Sports Clinic. My parents and my brother also live on the Gold Coast within 15 minutes of each other. When I’m not working, I love spending time with my family and my parents, bodysurfing at Burleigh Beach, walking around Burleigh Headland and catching up with friends. I am now living my dream.

I am now performing in Opera Queensland’s The Merry Widow. I play a lovesick Frenchman called Camille de Rosillon who is in love with the wife of the Pontevedrian ambassador. I am really enjoying working with this cast. I’ve worked with nearly all of them before and they’re a really great bunch. I sang Rodolfo to Antoinette Halloran’s Mimì (in La bohème) for three years while touring around Australia. Sarah Crane, Jason Barry-Smith and I have all graced the stage together for Opera Queensland and I used to work with Geoffrey Harris in the days of the Victoria State Opera Company in Melbourne.

I was introduced to the theatre as a child. I grew up in Brisbane and my Mum and Dad used to take my two older brothers and I to see shows at the Queensland Performing Arts Complex. I remember seeing Joseph and the Technicolour Dreamcoat, Phantom of the Opera, Les Miserables, Hello Dolly! and Jesus Christ Superstar and that’s where the love came from. Mum also used to take me to drama classes after school. It wasn’t until Year 11 or 12 that I thought ‘Maybe I’d like to give this a go as an actual career’.

My first big break was getting into Western Australia Academy of Performing Arts (WAAPA). I thought ‘If I’m good enough to get in maybe I should take this seriously’. I trained for three years in the music theatre course. As a first year student, it was an eye-opener seeing the third years perform. Just seeing the talent and the productions over there – even though they’re student productions – the degree of professionalism is so obvious because everyone’s training to be professional, right down to the lighting and the crews, so the shows are actually really good. I remember sitting in the auditorium as a first year and thinking ‘I can’t wait for that to be me’.

After graduating I landed a role in the show On Our Selection in Perth. That was a relatively short season – it was about five or six weeks but I was working with Jill Perryman and a whole host of really well-known Perth actors. I then moved to Sydney and started auditioning and being an unemployed actor! It took awhile. I worked in casual jobs in video shops and as an usher in theatres. I was sharing a place with another performer and a friend of ours. It was a great experience and I wouldn’t have changed it. I finally got a TV commercial for Cherry Coke when it came out in Australia. The

brand didn’t do well but the ad did great. The slogan of the ad was ‘Cherry Coke – get the hint’. As in, get the hint of cherry. I played this goofy guy that never got the hint about anything. It was good for me because I got a few other auditions from that and it put me out there a little bit as well.

The first musical I did was an ensemble role in South Pacific. It was a relief to get that part. It had been so long since I’d performed in a musical that I started to think maybe I’d made the wrong decision, that maybe that career wasn’t for me and I couldn’t make a living out of it. But in my heart I was ‘I know I can do this, I’m sure I can’, so it was great, a relief.

Landing the role of Sky in Mamma Mia was such a surprise. I’d seen the show four times and I loved it so much. When I got the role, I was like ‘Oh wow, that’s great’. I was in Sydney at the time doing a short season of another show called Guttenberg: The Musical. I was at the gym when I got the phone call from my agent saying ‘You’ve got the part’. The whole experience has been fantastic, I don’t want it to end. Just such a good bunch of people to work with. Working with Anne Wood and Michael Cormick and all these people that have done so much, for me, as a relative newcomer, it’s such a great experience. The audience reaction in this show is just so amazing – they’re so generous and giving. They get up and dance and yell out the lines sometimes because they know it so well and they love it so much... that’s rewarding because you don’t get that with every show.

In addition to performing I’m completing a Diploma of Education. I’m studying to become an English and drama teacher. Hopefully I can combine both in the future.

Mamma Mia! also stars Anne Wood, Lara Mulcahy, Jennifer Vuletic, Suzie Mathers, Ben Nicholas, Nathan Foley and Gold Coast singer Charlie Jones. The musical will be staged at the Lyric Theatre, QPAC, from August 10 to September 19. gCM

Drive and determination are valuable characteristics for any business person and Maria Gambaro has both by the bucketload. Sitting in her office overlooking the picture

perfect vista of the Gold Coast Broadwater, she looks a million miles away as she lightly taps her pen on the desk in front of her. It’s getting late on a Wednesday afternoon in early July and the sun is quickly sinking into the skyline. Million dollar boats, bright white and silver chrome, bob contently against their moorings washed in the pink light while the last of the sea birds flutter determinedly to their night nests before darkness envelopes the evening.

“Some people just know what they want to do with their lives and I guess I was like that,” starts Maria. “I always knew I wanted to make people feel good about themselves. I started in hairdressing and I would never let somebody leave the shop until they were completely happy with the way things looked.

“It’s all about self-confidence. When you look good you tend to feel good about yourself. It can be a simple thing: your nails, the right hairdo, some makeup or a new outfit. Just simple things but they can make you feel so good about yourself.”

Growing up in a large ethnic family in Brisbane, a strong work ethic and no-fuss attitude was instilled in Maria very early on. Her father owned several businesses throughout her childhood and all seven of the Gambaro offspring were expected to help out in the family business. But Maria had other ideas.

“I wanted to do my own thing,” says Maria. “So I applied for an interview with Stefan Hair Fashions. Stefan taught me so much about business, about culture. His motto was always ‘give me all you have got and I will give you more’ and that is one of my mottos now too. He was such an inspiration to me. He knew how to light the fire and the passion in his team and I hope to be just like that.”

During the next phase of Maria’s career she tested the waters of owning her own business in the Brisbane area. She also met her husband, and made a family home on the Gold Coast where they raised their two sons, Christopher and Elliott. Like many mothers, once her children started high school Maria felt a burning desire to pick up where she left off in the workforce.

Despite the usual unpleasantness that comes with a marriage break up, Maria was now free to focus her energies on the business aspect of her life and was naturally drawn to the area of beauty and rejuvenation. In 2004 she came across Esteem which was then owned and operated by Dr Terrence Scamp, a leading plastic surgeon with a strong interest in anti-ageing and both surgical and non-surgical facial rejuvenation. Dr Scamp was one of the first plastic surgeons to be involved in this field and his pioneering work continues to this day. The combination of his scientific acumen and Maria’s energy and business skills led to the formation of the Esteem Day Spa. This unique facility covers the entire spectrum from hair, nails and beauty and the usual pampering spa treatments right through to non-surgical rejuvenation using laser and injectables and including the options of modern surgical rejuvenation.

The concept was a very simple one – a one stop shop with something for everybody. With Maria’s energy and application, Esteem has expanded into a market-leading facility. In July this year it opened its doors at an expanded and opulent new location at Queensland’s premier shopping and dining precinct the Marina Mirage. This facility houses the best of the best and no expense has been spared in its creation.

With Esteem Day Spa up and running at Marina Mirage, Maria has successfully achieved her lifelong dream of the one-stop shop, a place of both rejuvenation and relaxation. However, true to her passion for the industry and sheer determination, this thriving businesswoman already has new goals pencilled in for the year ahead.

“I have just achieved my first dream of opening up Esteem and my second goal for 2010 is to do a world tour with my crew. There is just so much I need to bring back to Esteem and the Gold Coast,” explains Maria with excitement. “Doing something like Esteem you really learn by your mistakes because it is something that hasn’t been done before. Now after all the mistakes – and I have learnt from them, all the manuals and procedures are in place and I have the right team to grow and support it. We are well and truly on our way.

“I really believe nothing in life is worth having unless you have to work hard for it and every part of Esteem I have had to work hard for. Esteem at Marina Mirage has been a long time coming but now that I am here, I can finally move forward. Nineteen years ago to the day I started a journey just outside on the docks of Marina Mirage and now, 19 years later, almost to the day I am starting an entirely new journey, not only for Esteem but also for myself by changing my last name back to my maiden name, Gambaro,” explains Maria. “Wicks was a name I borrowed but now my children are all grown up I don’t need to keep the name. Now it is really time for my dream to expand.”

For Maria, a simple childhood desire to want people to feel good about themselves has turned into a reality. Proof that not only can dreams come true but that you can do anything you want to once you put your mind to it. gcm

Becoming a parent is life-changing

but many mothers agonise over the

decision whether to put their child in

day care or stay at home with them.

The emotive debate is long-running

and shows no signs of calming down.

W hen acclaimed children’s author Mem Fox claimed that placing young babies in childcare was a form of child abuse it sparked widespread criticism. “I don’t know why some people have children at all if they know that they can only

take a few weeks off work,’’ said the author. While the Australian Family Association largely supported her comments, many Australian mothers were outraged, arguing that it was their personal decision while others said they were forced to return to work to pay the bills and mortgage. As the childcare debate raged on, the Possum Magic author stood by her comments, stating that she was speaking up for all babies under 12 months who were left in full-time care.

“In most debates about childcare, including this one, it’s all about the ‘choices people have to make’. It’s about the adults and their needs and situations. No one mentions the babies. How babies themselves are feeling, developing, reacting or suffering is never on the agenda. Everyone’s too frightened to mention it. It’s the big fat elephant in the room that no one has the bravery to acknowledge, let along confront.’’

That big, fat elephant remains a contentious issue and not just for babies but all children under school age. For Gold Coast mother, Kathryn, there was never any question of placing her three-year-old daughter in childcare.

“I thought about it but I don’t trust anybody to look after my child the way I do,’’ she says. “I have a lot of support from family if I want to go back to work but this is the best option for me. I’ve been taking my daughter to playgroup since she was 10 months old and before she goes to school I’ll put her in day care once a week to socialise and

become more independent but I think right now it’s important that I’m here for her. I think it’s better to struggle financially now and be with your child because when they go to school there will be time to go back to work.’’

Hayley, a single mother, says she was forced to return to work when her baby was eight weeks old to ‘make ends meet’. “My partner and I had recently separated and there was no other way,’’ she says. “My parents live in Perth so there was no one else to look after my daughter but the fact that I was unable to be at home didn’t make me any less of a mother. I did what I had to do.’’

Georgia went back to the office full-time when her son was nine months old but six months later decided she would rather be at home. “I was missing him all day and people would tell me how precious these years were. I didn’t want to live to regret it – I know I made the right choice. To me, no job is as important as raising a child.’’

Despite the negative backlash Mem Fox received, she says many more people congratulated her. “In the end, astoundingly, 98 per cent of the huge number of messages I’ve received from parents, professional organisations and childcare workers themselves have been overwhelmingly positive, full of heartfelt thanks and praise.’’

However, Joe Tucci, chief executive of the Australian Childhood Foundation, said the author’s remarks ‘trivialised child abuse’. “Making parents feel guilty is not the right way of trying to engage the community debate about this,’’ he told The Australian newspaper. Dr Tucci agreed while leaving children, particularly babies, in childcare for 60 hours a week could be detrimental, fewer hours were beneficial for a child’s development. “It’s the quality of relationships that kids can have that ultimately promotes their development.’’

On the other hand, a lot of studies continue to support parental care in the early years. Research by Melbourne University showed that children in non-parental care for more than 30 hours per week had significantly lower social and academic skills and displayed more behavioural problems than other children. The latest findings of America’s long-running Early Child Care Research Network shows children who spend long hours in day care become bigger risk-takers and more impulsive as teenagers compared to those who were cared for at home as toddlers.

Kate Sykes, a mother of three and the founder of www.careermums.com.au – an online career centre for working parents, says people need to realise that childcare has become an important part of society.

“Childcare is a part of our daily life,’’ she says. “Over 65 per cent of children have both parents working now. There are so many people out there saying childcare is bad but

adults make adult decisions for children they love and who they want the best possible care for. I’ve got three young children and they’re all part-time childcare kids. I ensure that I’m truly happy with the centre that looks after them and that my children have fun and enjoy going. There are some really fantastic carers that work in these childcare centres. Contrary to what research finds, I hear that a lot of school principals know which kids have been to childcare because they adjust very well when they start school.’’

Kate says skilled women play a vital role in the workplace and should continue to do so. “What we tend to forget is women now account for half our workplace and there are more women completing tertiary qualifications,’’ she says. “You have some really skilled women who are having children later. They’ve had a good decade in the workplace

becoming productive and they want to continue, there’s a very strong case for them wanting to go back to work. And there’s nothing wrong with that, just as there shouldn’t be anything wrong with a father wanting to take time out.” Kate says no parent should be made to feel guilty for putting their child in care. “This mother guilt thing is a revolving circle. We’re not happy if we are home all week but we wouldn’t be happy if we were at work. Childcare plays a huge part in trying to get that balance right. In terms of children who are in care from a very young age from 7am to 6pm, I don’t know what impact that could have but parents do things for different reasons. Most parents only want the best outcome for their children but there are needs to work and needs to earn money.’’

On the other hand, mothers who care for their children at home also deserve to recognised. “Most women who are parents know that staying at home with children is a lot harder than going to work,’’ says Kate. “The key difference is that women at home don’t get paid and society has this perception if you’re not getting paid you’re not really working. I think women at home caring for their children on a full-time basis are working just as hard.’’ gcm

• In June 2008, of all children aged 0-12 years, 1,517,000 (43 per cent) used some form of childcare. Of these children, 756,000 (22 per cent of children aged 0-12 years) attended formal care and 1,008,000 (29 per cent) usually attended informal care.

• The most common type of care attended by children aged 0-12 years in 2008 was long day care, with 408,000 children (12 per cent) attending. Family day care was attended by 71,000 children (2 per cent). Occasional care and other formal care were each usually attended by 1 per cent of children aged 0-12. Grandparents provided care on a usual basis for 660,000 grandchildren (19 per cent of all children aged 0-12 years), non-resident parents and other relatives each provided care for 5 per cent of children aged 0-12 and other people provided care for 4 per cent of children aged 0-12.

• Of all children who usually attended informal care, work related reasons were the most common (58 per cent), followed by personal reasons (31 per cent) and 'beneficial for the child' (29 per cent).

• In June 2008, among children in couple families in which both parents were employed, 53 per cent usually attended childcare. The proportions were higher for families in which the mother was employed full-time (59 per cent) than if the mother worked part-time (50 per cent). In one parent families, 70 per cent of children with a working parent usually attended childcare, compared with 40 per cent of those whose parent was not employed.

So what’s winter got to do with plastic surgery? Well, just a little. Body contouring procedures such as liposculpture and abdominoplasty (tummy tuck) achieve better results if a support garment is worn for about six weeks after the procedure. These are a

bit like a corset, made of strong elastic material that helps control the swelling and shrink you down to your new hard-earned shape. Predictably they’re a little warm and certainly are a lot more comfortable to wear in June than December.

Liposculpture is very much a day-patient procedure these days except in the most extensive of examples. Although conducted under general anaesthesia, the use of extensive infiltration of long-acting local anaesthetic means that post-operative discomfort is minimal and therefore the procedure is ideal to be performed as a day patient. The infiltration with local anaesthesia also reduces the bruising and makes for a more rapid recovery.

Liposuction is performed now with much finer instruments than its initial advent in the '80s. This makes the skin scars particularly small and the ability to contour the body much more precise and refined.

Liposculpture however relies on good skin elasticity to shrink down to the new shape. If skin elasticity is poor, for example on the abdomen after multiple pregnancies, then skin shrinkage may not be good and irregularity in the skin surface may be apparent. Of course the more fat that is removed the more skin has to shrink and the greater this risk.

Abdominoplasty therefore may be required anytime that the shrinkage of abdominal skin has not been good a year or so after pregnancy. This is a three phase procedure, repairing the muscle wall sheath which has commonly been stretched with pregnancy or excessive weight gain, removing excess skin and restoring a healthy smooth tension to the remaining skin and removal of the fat below the skin. It entails a long low scar and a smaller scar around the belly button but the improvements in body contour can be quite dramatic. Often it is combined with liposuction to the flanks which helps to accentuate a long slender waistline.

Laser skin resurfacing is an excellent way to rejuvenate that tired sun-damaged Queensland skin. We have a wonderful lifestyle here and an almost perfect climate. However for most of us our ancestors didn’t live in such favourable circumstances and the skin they have bequeathed us is ill-equipped to deal with this sun-drenched lifestyle.

After laser resurfacing the skin is commonly sensitive to sunlight for weeks to months. Excessive sun exposure at this stage may damage the skin and in particular may cause it to react in such a way that dark patches appear on the skin and spoil the smooth harmonious glow that was there. Not all skins react this way but the cooler winter months are often a better time to perform laser resurfacing in those at risk.

At Esteem we have a range of lasers best suited to various tasks. For laser resurfacing more gentle superficial procedures can be performed under local anaesthesia merely from the application of creams. If the resurfacing is needed to be more powerful – for example where the aim is to correct acne scarring or significant facial wrinkles – two further options are possible. A fractionated laser can be added to the initial resurfacing laser and performed at the same time. This drives energy more deeply into the skin and stimulates collagen formation to improve scarring and wrinkles. In this circumstance local anaesthesia nerve blocks are combined with the numbing cream to allow the procedure to be conducted in a smooth and comfortable way. For most people the skin is healed again well inside a week and post procedure care consists of soothing washes and application of a moisturising balm.

Conversely, for those who would simply rather not know about it, laser resurfacing can also be performed under general anaesthesia as a day patient. With this laser the area is usually covered with a dressing until healed which is again usually inside a week. Discomfort after laser resurfacing is usually quite minimal and being housebound for a week is usually the greatest impediment.

Laser resurfacing acts to remove the superficial signs of sun damage such as discolourations, rough spots and fine lines. The delayed effect from the resurfacing procedure is stimulation of cells deep within the skin that lead to the formation of new collagens. This helps to make the skin smoother and improve wrinkles and scarring. The enormous advances in laser over the last 15 years have made this one of the safest and most comfortable procedures known, and there is almost no fair Queensland skin that can’t be improved by this procedure.

So while you’re enjoying these cool crisp nights and the bright pleasant days of our so-called winter, spare a thought to what may be achieved at this time of year. gcm

Raspberry Vacherin

Serves 12

1 cup egg whites (approx 8 eggs) 400 grams caster sugar 6 cups raspberry sorbet (see below) 2 punnets raspberries

PreparationPreheat oven to 110°C. Whisk the egg whites and all the sugar until firm peaks are reached. Place some baking paper on a tray and draw 24 circles of 8cm diameter. Turn the paper over so the markings don’t come in contact with the meringue but they should still be visible through the paper. Using a piping bag with a plain 1cm nozzle, fill the circles with meringue by piping in a circular motion. Bake the meringues for about two hours until they are dry. Fill 12 egg rings with the sorbet and then firm up in the freezer.

PresentationWhen ready to serve, sandwich the sorbet between two meringue circles and arrange with a few raspberries to garnish.

Raspberry Sorbet

60 grams caster sugar 6 tablespoons water 350 grams raspberries juice of 1 lemon

PreparationPlace the sugar and water in a saucepan over a low heat and warm until the sugar has dissolved then bring to the boil. Remove from heat and cool completely. Place the raspberries and lemon juice together in a blender and purée. Pass through a fine sieve and stir into the cooled sugar syrup. Churn the mixture in an ice-cream maker and freeze.

Bathers’ Barramundi with Pancetta and Shimeji Mushroom Serves 4

Barramundi 4 x 180 grams barramundi portions 12 slices flat pancetta salt and white milled pepper ¼ cup basil oil (see below)

Cauliflower cream 3 eschalots, peeled and finely diced 2 cloves garlic, peeled and finely diced 200 grams fresh horseradish, grated ½ cauliflower, grated 50 grams butter 200 ml chicken stock 150 ml cream

Seasonal vegetables 2 large desiree potatoes 250 grams shimeji mushrooms 100 ml chicken stock 250 grams freshly podded peas 4 sticks celery, cut into neat batons 100 grams butter 2 tablespoons vegetable oil salt and white milled pepper

Barramundi preparationWrap three slices of pancetta around each portion of the peppered barramundi making sure the pancetta joins on the bottom of the fillet, set aside. When ready to serve, preheat oven to 180°C. Sear fish on both sides in a hot pan with the remaining butter and the oil. Place the fillets on a baking tray and cook in the oven for 5 minutes.

Cauliflower cream preparationGently sauté the eschalots, garlic, horseradish and cauliflower in butter until aromatic. Add the chicken stock and reduce by half. Cover with the cream and reduce again by half. Purée the mixture and adjust the seasoning.

Vegetable preparationCut the potatoes into discs 1cm high x 4cm diameter, place in a saucepan and cover with olive oil. Heat the oil to a gentle heat and then cook the potatoes until tender (approximately 25 minutes). Sauté the mushrooms with a quarter of the butter in a hot pan to give a good colour. Drain on absorbent towel then set aside.Heat the chicken stock and half the butter in a small saucepan, add the peas and cook for 2 minutes. Add the celery and cook for a further 30 seconds. Drain and season and keep warm for plating.

PresentationPlace a tablespoon of the horseradish and cauliflower cream on a plate, then place the potato on top of the cream, surround with the peas, celery batons and mushrooms. Place the fish on top of the potato and drizzle with extra virgin olive oil or basil oil.

Basil Oil

Makes 1 cup

1 bunch of basil, picked 1 cup extra virgin olive oil

Lightly blanch basil leaves for two seconds in rapidly boiling water. Refresh in iced water. Drain the water and pat the leaves dry with paper towel. Place leaves in a food processor and blend, slowly adding the olive oil. Strain through a fine strainer lined with muslin cloth. Serve immediately or store chilled.

Goat’s Cheese Cappelletti with Asparagus and Thyme Butter

Serves 8

Cappelletti1 kg desirée potatoes, making about 700 grams of potato purée few pinches fine salt 300 grams baker’s flour 250 grams fresh goat’s cheese 1 tablespoon thyme leaves (reserve half ) 100 grams butter, diced 2 tablespoons anchovy paste (made from Spanish anchovies in oil pounded to a paste) 1 lemon

Vegetables 8 spears green asparagus, trimmed, peeled and blanched 8 spears white asparagus, trimmed, peeled and blanched 24 kalamata olives, pitted and gently roasted few pinches fine salt

Cappelletti preparationPreheat oven to 180°C. Bake the potatoes in their skins for 1½ hours to remove as much moisture as possible. While still warm, cut the potatoes in half, scoop the flesh out and pass through a mouli or potato ricer. Add the salt and flour and combine using a wooden spoon. While the dough is still warm roll onto a floured bend and fold a few times to create smooth dough like a gnocchi dough.

Using a pasta machine will ensure the best result for the sheets of pasta needed to create the cappelletti. Reduce the setting gradually until you have a sheet 3 or 4 mm thick, brush off the excess flour and cut into circles of about 8cm diameter. You could also use a rolling pin.

Roll the goat’s cheese into mini log shapes to fit inside the disc. Set a piece of goat’s cheese on each circle and sprinkle with thyme leaves. Brush one edge with water and close over to form a half circle, fold the two ends in and close, with a little water on one end only to form cappelletti. Set on a towel on a tray and cover with another towel until all completed. Refrigerate for half an hour to firm before cooking.

Vegetable preparationBlanch the asparagus in salted boiling water, drain and season with fine salt. Reserve in a warm place with the olives.

PresentationThese next steps need to happen simultaneously to bring the dish together. Poach three cappelletti per serve in salted boiling water with a little olive oil added. When they float to the top, remove and drain immediately. Heat a frying pan until it begins to smoke lightly. Add the diced butter and heat the butter until it turns light brown and foamy. Add anchovy paste and with a small whisk, integrate the paste and cook until it stops foaming.

Remove from heat, add a squeeze of lemon juice and the remaining thyme leaves. Plate the cappelletti, asparagus, olives and drizzle the thyme anchovy butter over.

When you think of the great wine regions of the world you might think of Bordeaux or Burgundy, Tuscany perhaps, or the Napa Valley and just as easily you might consider

our own Barossa Valley. Six generations of growers and winemakers have been responsible for producing quality wines for well over 100 years. The Barossa’s reputation for wines of distinction has established it as Australia’s pre-eminent wine destination and rightly earned itself a place as one of the great wine regions of the world. Peruse any number of labels from the region and you will recognise the names of sub-regions Greenock, Keyneton, Marananga, Seppeltsfield and Mt. Pleasant, the higher altitude Eden Valley and the towns of Lyndoch and Tanunda, all found within the greater Barossa Valley area.

There are 150 wineries with 73 cellar doors producing fine wine from grape varieties such as riesling, semillon, chardonnay, grenache and cabernet sauvignon. The wine style most widely associated with the Barossa Valley though is great Australian shiraz, rich, full bodied, fruit forward wines, lush and distinctly Australian. This time last year I looked at some winter warmers. Here are three great examples of Barossa shiraz that will excite your tastebuds, warm the cockles of your heart and help keep the winter cold at bay. Enjoy!

TWO HANDS GNARLY DUDES 2008 SHIRAZ – $23 New millenium wine from a new millenium winery. Old mates Michael Twelftree and Richard Mintz kickstarted Two Hands in 2000 and in the ten years since have gained a reputation for producing great wine. The Gnarly Dudes is inky dark in colour and offers aromas of dark chocolate, coffee and black plums. There is sweet fruit up front with chocolate and dark cherries. The wine feels soft on the palate, filling your mouth with rich, dark fruit flavours. The tannins are gentle as is the oak, allowing the fruit to shine and there is some sweet spice on the tip of the tongue. Beautiful drinking.

DUTSCHKE GHR (GOD’S HILL ROAD) 2008 SHIRAZ – $26 The fruit used for this wine is sourced from vineyards along God’s Hill Road, a two kilometre stretch of dirt road running through the Lyndoch area in the Barossa. The oak in this wine is a little more prominent

than the Dudes, with a little tarry oak, some blueberries and sweet, nutmeg like spice aromas. There are sweet, ripe concentrated fruit flavours balanced by the judicious use of oak. This is rich, full flavoured red with the sort of tannin structure that you know will have the wine drinking superbly for a while yet. This is seriously good wine, especially at this price.

GRANT BURGE FILSELL OLD VINE SHIRAZ 2008 – $32 I had the opportunity to try an earlier vintage of this wine along side another Burge Shiraz, the Miamba, at a tasting with winemaker Grant Burge a couple of years ago and was blown away by the difference. The 80 year old vines at the Filsell Vineyard produce wines with great concentration and intensity. The 2008 is almost black in colour with a hint of purple. It smells earthy with blackberry and mulberries and spiced fruit cake. Luscious and full bodied, it tastes of chocolate and vanilla, plums and dark berries. The tannins are prominent but blend beautifully to carry the layers of rich fruit and spice through to a long lingering finish that has you reaching for the bottle for more. What to do, what to do! The night is chilly, slippers beckon with a snuggly invitation but we’re having an intense craving for crispy pizza.

It reminded us of our friend Laurence Griffin’s wife just before she gave birth recently. Unquestionably one of Australia’s best chefs, Laurence was willing and certainly able to grant wife Azura’s wildest culinary wish – but what does she crave? Pizza! Fortunately after nine months of obscure requests he had everything on hand to produce a great pizza in his own domestic oven. We weren’t nearly as organised though and confronted with no ingredients in sight and knowing if we wanted crispy then ordering in was not an option, we decided to make what we make best – reservations. VISUAL FEAST RACV Royal Pines Resort has added yet another dining destination to their expanding five star resort with the new Trattoria Amici, an Italian wood-fired pizza restaurant.

Promising to open around December, we’ve been keeping an eye out in anticipation and so it seems, has the rest of town judging by the crowd already gathered at 6.15pm on this particular evening.

Finding our way within the resort was a bit tricky, as being early days their signs were not overt. Trusting our noses to do the walking however, it didn’t take long for us to pick up the aromas emanating from a knock-down-gorgeous mosaic pizza oven, an arena to the rustic brick wallpaper, jolly tiles and hanging copper pans which succeed in giving Trattoria Amici the ambience of an Italian farmhouse. AURA OF THE SPACE The senses come alive the moment you arrive – the celebration of food and joy is tangible. The kitchen is raised which shows off the team of six chefs who flaunt and perform for all to see. Waiters swoop in and out, emerging laden with plates delivered with flair and speed to the waiting mob.

Parents relax, chat and sip wine while grandparents proudly lead gorgeously frocked toddlers around, sharing and exploring and teaching them new sights and sounds. It’s family. TASTE JOURNEY Although entrees are limited to a few salads with options of add-on prawns, chicken etc, pastas priced at $16-$18 work well as entrées. We shared a risotto – so simple but so fabulous – with prawns, peas and fresh basil, pairing it with a salad of roasted and marinated peppers with lemon thyme vinaigrette. Classy plates,

generous serves, profusion of flavour. Happy Jan! If you have an aversion to pasta/pizza (they do have gluten free) there are a handful of dishes that will impress with their value prices but having said that, our pizza craving had still to be appeased.

Pizza chefs get it so wrong so often. They just don’t seem to get that it’s not all about the topping – the dough needs equal attention in the limelight. Here chef Sean Turner has got it right.

A simple cluster of bell peppers - beautifully fire roasted and peeled, with artichokes, Asian mushrooms, black olives and Spanish onions, have a collective flavour that is just so damn fantastic. With enough topping to cover rather than smother and not lead you into soggy-vale, we have no need to sacrifice our crisp crust crave.

Dessert preference was cassata. Mimicking a volcanic eruption of chocolate covered almond tuille, the cassata of raspberry, chocolate and pistachio gelato meld together and flow amid a raspberry coulis. It’s lip-smacking, although we did miss the rum macerated candied fruit that traditionally goes into a cassata – but that’s just being selfish.GRAPE ESCAPE We’d started with an Italian mood booster – an aperitif we’ve been indulging in for years, made with a dash of campari topped up with champers, it’s deliciously dry, yet bubbly, and designed to get the palate ready for food.

It seemed therefore a shame to break the spell and as Trattoria Amici’s wine list is very Italian biased, with prices that equal if not better the local propositions, we had fun exploring their rustic and mellow offerings. Try the Antinori Santa Christina, a sangiovese-merlot blend from Tuscany. THE PERSONNEL TOUCH What do they say? Staff, staff everywhere, but no eye contact should you need them. Not here. We are intermittently inundated with the attention of four different staff members who subliminally do not revisit each other’s task. Share serving cutlery, shaved Parmigiano, drinks topped up. What, where, when, who did that? It’s how it’s supposed to be.ON REFLECTION Prices are terrific and there is no doubt that this is a very family-friendly restaurant. It’s got that European feel where kids, parents, grandparents, good food and good wine all belong together. As a couple or no-kid group you won’t feel overpowered – it just feels sort of spirited, lively and fun. Oh – did we mention the flavour? gcm

Having grown up on the Gold Coast it is no surprise that I seem to have an aversion to wintery weather. When the cooler months roll in I choose to opt out of most outside

activity and instead stay at home where the blankets are opulent and the air is warm. Let’s just say I wasn’t exactly thrilled when I learned I was to be dining out in the icy evening, no matter where you go it just never seems to be warm enough regardless if you are seated inside or outdoors. Obviously this was my first experience at Tedder’s new kid on the block, Goa Indian Fusion, and to my cold-a-phobic delight I suffered from none of the above. Indulging in a delightfully snug alfresco setting I may just have found a cure to my hibernation. VISUAL FEAST When posing the question of where to dine, the answer seems to linger on where else but Tedder Avenue! Renowned for its lush restaurant precinct, this is a street with class and sophistication. Lined with fine dining and chic shopping spots; the Main Beach eminence flutters from daybreak to twilight stringing a line of visitors who enjoy luxury and taste. A sweet little street with a repressed traffic turnover makes for nothing less than the perfect time out. AURA OF THE SPACE Goa Indian Fusion is named after the richest state of India; bursting of opulent culture and bound by the beautiful Arabian Sea, the lavish destination is a favourite for the refined. Just like the name it takes after, Goa Indian Fusion is adorned in the same sumptuous way. A contemporary spin on its Indian roots, the décor is trendy and balmy. Tucked away on the corner and slightly cosier than its counterparts, Goa’s patrons are pleasantly sheltered from the elements. Vibrant reds and gold colour the surroundings, while the bar and pillowed couch make it a hot spot for cocktails and party fun. TASTE JOURNEY The brilliance of this Indian experience is that it is like no other. Yes there are the old favourites that everyone loves but the main appeal is the rare and unique recipes you aren’t so familiar with. I was informed that most of the dishes garnered from the royal households of India and are not usually used commercially.

Prawn Zaaffrani and the world famous Piyaz ke Pakore (Onion Bhajce) were the first to greet our tastebuds. The tandoori glazed king prawns were decadently served with yoghurt, ginger, cardamom, mace and heightened with chutney, salad and a wedge of lemon.

Sticking with the seafood, our main was the Tandoori Snapper seeded with fennel, ginger, coriander and chilli, sided with spiced potato wedges. Sounds like a mouthful but the flavours blended quite successfully for a taste you rarely come across and both were presented in quite an inimitable manner. We also tampered in the curry tasting – Chicken Afghani: slow cooked chicken finished with cardamom and sultanas, infused in cashew sauce.

Unimaginable combinations were to theme the night as when dessert arrived I was interested to hear we were being served chilli chocolate ice cream! In a way it is sweet and creamy but quite rich in the zest of other seasonings. The chilli chocolate ice cream packed a punch I didn’t expect. No soon after had I swallowed a spoonful I was gasping at the startling spice that lit up my throat. Despite the burn I devoured all my dessert, by then the hot and cold mélange seemed the right equation. Just as vast as Goa’s spices and flavours range from the menu caters to all. Vegetarian, vegan, gluten-free and halal cuisine is all available, as well as a children’s menu complete with chicken nuggets and chips, for those younger fussy eaters. GRAPE ESCAPE A select assortment of whites, reds and sparkling are available for your personal perusal, priced from $28-$115 and BYO is also offered. The main beverage spectacle however drops off the wine list and lies behind the bar with the exuberant Indian themed cocktails that are one of a kind. With titles such as Kashmiri Sunset and Mumtaz Mahal you’ll feel like you really are looking over the golden sands of Goa Beach, living life like Indian royalty.THE PERSONNEL TOUCH Goa Indian Fusion may only be new on the scene but owner Push Oberoi is a veteran in the restaurateur business. Having founded the multi-award winning Oberoi’s Taj in Broadbeach, you can easily see from the service that the Oberoi family are experts at what they do. Managed by Push’s son, Max Oberoi and assisted by his charming wife Lena, polite yet knowledgeable staff and chef Rakesh, the whole experience is polished and authentic. ON REFLECTION Indian cuisine has never been so elegant. Set at stylish Main Beach area, Goa Indian Fusion is all about class, culture and a fantastic eye-opener. Dine like royalty and sip cocktails of the world - toasty in winter yet sure to be an exuberant location come the summer time. gcm

News: DesigN AwARDsLeading Queensland architecture and interior design company Arkhefield has won two awards at the Australian Institute of Architecture State Awards which recognises outstanding achievements and excellence in architecture. Arkhefield received a Public Architecture State Award for the University of Queensland Rural Clinical School building in Toowoomba which boasts perforated facades, board finish off-form concrete walls, copper soffits, timber feature doors and large expanses of glass. Sarah Allix

When interior designer Sarah Allix agreed to decorate a prestigious home

at Worongary, she not only fell in love with the home but the homeowner.

The happy couple now share the home as they prepare to get married.

Sarah Allix may have earned herself a reputation as a talented interior designer but it wasn’t a career she planned on when she was growing up. “I did physics, chemistry and biology at school. I didn’t do one arts subject,’’ says Sarah. “But I painted as a hobby

and I realised that I’d enjoy doing this more so I completed a course and my company, Allix Design, has been operating for seven years now.’’ Sarah’s work can be seen at lounge bars and clubs across the Gold Coast – Ruby Tramp, Oriental Whiskey, Sin City, The Bedroom, Central and Lil Sister at Broadbeach to name a few.

“I love doing lounge bars because you can do something really different,’’ she says. “I look at every place as a blank canvas then I decorate the canvas. It’s important to have a balance between soft and hard and dark and light, everything has to have a good flow and there always has to be a wow factor. It doesn’t matter how small the budget – you can create a wow factor from a piece of string. Normally when you have a meeting with someone it can be difficult for them to imagine your vision, even with images or products. But when they see it come to life they’re blown away and that’s the most rewarding part of my job.’’

Although the majority of her work consists of commercial projects, Sarah agreed to decorate a home for her friend, Jamie Pickering, a professional poker player and entrepreneur. Little did she realise the property would end up becoming her own home.

“We met through mutual friends and had known each other for six years but we both had partners,’’ says Sarah. “We kept crossing paths though and he asked me to do the interior design for his home. Halfway through the project we started dating and then he proposed. Luckily, we had similar ideas about how the house should look but he’s a real guy’s guy so it needed a feminine touch!’’

Set on 1.6 hectares, the Worongary property has views across the Gold Coast skyline. “It’s very private. We consider it our sanctuary,’’ says Sarah. “You can’t hear anything else. There are no neighbours or noisy cars. All you see are the trees. We love the tranquil vibe of our home but the convenience of being near town for socialising and a spot of retail therapy. We work really hard and having a place to come home and enjoy is important.’’

The six-bedroom home boasts a six-car garage, a billiard room, library and study. The kitchen has Miele appliances, a walk-in pantry and a cool room. The master bedroom has its own refrigerator and a spa that takes in the stunning coastal views. There are also televisions in every room of the home which has timber flooring and fireplaces throughout, giving the property a ‘classical look with a modern edge’, according to Sarah. A fan of ‘one-off’ pieces, it features decorative items including chairs from Robinson’s in the entrance and pictures by

acclaimed photographer Peter Lik. “We bought 10 of his pictures and they are spread throughout the house,’’ says Sarah. “I was going to buy the pieces for myself and I ordered some for Jamie while I was decorating but they have all ended up together. Peter Lik takes real photos – they’re amazing.’’

Sarah spends most of her time in the study as she works from home. “In my line of work, I’ve got my samples and all the things I need at home. I always meet clients onsite or at a café,’’ she says. Although she spends a significant amount of time in the study Sarah’s favourite room in the house is the library where she ‘loves to snuggle in and read a good book by the fireplace’ as well as her walk-in wardrobe which has a shoe collection that could rival Imelda Marcos’s.

Sarah and Jamie share their home with two dogs – Sheba, a Tibetan Spaniel cross Jack Russell, and Henry, a Maltese cross Yorkshire Terrier. Both pets are energetic and make the most of the ample land. When it comes to entertaining family and friends, Jamie and Sarah enjoy relaxing on the lounge area of the balcony or playing billiards and ping pong downstairs. When the couple go out for the evening they also have a penthouse apartment at Surfers Paradise.

It is certainly a life of luxury but Sarah is the first to admit she takes nothing for granted, especially since her battle with thyroid cancer two years ago. “I was really tired and noticed a lump on my neck. A biopsy revealed it was cancerous so I had the thyroid and the lymph nodes on the left side removed followed by radiation therapy.’’ Sarah now has regular check-ups and remains positive however she says the experience has changed her outlook on life and made her more appreciative. “I think that’s why I settled down with Jamie,’’ she says. “I had never wanted to get married but now I do. We’re hoping to have a small, intimate wedding in the Maldives next

April. Becoming a mum is also on the cards, I’m excited about the prospect of having kids. I’m also keen to travel more and see new parts of the world. I do things I want to do now because life is too short. It’s important to live life to the fullest.’’

Sarah says her cancer experience also prompted her to take better care of herself. “I do two to three sessions with a personal trainer each week consisting of boxing, weight training and cardio in my home gym. I’ve also learnt about the right kind of foods to put in my body to support good health in the future. My personal chef makes sure I have plenty of healthy eating options,’’ she says.

In addition to planning a wedding, Sarah has a busy schedule. She has a number of financial ventures on the go including a new line of gymwear called Fit NV which she researched at this year’s import/ export Canton Fair in China. “It is affordable gymwear that is simple and comfortable but the design has a bit of pizzaz that shows off the personality of its owner,’’ says Sarah. “It’s all about feeling good and looking good in something that is just as comfortable as something you’d wear at home.’’

Sarah is also in the process of re-branding her interior design business and is organising a launch party that will include a charity auction to raise money for cancer research. The interior designer – herself a skilled poker player - also wants to raise money for charity by hosting women’s poker nights on the Gold Coast. “The ladies will play with fake money and it will be a bit of fun,’’ she says. Although Sarah was a competent player before meeting Jamie, she admits her interest has increased since the pair got together. “Jamie and I were recently in Las Vegas where he was competing in the World Poker Championships. I’ve actually picked up some tips from him and am thinking about entering a few tournaments myself.’’ gcm

Tokyo’s newest and arguably most glamorous five-star hotel, The Shangri-La Tokyo, is where I get my first glimpse of the world’s most impressive megapolis. I am cocooned on the 37th floor horizon lounge within minutes of arriving at

Tokyo Station, where our Shangri-La porter greets us offering rock star platform service that does not go unnoticed in a city accustomed to excess.

Shangri-La Tokyo is just over a year old and is positioned centrally straddling the city’s main train station in the up-market Marunouchi financial district. A sophisticated haven offering respite from the frenetic pace of the streets below but also acclaimed for its spacious rooms, superior service and surprising feel of, boutique that incorporates a modest 200 rooms, spa, three restaurants and copious amounts of decadent design and decor.

From this vantage point, Tokyo is breathtaking. The endless merge of movement, lights and concrete dwarf distance, defy any concept of magnitude and offer no hint as to where this city may begin or end. On street level it is just a few blocks to the famed streets of Ginza where the world’s most sought after brands jostle for attention from Tokyo’s luxury brand obsessed and restaurants vie for Michelin stars alongside clientele that can afford $450 for a steak.

My fear of crowds and crush is palpable but to taste life as a Tokyoite a submersion into the subway is unfortunately essential. Peak hour is torture but trains can get crowded anytime, especially when they are servicing a city called home by almost 13 million. I expect a noisy, smelly, barbaric system but am pleasantly surprised by clean silence. There are no phones ringing and no kids crying, in fact no one even talks louder than a whisper and in some instances whole train carriages are dedicated to zen.

While it was definitely confusing at first, when I got the hang of the train system I was looping around the city lines with the best of them, still in awe of that silence but also praising the clockwork precision that trains in Japan abide by. Areas renowned for electronics, sushi, shoes, shows, temples and even the enigmatic Geisha are easily accessible and if you really can’t stand to go underground, Japan Rail does have an aboveground Tokyo loop service that takes a little longer, but is free when you flash your Japan Rail Pass.

The paradox to Ginza and Marunouchi is Asakusa; one of Tokyo’s oldest neighbourhoods that has turned its back on time, preferring to exist more like the original bustling fishing village Tokyo was some 400 years ago than a global world leader in urbanisation. Asakusa is a maze of narrow streets overflowing with colourful market stands offering

everything from locally grown produce, clothing and toys to steaming pots of traditional Yanagawa Nobe (fish stew). Artisans dwell within tiny bolt holes hand-crafting tortoiseshell, kimonos and all sorts of items made from bamboo while ageing street performers offer traditional entertainment using scarves, fans and magic for just a couple of yen.

A virtual living museum, Asakusa is home to Japan’s oldest operational theme park, forty registered Geisha still operate in the prefecture and Japans oldest and most beautiful Buddhist temple – Sensō-ji. The temple is surrounded by sprawling gardens complete with emblematic five story pagoda and lucky carp pond and while the Japanese come to Asakusa to pray the festival like atmosphere, cheap food and chance to sample traditional life is proving to be an increasingly popular tourist attraction.

While Asakusa celebrates old and proudly clings to time honoured tradition, in fashionable Harajuku and Shibuya, the next breed of Japanese leaders are busy asserting unique identities using fashion as a muse.

Oceans of youngsters cram the streets in both precincts, eager to be seen flaunting their creative take on fashion, trends, colour and costume. From Hello Kitty cute meets Chanel Couture to outrageous Gothic Lolita interpretations complete with full theatrical make-up,

ripped up leather jumpsuits and rock bands on the ready for the chance to take over a street corner as a stage.

Gwen Stefani and more recently Lady Gaga have spurred both awareness and popularity of the Harajuku trend, Gwen dressing her dancers as Harajuku Girls and launching a perfume called Harajuku Lovers and Lady Gaga copying the more garish trends as seen on these very streets. It may be intentional or just good publicity thanks to the famous embrace but the teens of Japan have been responsible for inspiring the world of fashion with cosplay (costume play) emulating anything from popular Japanese anime characters right through to hard core punk rock for decades.

Takeshita Street and the side streets surrounding it form the hub of all things hip and on weekends you will find the weird, the wacky and the wonderful flowing out from the Harajuku station to overtake street corners, parks, stores and cafes with their quirky take on Japanese individuality. But fashion fanatics aside, the area also boasts an incredibly diverse range of boutiques, vintage clothing stores, fast and traditional food stores and increasingly – the coolest of world brands who have snubbed the more affluent Ginza to get a slice of the trend conscious teen market instead.

DesignBlessed with perfectly balanced proportions, the 5 Series demands a double take. The shape is ultra-stylish with a long, sloping engine compartment lid, neat overhangs front and rear and an almost coupe-like roofline that is graceful yet slightly sporty. The sheer size of this model reeks of lavishness thanks to the longest wheelbase in the segment, clearly defining the vehicle from the competition. The side view of the 5 Series has a reassuring classicism and although the 5 Series is the very essence of a luxury vehicle you will love the touch of sportiness ingrained in the design of the model; the signature BMW kidney grille inclined slightly forward, the chiselled engine compartment lid and the almost muscular rear end.

Once inside the 5 Series the opulent experience continues. The first thing you will notice is the room - this car is huge offering the driver and every passenger ample leg, head and side room. The interior design is minimal yet polished. Champagne leather seats and veneer panelling throughout add an air of elegance while the centre consol is the perfect size to store all your important bits and pieces and also double as a comfortable armrest.

All driving functions are conveniently located on the driver’s side of the car while the comfort functions are arranged further towards the middle to give the entire passenger compartment a functional structure. You will love how every single control and display is placed exactly where you expect it to be for optiminal usability and ease. Look to the left and your eyes automatically fall on the Control Display while directly ahead is the Head-Up Display projecting the most important driving information like directions from the navigation system.

As expected from a vehicle of such pedigree, the Series 5 has a long list of features for your driving comfort, most of which come as standard. A stand out in this vehicle is the electronics especially the iDrive control interface. The iDrive uses a single knob and a series of menus on the navigation screen to control almost all of the climate and entertainment functions inside the car. The menu structure is simple to navigate and the direct-function buttons are easy to use whether you are in the driver or passenger seat of the vehicle.

When it comes to climate control it is not only those in the front seats who are looked after. Vents located between the front and rear doors allow rear-seat passengers to set their own temperatures so there are no disagreements if the air turns a little chilly. The four-zone automatic climate control system also allows the driver, front and rear seat passengers to set air distribution to match their personal preferences. The air vents in the instrument control can be set on one focused position through to general, draft-free air circulation while the circulation filter, sun and condensation sensors and residual heat utilisation allow the ideal temperature to be reached quickly and effectively. As the benchmark of luxury, active seat heating is located in the front seats to avoid that dreaded cold leather feeling but in summer you will love the integrated air vents that automatically change down a setting to prevent undercooling after a certain period of time.

On the rOaDThere are certain expectations one has once behind the wheel of a BMW and the Series 5 certainly ticks all the boxes- press the start button and let the fun begin. You have the choice of two engines with the 5 Series, both of which are entirely new designs. The 535i has a 3.0 litre six cyclinder engine with a single turbocharger (although BMW refer to it as a twinpower turbo) which puts out 300 horsepower while the 550i uses a

4.4 litre turbocharged V8 making 400 horsepower. It has been noted this particular model is more powerful and fuel effective than the V8 in the last 5 Series which signifies an improvement in design. Both engines have the option of either a six speed manual transmission or an eight-speed automatic. The review car was the latter version and there was certainly no complaints. The vehicle tended to change gears less often than expected but each transition was seamless.

When it comes to braking and handling the 5 Series is in a league of its own. You will notice the rear-wheel drive performance, great body control and easy steering that make this model not only extremely functional to drive but also a lot of fun! Dynamic Driving Control is fitted as standard and provides intuitive driving experience that enables you to tailor your drive to suit the conditions and your mood. With a touch of the paddle next to the gearshift lever you can change your level of driving from normal to sport. Instantly the engine responds more spontaneouslty to the accelerator and the automatic transmission lets the engine rev high before effortlessly changing up a gear. If you are after a higher sensitivity touch the paddle again to enter sport + mode where you will feel the steering tighten and the Dynamic Stability Control take over to allow controlled drifting. You can tell what active mode you are driving in by looking under the speedometer and when in sports mode you can use the iDrive Controller to quickly change the drive chain and chassis settings to individually tailor to different driving conditions. For those who like to take things a little easier the comfort mode provides both the passenger and driver with maximum comfort on longer journeys.

efficiencyEvery new generation of BMW engineers continue to push the boundaries as far as possible to increase dynamics and efficiency and the 5 Series is proof of this. With direct petrol injection and common rail, turbochargers with variable geometry and twin scroll intakes plus fine-tuned engine electronics, the 5 Series engine is both innovative and efficient. It also has features such as Break Energy Regeneration which means as soon as you take your foot off the accelerator the generator is engaged and converts kinetic energy into electrical energy. Once the battery is fully charged, the generator is disengaged from the engine unburdening the engine and reducing emissions. It also means there is always more power available for acceleration which is always a good thing.

safetyWhen driving the 5 Series you are not only experiencing one of the segments most beautiful vehicles but also one of the safest. A favourite feature is the Head-Up Display which ensures your eyes stay on the road ahead by projecting your current speed into your direct field of vision on the windscreen. There is also the Active Cruise Control that will automatically reduces’ your speed up to a standstill if a slower vehicle is ahead. Five cameras strategically positioned around the car ensure you have a clear view of any situation while parking is a breeze thanks to the rear view camera and the interactive lane lines which informs you if there is physically enough room in the parking space. The 5 Series really does drive with instinct to ensure you have discreet support and active assistance to ensure your avoid dangerous situations.

Evolution of consumer product is why the Gold Coast maintains its status as Australia’s number one tourist destination and yet locals have a tendency of losing sight of this when looking for something to fill their own weekends in our great city.

As an industry we are proud of what is continually achieved by local operators who assist in motivating and inspiring more and more visitors into the Gold Coast region.

Job creation and an ongoing boost to the local economy are two of the major spin offs.

What can however be lost on locals is that through such product progression, we have at our disposal an abundance of fun filled activities to be enjoyed any time of the year.

Nearly 10 million visitors annually to the region is proof the formula is right. I encourage locals to search out something new and exciting to experience on the coast over coming months.

If you have family and friends staying for the weekend or an extended period, why not

Gold Coast City has moved a step closer to dealing with the growing problem of short-term holiday rental homes that are used purely and simply as party houses.

For too long the community has had to put up with some homes being rented, then stacked with people who party on 24 hours a day, seven days a week, without the slightest regard for their neighbours.

A series of recommendations from the Short Term Accommodation Task Force has outlined a three-pronged approach to address the situation: improved self-regulation of Short Term Accommodation providers; a review of local laws and licensing regulations protecting community amenity in the suburbs and possible changes to the Residential Tenancy Authority and State’s Sustainable Planning Act 2009 to include a focus on short term accommodation.

Like many others, I would like to see owners of holiday rentals apply for a material change of use to limit the number of tenants and en-force parking restrictions.

Short term accommodation remains an important part of the overall holiday accommodation mix and has my full support but unacceptable behaviour by a noisy minority does not.

I look forward to the final taskforce meeting this month which, I hope, will set a range of corrective actions in motion. As we get closer to the Federal Election I’m regularly asked what I think is important to ensure a strong future for the Gold Coast and specifically the area I represent.

As we as a city continue to grow, some of the things that are synonymous with Gold Coast life threaten to fall away and we could become just another big city.

Maintaining strong communities within the Gold Coast is part of ensuring we maintain our city’s unique character.

Community Centres allow diverse groups of people to come together. Youth centres support our young people and allow them to connect with each other and be exposed to positive adult influences. Open spaces and parks give residents a place to meet and get to know one another. Projects such as men’s sheds and community gardens offer similar opportunities and I’ll be fighting for more funding for these projects as we approach the next election and into the future.

Many of you may connect with your community through schools, churches, sporting clubs or groups where members can share a common interest. Not all local residents have these opportunities available to them. Some, especially the elderly or disabled will not even have a workplace where they can build relationships. A lack of connection to others can lead to marginalisation, loneliness and in some cases increase the occurrences of anti-social behaviour such as petty crime and graffiti.

I’m committed to putting the facilities in place and supporting those facilities so we don’t leave any residents of our area on the outer.

When communities have the opportunity and infrastructure to connect, we can build and restore respect between the many groups that comprise our city.

Building stronger communities will have benefits for all of us.

It’s a tale that reads as if from the life of two men existing at opposite ends of the earth. One, a story of a youthful pop star: a spiral of wild parties, gigs, beautiful women and the press. Sharing bills

with the likes of Jimi Hendrix and Engelbert Humperdinck as well as a continuing round of chart toppers and platinum records; the soft voice of Cat Stevens was a soundtrack to the world in the height of the vivacious ‘70s. His messages of hope, transcendence, peace and tortured romance melted the hearts of all that heard and spoke strongly to a time that was then demanding change. One minute he was at the pinnacle of an illustrious career and then the next he was gone. It seemed with the end of the 1970s, the man we knew as Cat, had too turned over and faded into the past yet his melodic whisperings as if from the grave, sung on.

The second anecdote is one reduced in extravagance but momentous none-the-less. Married with four daughters and a son, the devoutly religious man spent most of his time out of the spotlight and until recent years, without song; his name, Yusuf Islam. Just as Cat had made his mark on the world, Yusuf has likewise imprinted his legacy. A prominently bold character throughout the last three decades, his work details such ventures from the founding of Muslim Aid to relieve the famine in Africa and the freeing of four hostages while on a peace mission in Iraq to his pivotal role in education as a teacher and financer of numerous schools for the Muslim underprivileged around London.

Under a mellow, gauzy light stood a heavily bearded man, dressed neatly simple yet modish. Although youth had long passed him, the 60-something man glowed vigorously with health – a rarity in his fellow rock veterans of the industry. Standing silently on stage you couldn’t see clearly those valiant brown eyes that an ex-girlfriend once familiarised with that of a feline’s (giving him an appropriate moniker for his fans) however no one could mistake the voice when he launched into the lyrics ‘Lady D’Arbanville, why do you sleep so still?’

No this man isn’t Cat Stevens but he used to be. Now under the name Yusuf, he still possesses the gentle gift that captured the world and sold more than 40 million records. When he swore off the pop empire and converted to Islam it was feared that the singer/songwriter might never resurface again, however at the turn of the millennium (almost 30 years from Cat Stevens departure) Yusuf returned to the music realm. And to his Australian fans delight – he finally revisited the shores of which his records continue to sell more than any other nation.

There were suspicions that this tour could be somewhat of a sermon however the full house at the Brisbane Entertainment Centre that evening would strongly agree those reservations were dead wrong. Instead the past and the present collided in an undemanding setting, vintage photographs fading in and out as the words to the song suited. Onstage his presence was celestial and his wisdom awesome. Backstage it was just the same. Yusuf spoke of how his come back was much to do with his son Yoriyos. Following in his father’s footsteps, Yoriyos’ dream is too, musical: now heading his own band Noxshi (which joined Yusuf on tour as special guests). Yusuf also couldn’t contain how proud he was of his grandchildren with whom he now lives with back at home in Dubai. A man of simple pleasures, you can somewhat understand why he took the road he did.

A reconciliation of sorts between the dual existences he has occupied, Cat and Yusuf were both there that night: one in spirit and another in physical form. As the night led on the silence grew stronger and the words to Peace Train floated from the old man’s promising voice, “Now I’ve been smiling lately, thinking about the good things to come... and I believe it could be, something good has begun.”
