No matter what the occasion is, an Artisan Cheese will fit right in. Finding the right cheese is the easy part, what can be sometimes challenging is putting the right accompaniments with that perfect cheese. With GFI, you have a vast array of items that will compliment the cheese and bring a higher ring to your cheese shop. Lets start with the crackers. When working with simple cheeses like Havarti, Mild Cheddars, Monterey Jack and spreadable cheeses the stronger flavored crackers can work out well by adding an additional flavors to the pairing. When using more intense cheeses like Manchego, Brie and Gouda, go with a lighter flavor or even a wheat cracker so you get a balance of flavors. For the Blues and strong flavored cheeses like the Cotswold and Stilton with cranberries, let the cheese do the work and use a mild or water cracker. Dont forget the Fruit Pastes as they make an excellent addition to almost every cheese. Try the fig with the Spanish cheeses like Manchego, Pear Paste with the Cheddars or Honey drizzled over the Blues for a simple but rewarding pairing. Many of the cheeses also go well with nuts and chocolate. You can pair up Marcona Almonds with Manchego, Gouda and cheddars. Try the Caramelized Walnuts with the La Bonne vie Brie, Gruyere and Mimolette for a rich experience.
Suggesting a Beer or Wine pairing will always bring the Artisan Cheeses up to the next level and creates a true holiday pairing experience. When you start thinking about pairing with beer, think bread like flavors and with wine, think fruit flavors. With so many excellent Craft beers available now it can be overwhelming to narrow down an appropriate pairing. Lagers are easy to drink beers and offer up a little bit of a cleansing
action with their light flavors, try Mild Cheddars, Double Crme Bries and for something special try out the artisan Blue with the Brooklyn Lager. Red or Copper ales are a little stronger and fuller in flavor, they pair up well with cheeses like Goudas, Manchego or for something rich and malty try the Lagunitas Censored Rich Copper Ale with an authentic Swiss Raclette. Wheat beers like a Hefeweizen or Rye ales are good beers for pairing, they bring a little more bread like flavors to the pairing, you can pair up buttery cheeses like Brie, Edam, Emmentaler or try Stilton with Cranberries for an interesting almost dessert pairing. For Cheese and Wine pairings dont over complicate the process, lighter wines with lighter cheeses and more bold wines with bolder cheeses. Chardonnays are very good wines to pair up with cheeses, especially if they are more fruit forward than oaky, keep in mind that they will also have just a little bit of citrus going on so its very refreshing with the cheeses. I would put Brie, Havarti, Mild Cheddar and Gouda with Chardonnays like the Fetzer Sundial Chardonnay. Pinot Grigio are very fruity and work well with Italian cheeses, great pairings for the Sartori Asiago or Montegrappa. When you get to the red wines, Merlots are great to pair with as they are easy to drink and have a lot of dark fruit in them, so you can easily go with Brie, Sharp cheddar, Gouda and Manchego. For a more sophisticated pairing, suggest a Pinot Noir with a mild washed rind like Cowgirl Red Hawk, Camembert or a French Comte. Ask the customer what they prefer in wine, beer, crackers, fruit paste and nuts, then go from there with pairing up the cheeses. Most important is to have fun with the pairings.

Washed rind can be used to describe any cheese with a brine-washed (or moistened) rind. Adding mildly salted water to a cheeses exterior fosters an environment hospitable to a variety of bacteria. The bacteria that develop are responsible for the unique characteristics of the cheeses rinds, the reddish color,and pungent smell.

Rouge is a washed-rind cheese. It sports a warm orange rind with clouds of white, which develops naturally during the smearing
process. Each cheese is rubbed by hand to encourage a glowing tint and to develop flavor within the cheese. Rouge is buttery and

when hosting events and dinner parties that increase in occurrences during the holiday
season. We offer our retailers a variety of resources to assist their guest in understanding
drink and cheese pairings so the guest can purchase and host with confidence. Order

Find similarities- Look for the beer/cheese to share a common flavor/aroma-element/texture.
Match strength with strength- you dont want one item to dominant or mask the flavor of the other. Lighter, creamier cheeses with lighter beers and dark, rich brews go better with complex cheeses.
Terroir-No guarantee for perfection, but try to match a beer with a cheese that was produced in the same region. These combinations can have fascinating results.
Practice makes perfect- Buy your favorite beers and cheeses and try them together. Cheese/Beer pairing is as much personal taste as it is an exact science. There will always be traditional pairings of stouts with aged cheddars, but you may discover a unique experience by putting some of your favorite items together.

The Institut du Fromage is an elite cheese education institute, dedicated to spreading knowledge and understanding of cheese to both professionals in the food and wine industries, as well as keenly interested laymen.
Our goal is to elevate the knowledge and discussion of the worlds great cheeses, and in doing so, make it more accessible and available throughout the United States. We want to increase the knowledge of cheese purveyors, so in turn, they can take this information back to their customers and employees, and help spread the word.
Cheese courses at Institut du Fromage reflect the material covered in the American Cheese Society body of knowledge. These classes help prepare students to take the Certification Exam for Cheese Professionals (CCP) offered by the ACS.
By utilizing the resources of the great cheesemakers, cheesemongers, chefs and affineurs participants receive information from the most exciting minds in cheese today.

The ways that people choose to spend their food dollars can make a huge difference. It can literally change the landscape around them. If they support local farms and purchase from people that they know, they really can change the way things look around them. And then maybe we'll have more family farms crop up.

Georgia Gouda
Made in the style of a Dutch Gouda, this semi-soft cheese is both dense and smooth. However, unlike most Goudas made in Hol land, ours is made with milk from Jersey cows. This gives it a more buttery, creamy, and mel low flavor than your typical Gouda. Our Jersey cows milk helps the sweet, nutty, and rich flavors that exist
natural ly in our grassy pastures shine through with each bite.A rich textured cheese deserves a rich beer to drink with it such as an Imperial Stout or a Porter. Georgia

Our Carmody was inspired by a trip to Italy. We found a mild but creamy cheese that still had a great deal of fresh milk flavor. It occurred to us that a cheese of this type might appeal to our customers in the US as an alternative to the young Cheddars or Jack cheeses. Carmody is meant to highlight the buttery flavors or Jersey milk and is named for the road that runs adjacent to the farm.

LindaleLindale is our cow milk gouda made with specially selected cultures from Holland. Using traditional Dutch methods we wash and cook the curd before pressing in the vat under the whey. Sequatchie Cove Farm is a diversified farm of 300 acres nestled in the shadows of the Cumberland Plateau, located 35 minutes northwest of downtown Chattanooga.
