    Background

    Theres much more to makingwine than just pressing ormashing grapes.

    Filtration is an important partof the process that ensureswine quality and microbiologicalstability. A combination ofdifferent filter media helpsachieve these results.

    The German winery Kallfelztraditionally used a specialcombination of filters in theirproduction. To supply the bottling

    lines, the wines were sentthrough conventional depth filtersheets followed by 0.6 micronprefilter cartridges and 0.65micron membrane filtercartridges.

    However, after filtering 23,775gallons (90,000 liters) withtwenty-five 16" x 16" (40 x 40cm) filter sheets, the sheetsclogged. A new set ofreplacement filter sheets wereneeded to secure filtrationcapacity of the downstreamfilter cartridge combination aswell as the microbiological

    security of the entire bottlingprocess.

    Challenge

    The winerys challenge was toincrease filtration capacity whmaintaining constantmicrobiological retention.

    There were a few options toincrease the filtration capacityOne possibility was to use filtsheets with coarser pore sizeHowever, the risk ofmicrobiological infectionincreases during the bottlingprocess, which could result inthe loss of product quality oreven a product recall. Another

    option was to add an additionfiltration step during the bottliprocess to reduce filter cloggisubstances, but this way wasneither cost effective noracceptable from the quality poof view.

    After eliminating those optionthe cellar master at the winerturned to Eaton for cost effectfiltration that would improve tefficiency of the filtrationprocess without sacrificingquality or taste.

    Solution

    The solution was EatonsBECOPAD filter media, aninnovative depth filter mediacomposed solely out of purecellulose. Unlike conventionaldepth filter sheets, BECOPADfilter sheets are mineral free.The new structure andcomposition improves thefiltration capacity by constantlymaintaining high microbiologicalretention.

    The Kallfelz winery ultimatelyselected the BECOPAD 220media for germ-reducingfiltration. The BECOPAD filtersreduced the rinsing volume by50% and zero drip loss providedan additional benefit. Becausethe BECOPAD filters are 100%compostable, the winery simplydisposes of them into thevineyards.

    To further optimize the process,wine enzymes from the EatonsBegerow Product Line degradefilter clogging substances like

    pectins and -glucans. Thisresults in a better clarificationand retention of flavor andaroma of the wines.
