VEGETABLES FROM NATOORA

Chelsea’s high-quality local fruit and veg supplier, Natoora, share their seasonal vegetable wisdom and serving suggestions:

- Tropea onion: Exclusively grown in southern Italy, Tropea onions have gained protected designation of origin status thanks to their unique flavour. The rich soil and mild weather in the area encourage these onions to develop their natural sugars, making them much sweeter than other varieties. Best served as a delicious caramelised onion crostini to start Easter proceedings, or f inely sliced and added to a salad.

LAMB FROM PROVENANCE BUTCHER

For that perfect, melt-in-your-mouth dish follow Provenance Butcher’s Easter roast lamb shoulder for the ultimate crowd pleaser.

Garlic, rosemary and lemon marinated Easter roast lamb shoulder Serves: 4 Preparation Time: 20 minutes Cooking Time: 1 hour 20 minutes

Ingredients:3 cloves of garlic, crushed3 sprigs of rosemary, stalks removed and leaves f inely chopped4 anchovy f illets, f inely chopped to a paste2 x stock cubes1 lemon, zest and juice3 tbsp. of olive oilA pinch of ground cumin1 x 1.5kg bone in lamb shoulder with the outside scored

1. Crumble stock cubes into a powder and combine with all ingredients minus the lamb shoulder in a large bowl. Mix thoroughly to create a paste and add more olive oil if the mixture is too thick. There’s no need to add salt, as the anchovies provide a salty f lavour.2. Rub the thick paste all over the lamb shoulder and if you have time, leave in the fridge for a few hours or overnight to marinate.3. Preheat oven to 180°c or Gas Mark 4. Remove the shoulder from the fridge and transfer onto a deep roasting tray. Pour any excess marinade back onto the shoulder.4. Place in the oven and roast for approximately 2 hours.5. Remove from the oven and allow to rest for 20 minutes before carving.

- Artichoke: Natoora’s spiky artichokes are sourced directly from two growers in Nor thern Sardinia and Liguria. Located between the sea and the hills, the cool winter nights and sea breeze allow the plants to grow very slowly, resulting in an incredibly tender artichoke that is best eaten raw. Slice on a mandoline and toss with lemon juice, olive oil and salt to taste its freshness.

- Watercress: Grown using traditional methods and sourced directly from a family of growers in Chichester. Hand-picked and delivered on the same day, these crisp leaves are consistently fresh with peppery notes. For a fresh Easter salad serve with olive oil, salt and a lemon juice or even as a watercress pesto to accompany a roast.

WINE FROM PAVILION WINE

2008 Rioja Reserva, Contino, SpainMade with hand-selected grapes, this is a very classic wine which goes perfectly with lamb, roasted or pan-fried. Aged in oak and then in bottle, it is a medium plus bodied wine which shows unique terroir characteristics. Discover a mix of fresh and dry fruits, leather and tobacco aromas. 2012, Chateau Mille Roses. Margaux, Bordeaux, FranceGrown in a 9.5 hectare vineyard, this wine is full bodied with perfumed supple fruits, oak f lavours, very well balanced and with great structure. Mille Roses represents remarkable value for money compared to other Chateaux in the region. It ’s a great match with steak, grilled red meat or Moroccan Lamb.

SWEET TREATS FROM BREAD AHEAD

Renowned for their irresistibly tasty, soft doughnuts f illed with utterly decadent and innovative f lavours, Bread Ahead share their Easter special. Introducing the legendary Hot Cross Bun Doughnut, sure to take centre stage during the Easter weekend. These extra special doughnuts, or ‘pillows of joy’ as they are sometimes known, are laced with succulent raisins, candied peel and a hot cross bun mixed-spice, f illed with a rich vanilla custard and topped with their very own little baked cross. Sink into pure deliciousness for a limited time only (from 3- 15 April). Freshly-made hot cross buns are also on offer for those after something a little less sweet.

CHEESE BOARD FROM LONDON CHEESEMONGERS

Celebrate Easter with the finest, in-season cheeses, as spring produces some of the best traditional flavours (thanks to the new grass which gives young, soft goat and sheep milk cheeses a clean fresh vibrancy).

For the ultimate spring cheeseboard choose a Hay-on-Wye, Mistralou, Crottin and Sleightlet, all made from fresh goat ’s milk, full of f lavour and creamy in texture. Perail is another to look out for, made with sheep’s milk and for those after a stronger but beautifully velvety taste. For more classic f lavours, a fresh ricotta and curd as well as mozzarella, buratta and feta are the perfect addition to your board.
