Go Wild on Musselsin

the Moray Firth

The CommonMussel (MytilusEdulis) is found inmany places in theMoray Firth. Theycan form huge bedsparticularly in areaswhere conditionsare good for larvalsettlement, andwhere there is plenty of food. The largest wild mussel fisheryin Scotland is in the Dornoch Firth and run by HighlandFresh Mussels Ltd. on behalf of the Highland Council. Thefishery employs 4 staff, rising to 8 at busy harvestingperiods, as well as supporting a number of jobs in shorebased businesses. Income generated goes to the TainCommon Good Fund.

The mussel fishery has had a long association with thepeople of Tain. In 1612, ownership of the mussel scalps andthe right to fish for mussels was bequeathed to the RoyalBurgh of Tain by James VI of Scotland. The Dornoch FirthMussels provided an important source of food during timesof famine, and are today considered a highly desirable fooditem.

Approximately 60% of the mussels are exported directly toFrance. Much of the remainder is sold to two localcompanies in Tain, who clean and grade the mussels, packthem in 5kg bags and sell to customers across the UK.Mussels are extremely high in proteins, calcium and ironwhile being low in fat and calories. They are also excellentfor your heart, containing the highest amount of Omega 3ʼsof any shellfish (this is the naturally occurring fatty acid that isbelieved to lower blood pressure).

The Dornoch Firth is regarded as an area of high ecologicalvalue. The Firth is virtually unaffected by industrial devel-opment and supports a wide range of marine and bird life.Around one third of the Firth lies within Sites of Special Sci-entific Interest (SSSI), and forms part of the proposedMarine Special Area of Conservation.

Dornoch Firth mussels are not farmed like most of themussels sold in supermarkets.

Wild beds are used that regenerate naturally and great careis taken to ensure these are not over-fished. Stock surveysare carried out annually using a variety of techniquesincluding underwater cameras. These then determine theharvest levels for the coming year.

Mussels as a foodMussels are truly one of natureʼs most delightful delicacies.They are usually steamed, although they are wonderful grilled,baked, stewed or sauteed. It is difficult to understand whymussels have taken such a battering by the British palate. Theyare often dismissed as the delicacy that they are, perhaps dueto the fact that there were once a staple part of our diet.Europeans do not seem to have lost this and eat them by thebucketload!

Moules Mariniere

4lbs mussels, scrubbed and scrapedBunch of fresh herbs4 tbsp onion, freshly chopped1 oz butter unsalted8 fl oz dry white wine1 tsp lightly crushed blackpeppercorns2 fl oz double cream

In a large pan with a tightly fitting lid, bring to the boil the herbs,onion, butter, wine and pepper. Add the mussels, return to theboil and cook over a high heat until all the mussels have opened.Turn the mussels into a colander set over a bowl to collect all theliquor.

Put the mussels into a tureen to keep warm, then strain the liquorback into the pan through two thicknesses of muslin to removesandy grit. Reduce the liquor by about a third to intensify theflavours, then add the cream and pour over the mussels.

Garnish generously with chopped parsley. Serve with crustybread to mop up the juices and your desired quantity of dry whitewine.

As I write the nights are now well andtruly drawing in and we have had ourfirst frost. It’s that time of year when Irecall to action my central heating anddo my best to reclaim my share of elec-tricity from the national grid, as I keepmy home illuminated in the gatheringgloom! Halloween and Bonfire Night arenow just around the corner. Yes - it’sautumn already! I do love the variety ofour seasons, and the way they change,but I must confess to being no lover ofthe dark. Don’t get me wrong, it’s notthat I’m scared of the dark (ok, maybe Iam a little!), but I much prefer the lightwhere things can be seen and identifiedmore clearly.

Generally bad things seem to happenmore often in the dark. Just think of howmany films you’ve seen, horror orotherwise, where the evil deed occursunder the cover of darkness. And it’snot just physical darkness that leads totrouble. We often complain that we havebeen ‘kept in the dark’ about an issueand then make poor decisions as aresult. If only we’d had the ‘light’ ofknowledge, maybe then we would havesaid or acted differently.

Sometimes I wonder if we have anunhealthy fascination with darkness, es-pecially concerning how we entertainourselves. Films seem to promote them-selves more and more on being darkerand edgier, Harry Potter has its ‘darkarts’ and Star Wars the ‘dark side of theforce’. Just one look at a video gameschart reveals numerous games basedon death, destruction and crime. Ormaybe you feel that there is enoughdark stuff in the real world to consider.Not just the obvious terrorists, serialkillers or evil dictators, but bullyinggangs, drugs and crime. The more wethink about it, the more we see we aresurrounded by evil. Of course it isalmost Halloween, a mainstream ‘cele-bration’ that is based on violence, fearand real evil, not make believe evil.‘Surely not!’ I hear you cry. ‘It’s just a bitof harmless fun.’ Well, maybe on onelevel I guess it is, but I really do believethat the physical world we see is not allthere is. And I for one, don’t like thethought of entertaining the powers ofdarkness.

Interestingly, and probably not surpris-ingly, the Bible talks about light anddarkness quite a bit. Jesus himself says

“I am the light of the world. Whoeverfollows me will never walk in darkness,but will have the light of life.” (John8:12). Time and again the bible makesreference to us living in spiritualdarkness and talks of Jesus being theone true light who can illuminate ourpath and help us make sense of thisthing called life. Sadly though, not allwant to live in the light. Light has comeinto the world, but men loved darknessinstead of light because their deedswere evil (John 3:19).

What about you? Which do you love -darkness or light?

Listen again to the words of Jesus: “Ihave come into the world as light, sothat whoever believes in me may notremain in darkness”. (John 12:46).

As you stock your cupboards with treatsfor the imminent ‘trick or treat-ers’, mayyou ponder his offer of light for your life.Jesus alone brings this dark world thelight of true knowledge, moral purityand ultimate rescue.

Public Session• Mr Andrew Fowlie, from the MorayHealth Care Partnership, thanked theCommunity Council for the invitation toaddress members and introduced Mr LStewart, Ms E Brown & Dr J Hogg whowould answer specific questions ifrequired. He explained that althoughthe Health Centre & Hospital had beendecided on previously, with funding allagreed the current financial climate hadthrown all plans out of the window. Now,he said, we have to look again at thesituation and start building up a freshcase. Mr Stewart said that previously hehad suggested that an NHS built DentalSurgery was possible for Forres butnow that was a financial non-starter.The survey, carried out previously,showed 600 people needed an NHSDentist in the area and this was not suf-ficient to justify a post. Cllr Hellyerpointed out that this was 600 withoutany dentist & was achieved in afortnight of polling. More could be foundwho would prefer not to travel afield toElgin, Inverness or further for dentaltreatment. If the 600 were added toNHS IV36 patients on lists in theextended area it would no doubt justifyanother surgery.

Ms Brown told members that havingpreviously created a full business casefor the Hospital/Health Centre they nowhave to revise the case for a HealthCentre & continue using Leanchoil forHospital facilities. Leanchoil wouldrequire a backlog of maintenance workbeing prioritised and a member of thepublic asked why it had been allowed to

deteriorate. Ms Brown said that theyhad hoped that it would have beenreplaced by the new centre. Whenasked she said there were no plans toreduce the number of beds in use butthere are ongoing discussions aboutthe best use of facilities. Estimatedrepair costs would be between£600,000 & £1 million to bring it up tostandard. Cllr Mackenzie asked if itwould not be more sensible to build thenew Health Centre on the same sitewhilst revising their plans but Moray CllrBell pointed out that it would meanmaking the case from scratch ratherthan just amending the plan. The Chairthanked Mr Fowlie & party for theirinput.

• Cllr Kennedy, who had attended thatafternoons preplanning consultation byRobertson’s on their Lochyhill planningapplication said that he was surprisedto hear that no indication had beengiven by the planning department to thedevelopers as to the nature of the ob-jections lodged against the proposedplans. That being the case how, heasked, could the planning applicationcater for the objectors and thedeveloper reaching a mutual accept-able agreement. Cllr Hellyer suggestedthat a meeting between the developerand objectors could bridge the gapcreated by the inflexibility of the MorayCouncil Planning Department.

One reason why I takepart every year in theMoray Bike Ride which Idid again recently is thatit gets me back on thebike for fresh air and

exercise.This year a hardy bunch of local familiesbraved the elements and took part, all inaid of the Royal Society for the Blind. Ourlovely countryside looks even better fromthe saddle and no doubt like most readersI only wish I could discipline myself to gocycling a bit more often, to shed thepounds and, in my case become anincreasingly rare entity - a fit and healthypolitician!

Often we hear bad thingsin the media about youngpeople but like allsections of society it is ahandful who are givingan impression to society

that, in the vast majority of cases, is wellwide of the mark.

My own experience in recent weeks onvarious school visits has been of meetingyoung people who are engaged, enthusi-astic and confident individuals. It is greatto see them continuing to develop theseskills with the encouragement andguidance of their parents, teachers andthe wider school community.

Secretary’s Report• The Secretary apologised for his latearrival at the meeting, due mainly todelays in the buses from Aberdeen.• The mail in this month included aninvite to assist with the recruiting ofpanel members for the MorayChildren’s Panel and included leafletsfor distribution. The Secretary pointedout that these leaflets produced by theMoray Council PrintingService, were a poor advert for in-house production if they were notchecked for spelling mistakes prior toproduction.• A letter from the Chair of the JCC en-courages all Community Councils tosupport the JCC and stresses itsbenefits to member Councils.• The CC has received notification thata consultation process will start on the6th Sept to discuss the location of theGypsies/Travellers Halting Sites andasking for our help in selecting suitablelocations for the consultations. TheSecretary reminded members that oneof the suggested site locations was, infact, common good land on the backroad to Kinloss.

• The Community Warden, Mrs MCowie, has approached theCommunity Council to ask if we wouldonce again support the funding of thewinter months Friday film shows in theTown Hall, commencing in October,and cover the hall letting fees of £120.Members voted unanimously tosupport this initiative for young peopleand instructed the Treasurer accord-ingly.• Following concern by a member ofthe public over traffic speed inForbeshill, in the vicinity of a play-ground, a letter from the Traffic De-partment notified us that traffic speedsin the area had been checked over athree day period and had been foundto be within the laid down limit.

Chair’s Report• The Chair said that he had receivedmail calling for an early day motion inthe House of Commons objecting tothe use of nuclear power. He also drewmembers attention to the digging in theMuseum Square, by the chess board,to install a notice board promotingsmall towns funded by the SmallTowns Partnership.

External Groups Report• The Youth Representative, RossKennedy, asked if representatives ofthe Pupil’s Forum could address theCommunity Council next month on Fa-cilities for Young People.• Cllr Mackenzie said that the MountDora visitors had returned to theUnited States and that the Scotland inBloom Judges would be announcingthe results on the 22nd of September.

Treasurer’s Report• The Treasurer informed the meetingthat our account stood at £593.26

A.O.C.B.• Cllr Hellyer warned members thatBritish Gas were not acting on com-plaints or change of service unless aproof of posting could be produced.

Forres Common Good Fund• Cllr Hellyer informed the meeting thatthe CEO of Moray Council was onholiday at present and he hoped tohave more information on a meetingwith him by our next meeting.

Gollachy CircularBuckie

INTRODUCTION:

This route explores the coast west of Buckie asfar as the Portgordon, returning at a higher levelwith extensive views over the Moray Firth.

THE ROUTE AND FEATURES OF INTEREST:

Starts and finishes in the square in Buckie.

Follows pavements to Buckpool Harbour, thenorthern terminus of the Speyside Way, andthen follows this route to Portgordon. Look outfor seals along the foreshore. Return by the oldrailway line as far as the Gollachy Burn, thenskirt the Buckpool golf course back to Buckie.

Follow the metal and timber signs with thegreen Buckie Footpaths Network logo.

SIGNAGE: Fully Signed

WALK GRADE: Moderate

An undulating path of between one and fourmiles, which may have a few short steepsections and/or varying surfaces.

HEIGHT CLIMBED AND DEGREE OF SLOPE:

Short steep section climbing up to the golfcourse near the Gollachy Burn.

TERRAIN:

Tarred pavements and gravel paths. A shortsection of path at Gollachy Burn can be muddy.

Parsnip Veloute

Now that the weather will be getting colder Ithought that I would bring along a soup to the table.Veloute translates as ‘velvety’ in French, it is a very rich,smooth and filling soup and it is a very big seller in ourrestaurant. The base for the soup remains the same - itis just the core flavour, in this case parsnips, thatchange. So, you could use any thing from artichoke tozucchini, my personal favourites are cauliflower, parsnipand carrot. The key to getting this soup velvety iscooking the ingredients until they are very soft, then liq-uidising and then passing them through a sieve. Soonto the recipe that is basic as it only has four base in-gredients, but is extremely worthwhile and will pleaseyour family or your dinner guests.

Serves 4-6 approx

4 Large Parsnips1 Large Onion125g Slightly Salted Butter500ml Double Cream (it must be double for cooking)1 Pint of WaterSalt to season and pepper if you must

Peel the parnips, quarter them, take out centre stalkby cutting at an angle to remove, this is so your soupcooks quicker and to maintain smoothness.

Peel the onion and slice roughly, put parsnips,onions, butter, cream and water into a large pan,making sure all ingredients are covered by the liquidand cook until very soft. Liquidise until smooth, passthrough your finest sieve, taste and season ifnecessary, then serve. If it is slightly thick you can addwater to reach your desired texture. I would serve thiswith parsnip crisps and a wee splash of white truffle oil.

Parsnip Crisps

1 Large ParsnipTeaspoon of SaltBoiling Water

Peel one large parsnip, cut the top and tail off, ifyou have a mandolin slice thinly remembering to useit's guard, if you don’t have a mandolin just use a goodpotato peeler to peel strips from top to bottom. Thenplace the strips of parsnips into a metal or glass bowland cover with boiled water and a teaspoon of salt,cover with cling film and allow to cool naturally, oncethey have cooled, remove from water and place on atea towel and pat them dry, then put them into a deepfat fryer at 180°c until they crispen. The point of puttingthem in water and salt is to maintain as much of thenatural white colour as possible (some food sciencehappens along the way!)

Next month I will bring you a good and heartywinter warmer main course, just like we are serving inThe Grill for this season, where we are concentrating onhomely feel good food such as Fish and Chips, our everpopular Steaks and the classic Sticky Toffee Puddingwhich featured in last month’s issue. These traditionaldishes will run alongside the existing seasonal menu.
