DID YOU KNOW, Palm Lake Group has more than 40 years of history in developing manufactured home estates, retirement villages and aged caring communities across Australia’s eastern seaboard? It’s rewarding for me to oversee this family owned and operated company that, four decades on, continues to develop award-winning homes and world-class facilities where likeminded family communities can come together.

I’ve been lucky enough to spend some quality time on the road these past few weeks, visiting our Beachmere Bay and Caloundra Cay construction sites and also meeting with the Residents’ Committee at Palm Lake Resort Cooroy-Noosa to hear all about our developing community there. Cooroy-Noosa welcomed its first residents at the end of 2016 and we are still building homes on that site at a rate of knots. This community, while young in history, is also very young at heart. The residents at this resort have a great take on life and are really out to enjoy their retirement years. While I watch our resorts evolve from council applications and renderings on paper, to excavators and construction machinery, to fixtures, fittings and landscaping, it’s always an unknown what the ‘community’ within these resorts will actually look and feel like. Cooroy-Noosa’s is emerging as a real winner. The residents there are definitely tightly knit, proactive and living large. You can read more about them on the following pages.

Across the board, our construction teams are working feverishly to keep up with demand. Beachmere Bay’s palatial Country Club is rising up out of the ground and will definitely set a new benchmark for clubhouses across our group. And as I write this column, it’s also been a wonderful day for the company today with the Caloundra Cay pool being poured, marking the official start of our facilities build for that brand new resort. Palm Lake Group prides itself on delivering key facilities in parallel to our first residents moving in to any new location.

Over to Palm Lake Care – I’ve been onsite at our Mt Warren Park construction site and proud to say it’s on track for its scheduled end-of-year opening. Next month we will begin construction of Palm Lake Care Toowoomba which will grow our aged caring communities to a total of five, with even more in the pipeline.

We do hope you enjoy the read this edition. We’ve enjoyed bringing it to you.

WINTER EDITION 2018

IT’S THAT COVETED international holiday location, east of New York City, that oozes grace and casual sophistication. The Hamptons, on eastern Long Island’s South Fork, is a string of seaside communities known as a summer destination for affluent New York residents and those further afield. It’s marked by long stretches of white sandy beach and an interior of farmland, towns and villages with 18th Century shingle buildings and estates hidden behind tall boxwood hedges. Historically, the Hamptons has been devoted to agriculture and fishing. Many farms are still in operation in the area and it also offers commercial vineyards.

While the Hamptons is famous as a playground for holidaymakers the world over, it’s also where the inspiration

for Palm Lake Resort Beachmere Bay comes from. As well as taking design and styling cues from the villages and hamlets of the Hamptons, Beachmere Bay’s first 10 home designs have also been named after famous locations there. For example, “Brookhaven” is Palm Lake Resort Beachmere Bay’s largest home. It’s a three-bedroom, two-bathroom delight (at 245sqm), offering a useful study nook, outdoor living, double garage and a large, inviting front porch. The real-life town of Brookhaven is the most populous of the 10 towns of Suffolk County, New York. Part of the New York metropolitan area, it is located about 80km from Manhattan. It is the only town in the county that stretches from the North Shore to the South Shore of Long Island. It is the largest of New

York State’s 932 towns (by area with water) so it was the perfect moniker for Beachmere Bay’s largest and grandest home design.

Beachmere Bay’s “Huntington” design also offers three bedrooms, two bathrooms, open-plan living, a clever study nook and more, at a total of 237sqm. Along with Brookhaven, Huntington is also a town in Suffolk County.

WHAT’S in a NAMEInspired by the iconic Hamptons, there was no way Beachmere Bay’s home designs weren’t going to enjoy their own personalised touch of this seaside Mecca.

• Oakdale, Manorville, Eastport and Holbrook: Each named after hamlets in Suffolk County, New York. The county was named after Suffolk in England, from where its earliest European settlers came. It’s the largest of Long Island’s four counties.

• Laurel: An 8km² patch roughly corresponding to the hamlet of Laurel in Suffolk County, New York.

• Greenvale: A hamlet in Nassau County, on the North Shore of Long Island. Beachmere Bay’s ‘Greenvale’ is the resort’s first display home - open now!

• Brightwater: Named after “Brightwaters” - an upper-middle class village in the southwest part of the Town of Islip, Suffolk County.

• Watermill: Named after Water Mill - a hamlet of the Town of Southampton on Long Island. Water Mill derives its name from a claim that the first watermill in New York was built there in 1644.

How Beachmere Bay homes got their famous monikers

Beachmere Bay’s first display home, the ‘Greenvale’ is

now open!

The villages and hamlets of the Hamptons are distinguished by their significant population increases during the summers, although the Hamptons have increasingly become year-round destinations for New Yorkers seeking a refuge on weekends as well as other holidaymakers from right around the world.

Did you know, the Hamptons area is home to celebrities such as screen stars Brooke Shields, Steven Spielberg, Gwyneth Paltrow, Howard Stern and Sarah Jessica Parker? Musicians Paul Simon, Jennifer Lopez, Paul McCartney and Jimmy Buffet can also be found there. And given the Hamptons’ impeccable style, there’s little doubt why fashion icons such as Calvin Klein, Ralph Lauren, Donna Karan and Stella McCartney have invested there.

Recipes from 22 of the resort’s best cooks, representing many years of experience in preparing delicious dishes, are contained in the book.

“Most have been handed down from parent to child over generations, handwritten on the back of envelopes, scribbled in notebooks or written at the end of old recipe books from the last century, making them family treasures and secrets, generously shared,” says Beachmere Sands resident and Social Club chair Chris Sutton, on behalf of the group of cookbook volunteers. “Others have been created and refined by their donors; modern and delicious.”

FOOD, GLORIOUS FOOD

COOROY MEMORIAL HALL IS SAVED!The power of community spirit was proven in Cooroy recently when the iconic Cooroy Memorial Hall was re-opened after extensive renovations. Built in 1910, the hall was scheduled for demolition, such was the state of its disrepair. However, the community and local businesses rallied, including Palm Lake Resort as a gold sponsor, and through donated cash, goods and physical labour, the hall is back better than ever before. Job well done!

Did you know that every Palm Lake Resort home is allocated a complimentary meal voucher to be redeemed in their respective onsite dining facility each week? Weekly residents’ meals are a great way to meet new neighbours and spend quality time with likeminded friends over some hearty food.

PRIME MINISTER COMES TO PALM LAKE RESORT Fresh from rubbing shoulders with Charles, Camilla and other dignitaries at the Commonwealth Games opening ceremony, Prime Minister Malcolm Turnbull was rubbing shoulders with residents of Palm Lake Resort Eagleby the following day. Malcolm proved himself quite the master of the selfie photo while delighting our residents and visitors at the morning tea.

Palm Lake Group staff are pretty special people. None more so than Perry, our site supervisor at Palm Lake Resort Ballina. Perry participated in the Yamaha Variety Jet Trek Sydney, held each year to raise funds for Variety the Children’s Charity, to empower children who are sick, disadvantaged or who have special needs. Perry’s trek took him and his team from Sydney to Yamba on jet skis. Palm Lake Resort proudly sponsored Perry on his adventure. Since the event’s inception, Jet Trekkers have raised more than $1,450,000. When Perry passed by Tea Gardens on his way to Yamba, he was warmly welcomed by a Palm Lake Resort Tea Gardens ‘cheer squad’.

PALM LAKE GROUP’S newest resort location packages up all the best parts of the idyllic Caribbean and brings them to Caloundra on Queensland’s Sunshine Coast. Just 90km north of Brisbane, Palm Lake Resort Caloundra Cay takes designer living to yet another level with its tropical-luxe Caribbean theme. When complete, the resort will comprise 270 single- and double-storey homes, with 15 different designs, all named after Caribbean locations.

Blush Interiors co-founder Diane Gaffney, who consulted to Palm

Lake Group on the Caribbean design features of Caloundra Cay, says this new resort blends a tropical bohemian lifestyle with opulence. Think cool ocean breezes from the swim-up pool bar and relaxed evening cocktails by a sunken fire pit.

“The external pool and bar area will definitely be the highlight of the resort,” Diane says. “It incorporates different earthy tones and uses materials that we haven’t used in a Palm Lake Resort before now.

“Think acrylics, drapery and a waterfall feature at the entrance giving a nice and relaxed, but high-end feel.”

As would be expected, there is an exotic spectacle planned for Palm Lake Resort Caloundra Cay’s country club. As well as the above features, the country club precinct will offer an indoor swimming pool, eight rink undercover bowling green, tenpin bowling alley, tennis courts, Milon gym, luxury cinema, library, arts and craft room, dance floor, virtual golf and much more.

Palm Lake Resort Caloundra Cay’s designer homes and facilities will only be enhanced by the magnificent use of space. Regional sales manager Brittany Baldwin says part of the

resort footprint has been reserved for a park to allow continuity between adjoining bushland and draw on the wonder and natural beauty of the Caloundra area.

“Caloundra Cay will really shake things up for Palm Lake Resort,” Brittany says. “Residents will feel as if they are walking into an island paradise every time they come home. We have used a colour palette of deep greens, browns and soft whites coupled with natural textures to really emphasise the feeling of being in an island paradise.”

Palm Lake Resort Caloundra Cay is the culmination of more than 40 years’ worth of Palm Lake Resort expertise and firsthand knowledge in crafting designer lifestyle resorts. The first residents are set to move into Caloundra Cay later this year.

“From unforgettable muddy, earthy hues to tropical greenery mixed with timbers (both dark and sea drift), Caloundra Cay is a celebration of the sea, lush plant life and timeless elegance.”- Blush Interior Designs’ Diane Gaffney and Madelyn Clarkson

GET TO KNOW THE CARIBBEAN

The Caribbean, a region comprising the Caribbean Sea and some 700 islands, sits southeast of the Gulf of Mexico and several hundred kilometres from Florida.

With Cuba, Puerto Rico and Jamaica just three of almost 30 countries in the Caribbean, the region has a cumulative population of more than 40 million. However, only a small percentage of the islands in the Caribbean are inhabited.

The very first Bond film, Dr. No, was filmed in the Caribbean, on the island of Jamaica, in 1962.

A large majority of the Caribbean population are descended from African slaves, brought to the region by European colonialists to work on sugar plantations. When slavery was abolished in the early- to mid-1800s, the former slaves stayed in the Caribbean.

The world’s only ‘drive-in volcano’, also known as Sulphur Springs, is on the Caribbean island of Saint Lucia. The volcano hasn’t erupted since the 18th Century, but the heat it emits still causes the mud and sulphur to bubble and boil.

Some well-known Caribbean dishes include coconut prawns, chicken kebabs and key lime pie.

George Washington’s first and only foreign trip was to Barbados. He visited when he was 19-years-old with his sickly half-brother, in the hopes that the environment would cure his brother’s tuberculosis.

THE SECRET OF FINDING HAPPINESS has long been a question people have pondered. Does it come with wealth? Good health? Or those little things that make us smile unexpectedly? While Palm Lake Group is renowned for building multimillion-dollar country clubs, community facilities and award-winning houses across Australia’s east coast, there’s one thing that makes these houses into homes, and these collective homes into warm, welcoming, happy communities – the people.

It doesn’t matter which residents of the 22 Palm Lake Resorts you speak to, over the 40-odd years that Palm Lake Group has been developing these sites, you will always hear stories about firm friendships built over the fence, over a game of lawn bowls or over an icy cold beverage at Happy Hour. While Palm Lake Resort residents are encouraged to do as much or as little as they please, each resort’s weekly activities roster and special events calendar is brimming with opportunities for residents to spend time with likeminded neighbours and herein lies one of the secrets to authentic happiness – being part of a community.

The research

A 2004 Turkish study on the ‘Relationships Between Quality of Life, Perceived Social Support, Social Network And Loneliness’ showed that “perceived social support was related to overall quality of life and general heath”. In 2008, the Italians studied ‘Factors associated with health-related quality of life: The role of social relationships among the elderly’ and proved that more frequently visiting/

seeing friends was associated with improved physical and mental health. In fact, research widely proves that, as an extension of the happiness and mental wellbeing residents experience from being part of a community, their health will also thank them for it.

A 1998 research project examining ‘Social networks, stress and health-related quality of life’ data from 47,912 middle-aged and older healthy women showed that, compared to the most socially integrated, women who were socially isolated had reductions in

mental health and vitality scores. “Social networks are positively associated with mental functioning in women,” the study reported. The Swedish also showed, in 1993, that “lack of social support was associated with an increased future risk of an acute myocardial infarction and death from coronary heart disease”. And finally, in Finland, a 1989 study of the association between social ties and survival was assessed using a sample of 1060 people aged 60–89 years, proving “social participation was…strongly associated with increased survival in both sexes”.

The psychology

When quizzed on what makes people happy, clinical psychologist Dr Aaron Frost of Benchmark Psychology in Brisbane says it comes down to a “golden triangle” of love, money and activity.

“As for love – having a functional intimate relationship is associated with being happy. This mimics the findings of the classic Alameda County study which found that those in stable marriages actually live longer,” Dr Aaron says. “With money, you don’t need to be wealthy - a combined income of some $100,000 per annum seems to be the tipping point at which happiness kicks in. More than that doesn’t seem to add much happiness and, in some cases, the sacrifices needed to earn that much can see people being less happy. But activity is the interesting one. Having a sense of purpose and something to fill your time with seems to be the final piece of the puzzle. In a nutshell - work hard, play hard and be good to those you love,” he says.

The proof

Palm Lake Resort Cooroy-Noosa is one of Palm Lake Group’s newest lifestyle communities but it’s clear to all those who have experienced this Sunshine Coast location for themselves that one of the most tight-knit and supportive communities exists here. Community is about growing with others. It’s about frequency of contact, a sense of belonging and sharing – and Cooroy-Noosa offers it in bucketloads. Turn over to meet some of their happiest community members...

WINTER EDITION 2018

WHETHER you are local to Toowoomba or stopping by on a road trip through, there’s no better time of the year than winter to explore Southern Queensland Country. With the days so mild, it’s actually worth ditching the car and pulling on your sneakers for an up-close-and-personal experience, on foot, with this area’s natural wonderment.

Time for You magazine spoke to Southern Queensland Country Tourism to uncover the best short walks in and around greater Toowoomba. Stretch your body, mind and soul with these Top 5 short walks.

Queen Mary Falls Move over Meghan, you’ll feel a little like royalty yourself meandering along the Queen Mary Falls Circuit in this section of Main Range National Park. This Class 3 walk is 2km long and takes about 40 minutes. You’ll encounter flora from eucalypts to rainforest. The Queen Mary Falls lookout affords views of plunging Spring Creek, some 40m below.

The Pyramid, Girraween National Park There are 11 different walks from which to choose in Girraween National Park, but one of the most popular (if you have the stamina) is The Pyramid, a 3.6km, two-hour trek incorporating eucalypt forests, rocky outcrops and grassy flats. In the end, it’s all about the view from the top – Balancing Rock and the Second Pyramid. Beautiful.

Governor’s Chair Lookout, Spicers Gap Situated in Main Range National Park, this is not a long walk, just 300m return, but it’s one of importance.

There’s a huge rock called Governor’s Chair, which affords views over the Fassifern Valley, and is reportedly where early governors themselves would take a rest when travelling throughout Queensland.

Scenic Circuit, Bunya Mountains There’s good reason they call this route the Scenic Circuit. This 4km trek, which takes about 80 minutes, is one of the most popular on the Bunya Mountains due to the diversity and sights it offers. Think Bunya pines, giant strangler figs, pretty rock pools and Tim Shea falls.

Toowoomba’s gardensThere are three gardens and parks worth a short walk in Toowoomba, after all, you are in Queensland’s flower capital. While Queen’s Park is considered the city’s centerpiece, there are 3km of paths and 230 species in the Japanese Garden, and the Newton Park State Rose Garden boasts more than 1500 roses, which are well worth wandering around.

19

If the waistlines of residents start to expand, there will be one local woman and her delectable baked goods to blame: Cooroy-Noosa cook, Belinda. A pastry chef by trade, and with Noosa Country Show ribbons to her name (her mint slice cheesecake is literally the best non-baked dessert in town!), Belinda has spent 16 years behind a kitchen bench and is now responsible for feeding the Cooroy-Noosa masses. She and her team create all meals from scratch, buying fresh local produce and from local suppliers as a priority. She designs menus based on resident feedback and around dietary guidelines while accommodating resident vegetarians and coeliacs.

“This is one of the best communities I’ve ever been a part of,” Belinda says. “They are all so supportive, get along so well and are so respectful of the staff. New residents are always made to feel welcome. Everyone goes in with a smile. It doesn’t feel like work for me – I’m having more fun here than ever before!”

So, whichever Palm Lake Resort draws your attention, wherever you choose to lay your hat, be confident that you’ll find a welcoming community there. And you’ll also, no doubt, find your happiness.

WINTER EDITION 2018

“Thanks to all our residents, and their contagious enthusiasm, we have a lot of fun!” says Deb Ryan, caretaker at Palm Lake Resort Cooroy-Noosa.

“With a large group of proactive people here at Palm Lake Resort Cooroy-Noosa, it’s a real hive of activity. Within the Pavilion Recreational & Wellness Centre, we run water aerobics, chair yoga, art classes and line dancing while also enjoying our own personal Milon gym instructor. The residents have also organised craft classes, card nights, social golf, Mah-jong and tenpin bowling evenings. Snooker comps, trivia nights and movie nights are also popular. Sometimes they just relax in the spa or lay by the pool and read a book.

“Often the resort bus is utilised by residents to go to places such as Noosa Main Beach, the Eumundi Markets or even a live show at any number of great venues. Residents have packed a picnic lunch and headed off on a mystery bus tour of the scenic Sunshine Coast. With our bowls club, tennis court, golf simulator room and workshop, there just aren’t enough days in the week!

“This would have to be the happiest lifestyle resort on the Sunshine Coast. Even our social committee is named the ‘Fun Committee’,” Deb remarks.

“The work of volunteers is an integral part of the structure of our community. These residents help to build a sense of community with the enthusiastic way they go about their business. They deserve the biggest thanks. We have a great team. We live in possibly the best location in Queensland. Life could not be much better.”

MEET THE CARETAKERS

MEET BELINDA

NATURAL WONDERPalm Lake Resort Toowoomba residents are in no doubt that they live in one of the most picturesque parts of our country. Explore it with them this winter.

MEET RUTH

A long-time local, boasting 29 years living in ‘paradise’ here on the Sunshine Coast, Ruth was stuck between a rock and a hard place when her husband passed away six years ago. The family home was too big for her alone but she was “very, very shy” and didn’t want to go out. An open day at Palm Lake Resort Cooroy-Noosa sealed the deal.

“I fell in love with everything – the facilities and the homes – just everything!” she says. Ruth recalls moving in on a Friday morning and attending Happy Hour drinks that night – forcing herself to get to know people. Seven months down the track and Ruth says she’s busier than ever. With access to the Milon gym, the resort pool to swim laps, aqua aerobics and yoga, she’s also fitter than she’s been in 25 years – and the health statistics collected through her Milon gym membership prove Ruth is as fit as a person 15 years her junior.

“I want to take up lawn bowls next – I’ve just got to find time!”

The Walshes lay claim to being the very first residents to move into Cooroy-Noosa back in November 2016. They’d spent 13 years living in other community lifestyle resorts on the Gold Coast, before finding their perfect fit here. The epitome of a social butterfly, Carol says there’s so much to do on-site that they have to remind themselves there’s life outside the Cooroy-Noosa gates! “I might go a whole week without leaving the resort but I never feel like I’m missing out,” she laughs. Jim keeps busy as the resort Bowls Club games director and Carol can be found on the bowls green, playing cards, joining in the art and craft group, in the pool, doing aqua aerobics or at the gym.

“Everyone’s so friendly - we know we’ve got support whenever we need it. You’ll go down to the resort coffee shop at any time of the day and there will be six to 12 others already there enjoying a chat,” Carol says. “We are having fun and making friends by the bucketloads! They’ll be taking us out of here in a box – we’re never leaving!”

AS WE AGE, it becomes increasingly important to stay involved in activities that keep us mentally and physically fit. From croquet to crochet, studies show that participating in social activities – whatever they may be – can improve our cognitive function, emotional and physical health, our longevity and even our immune system.

It’s no wonder, then, that activities abound across the many Palm Lake Resort communities. Residents can take their pick from dozens of different sport and activity groups, and often find themselves making new friends and even learning new skills that they never thought they would have. Perhaps the best examples of this are the many woodworking and general workshop groups that have sprung up across the Palm Lake Group, as a result of the well-equipped workshop facilities available in these resorts.

At Palm Lake Resort Tea Gardens, the woodworking culture is strong. Resident Graham Chapman, who has a background in the metal trade and technical training management, says that the residents with building experience can often be found assisting novices.

“We’ve got around 51 residents who have done the induction training sessions, where those of us who have backgrounds in building go through the safety aspects of all of the equipment that’s available to us, and show others how to use it safely,” explains Graham.

Among the fixed machinery available to Tea Gardens residents in their resort workshop is a woodturning lathe, router table with router, 10” table saw, pedestal drill, 8” bench grinder, belt/disc sander, bandsaw, jointer, planer/thicknesser and a sliding mitre saw.

There’s also a variety of handheld power tools available for use including an angle grinder, biscuit jointer, belt sander, circular saw and jigsaws, hammer drill and an impact driver wrench. You can see it’s a pretty well-stocked ‘man cave’ (but, ladies, you are more than welcome as well!). Other Palm Lake Resort workshops feature a similar array of tools and machinery.

Graham believes that part of the appeal of the Tea Gardens’ resort workshop is that it gives residents a dedicated space to build or repair things.

“We currently open up the workshop on Wednesday and Saturday mornings, but we’re planning to have it open seven days a week soon, such is the increasing demand for the workshop,” Graham says. “The workshop committee have worked very hard

to make sure that we have enough equipment and materials - we run mostly off donated materials.”

The Palm Lake Resort Tea Gardens’ residents often have their hands full fixing and constructing things to support their local community – both within the resort and in the greater Tea Gardens area. From building shelves for the resort’s own Bowls Club to scoring tables for the local juniors’ cricket club, there’s always something going on in the workshop.

“There have been many residents who have no background in building, who have come down to the workshop to learn something new,” says Graham. “We have a little morning tea after the sessions sometimes, and a lot of new friendships have been made. We’d like to keep doing group projects and things for the community.”

WINTER EDITION 2018

The weather is cooling down and many of us are looking for the perfect way to keep warm. And it’s not just a matter of comfort when it comes to staying toasty – keeping warm is key to keeping your immune system fighting strong. Palm Lake Resorts are designed with solar orientation top of mind. Beyond this, our homes and facilities are constructed with quality insulation that, while keeping inhabitants comfortable, also helps with reducing electricity requirements to therefore keep heating (and cooling) costs down.

Hebel A comfortable winter home starts with its construction. Developed in Scandinavia more than 70 years ago, Hebel is a defining feature of most Palm Lake Resort homes. Made using 100 per cent natural materials, Hebel bricks comprise a combination of sand, cement and lime gypsum. Beyond the heat insulation properties and being environmentally friendly, Hebel also offers sound insulation, creating better acoustics within the home and stopping unwanted outdoor sounds from entering. This is perfect if you want to devour a good book or just enjoy some peace and tranquility.

Anticon blanket Hebel brick construction isn’t the only thing keeping most Palm Lake Resort homes warm this winter. Many roofs are insulated with an Anticon ‘blanket’ which sounds literally toasty but also provides temperature and noise control in buildings with metal roofs. The Anticon blanket is a layer of glasswool adhered to an impermeable reinforced reflective foil facing. The lightweight blanket reduces radiant heat entering a home during summer, and in winter it keeps heat in and helps prevent condensation. Basically, the Anticon blanket works as an extra layer between you and the cold weather, keeping your Palm Lake Resort home toasty warm all winter. Talk to our sales team members about which options are available to you.

The weather has really started to cool down now and keeping warm in the colder months is key to staying healthy. In this edition’s ‘Winter wellness’ special, find out more about how we build our homes for comfort and warmth. We have also shared the experts’ tips on how to dress your home for winter, spoken with one of Australia’s favourite foodies, Maggie Beer, to hear her best winter recipes and discovered the health benefits of trendy turmeric. Enjoy.

WINTER WELLNESS

,

If you really feel the cold and the insulation efforts of Hebel and Anticon, as well as a steaming cup of tea, still aren’t enough to satisfy you, your reverse-cycle air conditioner will be the thing you’ll need to further control the ambient temperature of your home this winter. Many believe that it is expensive to run air-conditioning units but research shows a reverse-cycle air conditioner costs less than half the price to run compared to an oil burner heater or a small electric floor heater (which can be up to $20 per week, if run for five hours per day). Beachmere Bay’s MyAir system, pictured below, offers state-of-the-art control of ducted air conditioning to your living area and bedrooms, across four separate zones.

IN THE WINTERTIME, there’s nothing more comforting than slipping into layers of warm clothes and enjoying toasty toes from within the walls of a cosy family home. Elle Interiors design consultant Eleanor Davis is responsible for making Palm Lake Group display homes and Country Clubs into inviting retreats via clever interior design. She says there are two keys areas of your home to consider when preparing for the cool change – your loungeroom and bedroom.

“It’s important to create a cosy environment for yourself in the winter,” Eleanor says. “And it’s in the loungeroom and bedroom where you’ll most want to snuggle into something soft and warm and inviting.”

Eleanor’s Top 5 ways to warm up your home for winter include:

Cushions Adding “large, chunky, textural cushions” to your lounge and bed is the best starting point for any winter warm up. “The secret to a good cushion is a feather insert so that you can really sink into it,” Eleanor says.

ThrowsAdding a throw to the end of your sofa or across the end of your bed is an obvious way to bring literal warmth to your toes this winter. Eleanor suggests seeking out chunky wool knits and faux fur throws for their texture, bringing depth and warmth to a room’s look.

Candles“Candlelight gives a room intimacy,” Eleanor explains. “You can’t have too many candles.”

Flowers“In my opinion, floral arrangements are a must for all rooms,” Eleanor says. The bloom of choice for this experienced designer is the white orchid – a timeless classic. While real flowers bring beautiful scents, Eleanor says modern artificial flowers are so good, you can hardly tell a fake from the real thing – and you won’t kill it!

RugsIf your budget allows it, Eleanor says a textured rug is the piece that will tie all these winter warmer ideas together. Go for a deep pile (not a shaggy rug though, as they have seen their day, Eleanor says), a wool blend and a neutral tone. Eleanor says a lighter rug gives the impression of luxury – something just darker than ivory is her top choice.

“At the end of the day, you want to be able to jump onto your lounge, among your cushions and throws, and get lost in them,” Eleanor says. “Oh, and the one last thing I would recommend this winter is to have a good glass of wine in your hand!”

MARVELLOUS MAGGIE B FOR MORE THAN 50 YEARS, MAGGIE BEER HAS DELIGHTED AUSSIE TASTEBUDS. WITH COUNTLESS RECIPE BOOKS AND AWARDS UNDER HER BELT, YOU’D BE HARD-PRESSED TO FIND A MORE LOVED AUSTRALIAN FOODIE. WE ASKED MAGGIE TO PICK TWO RECIPES FOR TIME FOR YOU READERS AND HERE’S WHAT SHE THINKS YOU NEED ON YOUR TABLE THIS WINTER...

Aromatic coconut soup with prawns & corianderSERVES 6-12

“Those who know me well will be surprised I’ve actually added chilli to a dish, being the chilli wimp I am,” Maggie laughs. “In 20 years of writing recipes, this would only have happened a couple of times before. The chilli here just gives an underlying flavour rather than a blast of heat but, if you love chilli, add more as this soup could take it. This soup is full of anti-inflammatory power from the ginger, garlic and turmeric. I love the combination of coconut milk, lime and coriander, and if you have any coriander that’s going to seed, add the flowers at the last moment too. One last word of advice: don’t overcook the prawns!”

Ingredients12 large raw prawns 40g extra virgin coconut oil3 large golden shallots, thinly sliced 2 cloves garlic, finely chopped 60g ginger, peeled and finely grated 1 tablespoon ground turmeric 1 long fresh red chilli, coarsely chopped (or more if you like things hot) 1 teaspoon coriander seeds 4 lemongrass stalks, pale ends, crushed 4 kaffir lime leaves, crushed ½ cup coriander roots and stalks 2 litres chicken or vegetable stock 2 cups (500ml) coconut milk

2 tablespoons fish sauce 2 tablespoons lime juice Sea salt flakes, ground black pepper 1 tablespoon extra virgin olive oil ½ cup coriander leaves 3 tablespoons fried shallots

Method Peel the prawns, leaving the heads and tails on. Reserve the shells. Use a skewer to devein the prawns. Melt the coconut oil in a large saucepan over medium heat. Add the shallot and cook, stirring regularly, for 10 mins or until translucent. Add the garlic and ginger and cook for 3 mins. Add the turmeric, chilli, coriander seeds, lemongrass, lime leaves, coriander roots and stalks and the prawn shells and cook for 3–4 mins or until aromatic. Add the stock and bring to the boil, skimming off any impurities that rise to the surface. Reduce the heat to low and simmer for 10 mins. Add the coconut milk and cook for another 10 mins. Remove from the heat and stand for 20 mins before straining. Discard the solids, then return the soup to a clean pan. Stir in the fish sauce and lime juice and season to taste. Just before serving, heat the olive oil in a large frying pan over high heat. Cook the prawns, in two batches, for 2 mins on each side or until just cooked through. Remove the heads and tails, then cut the prawns in half lengthways. To serve, ladle the soup into bowls. Add the prawns, then scatter with coriander leaves and fried shallots.

Chocolate, prune & hazelnut ganache in spelt pastryIngredients1⅓ cups (225g) pitted prunes 1 cup (250ml) verjuice ½ cup (70g) hazelnuts 100g coconut paste or butter 1 tablespoon coconut oil (optional) 200g good-quality dark couverture chocolate (70% cocoa solids), chopped Pastry 185g wholemeal spelt flour1 teaspoon ground cinnamon60g runny honey125g cold unsalted butter, chopped Pinch of sea salt flakes45g creme fraiche

Method Place prunes and verjuice in a bowl and set aside to rehydrate for 45 mins - soak dry prunes overnight. Drain and cut the prunes in half. To make the pastry, place all the ingredients in a food processor and pulse. Using the pulse action, gradually add the verjuice and process until the pastry just comes together. Wrap in plastic film and refrigerate for 30 mins. Preheat the oven to 180˚C (fan-forced). Lightly grease a 24cm fluted tart tin with a removable base. Roll out the pastry, place in the tin and refrigerate for 20 mins then blind bake the tart shell with dried beans or rice for 15 mins. Remove beans/rice and bake for another 8–10 mins or until golden and dry. Meanwhile, place the hazelnuts on a baking tray and cook for 5–8 mins. Pour into a clean tea towel and rub off the skins while warm. Coarsely chop the nuts. Heat the coconut paste/butter in a saucepan until smooth and melted; if it isn’t melting, add the coconut oil. Remove from heat, then quickly add the chocolate and stir until melted. To assemble the tart, place the hazelnuts and prunes evenly over the base. Pour the chocolate ganache over the top, then refrigerate for 2 hours or until set. Serve with creme fraiche, if you like.

TURMERIC has become quite the trendy ‘new’ wellness ingredient but did you know that it’s been revered for its Ayurvedic medicinal properties in India and the Middle East for thousands of years? Turmeric belongs to the ginger family and in its natural state (the root) is a whole-food containing a range of nutrients including zinc, iron, potassium, vitamin E, vitamin C, vitamin B6 and curcumin. It’s actually the active constituent curcumin that everybody is getting excited about.

Naturopath and author Georgia Harding explains that among all the nutrients, turmeric offers two key wellness properties – it’s anti-inflammatory and an antioxidant.

“When you think of any chronic disease – heart disease, cancer, arthritis and blood vessel disease for example,

it’s those anti-inflammatory and antioxidising properties in turmeric that sufferers

seek out,” Georgia says. “Interestingly,

compared to Western countries, there’s also significantly less cognitive decline in India, where turmeric-laiden curries are food staples.”

This effect was proven in January when the University of California at Los Angeles (UCLA) published research showing turmeric offered improved memory and mood in people with mild, age-related memory loss.

“Exactly how curcumin exerts its effects is not certain, but it may be due to its ability to reduce brain inflammation, which has been linked to both Alzheimer’s disease and major depression,” says study author Dr Gary Small, director of geriatric psychiatry at UCLA’s Longevity Centre.

Arthritis is another condition that research suggests is alleviated by the consumption of turmeric and curcumin. Rather than purchasing supplements though, Georgia recommends simply including turmeric in your diet wherever possible - and it’s more than just a spice for curries.

“Turmeric has a strong flavour but it’s a flavour that sits really well behind chocolate so it’s surprisingly good in chocolate cakes and hot chocolate,” she says. “I use it in soups, tossed through roast vegetables and in salad dressings. Just remember, it’s best used alongside black pepper or some type of fat to help the body absorb it.”

Many are also enjoying turmeric in “golden milk” or a “golden latte” where the spice is blended with milk, other spices and a sweetener before being heated and enjoyed as a delicious winter beverage with health benefits to boot.

It seems just about every other month there’s a hot new superfood or wellness trend that has us racing to the supermarket to seek out that ‘magic’ ingredient. We’ve done kale and coconut oil, now turmeric is having a moment.

THE GOLDEN TICKET

Ingredients

2 cups almond milk¼ teaspoon ground dried turmeric, plus more for serving 2cm fresh ginger, peeled, thinly slicedPinch of ground cinnamon 2 teaspoons coconut oil 1 tablespoon honey

Method Heat all ingredients together in a small saucepan over medium heat until just simmering. Cover, reduce heat and simmer for five minutes. Remove from heat, strain and discard solids. Whisk, while warm, until frothy or serve chilled over ice. Sprinkle with ground turmeric before serving.

GOLDEN LATTE

As the world’s most consumed beverage after water, there’s certainly something compelling about tea, especially in winter

First discovered in China more than 5000 years ago, tea has been the subject of countless studies and has been found to possess many health benefits. From improved cognitive thinking to reducing cholesterol, studies show that tea can do more than boost your mood. A lifelong tea drinker, Sharyn Johnston founded Australian Tea Masters in 2011 and it’s now one of Australia’s largest tea blenders.

“I travel internationally to talk about tea trends and innovation, and work with farmers in countries like Indonesia and Nepal,” Sharyn says. “A lot of research has been conducted in China on the health benefits of tea, and some of the benefits associated with Puerh – an ancient tea that’s aged and fermented – claim that it is helpful for reducing blood pressure and cholesterol. Green tea has been long associated with strong teeth and bones and the polyphenol compounds in tea are said to be great for skin and anti ageing.”

Debates about which tea is ‘best’ have been around for what feels like as long as tea itself. Black? White? Herbal? Green?

“Green tea has been popularised by the amount of marketing associated with the perceived health benefits, and black tea is the most consumed of all the teas. But research has shown that Puerh tea is the most beneficial,” says Sharyn.

When making your winter cuppa, Sharyn says her best tip is to ensure the correct water temperature for the type of tea. The lighter the colour of the tea leaf, the lower the water temperature. For example, green tea can become bitter when brewed in boiling water alone. A splash of cold water in the mug before the hot water added is recommended.

GREEN with ENVYCOMBINE EASY-CARE HOUSEPLANTS WITH A MYRIAD OF ON-TREND PLANTERS. IT’S NEVER BEEN EASIER TO MAKE A BOLD, GREEN, BESPOKE STATEMENT IN YOUR HOME.

PEPEROMIAS These tough guys come in many different ornamental leaf textures and patterns. “The more hardy ones are the large, glossy-leaf

varieties,” Alana says. “I have these all over the house and I forget to water them!” Position Peperomia away

from direct sunlight and don’t over water.

FIDDLE LEAF FIG Hands down, Ficus lyrata is the on-trend indoor plant right now (pictured

left). Alana Searle from the Searles Gardening Team says your fiddle leaf fig needs a bright spot near a window to flourish. You should also keep its large glossy leaves dust-free - take it outside for a hose

down or wipe leaves gently with a damp cloth.

ZANZIBAR GEM The ‘ZZ Plant’ (Zamioculcas zamiifolia) tolerates neglect - brilliant! Alana says this slow-growing tropical perennial is coveted for its exotic looks. Glossy green leaves form along its upright stems that multiply as the plant grows.

DEVIL’S IVY This lush, trailing, leafy vine will put up with shade, infrequent watering and neglect. “I love this one. You can train

it to trail where you want it,” Alana says. Hanging baskets are perfect for Devil’s ivy.

AIR PLANTS Tillandsias are members of the brome-liad family and while their name suggests they only need air to survive, you do have to give these guys a regular misting or a soak in water once a week. “They are great in terrariums and small garden displays - another favourite of mine,” Alana says. “I have one hanging over the shower head in my bathroom.”

SEARLES’ TOP INDOOR PLANTS TIPS

• Let potting mix dry out before watering again. Many indoor plants are loved too much (and killed!) by over-watering. Indoor pot plants don’t dry out as quickly as outdoor pot plants.

• Use a potting mix with water-saving technology that’s loaded with balanced nutrients. Try Searles Platinum Peat 80 Potting Mix to feed your plant for 18 months and ensure healthy foliage growth.

• Check plant labels for best lighting conditions. Most indoor plants like indirect filtered light.

• Liquid feed indoor plants with something like SeaMax Fish & Kelp. Fish emulsion is the fertiliser component while kelp (seaweed) is a plant tonic. Apply it over the foliage and to soil or dunk the whole pot plant in a bucket of the solution.

GROWING STRONG

PALM LAKE CARE’S family-owned and operated $25 million complex at Bargara was designed with residents top of mind. Each of the private suites includes an ensuite and are positioned on ground level so everyone enjoys direct outdoor access. Each suite include individually controlled air conditioning, refrigerator, wall-mounted TV and direct dial phone.

The opening of these final-release private suites is a direct result of the demand for quality nursing care from the local Bundaberg community and positive feedback from existing residents. In a recent survey, Palm Lake Care Bargara residents revealed they feel cared for, respected and are given the privacy and dignity they deserve.

Palm Lake Care Solutions’ Jacinta Sutton says their focus is on providing residents with the highest-quality care within a built environment that is as beautiful as Palm Lake Care can make it – and all without extra service fees.

“One of the standout features of Palm Lake Care Bargara’s suites are the European-designed and manufactured fully electric beds with pressure mattress,” Ms Sutton says. “These allow a resident to reposition themselves at the push of a button and make it easier for them to transfer in and out of bed.

“The beds ensure a good night’s sleep too, by allowing a carer to quietly reposition a sleeping resident without disturbing them. Just a five per cent

adjustment is enough to alleviate pressure areas.”

Palm Lake Care residents are also less reliant on supplements as their nutritional needs are monitored and met by encouraging appetites with a choice of three hot meals for lunch and two hot and one cold meal options for dinner. All meals, plus mouth-watering desserts and freshly baked treats for morning and afternoon tea, are prepared by onsite chefs, seven days a week.

The onsite salon and barber are popular, as is the cinema, pool table, library and landscaped gardens. Alfresco dining and impromptu chats are enjoyed in resort-style seating under gazebos and around internal

courtyards that welcome the outside in. The grand dining room and main lounge overlook water features and soaring palms that lead to independent living options. Having Palm Lake Resort and Palm Lake Care on the same footprint allows couples with differing care needs to remain together.

As a family-owned business with 40 years’ experience in lifestyle resort communities and aged care, Palm Lake Group demonstrates a commitment for keeping families together and supporting local communities. Palm

Lake Group is a major employer in the Bargara area and through the Care Solutions team, offers a free, no-obligation service to help families and health professionals find the right care. Team members give clarity, with fees and charges information tailored to individual circumstances and they also help secure suitable vacancies for short-term respite, permanent and palliative care.

Palm Lake Care is more affordable than people realise. Arrange a free consultation to find out more by calling Jacinta Sutton 0477 777 943.
