Historical and Geographical

• India is a country that experienced immigration and intermingling for millennia, therefore India's cuisine has benefitted from numerous food influences has many styles and diversity.

• Religion played major role in Indian cuisine, in over time the population of India embraced vegetarian diet , due to it’s religious practice (They were able to do this due to warm climate in India .)

• Later in time invasion from (Mostly from Islamic empires, Timurids and Mughal Empire) played another important role in Indian cuisine. Also trading with the British and Portuguese influenced Indian cuisine.

• Islamic rule produced rich gravies, pilafs uses of apricots, melon, peaches, plums and non vegetarian dishes such as kebab. Trading with English and the Portuguese resulted uses of tomato, chili and potato in traditional Indian cuisine.

NORTH INDIAN CUISINE

• North Indian cuisine (from the Punjab region of Northern India and Western Pakistan) can be non-vegetarian or completely vegetarian. One of the main features of Punjabi cuisine is its diverse range of dishes.

• Home cooked and restaurant Punjabi cuisine can vary significantly, with restaurant style using large amounts of clarified butter, known locally as ghee, with liberal amounts of butter and cream with home cooked concentrating on mainly upon preparations with wheat Rice and other ingredients flavored with masalas (spices).

• wheat and rice is a staple food, Roh Di Kheer, is cooked using rice. Rice is cooked for a long time in sugar cane juice.

• North Indian cuisine is distinguished for there high uses of dairy products and Tawa in there dishes to bake flat breads like Roti , Partha, Kulcha and Biryani.

• In North Indian cuisine variety of lentils, vegetables and Roti is used in

there dishes.

Naan

• The calories and nutrition in Indian foods like Roti, Naan, Chapatti, and Parathas depend on the way the foods are cooked.

• Indian parathas are very high in calories and energy (high calories from fat) as these are fried in ghee or butter whereas tandoori roti is baked in tandoor so these are supposed to be low in calories.
