From the President…
Hello members! What an amazing couple of weeks we have had...from a very
successful Hollyday Bazaar (details can be found on page 6) to our spectacular
International Tea luncheon, these events dedicated to the upcoming holiday
season have provided fun for everyone. But that fun was hard earned, so I would
like to send a shout out to all our Hollyday Bazaar volunteers and the International
ladies that hosted the ever popular December event,...THANK YOU for all your time,
dedication and hard work.
As we move into January, the FRCSC will be hosting our first “Lunch & a Movie”
at the post theater. Boxed lunches from Subway will be brought in, drinks and a
small popcorn will be provided...we will be watching ‘The Judge” with Robert
Duvall and Robert Downey Jr. I hope you will join us for this unique luncheon.
Make note that we have pushed this luncheon back one week to the 15th due
to the holidays. Also be sure to note your meal choice when you RSVP. In February
we will be celebrating Mardi Gras and hosting our annual Sweetheart Bingo. Look
for more information on both these events soon.
Wishing you all a Merry Christmas and a happy & healthy New Year!
Sincerely FRCSC President 2014-2015 Darcy Lynch

Nicole Barton’s Aussie Pavlova 4 egg whites – at room temperature
¼ teaspoon salt
9oz extra fine sugar (not powdered)
2 teaspoons corn starch
1 teaspoon white vinegar
1 teaspoon vanilla essence or vanilla bean paste
Small cartoon heavy whipping cream
Fruit to decorate
Preheat oven to 3000F. Line cookie sheet with double layer
of parchment paper or silicone baking sheet.
Put egg whites and salt in a dry, clean, grease free metal bowl. Using an electric mixer, beat on high until
soft peaks form. Whilst the mixer is running add half a cup of sugar until well incorporated. Repeat with the
remaining sugar, adding half cup at a time, until the mixture is stiff and glossy.
Remove from the mixer and sprinkle in the corn starch, vinegar and vanilla. Fold in gently using a metal
spoon.
Spoon mixture onto the tray. Shape as required – circle, rectangle or wreath shape.
Place in oven, turn heat down to 2500F and cook for approx. 1 hr 30 mins. Exact time will depend on the
shape you have chosen. Cook until the meringue just starts to turn golden. Turn off the heat and leave in
the oven for at least 4 hrs or overnight.
DO NOT open the oven door at any time during the cooking or cooling period. This may cause the me-
ringue to crack.
Good luck ladies. I’d love to hear how it works for you. The meringue can be very temperamental, it is sen-
sitive to heat fluctuations and humidity. If your meringue cracks it just means you add more cream to the
top to hide it!
I decorate mine with fruit that is in season. Berries, banana, mangoes, passionfruit, it’s up to you. I love
mine with some flaked chocolate. But the choice is yours. Happy Baking!
