Out of the Fire and Into the Kitchen cookbook provides a great photographic view of the fire-house chefs and the simple yet delectable dishes they make while on the job every day.Christina Morgado, professional photographer was inspired to start this project 2 years agowhen she attended a food photography and styling conference hosted by Boston University.That is where she met some very talented and wonderful people who in one way or anotherwere involved in a some type of cookbook project. Raised in a family pretty much made offirefighters; her father was a battalion chief for the department for 30 years, her brother is cur-rently a captain with the same department, and uncle worked for the city of Miami and cousinfor the Hollywood department. So for a little over 2 years Christina went to the stations, pho-tographed the chef cooking and prepping the food and all the fun that goes along with it.

Unfortunately, Christina Morgados father passed away in 2007 from acute leukemia, a cancerhe acquired due to the job. In the positive and loving spirit of her father she recently establisheda charity in his name, The Indy Morgado Cancer Foundation, A Firefighter Family SupportFund. The foundation provides support for firefighters and their families when dealing witha job-related illness through education and assistance with the everyday challenges those fam-ilies face. Founded by the daughter and family of a firefighters cancer victim, Christina Mor-gado, the IMCF is a network of firefighters, firefighters families, cancer survivors and mentors,and volunteers dedicated to offering support to fellow re department members in need nomatter the form. Our goal is to prevent any family or family member from feeling alone whendealing with the diagnosis of a job-related illness. The IMCF is ever growing everyday just asour firefighters family grows. The IMCF network continues to expand through the comfort,support, strength, hope, and compassion provided by its volunteers and members of the “de-partment” family it creates every day. enous disease is a spectrum of disease that ranges from spider veins to increasing degreesof venous insufficiency. Usually, the disease is limited to varicose veins and mild legswelling. However, with progressive degrees of vein problems, the disease manifestswith increasing symptoms of leg pain, swelling, venous hemorrhage, venous eczema,

discoloration, scarring and venous ulcerations.

Patients with mild to moderate disease will complain of restless leg syndrome, night cramps, heavyor tired legs or a burning or aching feeling in the legs. As the disease progresses, they will oftenhave symptoms of increasing leg pain, swelling, bleeding, discoloration, superficial blood clots orleg ulcers. With increasing insufficiency, patients develop increasing degrees of tissue damage andmore symptoms. It is important to notice venous insufficiency early in its course and treat appro-priately before the patient develops an ulcer.

For hundreds of years, all that was available to treat varicose veins was vein stripping. Patients wereadmitted to the hospital and placed under general anesthesia to have the veins removed and tiedoff. Recovery was several weeks and there were a great number of complications and a very highrate of recurrence within just a few years. Since the late 1990s, minimally invasive procedures havebeen used to close varicose veins, limiting patient’s discomfort, recovery and recurrence comparedwith vein stripping.

Endovenous laser was FDA approved in January of 2002 for the treatment of venous insufficiency.A laser is placed inside of the vein and heats the blood and vein walls causing the veins to scardown and close shut. The procedure is performed in the office under local anesthetic. The entireprocedure is performed through a small 2mm incision. Newer lasers have virtually no post pro-cedure pain or bruising. Treating the entire vein takes only a few minutes.

The Clarivein procedure is the newest FDA approved procedure that is performed for varicoseveins. It is another minimally invasive procedure used to close saphenous veins or their tributariesin patients with venous insufficiency or varicose veins. The Clarivein procedure normally usesonly one injection of local anesthetic and usually can be performed without any incisions. TheClarivein procedure is done in the office in minutes. Bilingualism is an asset for employers and employees alike. Intoday’s global village, it is becoming ever more difficult for firmsin general to hire monolingual employees, not to mention thestrain it causes on international firms. The business sector hascome to realize that firms with bilingual literature and skills inareas such as sales, marketing and customer service have a com-petitive edge. Therefore, a prospective bilingual employee has abetter chance of getting a job than a candidate with equal skillslacking a second language.

Spanish represents the second most spoken foreign languagethroughout the United States. Florida is no exception. On thecontrary, we are one of the areas with the highest Spanish-speak-ing population in the whole country. Statistics speak for them-

selves. In Miami and Fort Lauderdale alone, there are more than1.5 million Hispanic residents, accounting for over 40 percentof the total population The Census 2010 showed an unprece-dented increase in the Hispanic population. Two out of five per-sons in the market are Hispanic, and two out of three Hispanicpersons only speak Spanish at home.

Other foreign languages are also gaining recognition. Besides theamazing increase of the Hispanic population, we have seen agrowth of the non-Hispanic. Because of the Chinese boom,Mandarin, or Continental Chinese, has become a language inhigh demand. Workers who are thinking of better business andindustrial opportunities are learning the language. Not to leavebehind are French, Portuguese and Haitian Creole. These are inhigh demand mostly because of the affluence of people fromcountries where these languages are spoken.

This affluence of foreign language speakers has provoked ourworkforce to be more diverse than ever before. Employers preferhiring workers who can understand the language of their cus-tomers than relying on monolingual workers. Therefore, the lat-ter are losing employability. Everyday more and more positionscall for bilingual employees. Many higher education institutionsare including the study of a second language in their curricula.When it comes to a technical career, most likely there is not achance for a curriculum that includes a foreign language. Fortu-nately, there are educational institutions, particularly languagecenters, devoted to give workers the skills necessary to succeedin the job market.

Throughout this last year we’ve been hearing a lot of stories on themedia, or among friends and family members, about the financial cri-sis and the large number of companies that are downsizing and dis-missing their employees.

Being separated from one’s job causes different reactions on differentpeople. Generally, it creates financial and emotional distress. This dis-tress not only affects the person who was separated from his/her jobbut also his/her family members, significant other or friends.

When Greg got home with the news that he had lost his job, he wasparalyzed; he couldn’t believe he was facing this situation. His wifetried to give him emotional support; she hugged him and comfortedhim, even though she was as astonished as he was with the news. Gregdidn’t react well. He got angry with his wife and said, “¡It is easy foryou to be calm; it was not you who got fired! ¡You don’t know whatthis feels like! ¡You don’t know anything! She tried to calm him down,to cheer him up and tell him that everything was going to be ok andthat he had to be confident, but it was absolutely useless. This dialoguewent on until Greg’s wife ended up responding aggressively and thesituation escalated until neither of them listened to what the other wassaying.

Unfortunately, this type of argument resulting from job loss is prettyfrequent. Losing your job, as any other type of loss, generates reactionsthat can range from shock and denial to acceptance and action. At first,it is normal for the person who was fired to be reluctant to believe whatis happening to him, and to be in a state of shock and denial. Fre-quently, this stage is followed by a feeling of anger that is manifestedas aggression toward oneself

or the people who care about us, such as family members or friends.The person feels tense, vulnerable, reacts with hostility, resentment orcriticism towards others.At times, this state of aggressiveness can turninto a state of “bargaining”. At this point, the person expresses a desireto recover his/her old job, no matter how unreal this situation can be.During this stage, the person feels depressed, upset, ashamed of him-self, starts isolating himself from his social environment, and, at times,he even isolates from his own family, and beings to believe that he isno longer capable of reinserting himself into the labor market.

It is important to understand that it is normal for people who facesome kind of loss to undergo these stages. Otherwise, the anger anddepression could get even more serious and it would take much longerto restore a new balance in your life.

In my opinion, these emotions are normal and expected when dealingwith this kind of loss, and it is important to help the person undergoingthis loss to overcome it in the best possible way by helping him/herprogress towards a new stage of acceptance that will most likely be fol-lowed by a new action.

We have often suggested that in these situations it is best to avoid mak-ing other significant changes, keeping tight schedules o making ap-pointments or commitments that are not absolutely necessary. Thiswill help to achieve the necessary balance more smoothly. We knowthat being socially active, eating well, resting and exercising regularlyare positive behaviors in this new situation and will help you achieveyour goals.

To sum up, even though it is expected that losing your job will generatestress, confusion, family crisis and other somewhat destructive emo-tions, there are some tools that can help us cope with this situation.Being able to ask for help in time is one of them.

A friendly hand, a health care professional, a reasonable voice... all thiscan help provide the necessary tools when someone who is dealingwith this issue is unable to clearly see the path ahead of him/her. Thesepeople will help the person to focus on the important things and gen-erate the positive attitude necessary to overcome the loss, move onand plan for the future.

Relationship unbalance can be caused by various circumstances. I wouldlike to focus today on those couples that stay together even though bothof them feel unsatisfied, burdened, drowned and even maintain self-de-structive actions.

I’ve often heard from my patients expressions like: “I feel suffocated inthis relationship”, “nothing seems to satisfy him”, “she is always trying tocontrol me”, “he’s extremely jealous”, “She’s constantly asking where I’mat, who I’m with, what time I’ll be back, who’s that e-mail from, etc.” Theyfeel constantly pursued and watched by their partners. Let’s explore thissituation:

I’ve noticed how this type of person wants to exert control over their sig-nificant other. They need to know of their every move, and even theirevery thought. They demand to spend more time together, and requireconstant attention. It never seems to be enough for them. They typicallyrelate to a specific type of person and develop what we call a relation ofemotional dependence.

In emotional dependent relationships we find people with low self-es-teem, with permanent feelings of loneliness, and an insatiable need of af-fection. Those symptoms are often accompanied by depression, anxiety,hostile attitudes, and feelings of failure.

They can’t get out of the relationship even though it doesn’t satisfy them.Their behavior can be compared to that of a gambler. A gambling addictcan spend all his money and even go into debt, because of an uncontrol-lable need to keep playing.

At least one person in the couple is in desperate need of affection and ap-proval from the other. To attain this, they struggle to please the other toan extreme that hurts their own pride and dignity and their expectations

regarding the relationship. They generate a sense of burden and asphyx-iation in their partner. They don’t mean to abuse or own the other one,but come to these extremes prompted by their excessive need of affection.

This kind of relationship can be also compared to a drug addiction. Be-cause people that suffer either of these conditions go through the samefeelings of craving, dependency and abstinence.

Among the emotional dependents, or emotional addicts, we find: • An irresistible need, a craving, to have a partner and to spend time withthem. • A tendency to put their partner before anything else in their lives. • A constant necessity to keep in contact with their partner when theyare not present. • Devastating pain when the relationship is interrupted or ended. In a dependence relationship, both parts are unsatisfied, but they can’tget out of a constantly repeating behavior pattern. Conscious of the lackof harmony in their relationship, they make endless efforts to change it,but end up frustrated when they don’t get any significant results.

These couples could achieve balance and harmony in their relationshipsby identifying the right ways to break the cycle. Ideally, they would needto create awareness of their situation and recognize which specific behav-iors are adding up to the pattern of dependency they are going through.By developing this ability, these couples would be able to develop theloving, functional relationship they want, one in which both of themwould be happy.

1. Trim excess fat from pork roast.Sprinkle with salt, garlic and paprika.Place in slow cooker and pour vinegarover roast. Cover and cook on low untilroast is fork-tender and pulls apart eas-ily, 8 to 10 hours.

WEDDING SEASONtipsWedding mania season has officially begun.Everywhere you turn the birds are singing asong of joy to trumpet the upcoming nuptialsof scores of couples across the country. You willneed stamina, speed, and courage to getthrough the season alive, and this list of survivaltips will help ensure you make it out in onepiece.

1. Prepare for the Great OutdoorsSince everyone loves to schedule their specialday in the summertime, there’s a fairly goodchance you’ll be sweating your doobie wrap outin at least one outdoor wedding. Be sure youdrink lots of fluids (liquor doesn’t count) andeat prior to the ceremony. You may also want toconsider sunscreen and bug spray. However, ifyou do find yourself bitten by bugs, you can al-ways use the alcohol from the open bar to soothyour skin.

2. Have an answer – to everythingYou already know that being the single gal at thecelebration of marital bliss can make you the

odd woman out, and a good way to counter thisis to have canned answers to every questionimaginable. There is a 99.9% probability thatsomeone’s nosy aunt will have questions aboutwhy your date hasn’t put a ring on it yet, so makesure your answer is of equal or greater ignorancethan the query. For example, you could saysomething like “he’s only for show, they don’tallow my kind to get married in this state.” Thelook on said aunt’s face will be nothing short ofpriceless.

3. Bring somethingPlease don’t be the ratchet friend that shows upto with a gift card to Applebee’s. Bring some-thing appropriate for the occasion, it’s the leastyou could do, especially since the bride’s familyis paying out the wazoo for you to scarf downeverything on the buffett. A toaster or a blender,good. A Val-Pack coupon book, not so good.

4. Dress AppropriatelyAt every wedding, without fail, there is some-one who shows up in clothing that is more ap-

propriate for a player’s ball than a union of ever-lasting love. This is not the club. Men, please re-frain from donning Steve Harvey short sets withstraw hats and square-tipped Stacey Adams.

5. Share the LoveLast but definitely not least on the list is to sharethe love. While some people take this to the ex-treme (trying to hook up with the groom’syounger brother after the party), it’s good to re-member the whole point of the celebration.Weddings can be extremely exciting and ex-tremely stressful for all who are involved inthem, but remember that love is (or should be)the reason for the occasion. Share in the joy ofthe two people who are coming together to cre-ate a family. It’s a beautiful thing.

Weddings are unavoidable but fun. Despite allthe cultural expectations and cliches, keepingan open, practical mind through all the fanfareis key. Grab your dancing shoes and make themost of your wedding season, however long orshort it may be!

WHITEWhite wedding flowers can look absolutely fabulous as you walk down the aisle. A white Calla Lily is so beautiful itonly needs a little green foliage to look stunning. White roses are popular in hand-tied bouquets. White tulips can lookdramatic just by themselves and Lily of the Valley is a much-prized flower. Another white wedding flower that is fra-granced is Stephanotis, this small flower have been a popular addition to bridal bouquets for years.

ORANGEOrange wedding flowers provide a vibrant color theme for those brides looking for something a little bit different. It'sa great color for summer and autumn weddings.There are lots of different flower choices including the beautiful mangocalla lily featured in the bouquet below, as well as gerberas, roses, freesias and birds of paradise.

PINKTo make a bold statement choose the cerise pink coloured gerberas such as 'Serena'. More subtle pale pinks and dustypinks are also available. More popular pink flowers include bright pink gerber daisies, stargazer lilies, and roses togetherwith purple lisianthus.

GREENThis is the perfect color pairing for a modern and elegant summer wedding. Lighter green flowers, like green rosespaired with banana leaves in a bouquet, are a great way to accent a white-and-black wedding dress.

YELLOWThere’s a number of choices of yellow roses. Yellow lilies work very well in table arrangements and venue arrangements.Daffodils are a great choice if you are having a Spring wedding. Gerber daisies are for brides who want their yellowwedding flowers to be bright, vibrant and full of zing! Tulips are also a popular yellow flower and great for both bouquetsand venue arrangements.

REDTwo of my favourite red rose varieties are 'Grand Prix' and 'Passion'. Not only are these varieties a perfect colour, theyhave a beautiful soft velvety texture. Other red flowers that you may like to consider in your bouquet include: Anthuri-ums , Gerberas, Freesias, Tulips and Alstroemeria .

PURPLELisianthus comes in a variety of colours. Purple varieties include 'kyoto purple' and can work well together with whitelisianthus and other larger focal flowers. The exotic orchid Vanda, has a wonderful variety with a purple and white che-quered appearance. Freesias, Gladioli , Tulips and Stocks are among the lilac/purple varieties.

BLUEOne of the largest blue wedding flowers is hydrangea, this is a lovely flower for the bride wanting to make a statementwith her bouquet. Delphiniums are available in sky blue right through to rich dark blue varieties. Their height makesthem particularly good for tall table center arrangements, and for ceremony arrangement pedestal stands. Statice is an-other flower that verges on violet.

You would think after writing a humorous book titled “101 Ways to Torture YourHusband” I’m probably not the biggest fan of wedding season, but SURPRISE!I happen to adore weddings, and there’s nothing more exciting than the rush I getwhen a thick envelope arrives at our home signaling the start of a loving union.

Now while I relish all things white, frilly, and wedding related, thereare some issues which I feel need to be addressed right here, rightnow (I'm getting a mani-pedi in about an hour, so now happens tobe a good time). Brace yourselves because it’s not going to be pretty.

While the current challenging economy has forced many couplesto cut corners and forgo some wedding luxuries in order to say “Ido,” there are some traditional elements which are downright non-negotiable when it comes to proper wedding etiquette. I believesome folks need a giant wake-up call so here it is: Ring! Ring! TheTacky Wedding Police are on the phone, they're asking for you.Don’t make me point fingers, you know who you are.

Now I know what you’re thinking.. who died and crowned me “MissManners?” I ask you to bear with me before making any judgmentsand read on.

My husband and I were recently mortified after attending an inti-mate wedding held at an upscale seafood restaurant. The establish-ment was perfectly lovely, with about 40 guests in attendance. Theattractive couple (dressed in fashionable, but low-key wedding at-tire) exchanged vows by candlelight and brought tears of joy to theeyes of many with touching vows of commitment and uncondi-tional devotion. Champagne was poured, dinner was served, andthen I REALLY wanted to when the following scenario unfolded.Just as the dessert orders were being taken, and the intoxicatingaroma of brewed gourmet coffee filled the air, the best man stoodup, and dropped what seemed like an atomic bomb into the room.He began by toasting the happy couple, thanked everyone for being

there, then unceremoniously announced that as a gift to the brideand groom we were all be responsible to PAY FOR OUR OWNMEALS. Shock! Horror! Dismay!

While you are sitting there with your mouth hanging open in awe(as ours were that night) here are some other wedding faux paswhich should be avoided at all costs to make your special day a complete success:

•Theme weddings. Go all out if you and your groom want to beTwilight vampires (true story) but forcing your guests to dress upis not acceptable. •Sending invitations excluding adult members of a family wholive under the same roof. •Email invites or online RSVP requests. •Late wedding start times. (Yes, 8pm is too late).•Requesting "cash" in lieu of gifts in ANY way, shape, or form.•Bratty brides (The “it’s your day thing”gets old pretty fast).•Going overboard with a “green” theme.*Asking guests to make donations to your favorite charity. •Cash bars (UGH!) •Couple Dollar Dances. (Please don’t make me explain). •Deciding thank you cards aren’t necessary.

1990 - This year marked the beginningof a beautiful romance which was brokenfor one of those things that fate fabricates,against the will of lovers. They never saweach other for the long period of twenty-one years, so many common places whereto be encountered: the mall, the market,

the pharmacy, the road on which theydrive—it was just now, it had to be now—not before not after, just now. Not a singleday passed by during these long twenty-one years in which they stopped thinkingof one another and that energy released tothe universe, that inner suffering, thatyearning, that desire of seeing the lovedone, enabled the miracle to happen, andthey saw each other, face to face that glori-ous December 3rd, 2007 (Ángel does notforget this date, amazing memory). Theirlives turned apart and followed differentpaths, they separated, however, their loveremained intact, just waiting…They neverknew what happened to the other one, butthanks to a common friend, they metagain, they were very lucky, only few peoplecan experiment that joy in their life time.There are many longing for these reunionsjust to see the missing party, one moretime. Some loves do not die, this one is

A peaceful atmosphere sur-rounded the site. It was a moment filled withemotion and accepted by everyone. Ained´schildren said: "Congratulations, good, good”and little Jeanette stated: "Of course, mom,Ángel is cool" and she added: "Now, I have adaddy, " and Gisela stated: "Welcome to thefamily". But it was not until February 18,2011—full moon, by the way—in the city ofLights, New York and during a vacation periodthat they were alone in the big apple that Ángelsaid: "Let’s get married!" and they did it,dressed in sport outfits in the Municipal Courtof Manhattan before a judge and an elegantlady, resident of Manhattan, of Porto Rican ori-gin, Mrs. Gladys Meadowcroft, of eighty yearsof age in the company of her granddaughter Ms.Shamika Baez, who was their witness at thewedding, where they joined two lives. That wasthe way they have chosen, alone in New York(details won't be told, ok?). A phone call toMiami was made to inform everybody aboutthe new event, the couple´s respective childrenwho said: "What a surprise!" Then, upon arriv-ing to the Miami Airport, nobody was there toreceive them, however, a group of youngstersheaded by José, Ained´s eldest son, arrived tothe airport to provide them a noisy welcome atthe parking lot of the Delta Airlines terminal,"what a show!", but things did not end there, on

the route to home, wecalled Jeanette, 10, andshe had the idea of receiv-ing us by surprise withchampagne, a weddingcake, balloons, flowers,and wedding stuff on thetable. She was waitingfor us outside and toldus: "Put your hands onyour eyes, you cannot see until you step into thehouse!," we did not have the slightest idea whatwas going on and "what a surprise!" Gisela andJorge, Ained´s siblings were there along withMiguel Ángel, the youngest son of Ained, andof course, the bunch of young people who wel-comed us at the airport and the little coordina-tor of the warm welcome at home. It was amoment of full emotion, they did not expectthat, and Ángel looked the happy faces of hisnew confirmed family, they were sincerelyhappy. He has stated the following: "That nightwas a very special for us. After some days, wemet my daughter Yanais and her husband Hugoin a restaurant in Miami, celebrating once moreour wedding. Some days after, we all traveledto Summerfield, a city located in central Floridawhere Ángel´s parents and siblings live to sharewith them the feelings of happiness that thecouple is experimenting. And as the sayinggoes: "There are some unforgettable loves,"Ained, my wife and me, are witnesses of that.And since I gave all the details to my chronicler,I am sure she will sentence at the end: "Con-gratulations, Long Live Love!," and that was ex-actly what happened and these are the sincerewishes of all the people who work in Anmar®Party Magazine, and: "Let´s happiness to bemultiplied and extended in their lives!" Melissa Gallo began her long career in the arts as

a successful N.Y. illustrator before becoming the

highly creative photographer that she is today. As

an illustrator in Manhattan she painted book

covers for many of the leading publishing com-

panies, including Warner Bros., Harlequin Books

and Dell Publishing Co. In 1980 Melissa married

and moved to Italy where she worked for several

Italian publishing houses while continuing to do

commercial work for her accounts in N.Y.

Returning to the US in 1986 her interest in photography began to blossom

as she started photographing her growing family. Bringing her sensibilities

as an artist to her new found career seems directly responsible for the de-

lightful and breathtaking images she creates today.

Having studied extensively with some of the leading wedding photogra-

phers in the country Melissa now operates her own Florida- based business,

Melissa Gallo Photography. Exhibiting an absolute passion for her craft,

from portraiture to weddings, she also offers her clients a unique product:

beautiful paintings created from photos of their choice -a service that few

other photographers provide. With her background as a painter she recre-

ates the look and feel of true oil paintings, which are printed on real canvas

and signed by hand.
