How Fish Are Caught

Other Processing Methods

For fish which are not sold fresh, there

are other processing methods

including:

● Smoking

● Drying

● Flash Freezing

Smoking FishThere are five steps

to smoking fish

which are salting,

cold smoking,

cooling, packaging

and storage.

The most common

fish to be smoked

are salmon, trout

and mackerel.

Drying Fish

Drying works by

removing water

from the food,

which inhibits the

growth of

microorganisms.

Drying effectively

prevents bacteria

from surviving in

the food.

Flash Freezing FishFlash Freezing is

used to quickly

freeze perishable

food items such as

salmon, potato

chips, peas and

corn.

It is so cold that it is

below zero

degrees.

Arriving at the Fish Market

trucks, the seafood

is transported to the

it will be auctioned

to the highest

bidder.
