Food Safety Program
Clean by Design
The floor of our warehouse is treated with a special coating. Similar to what is used in airplane hangers, it is easy to clean and does not collect dirt.
Green Coffee Storage
Green coffee not for immediate use is stored on metal rackshigh above any potential contamination.
Ready for Roasting
Green coffee, ready to roast, is stored down below. The coffees on the pallets are cycled through often, preventing buildup around them. Open bags are always folded over to prevent any foreign material from falling into them.
Measuring Up
Green coffee is weighed according to specific recipes in this custom built scale and hopper. This is the last time we will touch the coffee except for quality control testing.
Cooling Tray
Our cooling tray features a custom made grate for the safety of both employees and the coffee.
De-Stoner
This is a standard feature for most coffee roasters, a de-
stoner uses a vacuum to pull up the less-dense coffee
leaving behind small rocks and any other dense foreign
objects. Purchasing higher grades of coffee, we see very
little foreign matter in the coffee, usually it is a rock or
two per roast.
Roasted Coffee Storage
From the cooling tray, coffee is brought by a bucket elevator to the mezzanine. Our roasted coffee is either stored in one of these custom built stainless steel bins or cans with a food grade liner.
Stainless Steel Bins
You can see inside the stainless steel bins there is no coffee residue. The design of the bins and using stainless steel creates a mostly self-cleaning system. When processing organic coffees, we brush out the bin as part of our standard practices. The lid was removed from this bin for the picture. In the background is a bin with its cover in place.
Magnet Separator
All of our coffee that is packaged pre-ground will go through this magnetic
separator. We very rarely find anything here (due to the de-stoning)
Automated Packaging Equipment
A number of years ago, we decided to invest in packaging equipment. There are a number of reasons for this, including the fact that we do not manually handle the coffee. The coffee is moved directly from the stainless steel bins into the two pound bag. No hand-packing here.
Retail PacksOur retail package is a 12oz pre-
made bag. We use a standard weigh-fill machine here, however,
part of our training and general manufacturing process is to never put our hands inside the bag. We accomplish this by sliding the bag
over a stainless steel sleeve.
