Turkey is sold in many different formats & cuts. Here is a quick and simple guide to help you through the decision making process...

It is essential to rest your turkey for 30-45 minutes before carving (the temperature will continue to rise, but there’s no need to test). Put the bird in a warm place, tented with foil. It won’t get cold - but it will become juicier, and easier to carve.

TURKEY CROWNCrowns are basically a whole turkey with the legs and wings removed to give you a joint of white breast meat on the bone. Quicker to cook, and easy to carve. Weigh it with any stuffings before calculating cooking times.

BUTTERFLYA butterfly joint is the same as a breast joint, however this one is split down the middle and opened out. This allows you to add your own stuffing. Again, follow cooking times for a whole turkey making sure you weigh the joint after stuffing.

WHOLE TURKEYComes whole including giblets. Perfect for a traditional Christmas centrepiece. A whole turkey is also the most economical.

BONELESS TURKEYBoneless turkey joints don’t require any prep and are the easiest turkeys to cook.

SADDLEA Turkey Saddle is a boneless version of a Turkey Crown. Again, use the same cooking time as a whole bird. Remove outer packaging and place saddle breast side down in a roasting tin.

To stuff or notto stuff...Stuffing the turkey increases cooking time, which dries out the bird. Instead why not try placing two lemon halves, some fresh bay leaves and a small onion into the cavity.

A simple guide to weights and rough cooking times...

2-2.5kg serves 4-6 200°C for first 20mins, then 180°C for 1hr 40mins

3kg serves 6-7 200°C for first 20mins, then 180°C for 2hr

3.5kg serves 7-8 200°C for first 20mins, then 180°C for 2hr 20mins

4-4.5kg serves 8-10 200°C for first 20mins, then 180°C for 3hr
