DAVID ROBINSON SIMON
VEG STAGE SPEAKER: David Robinson Simon is a lawyer and animal advocate.
His book “Meatonomics” (Conari Press, 2013) explores the economic system underlying meat and dairy production. Among other things, he shows that producers have kept animal food prices artificially low by imposing their production costs on society, and the resulting low prices are the main reason Americans consume more meat per capita than anyone else on the planet.
Dave is the founder or co-founder of several vegan and/or animal rights groups, including Orange County Vegan Drinks (meetup.com/ocvegandrinks), the Greater Orange County Animal Rights Roundtable (meetup.com/gocart), and Orange County Verbal Vegans. He is also a member of the board of directors of Animal Protection and Rescue League (APRL) and the APRL Fund, non-profit organizations dedicated to ending animal abuse.
Dave received his B.A. from U.C. Berkeley and his J.D. from the University of Southern California. He works as general counsel for a healthcare company, and when he’s not at work, he provides legal support for animal advocates. His legal efforts (including three lawsuits) have forced many shopping malls in Southern California to increase the access privileges accorded to animal activists.

DORITVEG STAGE SPEAKER: Dorit is a celebrity chef, author and founder of Green Lifestyles Network and Green Lifestyle TV (Web) Channel. Through her company, Serenity Spaces, she runs a catering business and is a private chef to celebrities such as tennis pro Serena Williams.
Dorit’s love for Life and all the experiences of a severe illness that brought her close to the brink (of dying), propelled her into writing: “Celebrating Our Raw Nature- A Guide for Transitioning to a Plant-Based, Living foods Diet” and then its sequel, “Celebrating our Raw Nature, Plant based Living Cuisine”. She makes time for her talk show called Recipes For Life on Iamhealthyradio.com. Adding variety to her work as a Certified Living Foods Chef, Dorit was a workshop leader for a medically supervised Cleansing and Detoxification Retreat at the Fox Hollow Clinic and Spa in Kentucky. As a Certified Movement Analyst/Therapist, she was the innovator and founder of the Movement Therapy Department at Canyon Ranch Spa in the Berkshires where she introduced Pilates & Gyrotonics. She built a steady and loyal following which included Donna Karan and Yoko Ono. She also created and taught the most attended yoga class at the New York Health & Racquet Club in NYC.
Recently, Dorit founded and organized the Green Lifestyle Film Network, a non-profit, which seeks to change the vision and use of films from violence ridden and de-meaning subjects and material, to uplifting, educational and motivational works of art. HAYLEY HOBSONGREEN STAGE SPEAKER: Hayley Hobson is an author, speaker, business
coach, yogi, Pilates and holistic nutritional expert based in Boulder, CO.
Hayley creates lifestyle transformations by coaching her clients to
strengthen, nourish and evolve through the cycles and shifts in life.
Combining cutting edge understanding in all three disciplines due to years
of anatomical study and dietary theory, Hayley’s approach leverages their
blended benefits and results.
Her unique and intelligent style promotes strengthening while softening–
empowering her client’s to heal not only their physical bodies, but their
hearts and minds as well. She also started a yoga practice at Yogaworks,
Santa Monica, CA in 1996, among the pioneers of Vinyasa Flow Yoga

currently the Regional Pilates and Yoga Special Events Coordinator at
Wellbridge, which is a network of 6 regional clubs in the state of Colorado
as well as the founder/owner of NoBo Pilates and Yoga studio in Boulder,
CO.
Hayley studied at the Institute for Integrative Nutrition, continues her
studies with David Wolfe, raw food expert and is an essential oil expert in
her own right. She is a doTERRA Certified Pure Essential Oil Diamond
Director and a Pangea Beauty Ecologist. Her insights and articles can also
be found on her blog, Elephant Journal and Islaorganics. She has also been
featured in Pilates Style magazine, Natural Health magazine and Triathlete
Magazine. She has fun running and playing in the mountains with her
husband, former world-ranked triathlete, Wes Hobson and their two
beautiful daughters, Makenna and Madeline.
JOSEPH AGUIRREVEG BRUNCH SPEAKER: Vegan Raw, Vegan Cooked Joseph loves to Chef on
both sides of the spectrum. Since switching to a 100% plant based lifestyle
over 16 years ago he has developed a vast array of recipes and kitchen
techniques to fill a book. In 2002, he launched his first company Earth Café,
a one of a kind, completely vegan raw packaged foods company back and
never looked back. “Developing recipes and creating flavors with health and
wellness at the helm is one of my biggest challenges, as well as my deepest
passion”.
As a Vegan Chef in San Diego, Joseph founded the hip pop-up “True Kitchen
Creative’s,” a Vegan foodie’s dream. From Sunday brunches to street tacos,
and everything in between, Joseph brings his flavors and concepts to a
restaurant, café, market or street fair near you. Joseph has a magical ability
to cater to palates that run the gamut…from the allergy ridden standard
American diet, the strictness of a raw foodist, to the vegan food junkie, and
preferences anywhere in between. Not only will you have an amazing meal,
Joseph will eloquently explain how he feels food is truly our medicine. With
his “out of the box” way of thinking, there hasn’t been a dish Joseph hasn’t
been able to tackle. His passion for health, wellness, and nutrition translates
into each and every one of his dishes.
Joseph is the personification of the health benefits of a plant-based lifestyle.
He is a marathoner, triathlete, and avid cyclist just to name a very few. In his
upcoming endeavor, Nature’s Heroes, Joseph will mend two new passions to
his body of work. Vegan fashion and clothing as well as hand crafted jewelry,
all while keeping the earth and environment in mind.
His burning desire to live a life of compassion is what fuels his desire.
Reaching his community, family, and friends, spreading what he has learned
from inner health and wealth, to social truths and how they are all connected
is what truly inspires him. Joseph has just begun to scratch the surface.
JUDY KIVEG STAGE SPEAKER : Judy Ki, is a retired science teacher, a grassroots
political organizer, and an animal protection advocate. Upon her retirement
from teaching in 2007, Judy attended her first Taking Action for Animals
Conference in Washington D.C. She got involved with the California ballot
initiative to ban intensive confinement of factory farm animals. Judy
personally collected 1,337 petition signatures, wrote op/ed articles, and
worked on securing endorsements from the San Diego City Council, council
members, state legislators, congressional members, small businesses, and
medical professionals. Judy was instrumental in lobbying for and securing
the endorsement of the California Democratic Party. As a Community
Coordinator for the San Diego County Democratic Party’s GO (Grassroots
Organizing) Team, Judy was able to recruit and train canvassers. In 2008,
1,000+ GO Team Precinct Leaders knocked on doors in San Diego with
Proposition 2 flyers.
In 2011, as a bilingual Chinese-American, Judy founded and chaired Asian
Pacific American Ocean Harmony Alliance. APAOHA co-sponsored Assembly
Bill 376, a bill to ban the sales, trade, distribution and possession of shark
fins. Judy worked on the cultural aspect of the shark fin ban and campaigned
for eight months, flying up to Sacramento ten times to testify and advocate
for the ban at her own expense. AB 376 was signed into law by the governor
on October 7th, 2011. Judy is currently working behind the scenes, as
APAOHA Chairperson, with Humane Society of the United States’ wildlife
litigators to intervene in two lawsuits filed by the fin traders.
In 2012, Judy was asked to serve as a California State Council Member of the
Humane Society of the United States. This is a volunteer leadership position
to promote advocacy, legislative outreach and philanthropy. She resides in
San Diego County with her husband Steve, and their rescued dog, Cinnamon.
JULIE BURKESUCCULENTS STATION SPEAKER: Customized Designs is a full service home
staging and re-design operation. Founded by Julie Burke, She incorporated
her love for bringing the outdoors in, to create succulent and herb gardens,
which complement the home and outdoor living space.
Together with her contractor male companion, they create custom made-to-
order herb gardens from plaster, which are tailored to your size and color
preference. You are able to select which herbs you use most, which will
flourish in your specific sun/shade ratio.
The individual succulent baskets are always unique, and arranged in mostly
wrought iron, house hold items. All her creations are upcycled from
previously owned magazine racks, to candle holders, to birdcages,
transformed into a beautifully crafted succulent arrangement.
Julie’s technique and education insures, that each arrangement will co-exist
with each variety of plant or herbs, together in its own environment. Her
repeat customers are happy to report that their purchases are thriving well in
their new homes or patios.
LINDSAY SELIGMAN
GREEN STAGE SPEAKER: Lindsay Seligman is an award winning artist and
designer who founded EcoArt and KALOS Design Studio. As an artist her goal
is to ignite passion for sustainability and inspire others to use their
creativity to improve the way they live.
She is conscientious about her materials, creating natural earth pigment
paints made from rocks and clay. With two decades of art experience she
also works professionally as a visual designer specializing in green branding
solutions.
Lindsay has traveled to and lived on dozens of sustainable communities and
farms throughout South America and the United States, studying how to
live, grow and work together with responsible practices in mind. She has had
the privilege of learning from the native people of Peru as well as the
Kumuyaay Indians here in San Diego. They have given her precious insight
into how peoples of the world can harness their own local natural resources.
She discovered earth pigments in the high Amazon area of Peru and created
a series of natural paintings which were exhibited there.
Upon her return to San Diego, through her research, she found that earth
pigments are abundant throughout the world. Earth pigments are natural,
vibrant, long lasting and pure. She believes whether it comes to making
paints, food preparation, medicine, energy, or materials we can truly create
superior ways of creating and living that are healthy and nontoxic. Lindsay’s
EcoArt was recently featured on Fox 5, and NBC, Art Pulse TV and currently
exhibits in shows around San Diego.
LYNN SUSHOLTZVEG STAGE SPEAKER: Lynn Susholtz owns Art Produce and Stone Paper
Scissors, integrating community voice and vision into the cultural and
physical landscape through art and education. Lynn Susholtz and Art
Produce are featured in the fall 2012 issue of Public Art Review entitled
“Food For Thought”.
Stone Paper Scissors has been creating art projects for public agencies,
schools, business associations and communities, since 1994. 5 local
projects have received “Orchid” awards from the San Diego Architectural
Foundation and an award for planning from the California chapter of the
American Planners Association.
Art Produce is an activist business enterprise and community cultural
center connecting artists, cultural organizations, schools, urban farmers
and local businesses with public institutions and public culture. Art
Produce Gallery is entirely visible from the sidewalk and was designed for
community engagement- accommodating sculptural installations, cross-
disciplinary works, digital media, and performance events. The space
allows for unconventional presentation opportunities for artists and
unexpected art encounters for viewers. Intended to enliven the experience
of the pedestrian it is an experiment in public art that is accessible to
everyone in the community.
Art Produce Garden is a public art/performance space focused on aesthetic,
educational and sustainable practices. It Is an urban farm that includes a
rainwater catchment system and PV solar energy system. Art Produce
Garden is a pilot project in the North Park Eco-District and is an example of
business and public culture creating a synergistic combination for the
health and vitality of the neighborhood.
MIYOKO SCHINNERGREEN DEMO STAGE SPEAKER: Miyoko Schinner, vegan chef, cookbook author,
and television cooking show host, has been promoting delicious, decadent,
and healthful plant-based foods for the past thirty years. Her most recent
cookbook, Artisan Vegan Cheese, is a top-selling book on Amazon where it has
been consistently #1 in the Cheese and Dairy Category. Voted one of top 5
vegan cookbooks of 2012 by LA Weekly, and top 10 by VegNews, it has been
pegged by reviewers and bloggers as “groundbreaking,” “revolutionary,” and
“the holy grail of the culinary world.” She is a co-host of the brand-new
national cooking show on the Create Channel, Vegan Mashup, and stars in her
own whimsical online show, Miyoko’s Kitchen. As a cooking instructor, she
teaches regularly in the McDougall Program, and at major festivals and events
around the country. She is a former restaurateur (Now and Zen, San
Francisco), and food developer, and has distributed her vegan products
nationwide as well as on United Airlines. She has appeared in numerous
publications, and on television, and radio, including VegNews, Chicago
Tribune, LA Weekly, NPR, ABC World News Tonight, San Francisco Chronicle,

PABLO STANLEYVEG STAGE SPEAKER: Pablo Stanley describes himself as “just a guy who
loves design, cartoons, veggie burgers, and telling silly stories.” He is an
illustrator, graphic designer, and comic writer
He was born in Mexico and studied in Baja California. He's gained extensive
experience in the advertising business working as lead designer and
creative director for different Ad agencies since 1999. His humble mindset
and fun personality have led Pablo to create different witty, inspiring, and
crazy comics and characters raging over the web. His work has been
featured in The Huffington Post, Mashable, 9GAG and many international
art magazines.
He began writing comics in January 1st 2012, since then, his work has
gained a lot of fans and attention, reaching over 50k likes on his Facebook
page Pablo Stanley Art. In the summer of 2013, his artwork was selected as
the grand prize winner amongst dozens of other artists in the Art Against
Animal Cruelty by the local San Diego movement Commune Wednesdays.
PHOEBE CHONGCHUAVEG STAGE SPEAKER: Phoebe Chongchua , is the founder of Live Fit, a
sought-after Inspirational Speaker, Journalist, TV Fitness Host and Realtor
with The Guiltinan Group. She helps people lead successful, healthy,
enriched lives through coaching, motivational speaking, media consulting
and seminars on attracting success, increasing productivity, leaders in
communication as well as nutrition and fitness, relationships, single
parenting, her techniques for a “Worry-Less Life” and more.
Phoebe has nearly 20 years of experience in the broadcast industry. In the
late 1980’s she worked in radio for KPBS. Then in 1990, she started as a
News Reporter for KGTV/10News and quickly rose to a News Anchor for the
top-rated Morning Show in San Diego. Later as the station’s Community
Affairs Specialist, Phoebe, created, marketed and reported on community
projects.
She has written for Health & Fitness Sports Magazine, a columnists for
Realtytime.com and appeared nationally on Body by Jake TV shows.
Currently, Phoebe hosts her “Keep Fit With Phoebe” fitness segments every
Saturday on 10News. She is also the Real Estate Reporter for The Coast
News. As a Realtor for The Guiltinan Group, Phoebe, parlays her skills in
interviewing and negotiating into a career where she helps people fulfill
their Residential and Commercial Real Estate needs.
Phoebe serves on several advisory boards including the Full Capacity
Marketing and the Susan G. Komen Breast Cancer Foundation. Phoebe is a
devoted mother to her nine-year old daughter, Siena, and is also her
daughter’s Girl Scoot troop leader.

late 2010 they began having small gatherings in San Diego called “Plant
Powered Potlucks”. At the dinners, they shared the passion for living

SHANNYN FOWL, ND VEG STAGE SPEAKER: Dr. Shannyn Fowl, ND, is a naturopathic family
physician. She solves the common and uncommon health problems of today.
Having worked in healthcare for over twenty years, she prides herself on her
ability to treat illness naturally and resorts to the harsh route of drugs and
surgery only when absolutely necessary. Her expertise allows her to combine
modern, evidence-based therapies with the old-fashioned and time-proven
healing power of nature.
Dr. Shannyn holds an undergraduate degree in Biomedical Sciences from
Western Michigan University and a doctorate in Naturopathic Medicine with
Honors in Research from National College of Naturopathic Medicine. With
experience in neuroimmunoendocrinology research as well as in pathology,
biochemistry, imaging, pharmacology, and obstetrics, Dr. Shannyn treats a
broad array of patients. She specializes in complex cases such as genetic
problems, lymphatic disorders, and anxiety as well as every day ailments
such as pediatrics, muscle pain, and GI upset.
Dr. Shannyn is a published author in homeopathy and pediatrics; actively
engages in MTHFR genetic research; develops curriculum in naturopathic
medicine for the San Diego Community College District; is spearheading the
creation of the Naturopathic Assistant position (a brand-new clinical role);
and oversaw the implementation of naturopathic programs at two
community clinics. Not to be outdone by her own myriad accomplishments,
Dr. Shannyn is also a gifted instructor. Her Introduction to Naturopathic
Medicine course at SD City College is the first of its kind. The lay public and
seasoned nurses alike hail her course as “the BEST class ever!”
SIRENA PELLAROLO, PH.D.
GREEN DEMO STAGE SPEAKER: Sirena Pellarolo, Ph.D. is a food justice
activist, raw food educator, holistic health coach, author, radio host and
blogger. A retired Professor of Latin American Cultural Studies and a
life-long community organizer, she advocates for individual and
community autonomy, sustainable, vibrant health, empowering self-
reliance and nutritional sovereignty for all. In 2009 she created Viva La
Vida, Live Foods for Life, a project committed to spread the basics of a
raw food diet in working class communities of color as a means to
decolonize our bodies from commercial food and foster the re-
membering of healthy lifestyles.
Sirena has been doing un-cooking demonstrations since that initial
Revolutionary Autonomous Communities May Day 2009 picnic at
McArthur Park, at the Anarchist Book Fair, the Eastside Café, the South
Central Farm community center, the California State University, Los
Angeles Cross-Cultural Center, El Sereno Farmer’s Market, Earth Day
South LA, Mujeres de Maíz annual International Women’s Month events,
Shaman’s Vision and Art Center, Tía Chucha's Centro Cultural, MEChA
Statetewide 2011 at California State University Northridge, the RAC
Food Distribution Program, the Youth Justice Coalition Chuco Center,
Caracol Marketplace, Equitable Roots, El Nido, Antioch University,
Corazón del Pueblo and the Agape International Spiritual Center.
The seasonal community cleanses and raw food preparation classes at
her ranchito in the Northeast Los Angeles neighborhood of El Sereno
offer a Do It Yourself hands-on approach to healing through nutrient-
dense, plant-based choices. She is currently working on a manuscript
that captures this experience titled “Detoxing Our Communities: Using
Food As Medicine for a Quantum Grassroots Transformation.”
STEPHANIE REDCROSSVEG STAGE SPEAKER: Stephanie Redcross founded Vegan Mainstream, a
Georgia based marketing company, in 2009 to meld her passion for
entrepreneurship with her passion for the vegan lifestyle. Stephanie has
over a decade of marketing experience with small businesses and Fortune
500 companies. Passionate herself about living and advocating a vegan
lifestyle for health, environmental, and ethical reasons, Stephanie has made
it her life mission to help likeminded entrepreneurs, bloggers and small to
mid-sized companies reach and exceed their goals. She also hopes to
encourage all businesses to consider both the marketing viability and ethical
importance of shifting to veg-friendly products and services.
Stephanie believes a key way to push veganism forward is by fanning the
flame of likeminded entrepreneurs. She is working hard to build a solid
infrastructure of successful businesses and brands to ensure that an ethical
lifestyle is accessible to everyone, everywhere.
Stephanie and the Vegan Mainstream team provide entrepreneurs, authors,

STEPHANIE WEAVER, MPH
GREEN STAGE SPEAKER: Stephanie Weaver is a writer, speaker coach,
recipe developer, food photographer, urban farmer, and puppy wrangler.
Stephanie has a Master’s in Public Health in health and nutrition
education. After more than twenty years in the museum field, Stephanie is
passionately pursuing a second career as a food blogger, recipe developer,
photographer, and author. She develops recipes for people who have
changed their diets for health reasons. You’ll find more than 500 recipes
on her blog, The Recipe Renovator: plant-based, gluten-free, and refined-
sugar-free. Stephanie is an advocate for the Meatless Monday campaign
and hosts a weekly Meatless Monday blog hop and monthly Google
Hangout in partnership with Meatless Monday.
She co-founded the Altadena Community Pocket Garden in North Park and
volunteers on the program team for the TEDxSanDiego conference. She
divides her time between speaker coaching, recipe development for her
series of e-books (Twelve Terrific), food photography, and food service &
restaurant consulting for special needs diets.
Her second book is Golden Angels: A Pet Loss Memoir. She lives in San
Diego with her husband Bob and their Golden retriever, Daisy.
VEG APPEALGREEN DEMO STAGE SPEAKER : What started out as a healthy eating group
called “The Food Buddies,” Tracy Childs and Ami Chatalia have blossomed
their passion into the company called Veg Appeal. Veg Appeal’s mission is
to “help individuals and groups achieve their health goals through a whole-
food, plant-powered and planet-friendly way of eating; specializing in
healthy, vegan cooking classes in San Diego”.
Tracy Childs is a Nutritional Consultant, recently receiving certification from
the Global College of Natural Medicine. Previously, at the University of
Idaho, she received a B.S. in Business Management and an M.S. in
Computer Science. She decided to give up all animal products in 1991 after
learning about the cruelty in the dairy and egg industries and finding that
using these products was unnecessary for the enjoyment of food and for
health. In 2005, she trained at the Cancer Project in Washington, D.C. to
teach Food For Life cooking classes in San Diego County. The work is very
rewarding for her since she is able to share the mission: the power of
nutrition in cancer prevention and survival. She also is certified to teach
Food For Life Diabetes classes with the Physician’s Committee for
Responsible Medicine.
Ami Chatalia was a management consultant in her prior life, but she now
finds true passion as a nutritionist – learning, experimenting, discovering,
and enjoying food from around the world.
She has been a vegetarian all her life, and then became a vegan in 2011.
Food speaks about history, culture, and patterns of society, it is a universal
experience – she uses food to explore world and nourish her soul. She is a
Nutritional Consultant from the Global College of Natural Medicine and has
a Master’s in Computer Science. She strives to help people see their inner
beauty and happiness by maintaining physical and mental wellness through
improvements in diets and lifestyle.
Together, the Veg Appeal team will continue to share their love of food,
