PPIIGGSSKKIINN PIG ROAST Saturday,Oct.15th

Diamond Jack River Cruise another Special Evening

It was another picture‐perfect evening as we went cruis‐ing down the river on a Friday evening. We had 106Monaghan passengers on board enjoying the beautifulsunset when the captain of the Diamond Jack turnedthe boat at just the correct angle for the perfect view.

When we drew door prizes, a common theme washeard,"does it get any better than this?"

Since we forgot the Sinatra and Dean Martin tapes,Joe Kronk demonstrated how he won his wife bysinging several Johnny Mathis favorites (Misty, ChancesAre, I Love the Way You Look Tonight, etc.) Unfortu‐nately,it was a final performance, never to be heardagain. His performance was only surpassed by the snacks which seem to never stop coming!

Pizza back at the Council choked attendees as mostpeople had never seen so much cheese and sausage.Nearby vegetarians fainted.

Do you need more?–Joe Kronk and Joe Reardon

Chico Rodriguez and his catering company, RoseCatering, took over food service at the K of C Hall.Chico Rodriguez and his catering company, RoseCatering, took over food service at the K of C Hall.

A new caterer has breathed new life into theKnights of Columbus Monaghan Banquet Centeron Farmington Road between Seven Mile and EightMile roads in Livonia.

Chico Rodriguez has made a living out of mak‐ing great dishes and persistently networking tobuild his 31‐year‐old company, Rose Catering. Ear‐lier this year, Rodriguez became the exclusivecaterer and operator of the banquet facilities at theK of C Hall, which has two banquet rooms–one thatseats up to 400 and another that seats up to 150.

“Our business has quadrupled because I nowhave a banquet hall that I control,” Rodriguez said.“I have control of the hall schedule. This is a greatopportunity for us.”

The Monaghan Council of the Knights continuesto meet at the hall and operate the bar inside thebuilding the Council has owned since 1978.

Rodriguez has been in the catering business since1980, working with a primary customer base acrosswestern Wayne County. The Canton resident was afood salesman when he joined a golf league andvolunteered to provide food and drink for theleague. His meals were well‐received by the 44golfers in the league and it inspired him to try acatering operation.

Two years later, he had the opportunity to builda kitchen as part of an expansion at the PlymouthCultural Center and use it for his new business.“That is where Rose Catering took off,” he said.

CONSISTENT NETWORKINGWith the help of his wife, Mary, and three chil‐

dren (now all grown), he grew Rose Catering withhard work and networking throughout the Detroitarea. His consistent presence at community andchamber of commerce events put him in touch withnumerous contacts, sharing a consistent talkingpoint: “Anything from hot dogs to caviar.” He said

that persistent networking through the yearshelped Rose Catering evolve into a viable business.

“I pass out as many cards as I can and meet asmany people as possible,” Rodriguez said. “I fig‐ured that if I handed out enough cards, then soon orlater, people would start calling me. Eventually, Istarted to meet key people at larger companies thatgave me the chance to work big office gatheringsand their work conferences.”

As technology evolved through the years, it en‐abled him to quickly respond to inquiries from per‐spective clients. From his hand‐held phone, heresponds to calls and emails all hours of the dayand night. If he cannot answer the call immediately,he will respond as soon as he can.

QUICK RESPONSE“I once got an e‐mail at 10p.m. on a Sunday evening, and I immediately re‐sponded to the e‐mail withsome information,” Ro‐driguez said. “The cus‐tomer was impressed, andwe catered her event. I think

that quick response makes a difference.”He continues to serve customers at homes, pic‐

nic areas, other banquet halls, and outdoor venues,as he has for years. Since he has control of the ban‐quet facilities at the Monaghan Knights of Colum‐bus Hall, this gives Rodriguez new opportunities togrow his business. This year, he held Friday Fishdinners during Lent, and brunches for MotherʹsDay and Easter.

Rose Catering is a member of several chambersof commerce, including Livoniaʹs. Livonia Cham‐ber President Dan West said Rodriguezʹs ability anddetermination with networking are great examplesfor any small business owner.

“Networking is the least‐expensive but most‐challenging way to market a business,” West said.“Chicoʹs affable personality and consistent presenceat chamber events in Livonia and throughout thearea has helped him build a good catering businessfor him and his family.”
