Fall 2013 From To Fall is here! Time for sweater weather. Are you ready for the fall season? Fall brings cooler weather, colorful foliage and Halloween and Thanksgiving. Numerous EHC activities are coming up in the months to follow: such as the EHC Rally in Brinkley, Fall Council, Holiday Extravaganza and Project Books. I am excited about these upcoming activities and I hope to see each of you there. Get ready to have some fun this fall. Looking back at the summer….. The Three County Fair was successful this year because of your hard work. It took countless volunteer hours and hard work. Each of you are an important part to the Fair and I cannot thank you enough for your time and diligence. We are always trying to improve upon the exhibit entry system, so if you have any thoughts or suggestions please feel free to call me anytime or bring your wonderful ideas to the fall council meeting. Again thank you for all you do! The Annual 4-H County Camp was again a huge hit this summer. Thank you Extension Homemakers for sponsoring a day and for coming to help serve lunch. What a day but we sure did have fun! If you were not there ask your fellow members all about it.

Fall is here! Time for sweater weather.

Are you ready for the fall season? Fall brings cooler weather, colorful foliage and Halloween and Thanksgiving. Numerous EHC activities are coming up in the months to follow: such as the EHC Rally in Brinkley, Fall Council, Holiday Extravaganza and Project Books. I am excited about these upcoming activities and I hope to see each of you there. Get ready to have some fun this fall.

Looking back at the summer…..

The Three County Fair was successful this year because of your hard work. It took countless volunteer hours and hard work. Each of you are an important part to the Fair and I cannot thank you enough for your time and diligence.

We are always trying to improve upon the exhibit entry system, so if you have any thoughts or suggestions please feel free to call me anytime or bring your wonderful ideas to the fall council meeting. Again thank you for all you do!

“Reaching Your EHC Dreams”

The Delta District Rally will be held October 17th at the Brinkley Convention Center. Registration is 9:30 a.m. and the general session will be from 10:00 a.m. - 3:00 p.m. As always there will be silent auction items to bid on and door prizes to be given away. Each county is responsible for two silent auction items and one door prize. Should you require transportation please call the county extension office to make arrangements. We will be leaving the courthouse by 8:30 a.m.

Get into the “EHC SPIRIT”

Come dressed in a fun Halloween costume! We will meet at the McCrory Housing Authority at 9:30 a.m. with registration and the general session from 10:00 a.m.– 2:00 p.m. Bring your favorite potluck dish.

Recipe: Avocado, Potato and Grilled Chicken Salad

Fresh avocado with red potatoes, chicken, and a lemon-yogurt dressing are a winning combination for this main-dish salad.

INGREDIENTS:

• 3-4 medium red potatoes • 1 fresh, ripe avocado*

• 1 tsp lemon juice • 4 green onions, chopped

• ½ medium red bell pepper, chopped • 8 oz frozen pre-cooked grilled chicken strips (about 8 strips), thawed, cut into bite-size pieces

• 1 tbsp olive oil • 1 tbsp cider vinegar

• ½ cup lemon non-fat yogurt • 1/8 tsp ground black pepper

DIRECTIONS:

1. In a medium sauce pan, boil potatoes about 20 minutes, until just tender; run under cold water to cool, and cut into chunks.

2. Peel avocado and cut into chunks; coat with lemon juice.

3. Whisk olive oil, vinegar, yogurt, and pepper in a small bowl.

4. Place all ingredients in large bowl. Gently toss.

Preparation time: 45 minutes

Serves: 4

Serving Suggestions:

Serve with an 8 oz glass of non-fat milk, 1 slice of rustic whole-grain bread or a whole-grain roll, and apple slices, about ½ apple.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces.

In closing, remember you are a part of a greater whole. EHC has so much to offer and is too important not to share with others. So tell a friend all about EHC this month. Help spread the word about EHC!

Something for us to think about, “Feeling connected to a community is an important part of healthy living. Extension Homemakers Clubs empower individuals through continuing education, leadership development and community service.”

Thank you for being involved in this organization. In order for us to grow we need to continually promote EHC to others. Go spread the word that EHC is celebrating 100 years and we are excited about the next 100 years.
