Red king crab can grow as big as a soccer ball with the shell alone measuring 28cm in diameter. Red king crab is best enjoyed during the winter season between September and January. Zuwaigani (Snow Crab)

Zuwaigani or snow crabs thrives at the bottom of the ocean floor where the water temperature is below4°C. In Hokkaido, snow crabs are caught in the Sea of Okhotsk and Sea of Japan.

Snow crabs are smaller than king crab; growing up to maximum 15cm in diameter. It has long and slender

legs allowing it to move swiftly on the muddy ocean floor.

Well-known for its sweet and delicate flavour, it is also low in fat and calories but high in protein.

Clione (Sea Angel)

Clione also known as Sea Angel is a genus of sea slugs which typically grows to about 5cm inlength. It is often found in waters facing the Sea of Okhotsk off Hokkaido after arriving thereamid drift ice from the north.

It has a tube-like body with a pair of wing-like flaps. Its wings flap about 2 times per secondallowing it to swim freely in the oceanic environment. And its internal organs are visiblefrom its translucent body.

Marimo (Moss Ball)

Marimo is a rare algae species that forms itself into beautiful spherical green balls. It grows at a very slow rate ofabout 5mm per year. The ones found in Lake Akan can grow up to 30cm in diameters with a life span up to 100 years.

Found in the many lakes in Hokkaido, marimo was first discovered by Tetsuya Kawakami of the Hokkaido University inLake Akan. In 1921 marimo were designated as a Japanese Natural Treasure and in 1952 they were designated as aSpecial Japanese Natural Treasure.

Believed to bring good luck, they are kept at home as good luck charm.

Lavender Soft Serve Ice Cream 

Lavender soft serve ice creams are very popular in Hokkaido.

Furano is a city in the prefecture of Hokkaido and is home to many lavender fields. Lavender was first cultivatedin Hokkaido as an agricultural product but the demand for local lavender decreased due to the arrival of lower-priced imported lavender. Farms are turned into tourist attractions, allowing tourist to enjoy the beautiful sightsin summer when the lavenders are in full bloom.

Lavender oil is extracted from lavender flowers for making perfume, cosmetics and even ice cream. The next timeyou visit a lavender farm in Hokkaido, remember to try its one of a kind lavender ice cream.

Jagaimo (Potato)

Two third of the potato consumed in Japan are harvested in Hokkaido. The cool climate inHokkaido and rich fertile soil is perfect for growing potatoes. The best time to enjoy potato is in

autumn during the harvesting season.

In mid-July during the summer season, delicate white flowers cover the entire potato field.When the flowers have withered, it signals the start of the harvest.

Freshly roasted potatoes are soft with a flaky texture. It is best enjoyed with a slice of butter.

Hokkaido Milk

Hokkaido produces about half of the milk consumed in Japan. It is well known to produce some of the best diaryproducts such as milk, butter, cheese, yoghurt and ice cream.

Hokkaido Corn

Hokkaido is blessed with fertile soil and vast fields. It is perfect for agriculture and Hokkaido is known to bethe top producers of Japan’s fresh produce such as potatoes, asparagus and corn.

Hokkaido corn is famous for its distinctive appearance. It has bits of white kernels among its yellow kernels.Besides its unique appearance, Hokkaido corn is also famous for its natural sweetness hence it is also referredto as super sweet corn.

The best way to enjoy them is to slightly roast them then smothered with butter. A freshly roasted Hokkaidocorn is sweet and juicy. Hokkaido corn can also be eaten without any preparation or cooking required. This way you can taste the natural sweetness of the corn.

Ikura (Salmon Roe)

Hokkaido is well known for its abundant of fresh seafood and this includes ikura (salmon roe) which to most peopleis considered a delicacy. The fresh clean water is ideal for salmon to spawn which takes place every year betweenthe month of August and October.

In Hokkaido, ikura don are usually served where a bowl of rice is topped with generous servings of salmon roe.

Good quality salmon roe is translucent and spots a red orange hue with a firm texture which pops in your mouth.
