F A M I L Y F I R S T . . . What does that really mean? It means everything! We just got back from our first ever four generations, all-Wilson family cruise to Ensenada. The trip was short for a number or reasons, but mostly because we have never gone on a vacation together and had no idea what it would be like having four generations of four families, ranging from two to 85 years old. We were scared to death. With that said, it was awesome! We enjoyed each other’s company, hung out and really did not talk a ton of business, which is odd for a family like ours. We made several great connections, and even ran into Wine Club Members that were also on the ship. It was a trip that took many years of discussion to pull off and it was far better than any of us imagined. We took the time to be a family and spend time together. I highly recommend you take the time and do the same with your family. We are already looking forward to our next trip together! I am a lucky man because my family does not end here, it’s much larger than I could ever have imagined. I have you, my Extended Family Wine Club Members! I am looking forward to a wonderful and relaxing summer with you all. I really enjoy seeing you at the winery taking in the beautiful wine country scenery and attending the events. Speaking of, we have some great concerts and events coming up this summer! There are two concerts we are very excited about. The first is the 2015 Next Women of Country, featuring the lovely Jana Kramer, Jamie Lynn Spears and Alaina Blair. We also will be welcoming country artist and performer, Craig Morgan. I’ve heard this man does it all! Later we will have the Taste of Tahiti event and Harvest, oh, and don’t forget about our Wine Academy classes. We have so much to offer, and there’s no one I would be happier to share these experiences with than you, my family.

C e l l a r n o t e s . . . from the winemaker This is the time of year where the majority of the work is done in the vineyard in preparation for the upcoming vintage. The vines are meticulously tended, leaves are pulled, nutrition is monitored and applied and watering is controlled. Yet, in the wine cellar another form of preparation is taking place…Wine Making Yoga. Yoga it is said, is a process in which we reverse the flow of consciousness from flowing outward from our minds to flowing inward toward our dynamic center. By practicing “Wine Making Yoga” we are no longer dependent on our imperfect senses but are able to open up our chakras and actually experience the “Wine Truth”. Our minds are clear of preconceived notions of Cabernet and Syrah and we take nothing for granted.

Through various controlled poses we begin to understand our oneness with the Infinite Wine Intelligence and for a fleeting moment understand the joy which is the essence of our own wine SELF. Through the physical we are able to open certain vine shoots which lay dormant within our chakras. Once opened these vine shoots reveal, through the inner-self specific elements of the cosmic wine truth.

Announcing the new Variant Series

[VS] Variant: ‘verēant/noun: 1. A form or version of something that differs in some respect from other forms of the same thing or from a standard.

Cabernet Sauvignon, the world’s best traveled red wine varietal, whose regional names span from Bidure to Vidure, (not quite A-Z but close) attest to the adaptability and variability in wine making styles of this Nobel Grape. Our Variant Series showcases the amazing array of possibilities when a craft winery can control all aspects of creating a wine from vine to bottle. Our Variant Series Cabernet is similar in style to our Duet blend of lightly oaked, soft tannin and fruit forward Cabernet Sauvignon with a little Zinfandel to support the fruit and give a zip of spice. This

is the red wine for those who thought they did not like reds. All the complexity and layers of a rich Cabernet but softer on the palate and can be served chilled.

The posterchild for variant behavior is our White Cabernet Sauvignon which is now appropriately in the Variant Series. The White Cabernet Sauvignon is an extreme example of the possibilities of vineyard and cellar influence on a wine turning a traditionally rich tannic dark red wine into a white wine with aromas of fruit and melon but still retain the rich mouthfeel of a classic Cabernet Sauvignon. The “White Cab” stills resides in its classic cobalt blue bottle but now with a clean silkscreened label and shares this new look with its fellow rebel the variant Series Cabernet Sauvignon.

First light, the vineyard crew gathers with great haste and energy to get out into the vineyard to accomplish as much as possible

before the summer heat takes its toll on efficiency. By 9:00 AM it is already lunchtime and the crew gathers in the field office for lunch break on a long table like a daily Thanksgiving feast. When most people are just arriving for work the vineyard crew has already accomplished a large part of a hard day’s work. Those jobs that require physical and/or intellectual clarity are always saved for the productive cool morning hours. Lunch starts quite as the crew regenerates, re-hydrates and starts to get energy from the rich array of foods brought and shared. The diverse selections of foods reflect the rich cultural tapestry of the crew all with a common goal of supporting each other and this vineyard that is the source of the health and wealth for the winery. As the blood sugars rise and the muscles relax the conversation becomes increasingly loud and funny. One of my measures of success as a manager of the vineyard crew is the intensity and volume of the laughter that comes from the field office. As the crew prepares to go into the second half, the hot and draining half of the day, I am always pleased to hear them checking in with each other “Keep an eye out for anyone getting too hot. You guys need any more ice in the cooler? Meet us in the truck for break and we will crank the AC and cool off.” The crew is currently all guys so we will never say it out loud, but we care deeply for each other, we are family.Our college interns will join the crew for a few hours in the field, the cellar or in the lab depending on their educational curriculum plan. Although Gus and I have specific educational goals in mind for each day, the students spend most of their time working directly with the vineyard or cellar crews. Gus and I often marvel at what good teachers our respective crews are. However, we both realize that the key is that the crew loves what they do for a living and want to share it with others who

sense what a fun and gratifying endeavor winemaking is and want to assist these newest members of the winemaking family. In the late afternoon you will often find Gus and/or me stopping in the tasting room to talk to our guests to get their impressions of what we have been working on. As you know we love to “talk wine” but you may not be aware of how invaluable your opinions and observations are to us as we develop the spectrum of accessible to varietal and terroir defining wines. After sunset my evening crew comes in to spray the vineyard with a nutritional mix of seaweed, minerals and compost tea. The secret of the evening crew is that although we claim it is a hardship shift, it is actually peaceful, cool and quite, except for the constant company of the multiple families of owls who accompany us for the evening. Four of our mommy owls have a brood of owlets this year so they are busy hunting. My scientific mind tells me that they follow us all evening because our activities stirs up mice but part of me wants to believe that they hang-out with us because we are family. Finally at the end of my day, I will leave the night crew and show up at Gerry and Rosie’s house in the middle of the vineyard, usually under the pretense of warning them not to get seaweed fertilizer in the open windows or some other excuse. The truth of the matter is Rosiealways invites me in and the three of us often share a glass of wine to-gether. Like many of us here who have lost their grandparents, Rosie and Gerry are there to take up the slack and fill in. I can’t count how many people count them as “Grandparents”, (perhaps you are one of them). After a long and often hot day it is nice to know the vines are happy, and to share a final glass of wine with family. PISTACHIO PEACH MELBAPairs with Angelica Cream Sherry

1 cup whole milk¾ cup granulated sugar

2 cups heavy whipping cream1 ½ teaspoons kosher salt

1 vanilla bean, split6 large egg yolks

¼ teaspoon almond extract¾ cup finely chopped roasted pistachios

2 ripe peaches, washed, peeled and cut into 8 wedges

Angelica Cream Sherryraspberry or melba saucesummer berries, washed

For the pistachio ice cream:Warm milk, sugar, 1 cup of cream, almond extract and salt in a sauce pan. Scrape the vanilla beans out

and add to the warm milk, along with the empty pods. Cover the pot, remove from the heat and allow to steep for 30 minutes. Pour the remaining 1 cup

cream into a mixing bowl. In a separate bowl whisk the egg yolks. Slowly pour the warm milk into the eggs while continuously whisking. Pour the mixture back into the sauce pan. Stir constantly

over medium heat with a rubber spatula, scraping the bottom as you stir until the mixture is thick enough to coat the spatula. Strain the mixture

into the bowl of cream. Add pistachios. Put the bowl in an ice water bath in the

refrigerator to cool completely. This may be done a day ahead.

Process the mixture in an ice cream machine according to the machine manufacturer’s instructions.

For the peaches:Put the peach wedges in a flat Tupperware container

or baking dish. Add enough cream sherry to just cover. Allow peaches to soak overnight, and then remove

from the sherry.

Serve the ice cream topped with the peaches, melba sauce and berries.

In the early 1700’s the Spaniards brought grapevine cuttings to America and planted a variety known as “mission” grapes to make wine in the missions throughout Mexico and America. The dessert wine was made with crushed Mission grapes with clear grape brandy added. This fortified dessert wine became known as “Angelica” in that is was sweet, heavenly, and long lived. Flavors of caramel, hazelnut and vanilla. Although most people drink Sherry as an aperitif, definitely try with a meal or dessert, it pairs beautifully with a wide variety.
