betty buzz: HOLIDAY RECIPE
Cru Cafe Four Cheese Macaroni from Chef John Zucker
Ingredients: 2 qt Heavy Cream (reduced in half) 1 lb Pasta (we use orecchiette)1 cup Pepper Jack (hand grated) 1 cup Aged Cheddar (hand grated)1 cup Fontina (hand grated) 1 cup Mozzarella Cheese (hand grated)1/4 cup Olive Oil
For Final Cooking: 1/2 cup Pepper Jack (hand grated) 1/2 cup Aged Cheddar (hand grated)1/2cup Fontina (hand grated) 1/2 cup Mozzarella Cheese (hand grated)Salt and pepper
Method: - Preheat oven to 375 degrees. - Reduce cream slowly by half in medium size sauce pan. - Cook the pasta in salted water el dente. Cool down rapidly in cold water then drain all excess water. Coat the pasta lightly in Olive Oil to prevent sticking. Set aside.
- Grate all cheeses by hand keeping them separate. Pre-bought grated cheese tends to have corn starch added and will change the texture. - Add cheeses (save for final cooking) into reduced cream over low heat until fully melted. Set aside off the heat. - In a large mixing bowl, add the “final cooking” cheese, pasta and cheese sauce. - Salt and pepper to taste and mix well without breaking up the pasta. - Add final ingredients to a casserole pan and bake at 375 degrees until lightly brown on top.

Creativity as a Priority Do you have a set time that you are encouraged at work
to brainstorm? Most business owners and managers tout
the importance of innovation while not implementing a
standardized time to get creative and come up with ideas. Start
now: • Establish an open, supportive
and accepting environment• Use ice breakers and games to
get people talking • Address specific issues of importance to the company
• Write down all ideas on a dry board and drill down as needed

betty buzz: HOLIDAY RECIPES
Turkey Pot Pie from Lindsay Doolittle; 3.14 Pies
(perfect for those Thanksgiving leftovers)
Ingredients:Pastry for 9” double-crust pie 2 potatoes (peeled or unpeeled), 1/4 inch diced 1 C + 2 Tbs unsalted butter, divided 2 C onions, 1/8 diced 2 C cooked turkey, shredded 2 large parsnips, peeled & ½ inch diced 2 large carrots, peeled & ½ inch diced 1½ C frozen peas 1 C sliced celery 2 garlic cloves, minced
Method:- In large pot over medium heat, melt 2 Tbs of butter and sauté onions until translucent. - Add the potatoes to the pot along with the turkey, parsnips, carrots, peas, celery and garlic. - Add the stock and thyme and simmer, uncovered, for 30 minutes, until the vegetables are tender but not soft (they will cook more inside the pie).
- Prepare a Blonde Roux by melting the remaining 1 C butter in a medium sauté pan over medium heat. - Stir in the flour with a wooden spoon, smashing up any lumps. Continue stirring for a few more minutes, or until the roux has an even consistency and looks runny and bubbly. - Remove from the heat. (If it develops any color or scorches on the bottom, start the roux over.) Add the roux to the turkey stew mixture, stirring as you add it.
- Add the buttermilk and let the whole thing simmer for 15 to 20 minutes, or until it has thickened slightly. - Add the salt and pepper, taste, and adjust the seasoning as needed. - Let the mixture cook for a couple minutes more, until it is a really thick stew. - Remove from the heat, add parsley and refrigerate uncovered until stew is completely chilled - at least 2 hours, preferably overnight.
- Preheat the oven to 450. - Roll out the bottom crust and put into plate. Leave the bottom edge un-crimped. - Add the cold stew. Cover it with pastry crust and cut vent slits. For a shiny finish, brush pastry crust with egg. - Bake the pot pie on a lipped baking sheet for 8 to 10 minutes or until the top crust blisters and loses its wet look. - Turn the oven down to 350 and bake for 30 - 40 minutes more, until the filling is bubbly and the crust is golden brown. - Cool for 20 - 40 minutes at room temperature before serving.

Top 5 Holiday Fashion Do’s
1. Be festive by incorporating sparkle, lace, feathers and fur in
your ensemble.
2. Know your party and dress accordingly. Skip the plunging
neckline for your work event and rock it on New Year’s Eve.
3. Keep warm yet sleek by wearing layers instead of bulky
sweaters and coats.
4. Skip the snowman sweater and wear a winter white
cashmere sweater instead.
5. Accessorize. Sparkly baubles, fabulous shoes and a fun
handbag can bring out the spirit of the season in a subtle way.

BUSY WOMAN TIPS
DIY Hot Oil TreatmentKeep your locks moisturized,
healthy and glowing with regular hot oil treatments. Make
your own hot oil treatment following these steps.
• 3 Tbs* Oil (we recommend coconut oil; you can also use
jojoba, avocado, castor, sesame or olive oil)
• 3 drops* essential oil (we recommend rosemary, tea tree or
peppermint)* Adjust amounts based on length and
thickness of hair.
Mix oils in a bowl or mug. Place in a double boiler and warm over
low heat for 5 - 10 minutes. Dampen hair, then apply oil using your fingers to massage into roots through to the ends. Wrap your hair in a hot towel
(warmed in the dryer) and let it sit for 15 - 20 minutes.
Wash and rinse thoroughly.

12 Ways to Health
The CDC’s 12 Ways of Health will help you to be mindful of your wellness during the busy
holiday season: 1. Wash hands with soap and
warm water for at least 20 seconds. Cover your mouth and
nose with a tissue when you cough or sneeze.
2. Bundle up for warmth.3. Manage stress. Do not over-commit. Keep work, play and home in balance. Ask for help
when you need it. Remember to breath, relax and sleep.
4. Don’t drink and drive and don’t ride with someone who has
been drinking. 5. Be smoke free.
Call 800.QUIT.NOW. 6. Fasten seat belts and
drive safely. 7. Get exams and screenings. Many people have met their
insurance deductibles by year end, so make your appointment
before it’s too late. 8. Ask your health care
provider about what vaccinations your should get based on your age, lifestyle, travel plans and
medical history.9. New toys, excitement of the season and staying as a guest in other’s homes can lead to accidents and injuries. Watch your children carefully, limit
unsafe behavior and refresh your first aid training.
10. Practice fire safety. Test smoke alarms and
fire extinguishers. 11. Prepare and story food properly. Wash hands and
surfaces often. 12. Eat well, limit rich, sugary
foods and get moving.

betty buzz: HOLIDAY DECORATING
Decorating Naturally
Use Plants: Instead of cut flowers, use small tropicals and ferns in arrangements with poinsettias or orchids.
Try poinsettias in shades other than red – like pink, white and speckled reds.
Force Bulbs: Bring beautiful color and scents in doors with forced bulbs. Paper whites are especially lovely. (see page 17 for a forcing bulb how to)
Go to the Garden: Greenery is readily available in many gardens including Magnolia, Holly, Nandina, ferns, pine branches and ivy.
Trim the Tree: Whether you use an ever green or another kind of tree, you can use natural ornaments to decorate your Christmas tree. Try pinecones,
sweet gum balls, baby’s breath, dried hydrangeas and seashells.
Making a Wreath 1. Purchase a wire wreath form at a craft store, or take 2
coat hangers, and form them into the shape of a circle, wrapping them with floral tape to secure them together.
2. Wrap your wreath form using grasses, branches or vines. Overlap your chosen medium, using wire or hot glue to secure it to your wreath form.
3. Add decoration using wire or hot glue to secure it. For Halloween, try wrapped-candy. Thanksgiving wreaths look great with acorns, leaves or small pumpkins. Use pinecones, birds, berries or snowflakes for a Christmas.wreath. Silver bells and blue ribbon look beautiful in a Hanukkah wreath.
4. Think outside the “ring”! Wreaths don’t have to be circular, try square and rectangular shapes for a nice change. Decorative items are all around you, like wine corks, bottle caps or tiny framed pictures!
Garland Go-To’s1. Pick your medium: cranberries, popcorn, beads, can
tabs, CD’s or decorative paper.
2. String it: for items like cranberries, use a needle and a very-long, sturdy thread. For tabs or CD’s, you can use twine or ribbon. For paper, make a chain by looping the paper into rings and securing them together.
3. Go au natural using evergreen trimmings or dried fall leaves secured together with floral wire.
