SMOKED SALMON PIZZA WITH RED ONIONS AND FETTAPreparation time: 15 minutes Cooking time: 5 minutes | Serves: makes 1 pizza

INGREDIENTS Basic dough – makes 5 x 20cm pizzas 15g instant dry yeast½ tsp sugar2 cups lukewarm water4 cups bread flour (high gluten)1⁄3 tsp salt2 tbs extra virgin olive oil

In a large bowl, combine together yeast, sugar and warm water. Cover with cling film and place in a warm position until bubbles begin to appear. Combine olive oil, salt and flour gently, mixing well adding more flour if required. Knead on a floured board for 5 minutes until smooth and elastic.

Place into a large oiled bowl covered with plastic film and leave in a warm place until doubled in size. Remove from the bowl and knock down onto a floured board. Divide into 150g portions (200g for larger ones) and knead to make a round ball. Roll out into desired shape and place onto lightly oiled ‘pizza’ trays hold until required.

Toppings½ cup Italian tomato sauce (sugo)1 small red onion (sliced thin)½ cup grated mozzarella cheese1 x 150g hot smoked salmon½ cup marinated feta (crumbled)½ cup torn flat leaf parsley2 tbs extra virgin olive oil

Preheat bbq to 220°C. Place several tablespoons of tomato sauce onto the pizza dough. Scatter evenly with half the mozzarella and all the onion. Break the hot smoked salmon into pieces and spread over the onions. Finish with the feta and remaining mozzarella.

Bake until golden and crisp, scatter with parsley and olive oil.

PUERTO RICAN STYLE ROAST CHICKEN WITH ADOBO SECO

Adobo Seco is a Puerto Rican-style seasoned salt

that is sprinkled or rubbed on meats and seafood

prior to grilling.

Preparation time: 10 minutes

Cooking time: 1 hour and 10 minutes

Serves: 4 mains

INGREDIENTS

Adobo Seco (dry rub)

3 tbs salt flakes

1 tbs ground black pepper

3 tbs dried flaked garlic

2 tbs dried ground oregano

1 tbs dried ground turmeric

1 tbs onion powder

1 tbs sweet smoked paprika

Combine ingredients and store in an air tight container.

4 tbs extra virgin olive oil

2 tbs Adobo Seco

1 x 1.4kg whole free range chicken (rinse and dry)

2 brown onions (peeled and sliced 1cm thick)

4 garlic cloves (flattened)

1 cup assorted fresh herbs

METHOD

Place onions, garlic and herbs into a small baking

tray. Combine the olive oil and Adobo Seco together

and rub well onto the chicken.

Place onto the herb mixture and roast until the

chicken’s centre reaches 82°C. Remove and allow to

rest in a warm position for 15 minutes, before carving.

BARBECUED PERI-PERI CHICKENPeri-peri refers to the fiery red chillies which are

commonly used in Portuguese cuisine.


Cooking time: 5 minutes | Serves: makes 6 skewers

INGREDIENTS

For the peri-peri sauce.

4 small red chillies (seeded and chopped finely)

1 lemon (juice only)

2 cloves garlic (crushed)

½ cup coriander (chopped)

2 tbs Jingilli extra virgin olive oil

½ tsp freshly milled black pepper

½ tsp salt

Combine all the above ingredients in a blender,

cover and refrigerate.

500g chicken thigh fillets (skin and fat removed)

½ cup coriander sprigs

1 lemon (cut into wedges)

½ cup semi dried cherry tomatoes

METHOD

Cut chicken into 2cm pieces and combine with

3 to 4 tablespoons of peri-peri sauce, cover and

refrigerate 1 hour.

Place about 6 chicken pieces on to each of the 6

skewers and set aside. Cook above charcoal

turning and lightly basting until fully cooked but

moist. Present with a little coriander, lemon wedges,

semi dried cherry tomatoes and a side dish of extra

peri-peri sauce.

ROMESCO-STYLE ROTISSERIE CHICKENThis chicken takes on the flavours from the classic

Spanish chilli sauce “Romesco”, which combines

dried chillies, tomato, garlic, vinegar and paprika.


Cooking time: 1 hour 10 minutes | Serves: 4

INGREDIENTS

1 x 1.6kg fresh organic chicken

2 cloves garlic (crushed)

2 tsp dried chilli flakes

3 tbs tomato puree

2 tbs sherry vinegar

2 tsp smoked sweet paprika


To taste salt and pepper

METHOD

Rinse the chicken in cold water and dry with kitchen

paper. Combine together garlic, chilli flakes, tomato

puree, vinegar, paprika, olive oil and seasoning.

Massage this mix well onto the chicken and

carefully place onto the rotisserie spindle.

Cook in pre-heated barbecue until fully cooked and

the internal temperature reaches 82°C.

CREPES WITH GRILLED PINEAPPLE AND CARAMEL SAUCEPreparation time: 10 minutes Cooking time: 10 minutes | Serves: 6

INGREDIENTS This recipe will make 20 crepes2 cups milk (full cream)1 tbs caster sugar180g plain flour2 tbs melted unsalted butter2 eggs1 pinch of salt

METHODPlace milk into mixing bowl, add sugar and plain flour. Beat together, add melted butter and eggs. Strain and allow to stand for 1 hour.

Heat non-stock pan with melted butter. Add small ladle of crepe batter and spread evenly by tilting pan. When golden, turn over and cook other side. Remove and set aside.

Caramel sauce250ml thickened cream250g unsalted butter300g dark brown sugar1 tsp vanilla extract

Combine cream and butter in saucepan and bring to boil. Add brown sugar, vanilla, then boil again. Simmer for 10 minutes, stirring constantly.

¼ pineapple peeled and sliced2 tbs butter melted

Heat a ribbed grill pan and brush with the melted butter. Grill the pineapple on both sides and set aside.To assemble, place two folded crepes onto plate. Drizzle caramel sauce onto crepes and top with grilled pineapple. Finish with whipped cream and dust with icing sugar.

CHORIZO AND BEEF FILLET PINTXOS WITH CHIMICHURRI(Pintxos pronounced PEEN – chos means

“to skewer”)


Cooking time: 6 minutes | Serves: makes 12

INGREDIENTS

Chimichurri sauce

1 small shallot

4 tbs fresh oregano leaves

4 tbs continental parsley

2 tbs chives

6 tbs sherry vinegar


1 pinch chilli flakes

To taste salt and pepper

Combine all the ingredients together in a food

processor and set aside.

600g beef eye fillet (cut into 2cm cubes)

2 chorizo sausages

1 red onion (cut into 2cm pieces)

20ml extra virgin olive oil

1 cup mixed fresh herbs

½ cup roasted capsicum strips

METHODCut chorizo in half lengthways and plunge into boiling water for 20 seconds. Remove and allow to cool. Remove skin and discard. Cut into 1cm thick slices.

Place beef cubes, onions and chorizo onto metal skewers, brush with a little olive oil and grill until cooked to desired rareness. Present on a serving platter with fresh herbs, some roast capsicum strips, and a small bowl of Chimichurri sauce.

classic specificationsLAMB KOFTA WITH HUMMUS AND PITA BREADKofta is made with finely ground meats, spices and herbs.Preparation time: 10 minutes Cooking time: 8 minutes | Serves: makes 12 plus

INGREDIENTS 2 tbs extra virgin olive oil2 small shallots (finely diced)2 garlic cloves (crushed)1 tsp dried chilli flakes250g lean lamb mince250g veal and pork mince½ tsp salt flakes½ tsp freshly ground black pepper3 tsp smoked sweet paprika2 tbs ground cumin1 tbs ground coriander1 tbs fennel seeds¼ cup chopped parsley1 cup hummus4 small pitta breads (cut into wedges)

METHODHeat olive oil in a frypan and add diced shallots, crushed garlic and chilli flakes. Cook until soft.

Combine lamb, veal and pork mince, shallot mix and salt. Add the pepper, paprika, cumin, coriander, fennel seeds and parsley. Using your hands, form into 12 balls and divide each one into two. Roll on a wooden board to form even sausage shapes. Place two onto each skewer, keeping them slightly apart.

When the coals turn white, place skewers onto the bbq above the hot charcoal, turning often until golden brown on all sides and fully cooked. Serve with some hummus, cucumber salad and pitta bread.
