In 2003, a group of English chemists (Abbott group) discovered a new type of solvent named Deep Eutectic Solvents (from the Greek term eutektos meaning “well melting”).[1]

In 2011, Verpoorte et al. discovered DES existed in Nature. He called them NaDES, for Natural Deep Eutectic Solvents

Chemically speaking, they can be defined as:

in specific proportions

that have a lower melting point than their individual components and are liquid at room temperature (RT)

a combination of natural compounds (solid or liquid at room temperature)

The melting points of the pure individual components are 310°C for betaine (solid at RT) and 16.8°C for lactic acid (liquid at RT).

Mixed together, the melting point of the blend does not show a linear melting point variation (dotted line). The blend reacts completely differently (pink line) showing a solid-liquid phase transition at -55°C for the ratio lactic acid: betaine 60:40, and not 120°C as we would have expected.

We call this drop in melting point “Eutectigenesis”.

Occurrence of NaDES in nature

Though we were unaware until now, NaDES are actually found everywhere. The most famous examples are nectar and maple syrup.

The role of NaDES in plants

Thanks to their specific polarity, NaDES constitute a third type of liquid phase in the plant. They are able to dissolve botanical compounds that are neither water soluble nor lipid soluble. This should ensure the survival of the plant by:

Enabling the biosynthesis and storage of poorly water-soluble molecules (including high molecular weight molecules)

Protecting the plant against drought (by retaining and absorbing water)

Protecting the plant against cold (by avoiding crystallization of water at low temperature) 2
