Entry #10: Passion fruit goat cheese fresh mint cookies with passion fruit glaze From Assia @ Assia’s Kaleidoscope http://assiaskaleidoscope.wordpress.com / Key Ingredients: Passion fruit, Goat Cheese, Mint For the batter: 100g fresh soft goat’s cheese 150g softened butter (room temperature) 2 eggs, beaten 1 cup caster or cane sugar 2 tea spoons vanilla essence 2 1/4 cups plain flour, sifted 2 passionfruit (pulp) a handful of fresh mint (don’t overdo the fresh mint or it may overpower the delicate flavours of the passionfruit), finely chopped For the icing: Sift 2 cups icing sugar into a bowl Add the pulp of 1 passion fruit Add a little hot water until you get a soft icing mix. Method: Preheat oven to 160C/320F (140C/285F with fan). Line 2 baking sheets with baking paper. Cream butter with sugar until mixture is pale and creamy. Add eggs and vanilla and mix together, add in flour and passion fruit pulp and mix to a soft dough. Use a small ice-cream scoop (about 1 oz.) to scoop mixture onto baking trays. Allow room for spreading (2 in. between pieces is optimal) Bake for 20 min. or until pale and golden. Cool and top with passionfruit icing. Leave the icing to set (it will be a bit runny at first but it will set)
