My Dearest friends,

We have finally come to the end of 2013, and it is time to take stock of the year. Each and every one of us has no doubt had their fair share of good or bad experiences. Hopefully these will make us grow stronger and perhaps encourage us to rethink our attitudes. To improve ourselves and to tune in to the laws of the nature, the universe and the world we live in.

Some friends have left us, most recently our much revered Madiba, former South African President, Nelson Mandela, a beloved icon of peace and hope for Africa and the World. As their earthly experiences end in 2013, for us their friends, family and collaborators they will forever remain alive in our hearts. I take this opportunity to extend our condolences to the families and friends of our dearly departed.

For the living lets pray for God’s peace and blessings as we enter the year 2014 together. Let us endeavour to build a better Ghana and a better world together in love and health. As the Christmas festivities begin, let us celebrate in prayer, but also with friends and family. Join hands with me and the Enjoy Accra family as we wish you a Merry Christmas and a prosperous 2014.

Rolihlahla Mandela was born in Mvezo, a village near Mthatha in the Transkei, on July 18, 1918, to Nonqaphi Nosekeni and Henry Mgadla Mandela. His father was the principal councillor to the Acting Paramount Chief of the Thembu royal house.

Rolihlahla literally means “pulling the branch of a tree”. After his father’s death in 1927, the young Rolihlahla became the ward of Jongintaba Dalindyebo, the Paramount Chief, to be groomed to assume high office.

Nelson Mandela became an anti-apartheid revolutionary, politician, and philanthropist. Mandela served over 27 years in prison, initially on Robben Island, and later in Pollsmoor Prison and Victor Verster Prison. An international campaign lobbied for his release, which was granted in 1990 amid escalating civil strife.

Mandela published his autobiography and opened negotiations with President F. W. de Klerk to abolish apartheid and establish multiracial elections in 1994, in which he led the ANC to victory. He served as President of South Africa from 1994 to 1999 and was the first black South African to hold the office, and the first elected in a fully representative democratic election.

oots Hotel Apartment held an exhibition of the work of Gabriel Eklou in its plush penthouse suite. The theme of the exhibition, the harmattan, with the extreme climate of Ghana and the region

provide the artist the challenging context to create melodies of colours, culture and style.

The artist featured was born in 1966 to a Ghanaian mother and Togolese father, Gabriel Eklou makes paintings that bring contemporary Ghana into

fuller view. Self taught, Eklou maintains that painting brings him closer to nature, his culture and his people in particular. His compositions remain unaffected by the art establishment and strong in their individuality and uniqueness. His trademark elongated figures are majestic and proud. They exude inner strength, their stilt like legs stretching deep into the red African soil. They are contemporary Africans, dancing, hunting, working or sitting in quiet contemplation. The serene atmosphere of Roots Hotel Apartment proved a fitting backdrop to the exhibition and guests had an opportunity to enjoy the internal beauty of the hotel and to meet the friendly staff.

hristmas traditions often depict the unique geographical and ethnic

cultures of where the festival takes place. They are so varied and in some instances downright hysterical. Here are some Christmas traditions one can find across the globe:

GHANAFireworks and doing Good in return for blessings

Ghanaians are a very religious people and no better time to see this than during the Christmas holidays. Christmas Eve is when the celebrations begin with church services with lots of drumming, dancing and of course praying. Children put on nativity plays. Choirs then lead congregants to sing and make merry in front of the Church. The dance is a means of glorifying God, for being alive and healthy.

Songs are sung in local dialects dependent on the type of Church one attends and the language

the people understand best. Sometimes services and dancing go on all night long whilst other people celebrate Christmas Eve with fireworks and parties. On Christmas day the churches are packed. People come out dressed in their best outfits. After the church service on Christmas morning, people quickly go back to their houses to start giving and receiving gifts; including food shared among neighbours.

Most homes will have some traditional foods prepared for visitors including jollof, banku and okro soup and rice and fufu and plenty to drink.

FINLAND A Family Trip to the Cemetery

Finnish families have one of the most elaborate Christmas celebration rituals. It’s not uncommon to hear

parents scream out Iloista joulua (Merry Christmas in Finnish)! The festivities start when families take a cleansing sauna bath in the morning. They then have a traditional breakfast before heading out to the town’s declaration of christmas peace at noon. After lunch, the

house is cleaned and the tree is decorated,cchildren are dressed up and the family marches out to the cemetery at six o’clock. In a practice similar to the Mexican tradition of the Day of the Dead, Finnish families visit dead family members to leave candles and reflect. That way, past and present members of the family all partake in the Christmas festivities.

BELGIUMDouble Trouble with Two Father Christmases

In Belgium, in order to determine who the good children were, Father Christmas adopts the attitude of a detective and travels from the North Pole twice in the year. St Nicholas spies on kids who speak the Walloon language by visiting twice, once to observe their behaviour, and a second time to either bring gifts or leave a bundle of sticks in a basket or in their shoes. Pere Noel, who visits French speaking children partners up with Pere Fouettard to ask about the children’s behavior throughout the year. Then, on his birthday (December 6), he leaves them either chocolate or sticks based on their behaviour.

ITALYThe Witch in Search of baby Jesus leaves a trail of goodies

Italians do not really believe in the bearded man in red living up in the North Pole and their giving out goodies to children, their gift giver is a witch, yes a witch.

The story goes that a witch named La Befana was approached by the Magi (wise men) for directions to see the Baby Jesus. The disgruntled witch directed them, but made it clear that she was too busy to worry about accompanying them on their trip. But then La Befana had an epiphany; she felt wicked and wretched for missing out on the greatest birthday of all time.Since then, she has been travelling all over Italy in search of the Infant Jesus while leaving sacks of toys for good children along the way.

Centuries later, tens of thousands of Italians around Rome uphold the tradition on Epiphany Eve (January 5). Aside from gifts, every child also receives a stocking full of coal. The bonus being that the coal is actually darkened candy, which makes for a rather delicious punishment.

CZECH REPUBLICHello Santa, can I have a husband instead this year?

In the Czech Republic single ladies compete for space on Santa’s list. Every Christmas Eve, single Czech women rest their backs against a door, kick their feet up, and toss their shoes in the air to see where they will land.

The belief is that if the shoe lands facing the door Santa will bring them a husband in the upcoming year. But for the unlucky women whose shoe winds up pointing inside, they can count on another year of singlehood.

BRAZILSanta drops the warm clothing, for some Samba

Any time Santa leaves the North Pole to visit the folks below the equator, he returns totally tanned. Well, for the Samba dancing and soccer loving folks in Brazil it wasn’t good to have the North Pole native fly in from the South in his red and white with his reindeers all sweaty from the sun. Brazil’s Papai Noel flies down from Greenland and drops the traditional heavy Santa attire for sleek vacation-like clothing. THE NETHERLANDS Zwarte Piet (Black Peter “the Elf”), Santa’s sidekick

Dutch author, Jan Schenkman wrote a book called “Saint Nicholas and His Servant” in 1845, in which Saint Nick (Santa) was accompanied by a “dark man” in Moorish clothing who travelled to Amsterdam from a Spanish steamboat. That servant came to be known as Zwarte Piet (Black Peter) — a mischievous servant who would come to shore, pepper the city with sweets and nuts, and then snatch up naughty kids and throw them into his bag on Saint Nicholas Eve (December 5). Today, hundreds of adults throughout the Netherlands paint their face black and wear wigged afros to dress up as Zwarte. e

W ith no cure in sight for the cold or the flu, over-the-counter treatments

can at best bring symptom relief or shorten the duration of those symptoms. Or you can take the natural approach. We explore some home remedies that may help you feel better along the way.

No. 1: Blow Your Nose ofteN - aNd the right waYIt’s important to blow your nose regularly when you have a cold rather than sniffling mucus back into your head. But when you blow hard, pressure can cause an earache. The best way to blow your nose: Press a finger over one nostril while you blow gently to clear the other. Wash your hands after blowing your nose.

No. 2: staY restedResting when you first come down with a cold or the flu helps your body direct its energy toward the immune battle. This battle taxes the body. So give it a little help by lying down under a blanket.

No. 3: gargleGargling can moisten a sore throat and bring temporary relief. Try a

teaspoon of salt dissolved in warm water, four times daily. To reduce the tickle in your throat, try an

astringent gargle – such as tea that contains tannin – to tighten the membranes. Or use a thick, viscous gargle made with honey or a mixture of honey and apple cider vinegar, a popular folk remedy. Steep one tablespoon of raspberry leaves or lemon juice in two cups of hot water and mix in one teaspoon of honey. Let the mixture cool to room temperature before gargling. Honey should never be given to children less than 1 year old.

No. 4: driNk hot liquidsHot liquids relieve nasal congestion, help prevent dehydration, and soothe the uncomfortably inflamed membranes that line your nose and throat.

No. 5: take a steamY showerSteamy showers moisturize your nasal passages and relax you. If

you’re dizzy from the flu, run a steamy shower while you sit on a chair nearby and take a sponge bath.No. 6: applY hot or Cold paCks arouNd Your CoNgested siNusesEither temperature may help you feel more comfortable. You can buy reusable hot or cold packs at a drugstore. Or make your own. Take a damp washcloth and heat it for 55 seconds in a microwave (test the temperature first to make sure it’s not scalding). Or take a small bag of frozen peas to use as a cold pack.

No. 7: sleep with aN extra pillow uNder Your headThis will help with the drainage of nasal passages. If the angle is too awkward, try placing the pillows between the mattress and the box springs to create a more gradual slope.

No. 8: doN’t flY uNless NeCessarYThere’s no point adding stress to your already stressed-out upper respiratory system, and that’s what the change in air pressure will do. Flying with cold or flu congestion can hurt your eardrums as a result of pressure changes during takeoff and landing. If you must fly, use a decongestant and carry a nasal spray with you to use just before takeoff and landing. Chewing gum and swallowing frequently can also help relieve pressure.

Remember, serious conditions can masquerade as the common cold and a mild infection can evolve into something more serious. If you have severe symptoms or are feeling sicker with each passing day, see a doctor.

he General Manager of the Golden Tulip Kumasi City, Mr Sam Obiri Aduama, led a team making donations to orphanages in and around the

Kumasi Metropolis as part of the hotel’s corporate social responsibility programe.

Among some of the items presented were television sets, bed sheets, toiletries, bags of rice and cooking oil, lunch packs and soft drinks. Beneficiaries ncluded the Cherubs Home, located at Apre near Santasi in Kumasi, the Kumasi Children’s Home, Save Our Lives Home and the Ashan Children’s Home.

The General Manager used the opportunity to express the Groups resolve to help better the lot of the orphans and encouraged other corporate bodies to come to the aid of the underprivileged in society, particularly as the festive seasons approaches.

Other homes visited included the SOS Children’s Village and the Remar Institute. The Directors of the homes congratulated the hotel for their thoughtful gesture and their continued support to the well-being of the home and called on other institutions to emulate the actions of the hotel and consider the needs of the children and the less privileged in the country.

Ingredients» 1 (3-rib) standing rib roast (7 to 8 pounds)» 1 tablespoon kosher salt» 1 1/2 teaspoons freshly ground black pepper» Mustard Horseradish Sauce, recipe follows

Mustard Horseradish Sauce» 1 1/2 cups good mayonnaise» 3 tablespoons Dijon mustard» 1 1/2 tablespoons whole-grain mustard» 1 tablespoon prepared horseradish» 1/3 cup sour cream» 1/4 teaspoon kosher salt

Directions • Two hours before roasting, remove the meat from the refrigerator and allow it to come to room temperature.

Preheat the oven to 500 degrees F (see note).

Place the oven rack on the second lowest position.

Place the roast in a pan large enough to hold it comfortably, bone-side down, and spread the top thickly with the salt and pepper. Roast the meat for 45 minutes. Without removing the meat from the oven, reduce the oven temperature to 325 degrees F and roast for another 30 minutes. Finally, increase the temperature to 450 degrees F and roast for another 15 to 30 minutes, until the internal temperature of the meat is 125 degrees F. (Be sure the thermometer is exactly in the center of the roast.) The total cooking time will be between 1 1/2 and 1 3/4 hours. Meanwhile, make the sauce.

Remove the roast from the oven and transfer it to a cutting board. Cover it tightly with aluminum foil and allow the meat to rest for 20 minutes. Carve and serve with the sauce.

Note: Be sure your oven is very clean before setting it at 500 degrees F.

Mustard Horseradish Sauce

Whisk together the mayonnaise, mustards, horseradish, sour cream, and salt in a small bowl.

Champagne CocktailsCombine 2 ounces each orange juice and raspberry liqueur (such as chambord) in a cocktail shaker. Fill with ice and shake well. Strain into 2 flutes and top with sparkling rose. Garnish with raspberries or strewberries.
