WHO WE ARE ?530 exceptions! Established 60 years ago when top hoteliers teamed up with talented chefs, Relais & Châteaux now sets the standard for excellence in hospitality and culinary arts. Relais & Châteaux is not a chain but an Association of 530 outstanding properties, with independent owners, Maîtres de Maison and chefs. These rare individuals open up whole new worlds in upscale hospitality. How do they manage this feat? By underscoring the need for unique, personal experiences which offer our guests, over 5 continents, the opportunity to enjoy our fine arts of living, and build their own treasure trove of living memories. This is our unique selling point and what makes us special: “All around the world, unique in the world”.

In 2014 Relais & Châteaux initiates with its Vision and its 20 Commitments a dedicated and worldwide movement for “A better world through cuisine and hospitality”. With this determination, the Association wishes to elevate the Fine Arts of Living to the rank of the 10th Art.

moments! 2014 has seen the celebration of more

than 200 events to highlight the unwavering

quest for excellence which has characterised

our Association for six decades now. A Route

du Bonheur put together for this occasion

underlines the DNA of Relais & Châteaux.

From the past we preserve the foundation on

which we built our history but we nonetheless

have a visionary spirit which guides us in a

constant search for novelties every day on our

way towards new horizons.

Looking ahead, we have developed new

orientations. The publications Taste of the World and Travel Journal are a perfect

illustration of this. These publications provide our printed media with a new format.

In addition, we have created an exceptional interactive showcase through our new iPad

Application which has already been largely acclaimed.

New projects, new ambitions. At Relais & Châteaux we are convinced that it is

possible for us to make the world a better place through cuisine and hospitality. We

have started a campaign together with others on a worldwide level to defend three

initiatives: preserve the cuisines of the world, share the passion for the beautiful and

the good, be players of a more humane world. We want to do this with humility but

with pugnacity.

60 YEARS OF HISTORY

Our history is delightful, telling of men and women who take over a charming hotel, an outstanding restaurant, and then join forces to share their enthusiasm with others. This history dates back to 1954. Sixty years ago, Marcel and Nelly Tilloy, a couple of music-hall artists who owned La Cardinale, a hotel and restaurant on the right bank of the Rhône, came up with the idea of advertising eight properties under the slogan ‘La Route du Bonheur’.

Eight totally different houses, all authentic and inhabited, each with its own personality, located away from towns on the road from Paris to Nice, they were all united by shared values: top-quality amenities, outstanding fine dining and their own particular ideas about the Art of Living. This union of kindred spirits merged together to create the most prestigious hotel Association in the world: Relais & Châteaux. Today, nearly 530 Members are to be found along 65 Routes du Bonheur in 64 countries, all sharing the same enthusiasm. “Hoteliers, restaurateurs must speak from the heart”, was Marcel Tilloy’s recommendation. This was 60 years ago and that belief is still alive today.

OUR VISION Leverage and preserve the diversity of the cuisines and the hospitalities of the world, fight against the excessive standardisation within the properties: these are the objectives of the initiative by Relais & Châteaux. At Relais & Châteaux we would like to stimulate and revive the Fine Arts of Living and their values through sharing, transmission and preservation of resources.

Brainstorming started more than a year ago by the Relais & Châteaux World Culinary Council, which includes sommeliers, chefs and innkeepers, has resulted in a movement which Relais & Châteaux initiates through 20 strong Commitments included in the Relais & Châteaux Vision. These Commitments are part of a fight that we want to engage in together with others on a worldwide level, and in this connection we want to elevate the Fine Arts of Living to the rank of the 10th Art.

With this declaration we want to start a militant movement in order to “Make the world a better place through cuisine and hospitality”. We will do it with humility but with pugnacity.

Offer a “cuisine” that is representative of local traditions and environments and reflects their global diversity.

Receive guests in a way that respects the individuality of each Relais & Châteaux property location, landscape, decor, and its unique way of good living and fine dining.

Welcome guests as friends, in an atmosphere where the host Relais & Châteaux property share its passion for “living well”.

Limit the environmental impact of Relais & Châteaux properties with regards to energy, water and waste by employing the Sustainable Restaurant Association (SRA) system of checks.

Associate the finest tastes with nutrition and health to show our guests how fine “cuisine” and well-being go hand in hand.

Develop a system for training young people in each region in the art of good taste, food preparation and service.

Be part of the regional culinary culture and share our knowledge to teach and enrich the Food Arts as part of the Intangible Heritage of Humanity and as the 10th Art Form.

Sign contracts with small local producers who supply our restaurants, offering them an appropriate price allowing them to grow their products without chemicals or GMO, avoid overproduction and the depletion of natural resources.

Set up a plan to train the young in the spirit of the “artisan journeymen” where they can learn the skills our professionals use daily throughout the world.

Throughout the world the Relais & Châteaux Restaurants are places which are the expression of culinary arts blending the cultures and terroirs of the world. THE CULINARY EVENTS

The Relais & Châteaux Chefs never miss a chance to share their expertise and love for gourmet cuisine.

For the 60th anniversary of the Association, the Relais & Châteaux Restaurants have been celebrating almost 200 exceptional events. They were able to highlight their attachment to the terroir, with the expression of a know-how and the feeling of belonging to the same family. On 12 May 2014, 60 chefs met in Vonnas (Ain, France) to celebrate the anniversary of the creation of the Association. On this occasion, a lunch for fellow chefs was organised at Georges Blanc in the presence of historical members and journalists from all over the world.

Several Gourmet Festivals were organised in 2014: in Switzerland and in Liechtenstein there were 11 events, 32 in Italy, 11 in Spain and Portugal, 6 in Japan, 30 in the United Kindom and 15 in Austria, Eastern Europe and Northern Europe. In California the first edition of the Gourmet Fest took place in Carmel by-the-Sea and welcomed 15 Relais & Châteaux chefs and more than 1,000 guests for four days around a top culinary and oenological programme.In October 2014 almost 30 exceptional dinners were organised in North America with American and foreign chefs.

Each year, chefs open their kitchen door on the occasion of the Fête de la Gastronomie to prepare in front of their guests a recipe inspired by their terroir, highlighting their sommelier through workshops and tastings as well as festive meals at the end of each days and at reasonable prices.

For several years the Biennale des Antiquaires has staged a pop-up restaurant with almost 10 Relais & Châteaux chefs in the Grand Palais in Paris.

In September 2014, the Arts and Elegance Concours in Chantilly was an opportunity for a dynamic encounter of art and elegance of the past and the future. Orchestrated like an elegant Sunday in the countryside and hosted in the beautiful Domaine de Chantilly, a gem of the French architectural heritage, French art de vivre was celebrated in all its forms; cars, couture, fine arts, equestrian arts and of course culinary arts with Relais & Châteaux and its chefs.

Leafing through this beautiful book means leafing through the world which presents itself to you, introducing continents, countries, people. The soul of a territory, its cultural richness, its terroir, its cuisine, its hopsitality represent the Taste of the World. The publication invites the reader, through many illustrations, to savour a region sometimes unknown or an unexpected scenery. It is a true invitation to travel: with the hot air balloon over the valley of Göreme in Cappadocia, enjoying the charm of seclusion in New Zealand, British Columbia, where the mountains touch the sky, the shimmering colours of a preserved Morocco, a seducing Provence which exudes the scents of lavender.

The Route du Bonheur, with BMW as the official partner, is part of the DNA of Relais & Châteaux. This is clear from our history. The culinary itinerary which brought together for the first time 8 charming properties along the road parallel to the famous Train Bleu has since 1954 laid the tracks for many other routes. 60 years later, the Association has 65 Route du Bonheur, on all five continents, shared by half of our members: Peru, from Lima to Lake Titicaca, taking in Machu Picchu on the way; Greece and the Cyclades by boat; Mont Blanc as seen by chef Emmanuel Renaut; Western Canada, from Lake Louise near Calgary to Vancouver; Japan from Kobe to Osaka...
