It always amazes me how quickly time flies by from one month to the next. April was no exception! Over the past 30 days the ECC Team at Derrick’s Creek kicked off the golfing season by opening up the driving range and 19th Hole and facilitated the Annual Superintendents Revenge tournament. This year we had over 70 players … well above last year’s numbers. Congratulations to Muhammad Riaz, Adam Tyree, and Jake Arwood for winning this year’s event. Here at 1600, business is definitely picking up with the relaxing of many of the COVID guidelines. We had a great turnout for our Easter weekend of events. We are also seeing many more members joining us for in-person meals in addition to an increase with usage of the squash courts, fitness area and locker facilities. I have been asked to remind members that masks are still required to be worn when inside either of our Clubhouses unless you are actively eat/drinking or when working out/playing squash. As we move into May, we will be opening up the first two tennis courts for member use starting Tuesday, May 4th. Even though they may look ready throughout the weekend, we respectfully ask all members to wait until Tuesday to start using them as we finish up a few details throughout the day on Monday. On Sunday, May 9th Chef Dennis will be presenting his first food buffet in over a year! Mother’s Day is certain to be a very busy day and reservations are required. Please call quickly as seating space is still limited. May 20th will kick off our Annual Men’s Invitational and we will finish out the month on Friday, May 28th, as the pool facility will open for the season. We are currently planning to open the pool without the requirement for reservations or limiting members to blocks of space. We are also planning on opening all three pools, including the diving well! Don’t forget, Monday May 31st we will be hosting a poolside party for members to enjoy and do ask for reservations for this event so we can plan for the proper amount of members expected. For those interested in Water Aerobics, the first class is scheduled for Tuesday, June 1st starting at 8:30 a.m. … come join Pam and have some fun while you work to stay healthy. Pork gets very little recognition for its versatility. The “other white meat” lends itself to a great variety of applications ranging from time treasured pork roasts to contemporary grilling. It macerates well in marinades and accompanies classical sauces as well as any other meat. The following is a favorite of mine. By using boneless pork loin, (which is often seen at your local grocer on sale), I can offer a delicious dinner that all ages will enjoy and can be done very economically.

3 cups fresh Bread Crumbs 2 cups Parmesan Cheese, freshly grated 2 tsp. Thyme leaves dry 4 ea. Eggs 1\2 cup Flour 5 LB Pork Loin, boneless, cut into 1-inch steaks 1\2 cup Butter 1\2 cup Olive Oil Salt and pepper to taste Preheat oven to 400 degrees. Mix the breadcrumbs, cheese, and thyme. Beat eggs in a bowl and reserve. Place flour in a pie tin and season with salt and pepper. Add the pork medallions to the flour, coat well, and shake off the excess. From the flour, transfer the pork to the eggs and then to the
cheese-bread crumb mix. Heat the butter and oil over
medium heat. Place the breaded pork in the oil and cook until
golden brown on both sides. Place on a non-stick tray and
bake for 8-10 minutes until the internal temperature reaches
150 degrees. Serve with you favorite vegetables and preferably
rice with a good squeeze of lemon drizzled over the pork at
service. Try it and enjoy!

We had a few cold spells in April , with temperatures falling well into the 20 s . The turf was greening up but was delayed by the cold snap which was 2 hard freezes. Frost and freeze also delay our entry onto the golf course with mowing equipment. Such as greens and tee mowers. A freeze can cause some grasses to turn off collar. Driving carts and equipment on the frost can damage the turf. Topdressing of greens took place on Monday April 26. you may have noticed some sand on the greens. Topdressing is sand put on the greens to help make the greens smoother and the ball roll better. Sand can also aid in reduction of thatch on greens if done on a regular basis at least once per month. BEING OVERWEIGHT MAKES YOU OVEREAT
Its a vicious cycle: you overeat and get heavy, then constantly feel hungry. Why? Because you’re already fat. “We gain weight because our fat cells are overstimulated, causing them to suck in and store too many calories,” says researcher David Ludwig M.D.,Ph.D. in a new study reported in the Journal of the American Medical Association. “ From this perspective, hunger is simply a response to having too few calories in the bloodstream, where they’re needed,” making you hungry and , probably, hungry-24-7. Solution “focus on eating natural foods that digest slowly, like fruits, veggies, beans, fish, nuts, and seeds,” says Ludwig,” and avoid processed carbs, refined grains, potatoes, and concentrated sugars. That way, insulin levels will drop, reprograming the body to store less fat and you’ll be less hungry and lose weight with less struggle."
