rowing up in the eighties and the nineties, I consumed a lot of television. My mother, a single parent, knew about my love of television and did her best to cure my habit. There were times that she had to leave me at home to go to work and even though she hid the extension cable, I found ways to move the television that was more than

twice my weight to the outlet.That was over twenty years ago and now there are other things other than a television to keep a child occupied. There are multiple personal gaming consoles, tablets, phones, and now watches. I am a parent and I cannot and will not allow my child to get caught up in the barrage of technology. I know, I watched a lot, but I also enjoyed reading and I believe that helped

The risk of alzheimer’s disease may increase with every morsel of filet mignon consumed. I am not done yet. Cardiovascular disease is highly possible if you consume red meat. That was a lot right, I know. But steak taste so good,

but it actually increases your chance of dying. I have some good news. If you would like to experience good health, you must eat more meat. You did not read a typo, I said, “You must eat more meat”. Before you decide to throw this magazine away, I would like to explain something that will amaze you. What exactly is meat? We could google it or we could go to dictionary.com and type in meat.

Modified Vegan Quiche recipe from pbs.org.

Ingredients:1. 1 pie crust, store bought or your

favorite2. 3 T olive oil3. ⅓ onion, thinly sliced4. 1 1/c. broccoli, roughly chopped5. 2 carrots thinly chopped6. 3 cloves garlic, minced7. 12 oz. firm or extra firm tofu8. ½ bag of imitation cheddar

cheese9. ½ c. nutritional yeast

10. 2 T Water11. 1 t. salt12. ½ t. cilantro13. 2 cups of fresh spinach

Instructions:

1. Preheat the oven to 400 degrees. In a large pan, saute the onion, broccoli, carrots, and garlic in the olive oil, covered, for about 8 minutes. Don't let the broccoli get too tender, because it will continue cooking in the oven. In a food processor, combine the tofu, imitation cheddar, nutritional yeast, water, salt, and cilantro. Blend well and pour the tofu mixture into the pan of vegetables. Remove from stove and stir in the fresh spinach.

2. Pour the filling into the pie crust and bake about 30 minutes. Remove from oven when the center is done. Allow it to set for five minutes or so to firm up.
