Caprese Salad with Grilled Flank Steak

Ingredients2 tomatoes, diced 1 (4 ounce) ball fresh mozzarella, cut into 1-inch cubes¼ cup coarsely chopped fresh basil1 clove garlic, minced, or more to taste1 tablespoon olive oil1 pound fl ank steak1 clove garlic, minced1 tablespoon olive oilsalt and ground black pepper to taste1 (6.5 ounce) bag butter lettuce mix2 tablespoons balsamic vinegar, or to tasteolive oil, or to tasteDirections

Mix tomatoes, mozzarella, basil, 1 clove minced garlic, and 1 tablespoon olive oil in a bowl; toss to coat. Cover bowl and refrigerate.Preheat an outdoor grill for medium-high heat and lightly oil the grate.Place steak in a large resealable bag; add 1 clove minced garlic, 1 tablespoon olive oil, salt, and pepper. Seal the bag and distribute the oil mixture over the steak.Cook the steak on the preheated grill to your desired degree of doneness, about 5 minutes per side for medium. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Let stand for 5 minutes before thinly slicing across the grain.Divide lettuce onto 4 serving plates; drizzle about 1 1/2 teaspoons balsamic vinegar and 1 1/2 teaspoons olive oil onto each lettuce portion. Top each salad with 1/4 the steak and 1/4 the tomato mixture.

It’s in the .”2’s”2 ounces Balsamic vinegar 2 ounces Extra virgin olive oil2 ounces water2 tablespoon Dijon mustard2 crushed garlic clovesOptional:Pinch of saltPinch of pepperPinch of Italian seasoning

Directions::In glass measuring cup pour in 2 oz balsamic vinegar. Then pour in 2 oz water (to 4 oz mark). Then pour in 2 oz Extra Virgin Olive Oil ( to 6 oz mark). Add 2 Tablespoons Dijon mustard (this helps the vinegar and oil to stay together) In a container with cover (I use glass salad dressing bottle) put in 2 crushed garlic cloves. Add liquid mix-ture and shake well. Add desired seasoning. You can use immediately, but I like to leave overnight, strain out garlic (it gets bitter over time) and then use.Great for salads, used over chicken or when making Mozzarella, Tomato, Basil salad as topping instead of plain Vinegar. You can use any Vinegar you like in place of Balsamic, for variety Ingredients

Directions: Heat a large skillet over low heat. Spread butter or margarine onto one side of two slices of bread. Place both pieces buttered side down in the skillet. Lay a slice of cheese on each one, and top with slices of tomato, onion and jalapeno. Butter one side of the remaining slices of bread, and place on top buttered side up. When the bottom of the sandwiches are toasted, fl ip and fry until brown on the other side.

Absolutely Ultimate Potato Soup From allrecipes.com

Ingredients:

1 pound bacon, chopped 2 stalks celery, diced1 onion, chopped3 cloves garlic, minced8 potatoes, peeled and cubed 4 cups chicken stock, or enough to cover potatoes3 tablespoons butter¼ cup all-purpose fl our1 cup heavy cream1 teaspoon dried tarragon3 teaspoons chopped fresh cilantrosalt and pepper to tasteDirections

In a Dutch oven, cook the bacon over medium heat until done. Remove bacon from pan, and set aside. Drain off all but 1/4 cup of the bacon grease.

Cook celery and onion in reserved bacon drippings until onion is translucent, about 5 minutes. Stir in garlic, and continue cooking for 1 to 2 minutes. Add cubed pota-toes, and toss to coat. Saute for 3 to 4 minutes. Return bacon to the pan, and add enough chicken stock to just cover the potatoes. Cover, and simmer until potatoes are tender.

In a separate pan, melt butter over medium heat. Whisk in fl our. Cook, stirring constantly, for 1 to 2 minutes. Whisk in the heavy cream, tarragon, and cilantro. Bring the cream mixture to a boil, and cook, stirring constantly, until thickened. Stir the cream mixture into the potato mixture. Puree about 1/2 the soup, and return to the pan. Adjust seasonings to taste.

Directions:In a stockpot, over medium heat, combine the toma-toes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the fl avors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.

In the now empty stockpot, melt the butter over me-dium heat. Stir in the fl our to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

Jewish Federation of Ocean County Gives More Local Nonprofit Grants

Jewish Federation of Ocean County (JFOC) will be distributing grants to local nonprofit organizations that were chosen by participants in their Trivia Night Fundraiser on Monday, November 30th. Similar to the Oy Corona Comedy Night held in July, contestants chose local nonprofit agencies on whose behalf they competed.

The top grant of $750 is going to Beth Am Shalom of Lakewood thanks to the trivia skills of Melanie and Frank Giudice. Joanne and Avrum Glassoff took second place and earned $500 for Congregation B’nai Israel in Toms River. Wendi Higgins won third place and designated the $250 winnings to go to Popcorn Park Zoo in Forked River.

The next community event being planned by JFOC is a Community of Caring celebration on December 17th. In addition to lighting candles virtually for the last night of Chanukah, they will be honoring Community of Caring heroes who have helped to keep a sense of community throughout the pandemic. More information about this event can be found at www.jewishoceancounty.org.

Our Arctic Visitor (The Snowy Owl)In recent years we’ve had amazing arctic visitors coming to our area from approximately December to March. Dressed nearly in all white with large yellow eyes, they are very impressive. They’re not very social and they can be quite hard to find, but if you locate one it is well worth the search.

Snowy Owls are residents of the arctic. Their main food source is lemmings, rodents about the size of squirrels. In years when the lemming population is low the owls will range south in search of other food. They are opportune hunters. When lemmings are scarce they will hunt other rodents, ducks, and other birds.

Like other raptors the female Snowy Owl is larger than the male. This makes them more capable of taking care of nesting and raising the young. The males are nearly

pure white. The females have brown markings on their wings and breast. Immature owls resemble the females.

It is quite difficult to find Snowy Owls in our area, but with research and pe r severance you may get lucky. As always the harder you work, the luckier you get. If you are fortunate enough to find one you should enjoy the moment. We never know when they will return.

When shooting indoors everyone’s fi rst thought is to use a fl ash. While this is often a good move, shooting indoors without a fl ash can produce some very interesting images.

Using the natural light will enhance many images. Someone in the glow of a candle is a good example. Using a fl ash in this case will overpower the golden glow of the candle. This is also true of shooting an event on stage. A fl ash will eliminate the stage lights and create harsh shadows

Many of these shots will have a slow shutter speed, so you may need some additional camera support. If you don’t have a tripod, try leaning against something, placing your elbows on a fi rm support, and using the self timer.
