SECTION F - HANDWRITING

Class 152 - under 8 years

A poem by Beatrix Potter

We have a little garden,

A garden of our own,

And every day we water there

The seeds that we have sown.

We love our little garden,

And tend it with such care,

You will not find a faded leaf

Or blighted blossom there.

Class 160 - 8 to 12 years

The Beginning of the Armadillos, by Rudyard Kipling

I’ve never sailed the Amazon

I’ve never reached Brazil,

But the Don and Magdalena,

They can go there when they will!

Yes, weekly from Southampton,

Great steamers, white and gold,

Go rolling down to Rio

(Roll down – roll down to Rio!),

And I’d like to roll to Rio

Some day before I’m old!

I’ve never seen a Jaguar,

Nor yet an Armadill –

O dilloing in his armour,

And I s’pose I never will

Unless I go to Rio

These wonders to behold-

Roll down – roll down to Rio-

Roll really down to Rio!

Oh, I’d love to roll to Rio

Some day before I’m old!

Page 14: Earls Colne Recreation Club · 12. Exhibits in Sections C (Art, Craft & Photography) and F (Children) must not have been exhibited in any previous FCHS annual show. 13. Exhibits in

Macarons (Class 49)

2 Large egg whites 60g Ground almond

35g Caster sugar Salt (tiny pinch)

115g Pure icing sugar Gel food colouring & flavouring (optional)

Place the egg whites and caster sugar in a bowl and mix with an electric mixer until stiff

enough to turn the bowl upside down without it falling out. Continue to whip for 1-2

more minutes. Optional, gel or powdered food colouring and flavouring can be added and

continue to mix for a further 20 seconds.

Sift the ground almonds, icing sugar and salt twice. Fold into the egg white mixture. The

mixture should be smooth and very viscous, not runny.

Pipe 5cm diameter circles onto trays lined with non- stick baking paper, firmly rap the

trays on the work surface (this prevents cracking). Pre-heat the oven to 140ºC (gas 1) and

then bake in the oven for 20-25 minutes until firm.

Remove from the oven .

When cool sandwich two of the macarons together with a filling of your choice.

Makes 12 paired macarons.

Stained Glass Window Biscuits (Class 174)

175g Butter, softened 225g Plain flour

100g Caster sugar About 20 boiled sweets (in different colours)

Measure the butter and sugar into a bowl and using a wooden spoon or spatula beat until

smooth. Add the flour and bring the dough together by hand.

Roll out on a lightly floured work surface using a rolling pin until the dough is about

0.5cm thick. Use a large star or similar cutter with an approximate diameter of 6cm.

to cut out the shapes. If you have a small version of your chosen cutter use this to cut the

middle out of each shape, otherwise do it by hand, leaving about 1cm of biscuit around the

edge. Arrange on two baking sheets lined with non-stick baking paper.

Separate the boiled sweets into their colours and put them in plastic bags (one colour in

each bag). Crush using a rolling pin until they’re fine grains, and sprinkle these grains in

the middle of each biscuit.

Pre-heat the oven to 160ºC (gas 3) and bake for about 12-15 minutes or until the biscuits

are a pale gold and the sweets inside them have melted. Remove from the oven and leave

to stand on the trays for about 5 minutes to cool slightly, then carefully transfer to a wire

rack and leave to cool completely and firm up.

NOTE: The biscuits will firm up once out of the oven and cooling so don’t be tempted to

overcook them if they seem a bit soft in the oven.

Makes 20 biscuits.
