ENATE VARIETALES DEL DOS MILThe last wine of the ENATE family is the result of the fusion of the most select varieties that are cultivated in our vineyards in the Somontano.

As it could not be in any other way, the work strategy has been directed towards the search for the essence of each grape. For this purpose, we have set out from the best estates that we own and we have worked them coaxingly in order to obtain harvests of low yield and impeccable maturing.

Already at the winery, the vinification has been extremely respectful with the grape, alcoholic fermentation of the varieties separately, malolactic in barrels of the very first quality, ageing on the lees for seven months and, after lees removal, the wine continues in the same new French casks during seventeen months. Of course, each grape variety contributes with its own peculiarity and there is a true blending effect among them:

The Cabernet Sauvignon, apart from an intense colour, brings its spicy mark and contributes enhancing the tannic structure of the wine.

The Merlot, more floral and delicate, acts as a counterpoint to soften the more tannic character of the cabernet.

The Tempranillo, an explosive cocktail from the vines with more character, gives the wine with less acidity and it rounds the whole with its bouquet of red fruits and its velvety palate.

Both the merlot and the tempranillo, with their noble tannins, though more tamed than the cabernet’s, endow the wine with an undeniable potential of improvement in the bottle, at the same time that they allow to enjoy it during its first years of life. Without any doubt, the fusion of these varieties confers a certain versatile character to the wine. Some people will find the floral aroma and tones of liqueury fruits that so much please the unconditionals of the Merlot – Merlot; others will perceive more easily the balsamic and spicy notes of the cabernet, that define the nose of our ENATE Reserva; others, then, will be more sensitive to the fruity load of the tempranillo, and almost everyone will be seduced by its great complexity and its notes of toffee and praline that wrap its aftertaste.

For the vinification of this new line of wines that we are introducing today, we will start every year from the varieties and states that have had the best behaviour. Given that we work with more than a ten of states, not always will the same states coincide for a determined vintage. That is to say, we will not doubt in modifying and adapting our working formula to achieve a wine that, like the ENATE Varietales del dos mil, combines the personality of the grape variety, the terroir, and a careful ageing in casks.

The label that dresses the ENATE Varietales del dos mil, is designed from an original painting by Salvador Victoria. The successive vintages will have in their labels paintings by the same author, until completing a collection of more than ten works by the painter from Teruel, with similar motivation and format.
