Over two thousand years ago, there was a minister named Qu Yuan that was an advisor to the Emperor. He loved China and its people. He advocated a policy of alliance with neighboring states to protect his people from the threat of surrounding governments. Unfortunately the emperor was influence by corrupt and jealous counselors, which led to the downfall of his state. Qu Yuan was bitter and frustrated with the Emperor. Legend says that he took his life by ritual drowning in a river. The towns people raced with their boats to their beloved min- ister but could not save him. They scattered rice from their dumplings to protect Qu Yuan's body from fishes. But, alas, Qu Yuan was lost to the River Dragon. The Festival is on May 5th according to the Lunar Calendar. I remember when I was young celebrating this day with special dishes such as rice dumplings wrapped in reed leaves and salted duck eggs. There are several different types of rice dumplings - sticky rice with red bean or with pork, egg, mush- rooms, peanuts and dates. My favorite rice dumpling was with pork, mushrooms and peanuts. Today I fullfilled a dream. When I was a child, I lived in the city and never had the opportunity to participate in a Dragon Boat Race. Today I race to honor our beloved Qu Yuan. Bob

INSTRUCTIONS1. POUR fudge topping into medium bowl. Add 1 cup of the whipped topping; stir with wire whisk until well blended. Add dry pudding mix; stir 2 min. or until
well blended. Gently stir in chopped cookies; set aside. 2. ARRANGE 4 of the ice cream sandwiches, side-by-side, on 24-inch-long piece of foil; top with half of the whipped topping mixture. Repeat layers. Top with
remaining 4 ice cream sandwiches. Frost top and sides of dessert with remaining whipped topping. Bring up foil sides. Double fold top and ends to loosely seal packet.
3. FREEZE at least 4 hours before serving. Store leftover dessert in freezer.
