H.a.c.c.p. (Hazard Analysis Critical Control Point)It is a self-control system which every operator in food production sector must execute in order to evaluate and estimate hazards and risks and establish the control measures to prevent hygiene and sanitary problems from occurring.

MAIN CHARACTERS

The H.A.C.C.P. system arises from the need to guarantee the healthiness in food preparation. The self-control system aims at evaluating the risks which can influence the food safety during every production phase, thereby activating preventive measures.

European Directive 43/93/EEC “food product hygiene”, implemented in Italy with Legislative Decree dated 26 May 1997 n. 155 and subsequently replaced by regulation 852/2004, has extended the obligation to pre-arrange a self-control program to all industrial, craft and commercial activity regarding food, and has also indicated the system based on the HACCP methodology (hazard analysis critical control point) to which the identification of the potential hazards, the evaluation of the seriousness and the probability of their occurrence, as well as the identification and application of the control procedures of the critical points, is entrusted.

The principles of the H.A.C.C.P. system The principles on which the H.A.C.C.P. plan (Hazard Analysis Critical Control Points) is based, are the following:

1. analysis of the potential microbiological risks for food;2. identification of the points where risks for foods may occur;3. decisions to be taken regarding the identified microbiological

critical points, meaning those points which can harm the safety of the products;

4. identification and application of the control procedures and surveillance of the critical points;

5. periodic re-examination, and in occasion of variation of every process and type of activity, of risk analysis, critical points and control and surveillance procedures.

PROPER CLEANING AND DISINFECTION

GROSS RESIDUES REMOVAL: remove food residues from shelves and work surfaces using scraping brushes, brooms or wet mop.

CLEANSING: remove dirt from the surfaces with a mechanical action using sponges or brooms with detergents or cleansers with the following features:

• detergent even with low concentration• that can dissolve dirt and emulsify fats• also effective in hard waters• containing sequestrants that can prevent the formation of

limescale (precipitation of calcium and magnesium salts).• non aggressive• easy to rinse, does not leave odours or residues

DISINFECTION: it is the last phase of the cleaning operation and aims at destroying germs, bacteria, fungi and other micro-organisms from equipment and work surfaces in contact with foods.Disinfect using water vapour or chemical products with the following features:

• broad spectrum of activity against as many micro-organisms as possible

• destroy the micro-organisms in a short time• be active at low temperatures and over a wide pH range• not leave odours or stains• have a low degree of tolerance to micro-organisms• not corrode metals or ruin surfaces

RECOMMENDATIONSEvery cleansing phase must be followed by thorough rinsing with drinking water to prevent any contact between chemical substances and food. It is recommended to leave a written trace of daily and weekly inspections, cleaning and disinfections, keeping them at hand for possible inspections by the Controlling authority.

WHAT IS pH ?

The pH measure scale ranges from 0 up to 14. Substances with a pH lower than 7 are considered acidic, those with a pH equal to 7 are considered neutral and those with a pH higher than 7 are considered basic. Concentrated acidic or basic substances are corrosive and dangerous.Products with a pH lower than 7 easily dissolve lime deposits, whereas products with a pH higher than 7 promote fat solubilisation.

pH measures the acidity or basicity of substances.

The pH indications in this catalogue are merely indicative. Refer to the product safety card to know the official value.

Formula: ready to use insecticide gel based on imidaclopride (2.15%) and attractant substances. Specific for cockroach control.What is it for: to carry out a targeted fight against all species of cockroaches.How is it used: dosing a small quantity of the product where the cockroaches hide and lay their ootheca.Where is it used: in bathrooms, kitchens, bakeries, canteens, bars, restaurants and pizzerias.Advantages: allows for selective and quick defestation.Package: 30mg cartridge in 4-piece boxes.

Is a particularly effective cockroach trap. Toxic substance-free. Is not dangerous to persons or animals. Made of cardboard with dimensions that allow it to be located in areas easily colonised by cockroaches.

Formula: water-based solvent-free micro emulsion based on Cypermethrin (10%), Tetramethrin (2%) and PBO (5%).What is it for: producing quick and residual insecticidal action against a wide range of pests.How is it used: diluted in water from 0.5 to 1.5% and applied using pumps or atomisers. Where is it used: predominantly outdoors, in tree-lined streets, hedges and lawns.Advantages: odourless and colourless formulation.Package: 250ml in 24-piece box.

Formula: anti-larval insecticide based on Pyriproxyfen, against all forms of mosquito larvae.What is it for: contrasts the normal development of mosquitoes in stagnant waters.Where is it used: it is suitable for the treatment of manholes, drains, basement window wells and general stagnations. How is it used: place a TIGREX tablet for manholes or drains. For other types of stagnations, use a tablet approx. every 40 litres of water. For continuous control of mosquito population, it is advised to apply a tablet every 3-4 weeks.Package: 80 12-tablet blisters.

Formula: ready to use insecticide smoke-generator based on Permethrin (14%).How do they work: develops thick white smoke inside rooms.What is it for: obtaining quick insecticidal action, even against hidden insects.How is it used: place the product on the floor and light the igniter.Advantages: product particularly indicated against moths, beetles and food pests.Package: 30g can in 30g can 6-piece box.

Formula: insecticide/acaricide in aerosol based on Bifenthrin (0.08 %), Tetramethrin (1.5%) and PBO (3%) in a 150ml self-emptying cylinder.What is it for: for disinfestation of rooms and other enclosed spaces.How is it used: placing the cylinder on the floor and acting on the outlet valve.Where is it used: in all enclosed spaces.Advantages: quick insecticide action, non invasive in difficult places to reach.Package: 150ml cylinder in 24-piece box.
