Restaurateur John Kilroy is a nationally recognised beef judge and is constantly showcasing products to the hospitality industry where discussions range from the breed of cattle, feed type and age of the carcass. His wide recognition throughout the beef industry means that we receive first class products on a consistent basis, year round. John sources the beef direct from producers and suppliers and ages it for five weeks, giving diners a chance to taste different breeds, brands and regions. That’s why it’s Brisbane’s signature steak restaurant!
At Jellyfish we aim to source and serve daily a school of 8 to 14 species of fish, to learn about and understand the textures and specific qualities of each species so we can then recommend the best way to cook and serve it. Our chefs create sauces, batters and crumbs as well as an extensive range of side dishes that perfectly compliment the meal.

Pony rides down a new track Pony Eagle Street Pier has announced the launch of a new dining experience, following the appointment of head chef Damien Draper which will see a new creative engagement between the diner, food offering and venue, aimed at putting the excitement back into dining out in Brisbane.
The new menu was a collaboration with Damian Draper and the entire Pony management team looking for new and exciting ways to engage their customers, making them feel a part of the Pony family.
“We want Pony to be the place everyone feels at home while having a fun night out with friends that you will remember.”
“Some of the ways we hope to achieve this is through our new head chef creating dishes which will come to life on the table and plate” explains the owners.
The new menu has added features such as the ‘Butcher’s Block’ which focuses authenticity, assurance and rigorous attention to obtain the finest quality ingredients at source and the ‘On The Table’ section, a new take on sides which encourages the diners to share and indulge in a full spread of dishes across the table.
Head chef Damien Draper, previously of Moo Moo and Bistro111, describes the new menu as rustic, home-style with a modern twist using quality produce, handpicked by Draper from local
suppliers, to create a dining experience you won’t forget.
Our kitchen team are careful to ensure every bite is bursting with flavour, incredibly tender and naturally juicy.
Having worked as a trained butcher at O’Connor’s Abattoir in Pakenham Melbourne, Draper has a fine appreciation for quality meat and passionately supports local suppliers for his produce.
“I’ve been working with local butcher Billy’s meats in Ashgrove to source quality produce from around Australia. I like to work with local boutique suppliers because they have the ability to access quality local produce and can provide premium products which enhance our dishes.”

POP IN
Popular in Europe for years, Australians now can’t get enough of the concept. What was once cool and underground is now embracing a newfound mainstream culture.
It is also quickly becoming part of many new Restaurant’s launch strategy or simply a strategy to further promote already exiting (and often well-known) restaurants and restaurateurs, providing a platform to promote their product in a different setting to a potentially different audience.
Not to be left behind in the fashionable dining stakes, Brisbane has been host to a variety of different pop-up Restaurants over the past few years.
To highlight two fantastic events held in Brisbane, Dining Out had a closer look at Dîner en Blanc and Alfred & Constance’s – Pork, Cork & Fork.
Dîner en Blanc was started in 1988 by Frenchman Francois Pasquier, when he wanted to organise a catch-up picnic under the stars with friends. With too many takers to dine in his own garden, he suggested that they convene at the Bois de Boulogne in Paris.
Brisbane was the first city in Australia to host the event, and 1000 people clad in white, toting their own tables, chairs, cutlery and picnic basket, convened on the Cultural Forecourt of South Bank in September 2012.

It can be for a few hours or even for a few months...usually taking advantage of unique and different spaces or venues.

Wood-cooked food, home-made sweets, beer, cider, jam jar tiki cocktails and music; sounds like the perfect street party! Well it was ‘Pork, Cork & Fork’, as part of the Teneriffe Festival in July last year. It proved to be such a success that they followed up with ‘Pork, Cork & Fork 2’ in October last year.
Both of these fabulous, delicious and colourful events were the precursor to the opening of the Alfred & Constance venue in Fortitude Valley. What a success! The timber character homes that comprise the venue, coupled with the ‘clean food’ ethos laid down by Patron Chef Jocelyn Hancock and Head Chef David Lindsey, echo beautifully their introduction via the pop-up restaurant.
Clearly established now on the casual lunch and dinner dining circuit for Brisbane, we also have to make mention to the Vanguard Beer Garden and the fabulous White Lightning Tiki Bar, definitely worth checking out.

You may have heard of Dry-Aged beef, but you may not know what the hype is all about. Several restaurants throughout Brisbane now offer Dry-Aged beef on their menu and customers are loving it! The general consensus is that the premium that you pay for your meal is well worth the delectable delight, and your taste buds will be thanking you!
The age old process of Dry-Aged beef is in fact the traditional way in which meat has been prepared throughout the ages.
Paul Cox from Dining Out sat down with Jo Lacey from the iconic Breakfast Creek Hotel Brisbane to discuss the process and popularity of this old tradition.
The Spanish Garden Steakhouse is the Brekky Creek’s signature full service steakhouse and where the tradition of premium quality steaks began in 1968. In line with offering only the best cuts, the Spanish Garden Steakhouse upheld this tradition in 2012 and expanded their range to include the installation of their very own specially designed Dry Aging Meat cabinet at the entrance to the restaurant.
Over 40 years ago most of our beef was dry aged, as this was the natural way to enhance the flavour and the
tenderness of beef. The Spanish Steakhouse proudly brought this back to forefront of the dining experience with the development of the aging cabinet, aging on premise for a minimum of 60 days.
Dry ageing begins with premium quality meat with a good fat cover in the sterile cabinet with carefully controlled air flow, humidity and temperature. During the ageing process, enzymes break down the muscle fibres, improving tenderness, intensifying flavour and resulting in a positively buttery texture and flavour. Patrons of the Spanish have enjoyed the robust flavour of the Dry aging so successfully that the Dry aged products now features as a permanent inclusion to both the Spanish and the Brekky Creek’s Beer Gardens’ menus. Cut and processed on premise, the Dry aged flavour is best described as rich, nutty and beefy.
Moo Moo’s Wine Bar and Grill in Brisbane is known for its Dry Aged Beef. Steven Adams from Moo Moo’s explained that beef connoisseurs can enjoy the in-house dry ageing process done in our display cabinets. A strong flavour and beefy taste is some of the best beef you can eat.
The Boatshed in the newly fully refurbished Regatta, also prides
itself on serving extraordinary meat, sourced from a range of first class beef producers as either dry aged or wet aged; as Shane Keighley, Executive chef of The Regatta Hotel explains, “This is a big difference for The Boatshed because as meat purists, we offer the more complex, time-consuming Dry Aged range, because it tastes so good!”
Following a very careful $10million restoration program following the devastating January 2011 Floods, this hotel, the site of 138 years of history, has just recently thrown open her historic doors and welcome Brisbane to celebrate on her cast iron-laced verandas and amid her famous brick-worked walls, and Brisbaneites couldn’t be happier! The Dining Out team, would like to offer an official welcome back to The Regatta.
So, back to the beef... the passion for this age old process of Dry-Aged beef is evident in these three Brisbane Restaurants, we have the feeling that it is contagious and that more and more restaurants will look at the benefits as more and more of their customers demand this exceptional quality beef.

How did you first learn to cook and where do you now find your food inspiration and learn new things? As our palates develop we often aspire to expand our culinary repertoire, as we employ collaborative efforts in the kitchen with friends and family. Not forgetting to mention whatever influence your favourite cooking celebrity has, or the endless designer-esque recipe books or magazines that you may indulge in.
Despite all the various resources out there, I believe that there is no better learning than doing! This is why I have craved for so long, to ‘go back to school’, well cooking school that is. The urban cooking school is becoming more commonplace and this ‘adventure’ seems to be within reach.
Brisbane is fast becoming a hub for some fabulous new cooking schools in and around the city. Some are stand-alone and others are in conjunction with restaurants. The School is set in a large inner city, light filled and funky warehouse space. It holds a variety of cooking classes, wine and beer workshops and food and wine events including corporate team building events. The kitchen and warehouse space can accommodate up to 150 people.
So, to head inner-city now, to where restaurant meets cooking school. However in this case it offers so much more, including a wine store and retail. Introducing Spring Food + Wine, a fabulous venue in Fleix Street in the heart of the Financial District in Brisbane.

STYLES, FLAVOURS AND CULTURES...Fortitude ValleyCommonly know as ‘The Valley’, it is a hub for culture, music and shopping. The Valley stretches in several different directions, including The Mall, China Town, Brunswick St, Ann St Emporium and James Street. They all offer their own ‘flavour’ of The Valley. Take your time and explore what it has to offer.
Kangaroo Pt WooloongabbaKangaroo Point, stands on the peninsular opposing the city of Brisbane. The Story Bridge pierces it’s way through this suburb and defines one of Brisbane’s legendary pubs, The Story Bridge Hotel. Just a few k’s down the road is home of the Gabba (Brisbane’s official Cricket and AFL ground), it’s namesake Wooloongabba offers a mix of pubs, great dining and cafes, mixed with a smattering of eclectic boutiques and stores.
Kelvin Grove / Spring HillSurrounding QUT (Queensland University of Technology), Kelvin Grove is a hub of creative and cultural activity. Victoria Park & Golf Complex is just near-by offering golf, restaurant and function facilities. Spring Hill completes this triangle of dining, entertainment and cultural offerings. With a variety of pubs and hotel dining, Spring Hill also offers some of Brisbane’s first history with it being one of the oldest residential neighbourhoods.
Milton / Park RoadMilton is home to some of Queensland’s most iconic, with Suncorp Stadium and the Fourex Brewery (XXXX) within it’s boundaries. The Park Road strip offers an European flavour, with venues such as La Dolce Vita, a Brisbane institution. Whilst Coronation Drive (aka Coro Drive) divvies up some quintessentially Queensland architecture, with The Regatta Hotel a prime example.
New Farm/TeneriffeThis peninsular offers a fantastic diversity of bars, cafes, restaurants and of course the beautiful New Farm Park & Powerhouse dining and entertainment precinct. New Farm stretches much of the length of Brunswick St down to the park on the water, Teneriffe extends along the waterfront.
Paddington / RosaliePaddo, as the locals know it, is edgy without being ostentatious, offering a mix of trendy boutiques, bars and dining. Rosalie ‘Village’ is an attractive hidden pocket of Brisbane, and the locals would love to keep this secret, however... the word is out!
Soutbank / West EndSouthbank speaks for itself with a wide variety of boutiques, dining and bars, mixed with family-friendly outdoor spaces. With Boundary Street as it’s spine, West End offers a diverse ethnic mix, and this throws up some delectable gems when it comes to cuisine. But don’t forget the varied vintage shops and eclectic mix of characters.
Toowong / St LuciaThese two suburbs are a little further from the inner-city heart of Brisbane, but still worth the look in for dining, as there are gems popping up in these suburbs all the time. Perhaps driven by it’s proximity to UQ (University of Queensland), there is a real diversity and quality of cuisine.
Mt. Coot-thaJust 7km west of the city you’ll discover one of Brisbane’s most loved attractions...The panoramic views over the city and beyond from the Brisbane Lookout. While there you can enjoy elegant dining in the award winning Summit Restaurant & Bar or take a more relaxed approach at the adjacent Kuta Café & Gift Shop.
The CityBrisbane City has a broad cross-section of eating precincts, styles and flavours. With numerous parks and outdoor areas, its Al-fresco lifestyle is a direct influence on many of these restaurants, however you will find that there are precincts within the City precinct. Eagle Street Pier and Riverside are a given, laneways are popping up with the funkiest of venues, not to mention some hidden gems throughout the city limits. Eat, drink and enjoy the diversity!
Ascot / HamiltonLined with Poinciana trees, Ascot and Hamilton offers an old-world elegance, in true Queenslander style. Stretching along Oxford Street there are a variety of different bars, cafes, restaurants and boutiques, but don’t forget Riding and Hawthorne Roads, with some new additions, this entire precinct is the place to be, any day of the week!
Caxton St / The BarracksOnly a stones throw from Suncorp Stadium, these close-knit precincts offer a diversity in nightlife, bars, cafe, dining and lifestyle offerings. Caxton St has been synonymous for years with great food and great nightlife! In one of Brisbane’s oldest historically settled areas, Caxton Street is a vibrant foodie and lifestyle haven.

Every second restaurant is sure to have an amazing signature seafood dish on their menu, such as Il Centro’s Sand crab Lasagne.
It makes sense, being seafood fanatics and all, that Queensland’s’ East Coast is the home of the largest fleet of fishing boats in Australia. One of the most rewarding things about being a local, is the range of seafood that we have access to.
It makes some our Southern counterparts somewhat green with envy. With access to the fisherman’s freshest catch at your local, we can see the fish coming in off the trawlers and straight to the restaurant.
Dining Out sat down with Executive Chef, Sunil Savur, of Gambaro’s, a Seafood institution in Brisbane since the early 70’s. Savur explains that Gambaro’s stocks between 5-6 varieties of fresh fish daily, and ensures they come from the local trawlers between Brisbane and the Sunshine Coast. The Gambaro Family places great importance on sourcing the freshest produce in Brisbane and local areas, and uses local produce as much as possible. An example is a popular dish from the a la carte menu - the famous Gambaro Seafood Platter, including Ocean King Prawns from Mooloolaba, Bugs from Moreton Bay, Oysters from Tasmanian or Coffin Bay, Sand Crab from Brisbane River mouth, Mud Crab from Brisbane River Mouth or Stanage Bay and Lobster from Tasmania. Salivating yet?
So whether it is following what is so entrenched in the essence of what it is to be a Queenslander, throw a shrimp on the Barbie or indulge in a fine seafood dining experience in one of the many excellent restaurants throughout Brisbane, I am sure that this has whet your appetite.
