"Sarmalute" with smoked bacon
First you need to cook the onion and the oil, add the carrot and cook it
on, then add rice, minced meat, smoked bacon, tomato juice and
verdure. Add salt and pepper to your taste. Wrap the minced meat
rolls in cabbage and boil in white wine, with tomato juice.
Ingredients:
- beef meat
- pork meat
- smoked bacon
- frozen edible boletus
(traditional mushrooms)
- carrot
- rice
- white onion, tomato juice
- verdures
- oil, salt, pepper
- cabbage
- grape leaves
- savory, tarragon
Ingredients:
- 100 gr. flour;
- 100 gr. butter;
- 1/2 teaspoon salt;
- pepper;
- 500 ml milk;
- 5 eggs.
- 400 gr. mushrooms
Preparation:
In a pot of about 3 liters melt the butter medium-high
heat, mix it with flour for just a minute, so as to get it
warm a bit, being careful not to get it brown. Add hot
milk, for 2-3 times, mixing each time with a spoon
and then add the rest of the milk. Make the sauce
perfectly homogenous. Remove the pot from heating
and when the sauce is almost cold, add the yolks,
salt, pepper, mixing it continuously. Mix the strong
spume albumen with the sauce, easily, down and up
using the pear shaped egg whisk.
Put the mixture into a large tray, oiled with
margarine and add flour (flatten it in the tray using a
plastic paddle).
Cook it into the high-heated oven for 30 de minute.
After 10 minutes, reduce the flame to medium-heat,
but do not open the oven for 20 minutes.
When it is done take the tray out of the oven, use a
knife on the edge of the tray in order for the mixture
to be pulled out easily and put it on a dry napkin.
Add on the mixture the mushroom filling and roll it
easily using the napkin, being careful not to flatten.
