problems between nations, amongst businesses, even in
families, between husbands and wives, tea has been the
soothing balm that helped their solution. The simple act of pouring a cup of tea is, in itself, an ice-breaker,
providing pleasurable anticipation of the goodness
that is to follow. I have dedicated my life towards
providing that cup: not only to solve problems but to
add sunshine, to our day, with every sip of Dilmah.

The Story Behind Your Cup of TeaThere is an amazing story behind your cup of Dilmah Tea. It is a tale that unfolds each day on Dilmah Tea gardens around Sri Lanka. It begins with the blessing of nature upon Ceylon Tea – the natural alchemy of climate and soils that produces the world’s finest tea. It develops from there, weaving through the lives of the tea pickers and their families, through the village communities around our island, through the forests and waters around Sri Lanka, and reaching its climax in your cup of tea.
Dilmah was born of a simple tea grower’s vision. Merrill J. Fernando’s desire to share the pleasure in tea with the world, and to do so ethically by benefiting workers in the exploited tea industry, was the genesis of Dilmah Tea. Nearly four decades of struggle that Merrill invested in making his dream a reality, were rewarded with an unexpectedly powerful welcome from tea drinkers around the world.
Dilmah has grown from the impossible dream of an ordinary Sri Lankan to a brand that is enjoyed in over 100 countries around the world. Dilmah is recognized as one of the top 10 tea brands in the world. These are not the definitions of success that Merrill J. Fernando and his family seek for Dilmah though.
Merrill fulfilled his pledge to making his Dilmah a genuinely ethical business with the establishment of his charitable foundation – the MJF Foundation. That commitment to ethics was set at the heart of Merrill’s business in the 1960s, long before Corporate Social Responsibility became the buzzword that it is today. Within that commitment lies a very powerful philosophy – that of making business a matter of human service.
In seeing success as something beyond its conventional, commercial definition, Merrill demonstrated a powerful truth. He showed how relevant the often discarded traditional, family values are in present context. By placing integrity – as much in relation to his customers, in the quality of Dilmah Tea as to the workers and environment that help make Dilmah special - at the heart of his business, he offered a potent solution to many of the problems our world faces today.
Spa Tea Mixology
Tea Mixology is the art of respectfully combining nature’s most indulgent herbal beverage, with other ingredients to produce tea inspired cocktails, mocktails and shooters. Mixing different ingredients to produce harmony on the palate is an art in itself.
In this instance the harmony lends itself to an exquisite experience where a tea mocktail can complement or create a mood. For this reason a spa experience is even more enhanced when matched with a tea based beverage as the natural goodness of the tea and the soothing calm it produces only further heightens the sensorial experience.
As a family with a commitment to tea that is defined by Dilmah Founder Merrill J. Fernando’s lifelong dedication to the herb, we present a selection of tea inspired beverages which interpret this traditional herb in a unique form. Spa Tea Mixology features tea based non-alcoholic beverages created to offer a complete spa experience. Tea and the heritage and terroir that real tea shares with one who appreciates tea, are the essence of indulgence in this ancient herbal beverage. Whilst respecting that heritage and terroir, the combination of tea with other drinks and ingredients to produce a pleasurable result is the objective of this book.

INGREDIENTS
• 125ml chilled Dilmah Springtime Fragrant Oolong (strong brew, 4.5 minutes)
• 25ml cinnamon infused honey• Zest of orange
METHOD
• Dissolve the honey in the freshly brewed tea, and chill it
• Fill the glass with ice cubes and pour the tea over the ice in the glass
• Garnish with a cinnamon stick and orange zest
Springtime Fragrant OolongA deliciously different tea, with a beautiful floral note that is reminiscent of orchids and a unique velvety tex-ture, this tea is known as Tieguanyin. Whilst an oolong tea, it is different to the common oolong. An aristocratic tea with distinctive aroma, taste and personality.

INGREDIENTS
• 125ml chilled Dilmah Green Tea with Lemongrass & Lemon(strong brew, 2.5 minutes)
• 25ml lavender honey• Slices of lemon• Slices of grapefruit
METHOD
• Dissolve the honey in the fresh brewed tea and chill the tea
• Fill the glass with ice cubes and add the slices of grapefruit
• Pour the chilled tea gently over the ice cubes
• Garnish with a stick of lemongrass and thyme
Sereni-tea
Green Tea with Lemongrass and LemonA spritely and aromatic green tea deliciously scented with Lemon. The mellow green tea partners perfectly with a zesty lemon fragrance to produce a graceful tea with an energetic lemon finish.

Green Tea Moroccan MintAn enlivening and wonderfully refreshing green tea combining natural mint leaves with green tea in a traditional and wholly natural fusion of flavours. The marriage produces a sparkling tea that adds a minty fragrance and taste to a clean, and bright green tea.

• 125ml chilled Dilmah Sencha Green Tea (strong brew, 2.5 minutes)
• 25ml honey• Slice of fresh ginger• Slices of fresh cucumber
METHOD
• Dissolve the honey in the fresh brewed tea, add a slice of ginger and chill the tea
• Fill the glass with ice cubes and slices of cucumber
• Pour the chilled Dilmah Sencha Green Tea gently over the ice cubes
• Garnish with a slice of ginger and a slice of cucumber

Sencha Green TeaA gentle tea with a refreshing, and pleasingly mild character. A grassy note and hint of sweetness in the finish are typical of green tea steamed in the Sencha style. Elegant and subtle in taste, perfect for enjoyment all day.

INGREDIENTS
• 125ml chilled Dilmah Green Tea with Lemongrass & Lemon
• Slices of cucumber• 2 barspoons of cardamom sugar (muddle
white sugar and cardamom and let it rest for 5 hours)
METHOD
• Dissolve the cardamom sugar in the fresh brewed tea and chill it
• Fill the glass with ice cubes and slices of cucumber and lime
• Gently pour the tea over the ice cubes in the glass
• Garnish with slices of lime, a slice of cucumber and a sprig of mint

• 10mlfreshlimejuice• 2 barspoons of red peppered sugar (muddle a
few thin slices of red pepper, ginger and white sugar and let it rest for 5 hours)
• Slices of ginger• Slices of red pepper• Stick of lemongrass
METHOD
• Dissolve two barspoons of red peppered sugar in the fresh brewed tea and chill it
• Fill the glass with ice cubes, slices of ginger, slices of pepper and gently pour the tea in the glass
• Garnish with a stick of lemongrass and a slice of ginger

• 300mlwhitegrapejuice• 100mlelderflowersyrup• 100mlcitrushoney• Selection of slices of grapefruit, lemon,
lime, orange, tangerine and cucumber• 2 Cinnamon sticks• 2 sticks of lemongrass
METHOD
• Dissolve the honey in the fresh brewed tea and chill until cold.
• Add all ingredients to the punch bowl and leave it in the fridge for at least 4 hours
• Take the punchbowl out of the fridge 30minutesbeforeserving
• Serve over ice in large wine glasses

• Dissolve the honey in the fresh brewed tea, add some coriander seeds and chill it
• Fill the glass with ice cubes and gently pour the orangejuiceovertheicecubesintheglass
• Pour the tea over the ice cubes in the glass• Garnish with a slice of orange, lemon and a sprig

• Fill the bottom glass with the fruit selection and some crushed ice

• Add100mlchilledNobleEarlGreyand the marmalade to an ice filled cocktail shaker and shake vigorously for 15 seconds.
• Strain into the chilled martini top• No garnish, serve with a fork
