FRESH: We prefer fresh because it tastes so much better. Harold McGee, in On Food & Cooking, summarized our beliefs well: “Freezing is an extreme treatment that inevitably damages the tissue. It results in ‘drip’... the significance of the fluid loss is that the cooked meat will come out drier and tougher than it should.”
NATURAL: In our kitchen we only use natural products, nothing is cooked with pre-servatives or anything we can’t pronounce. Furthermore, all of our game, poultry, and meats have no added hormones, antibiotics or growth stimulants.
QUALITY: To ensure consistent size and texture, we work with farmers who process daily, in order to guarantee a quality eating experience. For this reason, we do not pur-chase from live markets or auctions, as the quality from those sources is far too variable.

D’Artagnan’s Torchon is made from foie gras, a drop of Armagnac and little else. Since traditionally this method of preparing foie gras was to wrap it in a towel and simmer it in duck bouillon, it was given the name “Torchon” which means “dish towel” in French. Today, more commonly, cheesecloth is used to form the raw foie gras into a cylindrical shape that gets gently poached. This cooking method gives an exceptionally smooth and silky texture to the foie gras. As always with D’Artagnan, no nitrite or any other preservatives are added.

We use the finest heritage pork available from hogs raised humanely with full access to pasture and never given antibiotics or hormones. For our duck bacon we smoke duck breast the old fashioned way, then slice it thinly to create a unique, deeply-flavored bacon.
