CHRISTMAS BREAD PUDDINGwith Caramel Sauce

Yield: 12 servingsIngredient list:

85 g melted unsalted butter 680 g brioches or egg bread (see note*) 170 g unsalted butter 15 ml granulated sugar 8 ml eggs, at room temperature 300 ml warm milk 4 0 ml brandy OR rum (facultative) 15 ml chopped orange zest 5 ml pure vanilla extract0.75 g ground cinnamon 170 g golden or dark raisins 480 ml heavy cream 250 g Streusel Topping (see recipe)

*We prefer using either brioche or challah, formed into loaves. Also day-old croissant can be used.

Method:

1. Use some of the melted butter to butter a 27.5 x 22.5 x 10 cm baking dish. Set aside.

2. Trim the crust from the bread and cut the bread into 1 cm thick slices. Place on a sheet pan. Brush the slices with the remainder of the melted butter. Toast in a 400º F oven for

approximately 10 minutes or until golden brown.

3. Beat the softened butter and sugar together. Beat in the eggs. Add the warm milk, brandy, vanilla and cinnamon.

4. Place a single level layer of bread in the buttered baking pan. The sides of the bread should touch so the pan is completely covered. Sprinkle the raisins evenly on top of the bread. Pour half of the custard slowly and evenly over the bread. Cover with a second bread layer, and press down with your hands to make the top level. Pour the remaining custard evenly over the second layer; press down again. Pour 240 ml of the cream over the top. Cover with baking paper and place another pan, just slightly smaller, over the paper, then weight down the top with cans. Let sit at room temperature from 2 hours, or preferably, refrigerate overnight.

5. Remove the weights, pan and baking paper. Pour the remaining 240 ml of cream evenly over the pudding. Sprinkle the Streusel over the top.

6. Bake covered at 350º F for 30 minutes. Uncover and bake approximately 30 minutes longer or unit the pudding is set and the top is golden brown.

Ingredient list:

50 g softened unsalted butter 100 g dark brown sugar 50 g all-purpose flour 50 g oatmeal flake Method:

1. In a glass or stainless steel bowl, mix all the above ingredients with a wooden spoon until the butter is well mixed. Set aside at room temperature.

Caramel SauCe

Yield: 720 ml

Ingredient list:

455 g granulated sugar 80 ml water 2.5 ml lemon juice 30 ml glucose or light corn syrup 360 ml heavy cream 30 ml sherry 55 g unsalted butter

Method:

This is a rich caramel sauce that is intended to be served hot. It will be quite thick when it has cooled, even at room temperature. It is also perfect for serving with ice cream or apple or pear tarts.

1. Place the sugar, water and lemon juice in a small saucepan. Bring to a boil. Brush down the sides of the pan with a clean brush dipped in water. Add the glucose or corn syrup. Cook over medium heat until the syrup reaches a golden amber colour.

2. Remove the pan from the heat and add the heavy cream carefully. Stand back as you pour in the cream as the mixture may spatter. Stir to mix in the cream. If the sauce is not smooth, return the pan to the heat and cook, stirring constantly, to melt any lumps.

3. Add the butter (with the pan off the heat). Keep stirring until the butter has melted and the sauce is smooth.

Lighting a Christmas tree may seem like child’s play, but time and again people struggle with the task. Untangling wires and wrapping them around boughs can be nerve wracking, but lighting a tree doesn’t have

to be a chore when you follow some tips from the professionals.

First, keep in mind that wrapping lights around the tree horizontally is more work and often doesn’t produce a multi-dimensional effect. Rather, string the lights from the trunk up to the top, working vertically.

This is actually how the tree decorators at Rockefeller Center in New York City do the famous tree year after year.

This method helps eliminate tangled wires and empty spots. Remember to plug in the strands of lights before you begin to check for burnt-out bulbs and to adjust the spacing of lights to prevent dark spots.

Think about varying light bulb sizes to add more dimension. String an inner layer of small LED white lights to produce an inner glow on the tree before adding larger, colored lights on top to increase visual appeal. Just be sure to match the same wattage of the lights so that you do not have power surges and can prolong the life of the bulbs.

AwAy in the MAnger the CAnDy CAneIt was not long after Europeans began using Christmas trees that special decorations were used to adorn them. Food items, such as candies and cookies, were used predominately and straight white candy sticks were one of the confections used as ornamentation. Legend has it that during the 17th century, craftsmen created the white sticks of candy in the shape of shephreds’ crooks at the suggestion of the choirmaster at the Cologne Cathedral in Germany.The candy treats were given to children to keep them quiet during ceremonies at the living creche, or Nativity scene, and the custom of passing out the candy crooks at such ceremonies soon spread throughout Europe.According to the National Confectioner’s Association, in 1847 German immigrant August Imgard used the candy cane to decorate a Christmas tree in Wooster, Ohio. More than 50 years later, Bob McCormack of Albany, Georgia supposedly made candy canes as treats for family, friends and local shopkeepers. McCormack’s brother-in-law, Catholic priest Gregory Keller, invented a machine in the 1950s that automated the production of candy canes, thus eliminating the usual laborious process of creating the treats and the popularity of the candy cane grew.More recent explanations of the candy cane’s symbolism hold that the color white represents Christ’s purity, the red the blood he shed, and the presence of three red stripes the Holy Trinity. While factual evidence for these notions does not exist, they have become increasingly common and at times are even represented as fact. Regardless, the candy cane remains a favorite holiday treat and decoration.

O CHRISTMAS TREE CHRISTMAS CARDS

A form of Christmas card began in England first when young boys practiced their writing skills by creating Christmas greetings for their parents, but it is Sir Henry Cole who is credited with creating the first real Christmas card. The first director of London’s Victoria and Albert Museum, Sir Henry found himself too busy in the Christmas season of 1843 to compose individual Christmas greetings for his friends.

He commissioned artist John Calcott Horsley for the illustration. The card featured three panels, with the centre panel depicting a family enjoying Christmas festivities and the card was inscribed with the message “A Merry Christmas and a Happy New Year to You.”

In Northern Europe Christmas occurred during the middle of winter, when ghosts and demons could be heard howling in the winter winds. Boughs of holly, believed to have magical powers since they remained green through the harsh winter, were often placed over the doors of homes to drive evil away. Greenery was also brought indoors to freshen the air and brighten the mood during the long, dreary winter.

Legend also has it that holly sprang from the footsteps of Christ as he walked the earth. The pointed leaves were said to represent the crown of thorns Christ wore while on the cross and the red berries symbolized the blood he shed.

Mistletoe was used by Druid priests 200 years before the birth of Christ in their winter celebrations. They revered the plant since it had no roots yet remained green during the cold months of winter.

The ancient Celtics believed mistletoe to have magical healing powers and used it as an antidote for poison, infertility, and to ward of evil spirits. The plant was also seen as a symbol of peace, and it is said that among Romans, enemies who met under mistletoe would lay down their weapons and embrace.

Scandanavians associated the plant with Frigga, their goddess of love, and it may be from this that we derive the custom of kissing under the mistletoe. Those who kissed under the mistletoe had the promise of happiness and good luck in the following year.

Yield: 12 servingst

Ingredient list:

1/2 cup shortening 1 cup white sugar 1 1/2 cups all-purpose flour 1 tsp. baking soda 3/4 tsp. salt 1 tsp. ground cinnamon 1 tsp. ground nutmeg 1/2 tsp. ground cloves 1 cup grated carrots 1 cup raisins 1 cup chopped walnuts 3/4 cup white sugar 1 1/2 tsp. cornstarch 1 pinch salt 1 1/4 cups hot water 3 1/2 tsp. butter 3 1/2 tsp. lemon juice 1 1/2 tsp. vanilla extract

Directions:

1. In a large bowl, cream together the shortening and 1 cup of sugar until light and fluffy. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the creamed mixture until well blended. The mixture will be dry. Stir in the carrots, raisins and chopped walnuts. Pour into a well-greased pudding mould or coffee can. Cover the top with aluminum foil.

2. Place the pudding mould into a large kettle or Dutch oven filled with 2 inches of water. Cover the pan, and bring to a simmer. Allow the pudding to steam for 4 to 4 1/2 hours over low heat. Remove from the mould. Serve with warm lemon sauce.

3. To make the lemon sauce, mix together 3/4 cup of sugar, cornstarch and salt in a saucepan. Stir in hot water, butter, lemon juice and vanilla. Cook over medium heat until thickened. Serve warm over the pudding.

Makes about 680g (1.5 pounds)

Ingredients• 500 ml (2 cups) sugar• 250 ml (1 cup) refrigerated eggnog• 2 Tbsp butter• 2 Tbsp light corn syrup• 50 g (1/4 cup) chopped pecans, toasted• 50 g (1/4 cup) slivered almonds, toasted and chopped• 65 g (1/2 cup) chopped red candied cherries• 1 tsp vanilla extract

Preparation1. Line an 8’’x4’’ loaf pan with aluminum foil; butter foil and set aside.2. Combine first 4 ingredients in a 4-quart heavy saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Wash down crystals from sides of pan using a pastry brush dipped in hot water. Insert a candy thermometer into eggnog mixture. 3. Cook, stirring occasionally, until thermometer registers 114˚C (238˚F). Remove pan from heat and cool sugar mixture, undisturbed, until temperature drops to 88˚C (190˚F), about 15 to 18 minutes.4. Stir in pecans and remaining 3 ingredients; beat with a wooden spoon until fudge thickens and just begins to lose its gloss (5 to 8 minutes).5. Pour candy into prepared pan. Cool completely; cut into squares.
