Surimi has been produced for

centuries to serve as raw

material for traditional

Japanese fish products such

as Kamabuco and Chicowa. In

Western countries, it is also

used as the base for crab legs

or fish sticks. Surimi is

processed from deboned and

washed white flesh fish mince.

After heading, gutting, filleting,

and deboning, the fish mince is

subject to a 2 or 3 stage wash

to remove impurities like blood

and fat. The wash water is

usually strained off through

large rotary screens. The

washed mince is pumped to

refiners where impurities like

bones and black tissue are

removed. In the conventional

process, dehydration of the

fish mince takes place in screw

presses before it is mixed with

cryoprotectants and then deep

frozen. High losses of fish fibres

in the washing stages and in the

screw presses, the huge demand

of wash water, large installation

footprint, and the very sensitive

reaction of the raw material to

bacterial infection are more

than enough reasons to look

for new technologies in this

industry.

FLOTTWEG DECANTERS are

used for either recovery of fish

fibres from wash water and/or

for replacement of the screw

presses, therefore, significantly

increasing the overall yield of

the surimi plant.
