Summary
Total cheese production, excluding cottage cheeses, was 8.60 billion pounds, 0.6 percent above 2002production. Wisconsin was the leading State with 26.5 percent of the production.
American type cheese production was 3.67 billion pounds, 0.6 percent below 2002 and accounted for42.7 percent of total cheese in 2003.
Italian varieties, with 3.52 billion pounds were 1.5 percent above 2002 production. Mozzarellaaccounted for 79.7 percent of the Italian production followed by Provolone with 8.0 percent and Ricottawith 6.6 percent. Wisconsin was the leading State in Italian cheese production with 29.3 percent of theproduction.
Butter production in the United States during 2003 totaled 1.24 billion pounds, 8.3 percent below 2002. California accounted for 29.3 percent of the production, followed by Wisconsin with 24.9 percent.
Frozen dessert: (2003 U.S. production, comparisons with 2002)Ice cream, Regular (total) --- 1.02 billion gallons, up 1.0 percent. Ice cream, Lowfat (total) --- 353 million gallons, up 4.3 percent. Ice cream, Nonfat (total) --- 20.9 million gallons, down 0.6 percent. Sherbet (total) --- 56.2 million gallons, down 1.4 percent. Frozen Yogurt (total) --- 68.0 million gallons, down 3.9 percent.
Nonfat dry milk for human food: (2003 U.S. production, compared with 2002) --- 1.59 billion pounds,down slightly.
Dry whey products: (2003 U.S. production, comparisons with 2002)Dry whey, human --- 1.01 billion pounds, down 3.4 percent. Dry whey, animal --- 81.1 million pounds, up 9.0 percent. Dry whey, total --- 1.09 billion pounds, down 2.6 percent.

State totals are not published when fewer than 3 firms have reported or one firm comprises more than 60percent of the State total. If we are not able to publish a region for confidentiality reasons, it will becombined with other regions when possible. For example, if North Atlantic can not be published, then itwill be combined with South Atlantic to publish Atlantic. The West North Central and East NorthCentral will be combined, if necessary, to form North Central. Special Note
In order to better serve the dairy industry, new tables calculating the butterfat and solids nonfat supplyand utilization have been created. These new tables were developed cooperatively among USDAagencies with additional input from dairy trade associations.
The butterfat, solids nonfat estimates published in these tables are a result of calculations applied to theproduct pounds estimates. The butterfat and solids nonfat equivalence table will replace the U.S. Supplyand Utilization of Milk table (page 67) beginning with the Dairy Product 2004 Summary report to bepublished in April 2005. The format change to butterfat and solids nonfat will result in the eliminationof State level whole milk and skim milk product equivalence tables in the Summary publication (pages70-75). Further product details are provided in the footnotes at the end of table.

Procedures and Reliability: Estimates included in this report are based on data provided eachmonth by manufacturers of these products. In 32 States, the State Departments of Agricultureassist in collection of data, which eliminates duplicate reporting and reduces respondent burden. Data are collected by mail, personal and telephone interviews following the close of eachmonth. There were 1,126 manufacturers that made one or more products in 2003. Each month,reports are generally received from all dairy plants in States with small numbers of plants. InStates with large numbers of plants, survey procedures are designed to obtain monthly reportsfrom all large plants and from a sample of small plants. Monthly estimates are based uponreturns from about 70 percent of the plants which account for 70 to 90 percent of the totalproduction of major dairy products.
Revision Policy: Monthly estimates are subject to revision the month following the preliminaryestimates. Annual estimates are published in the "Dairy Products" report published each Aprilwhich includes any revisions made to current and previous year. An attempt is made to getinformation from all plants for preparing these estimates

All NASS reports are available by subscription free of charge direct to your e-mail address. Starting with theNASS Home Page at www.usda.gov/nass/, click on Publications, then click on the Subscribe by E-mailbutton which takes you to the page describing e-mail delivery of reports.
