JOB SUMMARY This individual will gain a comprehensive understanding of the role nutrition plays in serving our

Guest’s great food! You will acquire an in-depth understanding of nutrient analysis (calculated

and chemical), identifying and controlling food allergens, and learn about the newest federal

regulations—including menu labeling and gluten-free labeling. Lastly, you will gain perspective

on how business, food policy, and consumer insight all contribute to shaping the health of our

menus. If you like to have fun, but work hard, this is your internship!

KEY PERFORMANCE ELEMENTS/ESSENTIAL FUNCTIONS

Collaborate with the Corporate Nutritionist on various tasks related to menu labeling including: generating menu item nutrition data, formatting data according to regulatory standards, and assisting with developing menu labeling training materials for operators.

Collect and evaluate product data to support nutrient analysis and the management of special dietary menus.

Assist in preparing Brand recipes for laboratory analysis and document recipe measurements and cooked yields.

Review standardized recipes and determine all nutrition data points and their appropriate source by following Brinker’s nutrition process.

Audit product data in nutrition database versus supply chain systems to support accurate nutrition reporting.

Run nutrition software reports to ensure that ingredient nutrition values are updated and aligned with the correct data source.

EDUCATION/TRAINING

Current or recent graduate of a Nutrition Science, Dietetics, or related program (required)

Registered Dietitian or Eligible to sit for the Registration Examination for Dietitians (preferred)

KNOWLEDGE/SKILLS/ABILITIES

Experience with using nutrient analysis software, preferably Genesis R&D by ESHA.

Ability to assess recipes for thoroughness and completion for ‘translation’ into nutrient values.

Strong understanding of culinary techniques and ingredients influence a food’s nutrient profile.

Proficient with Microsoft Word and Excel.

Great at managing a variety of projects and deadlines.

Organized and detail oriented.

Strong verbal and interpersonal skills.
