Poutine was named one of Canada’s quintessential foods in Restaurants Canada’s Chef Survey 2017!

FUN FACT: Back in the earlier days of poutine, cooks would mix together leftovers of different gravies, such as beef, chicken and barbecue, and dilute it with stocks they had on hand, like chicken or beef stock. They added herbs and spices to this concoction for a most unique flavour that paired beautifully with the mix of cheese and fries.

A true and traditional poutine sauce is a thin to medium brown sauce with a mild meat flavour enhanced with spices and herbs, which will vary slightly depending on the regional preferences.

Some like it milder and will opt for a “beef style” poutine sauce, while those who like it with a kick will opt for a spicier “BBQ style”poutine sauce.

A real poutine sauce is designed specifically to complement the fatty, salty, and dairy flavour of cheese and fries and elevate the dish, unlike other gravies which may result in a blander poutine.
