We are so proud to continue our part of Port Angeles Down-town, and we would like to welcome you to our expanded Country Aire Natural Foods Market. Our larger, more conve-nient store, is the product of many local companies who came together to help us build this dream.

Our expansion to this new location required a complete overhaul of the old Peoples department store building, originally constructed in the 1940s.

My husband John and I wanted to create this larger location that would be open, warm and inviting, yet still retain the charm and character of our original “quaint” location.

We would like to say “Thank You” to the numerous businesses here on the Olympic Peninsula who have helped us in this process. We couldn’t have done it without you!

Gentry Architecture helped us with the building plans. 4 Seasons Engineering made sure that our plans were safe and well designed.

>> The plumbing for the deli, new bathrooms and many sinks throughout the building were completed by The Plumbing Connection. Simpson Electric assisted with the wiring, while Jim’s Refrigeration was contracted to provide the installation of the numerous refrigerators, coolers and freezers throughout the store.

Angeles Heating helped install our heat pumps and Matthews Glass provided our new entry glass. Angeles Millworks, Hartnagels, Thomas Building Center and McClanahan Lumber all provided much of the building supplies. Sunset Wire Rope and Swain’s were great resources for tools and last-minute things needed as construction was under way, and now as we are running.

Custom Surfaces LLC helped with our interior concrete work, while Peterson Engineering and 2-Grade Dirtwork assisted with the sidewalk preparations. Special thanks to the City of Port Angeles for stepping in to redo the sidewalks to the east as a safety precaution for our customers.

Howat Fine Woodworking, along with Irwin Interiors provided several of the special touches that make this store so unique.

Flooring companies McCrorie and Fairchild were also very supportive and helpful in providing materials that were just right.

Aawnings of Distinction and Miller Signs made sure the outside of the building was appealing and inviting to old friends and new ones alike.

Capacity Provisioning, Hi-Tech, Angeles Communications and Albright Networks helped us into the new store with proper computer networking and communication capabilities. Olympic Printers helped design our new logo, signage and business cards.

Finally, we wish to thank the Downtown Association, and all the numerous individuals and companies who also supported our efforts. There is just not enough space to mention each of you, but we shall never forget what you’ve done for us, and this community.

First St., they had visions of combining old and new: the look of the former occupants — the Peoples department store, Lamont’s Apparel and Gottschalks department store — with the homespun health-food-store look of Country Aire.W

New features include a south entrance from the back parking lot, a fresh-made deli, expanded local and certified organic produce, local and organic wines, bulk foods, fair trade organic coffees and bulk herbs, spices and teas. You will also find supplements, herbal tinctures, essential oils, natural clothing and cosmetics and so much more.

The store has an enclosed incense and candle room to accommodate the scent-sensitive. There is also organic juicing and wheat grass shots available. You will find a pot-bellied stove, antiques lining the walls, six cash registers for check out convenience and places to sit for Wi-Fi browsing.NEW

Country Aire Natural FoodsA part of downtown Port Angeles for 37 yearsLOCATED ORIGINALY at 117 E. First St., between Lincoln and Oak streets, the tiny natural food store was neatly tucked away in its 3,000-square-foot space. Many people simply overlooked the store.

“We jokingly called ourselves ‘The Most Inconvenient Store Downtown’ because we had no private parking, minimal street exposure and narrow isles,” says owner and founder Robyn Miletich.

“Even after 36 years, we continually had people come in and say they had never been in before, or that they didn’t realize we sold groceries or that they just discovered we carried vitamins and supplements!”

John and Robyn opened Country Aire on July 24, 1975 after purchasing the building. Originally catering to bulk foods, herbs and spices, the tiny store soon developed a following of regular customers. People came to love the store’s unique aroma, the squeak of the wooden floors and the charm of old-fashioned wood bulk barrels still serving their intended purpose, and the eclectic combina-tion of products and antique items on display.

By the 1980s, the store had expanded its selections in all departments to meet the needs of its health conscious clientele.

For a short while, Robyn operated a popular café called The Cookery located dowstairs, but found the two businesses too demanding.

In 1991, she began renting the space to other restaurants: The Greenery, (1991-1996), Bella Italia (1996-2001) and finally Michael’s Seafood and Steakhouse, which opened in 2001 and continues to operate there today.

But Robyn did not entirely give up the restaurant side of her business talents. Dedicating a small area of her already small store, she began featuring wraps, sandwiches, fresh-made organic juices and other ‘grab and go’ foods in her store to an appreciative audience. To date, that small ‘in-store’ deli is now a full-sized deli in the new location, offering hearty soups and salads, wraps, sandwiches, or-ganic juicing, gluten-free desserts, fair-trade organic coffee and espresso and many other nutritious selections.

In the 36 years at that location, many changes have taken place as new prod-ucts were added and others went by the wayside, however one thing remained constant: Robyn’s commitment to provide her customers with the best local, organic and sustainable products she can find.

Those terms have come to be household words now, but in 1975 only a visionary could see a future there. Well, the future is here, and the visionary was right.

Originally built in 1946, by Ernest R. Gehrke Jr., the Peoples department store building quickly became a cornerstone of downtown Port Angeles.

For nearly 30 years, the landmark store stood at the corner of First and Oak streets. With its large windows and covered entrance, the store is remem-bered fondly by many long-time residents.

Besides building the store, Gehrke and Port Ange-les-born wife Anna Jane Hooker Gehrke operated the Richfield Oil Co. in Port Angeles.

Gehrke purchased the property in 1941, when the city council approved the transfer of deed from Ralph Daniels. Daniels had purchased the property from the city in 1939 for a sum of $350 — $50 down and $10 per month until paid.

Commission records reflect that in 1949, Gehrke requested the city furnish labor to lay a cement slab at the corner of First and Oak streets, while he sup-plied the materials, to which the city agreed. >>

Landmark building finds new life

Country Aire Natural Foods Market’s new location is on the street-level portion of the 34,000-square- foot landmark building known for the three generations of department stores it housed since the 1940s — the Peoples department store, Lamont’s Apparel and Gottschalks, which closed in 2009.

>> It was also in 1949 that the Gehrkes applied for and received a business license to operate a beauty shop inside the store. The cost of the business license was $2.

Once completed, Gehrke leased his building to the Tacoma-based Peoples department store which was founded in 1888 and expanded in the early 1940s by operating a chain of appliance stores called Electric City in many Puget Sound cities.

The Port Angeles location was originally one of the City Electric’s appliance stores (see a late 1930s ad on page 15).

By the mid to late ‘40s, the company had expanded to include apparel and would be rebranded under the Peoples name.

By 1948, there were 12 stores in the People’s chain. By 1968, the chain had consolidated its 12 small stores into seven larger regional stores. The new stores anchored several malls as well as the stand-alone locations in other cities, including Port Angeles.

Peoples closed in 1983 and the building later became a Lamonts,

a chain of apparel stores founded in Bellevue.

In 2000, Lamonts was bought out by Gottschalks, which operated the store until it closed in 2009.

The building remained unoccu-pied until it was purchased in July 2011 by John and Robyn Miletich to house Country Aire Natural Foods.

The couple removed all the internal trappings of Lamonts and Gottschalks to return the store to its original glory.

The exposed beams and wood ceiling were painstakingly sanded and refinished.

The original window locations were discovered, and reopened, although crossed steel bars that were added in the 1980s to provide earthquake stability remained.

All these changes have only en-riched the unique character of the store’s interior.

The rustic appeal characterizes the farm and barn feel of this natu-ral foods store. Antiques of origin line the upper shelving and bring an earth bound ambience for the customers’ pleasure.

Mexican Black Bean Pizza

A fun way to use a bean dip.

Diet Types: Low Fat, Vegetarian

Serves: 4

Cooking Time: Under 30 minutes

INGREDIENTS:• packaged pizza crust• 1/2 cup prepared black bean dip• 6 scallions, chopped• 1/3 cup mild salsa• 1/2 cup shredded low-fat or soy mozzarella• 1 tomato, seeded and diced• 1/2 medium avocado

• 1/4 cup low-fat or soy sour cream• 1 cup shredded lettuce

INSTRUCTIONS:u Preheat oven according to pizza crust package directions. u Spread a thin layer of black bean dip over surface of crust. Follow with a thin layer of salsa and sprinkle with shred-ded cheese. Top with chopped scallions and sliced olives. u Bake as directed for pizza crust. u When done, top with your choice of tomatoes, avocado slices, reduced fat sour cream or shredded lettuce.

Zucchini Jicama Latkes

Try these delicious gluten-free latkes — they

are very easy to make.

INGREDIENTS • 2 c. zucchini, shredded and water squeezed out • 2 c. jicama, peeled, shredded and water squeezed out • 1/2 c. onion, pureed or finely shredded • 2 tbsp. garlic, finely minced • 2 eggs, beaten • 1/4 c. Parmesan/Romano blend • 1/2 tsp. salt • coconut oil for cooking

INSTRUCTIONSu Squeeze out all extra moisture form the zucchini and jicama.u Mix all other ingredients in together.u Heat a skillet medium and melt coconut oil — around 1 tbsp is a good start for a few latkes.

u Place a spoon full of mixture down on the skillet and flatten as best as possible — if the latkes are too thick, they won’t cook evenly and will be hard to flip.u Cook around 3 minutes on each side or flip when golden brown.u Serve with applesauce, sour cream.

• 3 cups chopped red apples• 1 1/2 cups cubed smoked turkey• 1 cup chopped dried plums• 3/4 cup chopped celery• 1/2 cup coarsely chopped walnuts, toasted• Red or green lettuce leaves (optional)

INSTRUCTIONS:u In medium bowl combine mayon-

naise and orange juice; add apples, turkey, dried plums, celery and wal-nuts, tossing to coat. u Chill in refrigera-tor; serve on lettuce, if desired.

TIP: To toast walnuts, arrange in even layer on baking sheet. Bake in 350 degree oven 8 to 10 minutes or until lightly browned.

Nearly 1 percent of people in the United States are sensitive to gluten due to Celiac disease and find that eleminating gluten is essential to their health.

But many others are discovering the benefits of reducing the amount of gluten they consume, as well.

Broadening the variety of grains you consume allows the body time to rest from the constant bar-rage of wheat products most of us consume.

Gluten is a binding protein that is found in many, but not all, grains.

It’s what gives products such as bread and baked goods it’s soft texture.

The most common gluten-containing grain that we as a society eat is wheat, and wheat (in all forms, including spelt, durum, bulgur and semolina) contains gluten.

Rye and barley also contain gluten. Oats by nature are gluten free, however, many of the fields that grow oats are also used to grow wheat. De-pending on your level of intolerance, you may or may not need to purchase gluten-free oats.

There are many grains that do not contain gluten. Actually, there are more gluten-free grains than there are grains that contain gluten.

Amaranth, buckwheat, corn, quinoa and rice are among some of the grains that are naturally gluten free. There are a variety of wheat flour substitutes such as potato, almond and rice flour that can be used to make gluten free breads, cakes and cookies.

Gluten can be found in many forms you would not expect. Beware of these hidden sources of gluten:

• Condiments like ketchup, mustard, salad dressings, barbecue and teriyaki sauces

• Many processed meats use wheat as a filler• Modified food starch• Soy sauce (but there are several gluten free

brands available)• Lecithin• Textured vegetable protein• Emulsifiers• Prescription and over-the-counter drugs, even

some vitamins contain gluten.Whether you are intolerant to gluten, or simply

want to reduce your intake of wheat products, there are many good tasting, satisfying options available.

By eliminating gluten from your diet, it is also

possible to increase your energy levels, lower bad cholesterol levels and even assist the body`s digestive processes.

Many people have found it beneficial to elimi-nate gluten from their diets, ranging from those with ADHD to those with auto-immune disorders.

Gluten-free diets have also been shown to be beneficial to those suffering from thyroid disease, cystic fibrosis, multiple sclerosis, anemia, autism and irritable bowel syndrome.

GRAND OPENING CELEBRATION Loyal customers rewardedCountry Aire Natural Foods Market offers cus-

tomers an opportunity to receive something back on their purchases. A loyalty program the store calls its C.A.R.D (Country Aire Redeemable Dollars), gives returning customers a chance to accumulate points towards a 5 percent rebate on qualified pur-chases throughout the store.

For every $1,000 customers spend on regularly priced items they receive a $50 gift card.

Country Aire has been overwhelmed by the num-ber of customers asking about this loyalty program.

Since the store opened on May 1, nearly 1,500 people have signed up, with more being added daily. The store paid its first loyal custom-er within 30 days of opening and several others reached their 1,000-point goal before the end of June.

The program has been well received and will benefit the valued customers that Country Aire ap-preciates so much.
