Paul Knight began his brewing career in 1961 working as “summer help” for Olympia Brewing Company. In 1972 he had the opportunity to attend Siebel’s Institute of Brewing Technology in Chigago, IL. After graduating he returned to Olympia Brewing Company where his career progressed from General Cellar Supervisor to Assistant Brewmaster and in 1974 he was promoted to Manager, Brewing Operations. Paul’s career included the initiation of a "Waste Product Recovery" which resulted in a seven million dollar facility to process brewery waste and is a system still in operation today. Since retiring Paul has maintained his interest in brewing while devoting his time to restoring old cars and old airplanes and as a volunteer for Habitat for Humanity. More recently Paul has been involved with the Old Brewhouse Foundation and helped in the construction of the Old Brewhouse Mobil Museum trailer.

Instructor BiographyTim Madeley had a 25 year career working in various jobs in the commercial playground industry when he was given the opportu-nity to purchase his long-time employer, BigToys. He started in 2004 with a team of 15 employees and re-invented the company by introducing a product line made largely from recycled materials. This resulted in a doubling of sales in the first four years. In 2010, he recognized the company needed greater resources which led to the acquisition of the company by its largest competitor. This allowed Tim to pursue his passion – teaching in higher educa-tion. He is pleased to be sharing his experiences with students at SPSCC.
