COOKING ACTIVITY
PLANNING WEEK 1Date: 3/07/2013 Grade level: 5 Duration: 90 mins (morning or afternoon session)Topic/Title: Marbled Chocolate and Caramel Brownies Key learning area: Culinary Arts
Learning Outcomes:
Students will learn how to cook chocolate and caramel brownies, and will learn the marblingtechnique in the process.
Students will learn how to melt chocolate; and will be able to use the back of a spoon to create achocolate drizzle for decoration.
Students will learn the techniques necessary to create shards of white chocolate for decoration. Students will develop their mathematical understanding of measurement, shapes, weight and
fractions.
Students will develop their science understanding of liquids becoming solids.Curriculum Links (Year 5):
Solids, liquids and gases have different observable properties and behave in different ways(ACSSU077): Exploring the way solids, liquids and gases change under different situations such as
heating and cooling.
Problem Solving includes formulating and solving authentic problems using whole numbers andmeasurements.

Activity has been adapted from a recipe byAustralian Good Taste magazine (Volume 17 Number 5:The World Issue).
Altered recipe can be found at the end of this plan: See required ingredients and equipment.Students: TBA. As it is a small kitchen, only six students are allowed to cook at a time for safety. To not
exclude anyone from the activity, I believe half the class can cook the marbled brownies and the other half
can create the chocolate decorations. After the decorations are produced and the cake is cooled each

Timing Procedure

Activity introduction(How will I engage/tune students in?)I will begin by introducing the activity; letting the first group of girls know that they are going
to be making the brownies and that the second group are going to be making the decorations.
For student safety and to make sure everyone gets a turn, I will make sure to break up each
step of the recipe as a job for each girl.
I will have them stand in a line and they will have their turn and move to the back of the line. I
will make my expectations clear at the start of the activity, to ensure they arent bumping into
each other where there are many hazardous items.

Body of activityEach girl will come up to the bench, read their step on the recipe and will complete it before
moving to the back of the line. This is only for the first group, as there will only be one bowl
for the brownie mix but many more jobs to complete. Occasionally more than one girl will beworking at the same time; for example when they need to line the tray and prepare the
ingredients in the bowl. Each girl in the second group will get their own work space for making
some of the decorations, however will take turns for melting the chocolate.
The second group of girls will come up when the brownies are cooking in the oven. These girls
wont need to be in a line; I will find them each a space on the bench. Two girls will begin
melting both white and milk chocolate with me over the stove. They will take turns and swap
with the other girls as the chocolate is melting. I will make it clear there will only be two girls
at a time at the stove for their safety.
While the other girls are waiting they will rip off a piece of baking paper and place it on the
bench where they will be working. They will take turns with the bowl of melted white
chocolate, and will use a spatula to spread out the white chocolate across the paper. We will
wait for the chocolate to set and solidify. I will then show them how to roll up the paper so
shards of chocolate form for the decoration. The girls will then break up the chocolate into
finer shards.
I will take the brownies out when they are ready. Ill cut them into 16 slices and set them on a
cooling tray. While they are cooling I will show them how to use a metal spoon to create a
chocolate drizzle. I will demonstrate this on a piece of paper. Once they are cooled each girl
will put the drizzle over their brownie and will decorate it with shards of white chocolate and
add a couple berries. They will take their brownies and go eat them while the first group
comes back and decorates their brownies.

Assessment of student learning
Throughout the activity I will watch their cooking skills and techniques develop; assisting them
whenever they need help. I will question them when they come to techniques they may not
know, such as what it means to allow sides to overhang. I will also ask questions like why
do we sift flour?

COOKING ACTIVITY
Marbled Chocolate and Caramel Brownies
Makes: 16 squares
Prep: 15 minutes
Time: 45 minutes cooking time, 15 minutes decorating time, 15 minutes cleaning
time (+ 15 minutes leniency)Ingredients:
375g of milk chocolate melts 375g of white chocolate melts 150g of butter, chopped 200g (1 cup, firmly packed) of brown sugar 3 eggs, lightly whisked 150g (1 cup) plain flour 30g (1/4 cup) cocoa powder, sifted 395g can of condensed milk 1tbs golden syrup 20g butter, extra Berries, to decorate1. Preheat oven to 160C. Grease and line a 20cm (base measurement) square
cake pan, allowing sides to overhang.
2. Stir 200g of chocolate melts and the butter in a saucepan over low heat for 3-4 minutes or until mixture is smooth. Remove from heat.
3. Stir in sugar and egg until combined.4.
Sift flour and cocoa powder over the saucepan, and stir until combined.
5. Pour brownie mixture into cake pan.6. Combine the condensed milk, golden syrup and extra butter in a saucepan
over medium-low heat. Stir constantly, for 5 minutes or until mixture boils
and thickens slightly.
7. Gently fold the caramel mixture into the chocolate mixture, and use a skewerto swirl the mixtures to create a marbled effect.
8. Bake for 45minutes or until crumbs cling to a skewer inserted into the centre.Take cake out of the oven, and cut into slices. Cool on a cooling rack.
9. Melt milk chocolate in a bowl over hot water in a saucepan. Melt whitechocolate in a bowl over hot water in a saucepan. Continuously stir to break
down the chocolate from solids to liquids. Remove from heat.
10.Take a piece of baking paper, and lay it out on the bench. Place a plasticspatula in the white chocolate, and spread it across the baking paper. Wait
for it to set (harden).
11.Roll the paper into a cylinder shape. The chocolate should break off intoshards. Break the chocolate into finer pieces.
12.Drizzle the milk chocolate over the brownies using the back of a hot spoon.Add shards of white chocolate and a couple berries to decorate.
